What are your favorite healthy recipes and food?

Q. My husband and I are eating healthy and was wanting to know what kind of recipes you have that are delicious that are healthy? Also, what kind of snacks or other healthy ideas do you enjoy? Thank you!!!

A. Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). I’d try the recipe, if it’s good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).


What are healthy dishes I can bring camping to share with a group?
Q. I am going car camping & RVing a few times this summer with family and friends. We always have plenty of tasty and unhealthy food, but and I would like to bring some healthier options. I’m kind of stumped for ideas of food that travels well and is healthy and can be made for a group. I am open to side dishes, snacks, desserts, or any other ideas. What are some good sandwich recipes that you guys make?
Q. I eat sandwiches everyday now because im trying to stay healthy and i work out everyday. So i eat Steak and chicken at least 4 times a week. Currently on my sandwich i put. Mayo, Ham, Turkey, lettuce, Egg, and Cheese. And i use white bread. (cheap stuff from costco :P) Thank you for your recipes and tips on how to make a Great sandwich.

A. Turkey Club Sandwich
Serve this double-decker sandwich with carrot and celery sticks and red and green grapes. If you don't like Swiss cheese, substitute any other variety, such as cheddar cheese.
4 tablespoons fat free mayonnaise
4 teaspoons fresh basil, chopped
12 slices sourdough bread, toasted
8 ounces turkey breast lunch meat
6 slices bacon, fried crisp
4 romaine lettuce leaves
8 slices tomato
4 slices Swiss cheese
In a small bowl, combine mayonnaise and basil. Spread 1 teaspoon of mixture on each slice of bread.

Place 1 slice of bread on plate. Top with 1 ounce turkey and 1 1/2 pieces of bacon. Add another lsice of bread, 1 ounce turkey, 1 lettuce leaf, 2 slices tomato and 1 piece of cheese. Top with last slice of bread. Place a toothpick in each half of sandwich and cut down the center. Serve immediately

Tuna Salad Sandwiches
For variety, add cucumber or tomato slices to each sandwich.
2 cans albacore tuna, in water, drained
½ cup celery, diced
½ cup apple, diced
1 teaspoon lemon juice
⅓ cup fat free mayonnaise
4 lettuce leaves
8 slices whole wheat bread
In a small bowl, flake tuna with fork. Add celery, apple, lemon juice and mayonnaise. Stir well.

To serve, place 1 leaf of lettuce on a slice of bread. Top with 1/4 of tuna mixture, spread to edges and top with another slice of bread. Serve immediately.

Philly Steak Sandwich
Cheddar cheese is high in fat and calories, so limit the cheese to 2 tablespoons for each sandwich. For variety, use roast beef that has been rubbed with Italian seasonings.
1 bell pepper, thinly sliced
1 onion, thinly sliced
12 ounces lean roast beef, shaved thin
4 whole wheat buns
½ cup Cheddar cheese, shredded
Preheat oven to 350 degrees. Coat a baking pan with cooking spray.

Spray frying pan with cooking spray. Over medium heat, saute the peppers and onions until they soften, about 3 - 5 minutes. Add the roast beef and saute for an additional 2 -3 minutes.

Place 1/4 of the roast beef mixture on each bun and place on baking pan. Top each with 2 tablespoons of cheese. Bake until cheese has melted, about 2 - 4 minutes. Serve immediately.

Mexican Roll Ups
A tasty alternative to sandwiches for a lunchbox or picnic. Roast beef, chopped tomatoes, bell pepper and seasonings are rolled in whole wheat tortillas and wrapped in tin foil. Easy to transport and neat to eat.
6 whole wheat tortillas
6 leaves romaine lettuce
1 ¼ pounds sliced roast beef
1 cup chopped tomatoes
1 cup chopped red bell pepper
2 tablespoons olive oil
3 tablespoons red wine vinegar
½ teaspoon ground cumin
For each roll up, tear off about a 15 inch piece of wax paper or aluminum foil. Place the tortilla on the paper or foil. Top with lettuce leaf, about 3 ounces of beef, divide tomatoes pepper, oil, vinegar and cumin evenly over all tortillas.

Begin rolling the paper or foil over the tortilla to encase the filling. Roll until the sandwich is completely rolled.

To eat, peel back the paper or foil

Ham and Egg Salad
1 ½ cups fully cooked ham, cubed
6 egg, hard boiled, chopped
½ cup celery, chopped
½ cup sweet pickle relish
½ cup mayonnaise
2 tablespoons honey mustard
Combine first 4 ingredients. Blend together mayo and mustard, add to ham mixture and toss lightly. Chill well before serving

Chicken Tostadas
Chicken breasts make a fine change of pace for tostada filling, along with tomatoes, lettuce and bell pepper. A garnish of salsa with fat free sour cream and grated cheese keep this dish a healthy one.
1 ½ pounds chicken breasts, cooked
3 cups romaine lettuce, torn into bite size pieces
½ cup bell pepper, chopped
½ cup chopped tomatoes
6 flour tortillas
6 tablespoons fat free sour cream
6 tablespoons salsa
6 tablespoons Cheddar cheese, grated
Heat tortillas by placing them in a large dry skillet over medium high heat, turn one until golden and puffy.

Place tortillas on plates, evenly distribute remaining ingredients over tops of toasted tortillas. Serve immediately.

Chicken Salad
3 - 4 cup cooked chicken, diced
1 cup celery, chopped fine
1 cup apple, peeled, cored and chopped fine
1 teaspoon salt
¼ teaspoon pepper
⅛ teaspoon ground cayenne pepper
1 teaspoon dried parsley
⅛ teaspoon dill weed
½ cup mayonnaise
¼ cup sour cream
Combine all ingredients. Chill overnight before serving.

