Any ideas for cooked chicken recipes?

I cut up chicken and cooked it last night. My husband ended up bringing home dinner. Any ideas or healthy recipes that are kid friendly also. Thanks!

Leftover Turkey Soup

Total Time: 30 min
Makes: 6 servings, 1 cup each

1/2 cup chopped onion
1 medium carrot, sliced
1 stalk celery, sliced
1 Tbsp. oil
2 cans (14-1/2 oz. each) chicken broth
2 cups water
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
2 cups cubed cooked turkey
1/2 cup bite-sized pasta, uncooked

COOK onion, carrot and celery in hot oil in large saucepan 3 to 5 minutes or until crisp-tender, stirring occasionally.
STIR in chicken broth, water and dressing mix. Bring to boil.
ADD turkey and pasta; cover. Reduce heat to medium-low; simmer 10 to 12 minutes or until pasta is tender.

1 cup shredded cooked chicken (3 oz.)
1/2 cup sliced celery
1 Tbsp. KRAFT Mayo Real Mayonnaise
1 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream

MIX chicken, celery, mayo and sour cream. Serve with TRISCUITS Crackers or on a sandwich roll.

Dijon Chicken Salad Sandwich

Makes: 8 servings

4 cups chopped cooked chicken
1-1/2 cups chopped celery
1/2 cup KRAFT Mayo Real Mayonnaise
1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. lemon juice
1/8 tsp. ground black pepper
8 lettuce leaves
16 slices rye bread

MIX chicken, celery, mayo, mustard, lemon juice and pepper until well blended.
PLACE 1 lettuce leaf on each of 8 bread slices.
COVER evenly with the chicken salad; top with remaining bread slices.

I like to add cooked chicken to Zatarain's boxed rice. I especially like to add it to the Jambalaya and Red Beans and Rice. It's a one pot meal.

I also shred it and simmer it with salsa and use it for tacos, burritos, or nachos.

My husband shreds it and then sautes some onions until tender, adds bbq sauce and the chicken. He simmers it until everythig is hot and then makes a sandwich with it.

What are some cheap meals to make at home?







It's one extreme or the other for me, either its a sandwich or something expensive like a roast. I need to learn some decent priced meals that will be good for my family. Whats the cheapest to make recipe you can think of that is healthy? I need to get away from boxed meals.
The recipe I have for mashed potatos takes 45 minutes to cook, are there any less time consuming ways to make mashed potatos?

our favorite is a baked potato in the Microwave. Then add different cheeses, bacon bits and what ever you like, then back into the microwave for about 30 seconds. Then you chives and sour cream.

Another is grilled cheese and soup.