What is a good diet for someone trying to stay healthy?

Q. I want to go on a diet to be healthy, but I don't want it to have to be too hard. I work out a lot, and am very fit, but I feel that I am not making the healthiest choices when it comes to eating. What should I do when it comes to disciplining my food choices?

A. Thats great that your active and want to eat healthy :)
Go for natural, organic foods. Eat smaller portions more often rather than big portions less often. Avoid things like soda, diet soda or any diet drinks, artificial colors or sweeteners, too much sugar, overly processed foods. Remember to drink plenty of water. Green tea is great to =) As well as water with lemon which is cleansing, good for your skin, digestive system.

You can also try out healthier alternatives with food.
Examples:

- Replace fast food french fries with homemade sweet potato or regular fries (made with a touch of olive oil, salt)

- For chips, you could try natural sweet potato chips, pita chips, fat free popcorn, pop chips or a natural potato chip brand like Kettle. You can also make your own chips by thinly slicing potatoes or sweet potatoes, glazing with olive oil, sprinkling with salt (pepper, basil if you'd like - cinnamon goes well with sweet potatoes) & baking them.

- Replace candy with things like frozen grapes or banana slices, dried mango strips, dried blueberries/cranberries/cherries/papaya, raisins, etc.

- Try a veggie burger on a whole wheat bun, topped with some things you like.

- If you want soda, try cold sparkling water with lemon or mixed with 100 % organic fruit juice instead

- Replace white pasta with whole grain in pasta dishes + add veggies (for example adding baby spinach to pasta, grilled vegetables to lasagna, broccoli/grated carrot/spinach/kale to pasta salad, etc.

- For a creamy pasta sauce try tomato sauce with goat cheese mixed in, for a healthier dish

- Enjoy pizza, try it on thin multigrain crust topped with fresh veggies.

- For healthier treat options try things like: frozen yogurt, vanilla greek yogurt with berries & grated dark chocolate, whole grain baked goods, etc. Desserts are fine in moderation :)

How to eat healthy and loose weight when you do not cook?
Q. After finding out that I weight almost 30 pounds more than I thought I have started to exercise in the evenings and drink more water ( which I hardly drank before ). I know that I also need to eat healthier but I find it hard because I do not cook. Also, It's expensive to buy fresh vegetables and meats. So being broke and an awful cook what should I do? Right now I basically live off tv dinners maybe fast food once every week.

A. First off, I would highly recommend stopping the TV dinners. Most of them contain extremely high fat and salt content.

You need to be willing to spend at least a little more time to eat healthier. I'd like to share the few tips I know of with you:

Most fast food restaurants offer healthier choices now. IE:

Wendy's: Stick to their chili or a baked potato. Put on light butter and no-fat sour cream @ home. Also, eat their salads with low fat dressing.

Taco Bell: They have a FRESCO menu. This is basically with no cheese or sour cream. This cuts a TON of calories. Order off this menu only.

Anywhere else--stick to grilled chicken instead of fried.

AT HOME: You will need to buy at least some groceries at the beginning of the week. I would recommend going to your supermarket's deli section and buying a whole rotisserie chicken. They cost between $5 and $7 dollars.Use the HECK out of that chicken--eat it for meals, use it for sandwiches, then throw the carcass into a pot and make chicken soup. It will probably give you 5 meals if you are one person. Buy some brown rice from the store, as well as frozen veggies (about $1.25 per box). (CHEAP CHEAP CHEAP) Boil the rice according to the directions on the bag. Add some salt and pepper, and olive oil. Add some lo-salt canned tomato sauce if you want more flavor ($.49 cents). Stick the veggies in the microwave for as long as the box says.

My estimation: 2 chicken pieces from the big chicken, a serving of brown rice, and frozen veggies will cost you about $2.75 TOPS for a dinner. You can't even get a fast food combo for that price. That meal I just described will probably take you 5 minutes to put together once the rice is cooked.

Healthy chicken soup with the remaining carcass: peel the carcass and throw the chicken pieces in a pot. Buy cheap chicken broth with low sodium/low fat. Fill the pot up with the chicken broth and some water. Throw in some rice and veggies-carrots, celery, whatever you want. Even buy frozen veggies if you have no time to cut them up. Boil it till the veggies are soft. EASY. It will probably take you 15 mins to make a whole pot of soup.

Other suggestion:

Turkey burgers. Buy the cheapest ground turkey you can find. Chop a small onion. Mix it with the turkey with some pepper and a tad of salt. Make a patty shape with your hands. Cook the patties on a frying pan with a bit of oil. Stick it on a whole grain bun with lettuce and ketchup. EASY. You will be able to make 5 burgers with that one pack of turkey meat.

Snacks: Bananas ($.69 cents a pound), Nature Valley granola bars, light popcorn, cucumber and dip/salad dressing. All very cheap.

Lunch: lunchmeat on whole grain bread.

My point is--If you know how to shop, easy cooking will actually be less expensive than fast food and TV dinners. Here is a link to my favorite recipe site for "cooking on a budget"

Go to your supermarket's website, or look at their store circular before you go shopping and see what's on sale that week. Cut out coupons, and look for their buy one, get one free deals.

What is your favourite quick, easy to follow, and non labour-intensive vegetarian recipe?
Q. Also, must be healthy and non-greasy!
Recipe for a full-blown meal, not merely a snack.

A. farmers market sandwich
1. Wash a zucchini, some button or baby portobello mushrooms, and some cherry or grape tomatoes. Red bell pepper is also optional.
2. Slice and dice everything, and set the tomatoes aside. Fry the rest of the veggies in butter, garlic, and basil until tender.
3. Melt a little cheese (optional) on a bagel or toast, and layer the veggies on. If you dice instead of slice, this makes a great baked potato topping. Serve with orange or grapefruit juice for an amazing breakfast.

Burrito Bowl
1. Make white or brown rice.
2. Pan fry black beans and corn together in olive or vegetable oil with chili powder, cumin, turmeric, crushed black pepper, and onion or garlic to taste. Pour this onto the rice.
3. Top with your favorite salsa, along with cheese/cheese replacer and lettuce if you'd prefer. You can add diced chili peppers to spice it up, or diced green bell peppers to cool it down.


My Favorite Stir Fry
1. Fry broccoli florets and sliced carrots in garlic butter/olive oil and minced garlic until tender.
2. Add baby corn spears and your favorite stir fry sauce. (I prefer House of Tsang Classic.)
3. Meanwhile, make udon or soba noodles, fettuccine noodles, or rice.
4. Add noodles/rice to stir fry and toss to coat.
5. Top with peanuts and enjoy.

Another Good Stir Fry
1. Press tofu and slice into small rectangles or cubes.
2. Wash snow or sugar snap peas and thinly sliced carrot sticks.
3. Fry until heated through, adding tofu near the end of frying, with your favorite stir fry sauce and maybe a little minced garlic.


Mediterranean Wraps (or Pita Pockets)
1. Gather a few of your favorite Mediterranean veggies (peppers, squashes, snow peas, potatoes, garlic, onions, etc.) Wash and slice them.
2. Put them in a container and add olive oil and Italian seasonings. (I just buy an Italian seasonings grinder, but feel free to improvise.) Toss to coat.
3. Bake, covered, at 350 until tender. The timing depends on what veggies you choose, but it should be between 20 and 45 minutes.
4. Remove from oven and put in wraps, pitas (with hummus of course), or serve with spaghetti and garlic bread.


Veggie Chili
1. Heat either tomato juice or chunky style tomato sauce, depending on how thick you want your chili.
2. Add beans and select veggies (frozen bags of veggie soup veggies work well). Optional: add tempeh, seitan, or TVP ground beef replacer.
3. Add chili powder, cumin, turmeric, and any other spices you'd like.

3. Serve with whole wheat toast and avocado slices.

Tofu scramble
1. Press a block of extra firm tofu with you was and cut your vegetables (potatoes, bell peppers of any colour, carrots, and mushrooms.)
2. Lightly oil a large skillet with olive or vegetable oil and add a little garlic, crushed black pepper, and cumin. Add potato cubes and carrot sticks, and stir constantly until heated through.
3. Next, add the mushroom slices and diced pepper. Season with basil and a little more garlic. Continue stirring until heated through.
4. Crumble the pressed tofu on top, adding more cumin and black pepper, as well as a little chili powder. Stir while adding a dash of soy, and sprinkle in turmeric until desired colour is achieved. Continue heating and stirring until the tofu has mixed well with the vegetables and heated through.
5. Serve in place of scrambled eggs, or wrap in a tortilla with salsa for the best breakfast burrito ever.
(I make this the night before, since I never have enough time in the morning. Just place it in the fridge in a tightly sealed container and microwave it or heat it in a skillet the next morning. It's meant for breakfast, but a large enough serving makes a great lunch or dinner on its own.)

CUBAN SANDWICH

Traditional Ingredients:

3 slices (almost shaved) of boiled ham
3 slices of turkey (optional)
3 slices roast pork hot or cold
3 slices of salami
3 slices of Swiss cheese
3 or 4 slices of pickles
1/3 cut Cuban bread hard crust

Optional Ingredients:

3 slices of tomato
4 slices of green bell pepper
3 slices onion
1/3 cut French or Cuban bread
1 leaf Romaine lettuce
mayonnaise, mustard to taste

It is important that the sandwich be prepared on Cuban bread, French or Italian bread - any artisan style bread with a hard crust.

All cold cuts should be sliced very thinly; almost shaved. Slice the bread in an open faced fashion and spread lightly with mustard first, then with mayonnaise. Remember this is not entirely traditional, but still good.

Add the ham (roast pork), turkey and salami. Next add a layer of tomato, pepper, onion and lettuce. Top the sandwich and press.

Press the sandwich on a hot skillet with a weight on top. A suitable weight would be a heavy (clean) cast iron skillet that has been heated until sizzling.

Or better yet, use a sandwich press or panini grill if one is available.

Cuban Sandwiches and their variations are sold in almost every Deli or Restaurant in Tampa, Florida.

Cuban sandwiches are good cold and for picnics or take-alongs, too.

What are some simple, yummy, healthy recipes?

Q. I am looking for some easy, healthy, yummy recipes. Short preparation and cook time preferred. Please keep in mind that I'm a college student that works part time and I cannot spend tons of money either. Also, I do not eat chicken or pork. I prefer to eat seafood most of the time as it is lean and healthy. I eat beef very rarely because I prefer it over iron tablets. Thanks! :)

A. Stir fry - Put a bunch of vegetables in the wok with a touch of oil, serve over short grain brown rice.

Soup - Boil vegetables, throw in some noodles, drop in a raw egg or some cooked beans, how about a few shrimp.

Tortillas, beans & cheese. Slice in some tomatoe and avocado.

Sandwiches - Get nice crusty bread, good cheeses, fresh tomatoes, grilled vegetables, tuna fish. Also smoked fish on bagels.

Pilaf - Rice with herbs & seasonings, mix in toasted nuts & seeds, stir in some minced broccoli, carrot or cauliflower, cook using broth for more flavor, add fresh melon on top

Get some good Indian, Chinese and South Asian cookbooks!

How to get my 3 year old to eat more veggies?
Q. I've bought several cook books in the past to appeal to my son's tastebuds with little evidence of success. The problem: vegetables (primarily)! I have had a few hits but mostly misses. I would like to introduce new recipes before he tires of old ones completely.
What's worked thus far:
Campbell's Healthy Choice soups (unexplicably works for now)
Omlette sandwiches (finely chopped veggies)
Pasta with Spaghetti sauces (again with the fine chopped vegs)

For now we suppliment with Pediasure but I hope not forever.
FYI - Cooked or raw, veggies on their own he will not eat, this includes mashed potatoes. He will try now and again but usually there's gagging and throwing up involved.

It is very normal for kids to just stick to what they like for a long time before trying any thing else. SO, he eats soup at alot.or had spag and sauce alot...even if it is every day at every meal..relax..he is eating very healthy!..there is no need to supplement with pedisure at all.

Fresh fruit is very healthy to.
but with his favourite dishes, maybe offer him a different veggie to go with what he has. Don't force it..but eat it yourself, and go on about how yummy it is. If he refuses..oh well...no big deal...he is eating healthy now..he is not looking out on anything.
Eventually..and be warned, it might be in like 3 years or so!!!..he might want to try something new..or he might want to try ti next week..just relax..don't make eating a stressful big deal..it should be relaxing..and enjoyable.

Panini With Artichoke Hearts, Spinach and Red Peppers.Here’s a great way to pack a lot of nutrients into a sandwich. If you use frozen artichoke hearts, the panini are quickly assembled.

6 ounces (1 bag) baby spinach
3 tablespoons olive oil
2 garlic cloves, minced
12 ounces frozen or fresh cooked artichoke hearts, sliced
1 teaspoon fresh thyme leaves
Salt, preferably kosher salt, and freshly ground pepper
1 large or 2 smaller roasted sweet red peppers, sliced
1/4 pound fontina or Gruyère, thinly sliced or grated
8 slices whole grain country bread

1. Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 10 to 20 seconds. Transfer to the ice water to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely.

2. Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat, and add the garlic. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the artichoke hearts. Stir for a few minutes, until the artichoke hearts are beginning to color, and add the thyme leaves and the spinach. Toss together and season to taste with salt and pepper. Remove from the heat.

3. Preheat a panini grill. Top four of the bread slices with the artichoke hearts and spinach. Add strips of roasted pepper, then cheese. Top with the remaining bread and press together. Brush the outside of the bread (top and bottom slices) with olive oil. Place in the panini maker and grill for four to five minutes, until the cheese has melted and the bread is toasty. 2. Beat the eggs in a medium bowl. Whisk in the milk, about 1/2 teaspoon salt and freshly ground pepper to taste.

3. Heat the oil over medium-high heat in a 10-inch, heavy nonstick skillet, and add the artichokes. Cook, stirring often, until golden brown, about five to eight minutes. Add the garlic, and cook for another 30 seconds to a minute until fragrant. Stir in the herbs, and season with salt and pepper. Pour in the egg mixture. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with a spatula in your other hand, so that the eggs run underneath during the few minutes of cooking.

4. Turn the heat down to low, cover (use a pizza pan if you don’t have a lid that will fit your skillet) and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid and loosen the bottom of the omelet with a wooden spatula, tilting the pan so that the bottom doesn’t burn. Instead it should turn a deep golden brown. Meanwhile, heat the broiler.

5. Finish the omelet under the broiler for one to two minutes, watching very carefully to make sure the top doesn’t burn. (It should brown slightly, and it will puff under the broiler.) Remove from the heat and immediately sprinkle on the Parmesan or pecorino. Serve hot, warm or room temperature.

A. How To Can Chicken Breast.The ingredients here are simple: Chicken and Salt.

Begin by cutting your boneless chicken into chunks then pack them raw into the jars, leaving about 3/4th of an inch headspace

Next add 3/4 tsp of salt to each jar

Wipe the rims with a damp clean rag and then place the lids and rings on the jars. Remember if you are using Tattler lids to back them off 1/4 inch. After you get the lids and rings on then place into your canner with the needed water for a long processing time. You do not want it to boil dry during processing. Use the racks in between levels of jars.

Place the lid onto your canner and then bring it to a boil. You want the steam to vent out of the stem for about 10 minutes. Then place your weight on the canner and set to 15lb (or the recomended pressure for your elevation). Once the canner gets to the correct pressure then time for 75 minutes for pints and 90 minutes for qts.

Once the time is up then slide your canner off the burner to a cool spot. Do not try to rapidly reduce the pressure you can have jar breakage and seal failure. After it is cooled sufficiently to have no pressure left remove the lid carefully (the steam can burn you) Then using a jar lifter remove the jars and place them on a clean dry towel. The jars are very hot at this point and may still be boiling inside the jar. If you are using Tattler lids then now is the time to tighten the rings down. Once again use oven mits as the jars are very hot.

Leave the jars undisturbed until they are fully cooled.

After they have cooled then place a piece of tape on the lid and mark at least the date also the contents if you so desire. Chicken prepared like this is great for many dishes but our favorite is chicken salad for sandwiches.
Chicken Salad

1 jar canned chicken
6 hard boiled eggs
Mayo
Relish
salt/pepper to taste
Chcopped green onions
chopped celery if desired

Place into a bowl the drained chicken broken up, the cut up hard boiled eggs, the chopped onions and celery. Then add relish to taste and Mayo to desired consistency, salt and pepper to taste. Put whatever amount you want on bread or crackers and enjoy. It is beautiful served on a lettuce leaf.

It is one of my favorites. You don't have to add all the ingredients for many recipes like the one below. I leave out the peppers and use any pasta sauce you like. I buy big basil plant at Trader Joe's for a just a couple of bucks. Using fresh ingredients as much as possible really makes a big difference. =)

Mozzarella Chicken Sandwich

Ingredients

* 1/4 cup (about 2 ounces) sun-dried tomato pesto (such as Classico)
* 2 tablespoons fat-free mayonnaise
* 3/4 pound skinless, boneless chicken breasts
* 1/4 teaspoon pepper
* 1/8 teaspoon salt
* 1 teaspoon olive oil
* 1 (8-ounce) loaf ciabatta
* 12 large basil leaves
* 3/4 cup (3 ounces) shredded part-skim mozzarella cheese
* 1/2 cup sliced bottled roasted red bell peppers
* 1 large tomato, thinly sliced

Preparation

Combine pesto and mayonnaise in a small bowl, stirring to blend.

Sprinkle chicken with pepper and salt. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, and cook for 3 minutes on each side or until done. Remove chicken to cutting board, and cool slightly. Cut chicken lengthwise into thin slices.

Preheat broiler.

Cut ciabatta in half horizontally. Place bread, cut sides up, on a baking sheet. Broil 3 minutes or until lightly browned. Remove bread from pan. Spread pesto mixture evenly over cut sides of bread. Arrange the chicken slices evenly over bottom half. Top chicken evenly with basil leaves, and sprinkle cheese over top. Place bottom half on baking sheet, and broil 2 minutes or until cheese melts. Arrange bell pepper and tomato over cheese, and cover with top half of bread. Cut into 4 equal pieces.

A. Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). I’d try the recipe, if it’s good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).


Can you use wax paper instead of parchment?
Q. There's a few yummy sounding healthy recipes I want to try. They call for wrapping things in parchment paper. I live in Alaska so that is very expensive. Can I use old-fashioned wax paper instead? What's the difference in cooking with parchment instead of wax paper?

A. You can't use wax paper in the oven, it'll melt.

The main difference between waxed paper and parchment paper is their respective coatings. Parchment paper is coated with silicone to give it a nonstick, heat-resistant surface, whereas waxed paper is coated with a wax such as soybean or paraffin.

Waxed paper is not meant for use in the oven—the wax coating on it will melt if the paper is exposed to direct heat—so use it for wrapping up sandwiches or food for cold storage. Parchment paper is the best choice for cooking, as most brands can withstand temperatures up to about 420 degrees Fahrenheit (double-check your package to be safe). Parchment paper is good for lining cookie sheets to eliminate the need to grease them, and is also used to cook “en papillote,” a technique of wrapping food in a packet and baking it.

The other way the papers differ is in how they’re processed before being coated. Pat Schweitzer, a spokesperson for Reynolds Consumer Products, says that the company’s parchment paper is pressed into a sheet, then dipped into an acid bath, washed, and “passed over a series of hot rotating drums that realign the fibers and give the paper its strength,” before the silicone coating is applied. Reynolds’ waxed paper, on the other hand, undergoes a process called super calendering, which compresses the paper to give it its transparency, before it is coated in wax.

Scotch Eggs
Serve hot or cold
6 hard boiled eggs
1 lb. spicy sausage meat
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 C flour, divided
1 C breadcrumbs
1 tsp. salt
2 tsp. pepper
1 tsp. paprika
2 eggs, beaten

oil for frying
Makes 6 Eggs

Peel the eggs and set aside. Mix sausage and spices in a small bowl. Divide sausage into 6 equal portions, set aside. Mix breadcrumbs with salt, pepper and paprika, set aside.

Dry each egg with a paper towel, then roll lightly in flour to coat. Take one portion of sausage and using hands, shape a coating around the hard boiled egg, completely enclosing it (see photos). Roll in flour again, then dip in beaten egg then roll in breadcrumb mixture. Repeat with remaining eggs.

Heat about 2-3 inches of oil in a large skillet. Fry eggs, turning frequently, until golden brown on all sides. Drain on paper towels. Let cool slightly before serving. To serve, cut each in half and serve with some good mustard.

Veggie Tortilla Wraps
1 (9") flour tortilla
2 thin slices cheese (Monterey Jack or Swiss is good)
1/2 avocado, sliced thinly
1/3 C leftover grilled vegetables (like zucchini, mushrooms, onions, peppers, etc.)
1 large lettuce leaf
2 T balsamic vinaigrette dressing

Serves 1 (multiply by the number you are making)

Place lettuce leaf across the middle of the tortilla. Top with cheese, avocado and grilled vegetables. Sprinkle with dressing. Fold egg-roll style, tucking in sides as you roll.


Cilantro Tomato Pasta Salad
1 cucumber
1 C ripe red tomatoes, diced
1/2 C red onion, finely chopped
2 T fresh lime juice
1 T cilantro, chopped
1 tsp. granulated sugar
1/4 tsp. salt
1/4 tsp. black pepper
1 C dry small shell pasta, cooked and drained
Serves 4

Peel the cucumber and cut in half lengthwise. Use a spoon to gently scrape away the seeds. Cut in half again lengthwise and dice the cucumber. Place cucumber, tomato, red onion, lime juice, cilantro, sugar, salt and pepper in a bowl with pasta. Toss gently. Transfer to a serving bowl; chill at least 15 minutes before serving.

What are some good foods to have at my baby's first birthday party? Having subs, but what else?

A. If you are looking for things the kids will like go with finger foods. Goldfish crackers, small sandwiches (like cut in quarters), cheese cubes, home made chicken nuggets, jello jigglers, . A not healthy but kids love it option are those cheesballs, like corn curls .

Rachel Ray has a book called YUM-O with recipes for kids you might be able to have some of those online.

Maybe have cupcakes instead of cake, they are always a hit with the little ones.

Juice Boxes or other kid friendly drink.

Coffee for adults :) Also good to go along with subs are raw veggies and dip. Also good for the adults are whole water chestnuts wrapped in bacon, coated in bbq sauce and baked in the oven, Yum!

Q. We need more ideas. Our favorite to date is Sweet Potato Balls.

Mix Together:
insides of 2 sweet potatoes
1 beaten egg
2 tablespoons milk

Form into balls and roll in
1/2 cup wheat germ
1/2 teas. fresh finely minced parsely

cook by baking on greased baking sheet in pre-heated oven for 10-15 mintes or until egg is throughly cooked.

Q. So far I cook healthy for all the family, adding a glug of extra virgin olive oil where suitable for baby's and daddy's portion (im trying to lose some weight)..but I'm running out of ideas and need some cute healthy toddler meal ideas..

A. When I cook for my family, I usually find recipes in magazines (I tear out the recipe and put in my recipe binder) or from Allrecipes.com. I usually have something in mind I'm looking for and search for it finding the one that has the most natural ingredients possible.

Go to Parents.com to find some family friendly recipes (these are healthy! for the most part) but they also have ideas that are fun and exciting. For instance, cutting up a waffle (placing it back together) and putting blueberries in the little squares to make a picture or letter.

Adding pumpkin to pancakes makes them orange plus nutritious

When I make my son a toasted cheese sandwich, I make a face in the top piece of bread. Thinks its funny!

Serve homemade soup, add a couple pieces of crackers in a smile.

Otherwise, I just place his food on one of his cute plastic plates.

What are some healthy on-the-go lunches that I can make ahead of time?

Q. I have class from 11:30 AM - 6:30 PM with just a few 5-15 minute breaks. I need some HEALTHY and CHEAP lunches that I can make ahead of time and eat fairly quickly. I stress healthy and cheap because I'm a college student on a very limited budget and I don't want to eat junk food every day. I'm also tired of the same old sandwich and wrap ideas because eating the same thing every day gets pretty boring.

A. Hi Jasmine, Wish I knew what you've been talking in your lunch or what your tastes are.

Shredded veggies with different kinds of meat and different spices with olive oil or different salad dressings are basic idea to expand on. You can add fruit into a chopped chicken salad.
In the recipe below, you don't have to use chicken breast and grill but you can use the ingredient ideas with chicken. You don't have to use all the ingredients either.

Caribbean Style Chicken Salad (You can put this in a pita, wrap or on a roll also.)
Ingredients

* 1/4 cup lime juice
* 1 tablespoon red wine vinegar
* 1 clove garlic, minced
* 2 tablespoons honey
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup olive oil
* 1 pound skinless, boneless chicken breast halves
* 1 ripe mango, peeled, pitted and diced
* 1 (15.5 ounce) can black beans, drained and rinsed
* 1 red bell pepper, seeded and cut into thin strips
* 1/2 jicama, sliced into matchsticks
* 1/2 head green leaf lettuce, rinsed and torn

Directions

1. Whisk together lime juice, red wine vinegar, garlic, honey, salt, and pepper until blended. Slowly whisk in olive oil until incorporated. Mix half of this dressing with the chicken breasts, cover, and refrigerate for 1 hour. Refrigerate the remaining dressing for later use.
2. Heat an outdoor grill for medium-high heat.
3. Grill chicken breasts until no longer pink, about 6 minutes per side. Set aside and allow to cool while proceeding with recipe. Toss together mango, black beans, bell pepper, and jicama in a large bowl with reserved dressing. Slice chicken into bite-sized pieces and toss with salad.
4. To serve, line a serving bowl with the green leaf lettuce and mound the chicken salad into the middle.

What do you do when you can't decide what to make for dinner?

Q. I'm the one responsible for cooking for my husband and I and we are trying to eat healthier meals. I'm in a rut!! I enjoy cooking but I get tired of always deciding.

For instance tonight, grilled chicken sandwiches (or something else with chicken), pork tenderloin? Salmon in the freezer? And then what about side dishes? I have carrots, broccoli, salad, cauliflower.

Please help!

A. I have a hard time deciding also, which makes cooking frustrating. So I have gone to various food recipe websites such as Rachel Ray's, Martha Stewart's, and allrecipes.com to find new recipes to try out. There are plenty out there, so I just look what main dish I want to eat (such as beef) then look online, and usually find something appetizing. Good luck!

Btw: with the ingredients you have, you could make a chicken pot pie, or a chicken-broccoli baked calzone.

A. Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). I’d try the recipe, if it’s good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon

3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)

3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

- Egg whites (better for you than the whole egg) with a little salt and pepper, maybe some cheese to add flavor, on wheat toast.
- Grapefruit (it's sooo healthy for you, it can be a snack too)

- All fruit smoothie. Have non frozen fruit and add ice or use frozen fruit and add a little 100% fruit juice. You can make it a *healthy* milk shake by using low fat milk instead of juice and adding a little sugar (sugar isn't unhealthy in small amounts, but fake sugar like sweet and low and equal are bad for you)

Lunch/Dinner:

- Chicken breast with lemon pepper or other seasonings
- A spinach tortilla with chicken cooked in some bbq sauce. Add lots of lettuce and a little bit of light ranch (like a teaspoon, if even that).
- Salad- there are thousands of possible salads you can make but what I love doing is a bunch of lettuce, some spinach if you like that, salt, pepper, garlic (powder and only a small amount) and vegetables like tomatoes, cucumbers, or even carrots and peppers
- Taco Salad: brown some lean beef, drain any fat, add seasonings (McCormick has a taco seasoning packet for 50 cents). Make a bowl full of lettuce, tomatoes if you want, some beef, some cheese if you want, and tortilla chips if you want (less healthy version).
- Chicken in a bag- McCormick's has these awesome chicken bag seasonings where you throw chicken in the bag (they provide) with some carrots, potatoes, whatever you want, add the seasoning and bake for about an hour. One of my husbands favorites!
- Costco sells individual salmon fillets. Take one out of the fridge/freezer, season to your liking, throw on a pan, the grill, or in the oven and cook.
- a sandwich- between whole wheat bread slices, pita style, or wrapped up (spinach wraps are really delicious, or whole wheat wraps which I'm not a huge fan of).
- Make some quinoa or brown rice in a rice cooker or in a pot if you don't have one. Add some black beans, salt and pepper, and some mozzarella if it's still to bland. I like to add some sriracha (chili hot sauce) into the rice as it cooks and some garlic seasoning. It adds some kick and makes it taste really good without adding the sodium from cheese.

Snacks:
- peppers
- celery. If you hate it alone add some organic peanut butter (no preservatives) you can even go to many stores and grind your own peanuts into peanut butter.
- peas, green beans, cucumbers, tomatoes, other vegetables but not potatoes or corn.
- apples, pears, bananas, berries, grapefruit, and other fruits.
- some nuts or a homemade trail mix (raisins, peanuts, almonds, some dark chocolate chips, whatever else you want)


Dessert
- a small amount of dark chocolate is actually really good for you. The higher the cocoa content the better :) But only a small amount.

A. Determine your daily calorie intake . Losing weight is simply a matter of expending more calories than you take in, through exercise and your daily activities. To win the battle, it helps to know how many calories you are consuming in a day.

* Write down all the things you eat on a typical day. Carry a small notebook with you and write down every snack, every drink, and the contents of every meal. There are also great websites that you can use to keep track of calories, get recipes, and help achieve your goal. Don't forget to include the pats of butter or the spoonful of sugar in your coffee. It's best to do this for at least a couple weekdays and a weekend; it's even better if you can go a full week. * Do an itemized calorie count. When possible, write down the number of calories in each thing you eat as you eat it. You don't have to be 100% accurate, but you do want a good estimate of the number of calories you're taking in. There is an idea that multiplying your own weight by ten will produce a rough estimate of the number of calories you need to eat per day to maintain your weight. This is NOT true, you may wind up grossly under (or perhaps over) estimating the number of calories you should be eating. Use a scientific or health website to determine the number of calories you should eat a day or consult your doctor. Everyone has different metabolisms and there is no blanket rule that covers everyone's recommended calorie intake. Reducing 500 calories per day from the calories you eat to maintain your weight can help you lose a pound of fat per week.[2]

# Go over the list and decide which foods to cut out or reduce. Cutting calories is usually a lot easier than you might think. For example, that daily tall latte in the morning may pack 500 calories. Since a pound of flab (lost or gained) is roughly equivalent to 3,500 calories, replacing that rich beverage with black coffee can help you lose a pound a week. Other easy cuts include salad dressing (salad dressing is the number one source of fat in the average American woman's diet) soda pop, candy, and butter. Look at the nutritional information for the foods you eat, pay special attention to your intake of saturated fats and empty calories (high-sugar foods). You don't need to cut these things out entirely, but if you reduce your intake of high-fat, high-calorie foods you'll lose weight faster.

* Choose lean meats. Chicken and fish are both very low in fat (and certain fish like salmon, sardines, and fresh tuna are an excellent source of antioxidants, which are also beneficial to your health), so aim to replace some or all of the beef or pork in your diet with these foods.
* Replace high-calorie side dishes with healthier alternatives. Many people get a ton of calories from side dishes such as macaroni and cheese, French fries, or potato salad. You can eat healthier and lose weight by replacing these with fresh vegetables and salads. Pre-made salads are practically effortless, and when accompanied by a reduced-calorie dressing or no dressing at all, they're weight-loss gold.
* Start your days off right. A fattening breakfast of bacon and eggs or a pastry can be replaced with yogurt, oatmeal, high-fiber, low-sugar cereals; or fresh fruit for fruit smoothies. However, for those on a low carb diet bacon and eggs are a great combo for breakfast, since neither have carbs. But don't fall into the trap of skipping breakfast. Eating a healthy breakfast increases your rest metabolic rate earlier in the day, and reduces snacking before lunch.

# Plan your meals. Look for healthy, delicious meals online or in your cookbooks, and create a menu for the week. Make sure that your meal plan reduces your total calorie intake: you're not going to lose weight if you consume the same amount of calories by eating different foods. Make a list of what you'll need for these meals, and -- except for a few snacks, of course -- don't stray from your list when you get to the market. A. I did this and lost 40 lbs in just under 3 months:
Breakfast: Choose one

Fiber One Cereal: There are like 8 different choices on flavors, caramel, fruit, honey, raisen bran, original, ect. All very healthy for you and a great way to start off the day with minimal sugar and a boost of fiber. (1 full cup of cereal + milk is more than I can eat and it's less than 200 calories)

Thomas Whole Grain English Muffins: If you're in the mood for some warm bread, pop one into the toaster and spread some organic peanut butter, No sugar added jam, or I can't believe it's not butter for a warm and delicious breakfast pastry (Note: buy peanut butters in which the oil is at the top and you have to mix it in; avoid brands like Skippy or Jif.) (Each english muffin is 100 calories but be careful of toppings, they add up quickly)

Egg Beater/Egg Whites: You can buy cartons of egg beaters or egg whites in the store. they are delicious, you will not be able to tell the difference between them and regular eggs. Except for the fact that EB/EW cook faster and more easily than regular eggs with no beating the eggs or shells to clean up. Make an ommlete or scrambled eggs and throw in some chopped peppers, spinach, turkey bacon, or skim cheese.

For luches and dinners I recommend Clean Eating. It's a delicious way to Eat without lots of sodium, or artificial chemicals. I have lost 40lbs eating clean. And in over a year of cooking there meals, not ONCE have I been disappointed with the flavor of their recipies!

But, if you were to follow my advice, eating one of my breakfast options at about 300 calories, a clean lunch at about 300 calories, a dinner at about 300-400 calories, and a dessert at about 150, you ate 3 HUGE meals and a decadent dessert at a grand total of 1050-1150 calories a day.

The average male burns about 2400 calories in one day without working out (females is anywhere from 1600-2200 depending on many, many things; you guys are just.... complex =P, also keep in mind this is an average. If you are 6' 8'' 300 lbs you would burn more than average, If you were 4'8'' 100lbs, you would burn less.) A Pound is equal to 3500 calories. therefore without working out, you will lose a pound every 3 days. stick to the diet for a month and you are at 10 lbs, do it this fall: 30lbs. I dropped 40 lbs in 3 months (although I did run once or twice a week but nothing too intense, but that was negated by the fact that I cheated on days I ran by going to my local bakery and ordering all sorts of sweets for breakfast!)

A. You just have to take it one day at a time, and don't give up! It takes a while to lose weight, but in the end, it's worth it. Trust me, if losing weight was easy, we'd all be thin. You're going to have to be committed to this goal.

DO NOT starve yourself by going on a crash diet. It doesn't work, believe me! Sure, you lose weight, but not the weight you want. Your body eats at muscle mass and bone first. Your heart is a muscle, so by doing this, you can cause extreme damage. Then once you do actually eat something, it turns directly to FAT because your body is trying desperately to store excess calories & food for energy because it thinks that its starving - And you end up gaining everything you lost, and then some!

Try eating more fruits and veggies in place of other fatty meals, like junk food, cookies, or high calorie meals. Like most people (I'm guilty sometimes!), you've probably brainwashed yourself into thinking that fast food tastes better than healthy food, but that's not entirely true! Try eating MorningStar Garden Burgers, grapes, clemintines, apples chunks in vanilla yogurt (good for sweet cravings!), blueberries, hummus (it sounds gross but it's really not, you can make low-calorie wraps with whole-grain wraps), granola, low-fat yogurt, low-fat string cheese, light brand whole wheat bread, 100 - calorie popcorn / kettle corn bags, steamed broccoli with a buttery garlic sauce, microwavable veggies etc. I also snack on South Beach Diet oatmeal chocolate chip cookies, sugar-free puddings, sugar-free popsicles for chocolate cravings. And eat SLOWLY. Take one bite at a time, chew completely, then take another bite. If you eat slower, you'll become fuller quicker, and you won't overeat. Drink a glass of water before each meal - You'll feel fuller faster and won't overindulge. Try to spread your meals out so that you're eating 5-6 smaller meals throughout the day - It keeps your metabolism up to speed. Try bringing a sandwich or a bag or fruits with you to eat at work or in your locker between classes.

Incorporate more exercise into your daily life. Take the dog for a 20 minute walk, do jumping jacks while watching TV, do laps around the block, or the house for that matter. Don't let yourself sit down for too long. If you can, get a gym membership. I use an elliptical for 30 minutes 5-6 times a week and it works great for me.

And don't eat out of boredom! It's a nasty habit to break, TRUST ME. Whenever you feel like eating, watch a movie with no commercial breaks so you don't have time to get up, call a friend, read a book or magazine, or get out of the house, away from the food.

And don't "DIET". Because the moment you go off your "diet", you'll regain the all the weight you lost quickly, believe me. Instead, make "healthy living choices."

I recently lost weight, about 20 lbs, and what really helped for me was planning my meals. I planned when and what I was going to eat, and made sure the calorie count was 1400. For your height and weight, I'd recommend 1800 calories a day. But never go under 1200! Whatever you do, don't let yourself stray from your plan. Write it all down or type it out and leave it up on your computer so you don't forget, that's what I do.

You'll never get to your "ideal" body by eating crap food and sitting around, no matter how much you want it to happen. It takes dedication to get the body you want! Make it like a game. How much weight can I lose? Prove it to yourself you DO have the willpower to get what you want.

But allow yourself a cheat day every now and then. Life is too short! If you restrict your body of all the "good foods", you will one day EXPLODE and eat everything in sight. Trust me!

One more thing: Once you do become thinner, DON'T think you can eat whatever you want now! You'll regain all the weight back, which is absolutely mortifying, especially after all the hard work to lose it.
