Sandwich recipes (reasonably simple, healthy, and priced)?

Lila.Bella

I poked around on the internet, but got overwhelmed and put off. Most recipes
1. call for gourmet ingredients only sold at Central Market
2. are unhealthy ("add 1/2c of mayo..."),
3. are complicated ("preheat the oven to 375 while you caramelize the onions...")
or 4. overdo the concept of 'cheap' (pb&j, bologna, etc)

I don't mind some prep work and spending - I just want things to be reasonable, you know? I want something tasty that I can throw together in <30min that won't make me fat, broke, or have a heart condition. Thanks! =)

Answer
grilled cheese- but with swiss and green apple slices

toasted turkey and thick bacon with fresh spinach, tomato and red onion

chicken or tuna salad...with spinach or lettuce

roast beef with whatever you like on it...

It's good and inexpensive to experiment with different kinds of mustard, vegetables, breads and meats. I Love alphalpha sprouts on almost anything and ciabatta bread...you can make wraps instead, it's easy to find some good flavored tortillas, and if sandwiches are boring you, switch to experimenting with salads for a week or so. Even fruit salad. You can also do a lot with yogurt...

Find a grocery store that has a great selection of vegetables at decent prices, where I am Fred Meyer has the best selection for the best price so I only buy from there. Wal-Mart always has bananas for 28 cents a pound, so I only buy them there....

I'll give you my Very favorite sandwich recipe that I made up and submitted to AllRecipes (I don't think they took that one though...I think there was a similar recipe they already had). It's not exactly what you are looking for, but it's great and you can make the stuff for it in larger quantities if you like it and just keep it in the fridge. The pesto sauce and artichoke/olive stuff can stay good in the fridge about a week.

Ingredients

* 1 package of Hoagie Style rolls
* 1 small jar black olives, sliced
* 2 cans artichokes, drained
* 1/2 cup crumbled feta cheese
* 3 tbsp olive oil
* sun-dried tomato spread
* 1 package of creamy pesto sauce
*

Directions

1. Prepare creamy pesto sauce according to package directions.
2. In a skillet, heat olive oil over medium heat.
3. Add drained artichokes and black olives to skillet, stirring often for about 15 minutes, while breaking up artichokes.
4. Pre-heat oven to 350.
5. Add the feta cheese to artichoke and olive mixture, heat an additional 5 minutes or until cheese is melted and mixed in.
6. Split and toast the hoagie rolls in the oven, about 5 minutes.
7. Spread the sun-dried tomato spread on the bottom side of the hoagie roll, layer a generous amount of the artichoke mixture on top of that, drizzle with about 2 tbsp of the creamy pesto sauce on top, add the top piece of the roll, and enjoy!

What is a healthy sandwich using fresh chicken?

CLICKY HER

I have some fresh chicken that was pretty recently cooked. What are some sandwiches that are low calorie and use chicken? The lowst calorie bread i have is dark rye bread (70 calories per slice) (but i only have one slice left), or the next lowest is 100% whole wheat bread at 90 calories per slice. So the only way i could use the dark rye is if i had an open faced, or a half sandwich. What are some good recipes that you would suggest? Please not too much cooking or presperation, and please include the calorie count of the sandwich, Thank you so much! (btw, this isnt the only kind of recipe i want, but i particularly like spicy chicken sandwiches)

Answer
CHICKEN SALSA SANDWICH GRILL

4 boneless skinless chicken breast halves
1/2 cup salsa
3 whole garlic cloves
2 tablespoons olive oil
1/3 cup shredded cheddar cheese
4 hamburger buns
4 large lettuce leaves
seasoned salt
pepper
a few drops fresh lemon juice (optional)

In a skillet, saute chicken with garlic cloves for 5-7 minutes on each side until chicken is white and opaque or until done (165°F). Turn garlic cloves until both sides achieve a roasted appearance, then crush them into the oil using a fork. Remove if the cloves begin to brown, as this will make the oil bitter.

Meanwhile, brush hamburger buns lightly with a few drops of olive oil (or melted butter if preferred) and broil or toast until lightly golden on the inside.

Remove skillet from heat. Slice each chicken breast into 3 or 4 pieces and divide evenly onto toasted buns. Sprinkle lightly with seasoned salt and pepper, and a few drops of freshly squeezed lemon juice, if desired.

Top with salsa and shredded cheese; run under broiler just until cheese has melted, about 2 minutes.

Variation: This can be prepared on the outdoor grill. Marinate chicken breasts in olive oil into which the garlic cloves have been pressed for 30 minutes before grilling chicken over hot coals.

Makes 4 Servings.

How many calories does a Lee's Sandwiches Avocado Smoothie have?

Q. I know Lee's doesn't post up nutrition facts, but I was wondering if anyone knew the number of calories or the exact ingredients in the recipe.

Answer
Lee's Avocado Smoothie is an interesting drink, but it really is not all that healthy. The avocado is great, but high in fat (albeit, good fat).

On top of the avocado, the ingredients include ice cream, milk and sugar (according to Lee's employees), which gives it a sweet taste . . .

But also makes it high in calories.

Here is the breakdown:

1/2 of 1 Avocado = 161
1 Cup Ice Cream = 314
1/2 cup Skim Milk = 45
2 Tbsp Sugar = 93

This combined gives you a grand total of 613 Calories.

This is an approximate estimation based, but I am sure that it is pretty close.

Good luck and I hope that you ENJOY your smoothie!!

To ease your mind:

Avocados have 60% more potassium than bananas. They are rich in B vitamins, as well as vitamin E and vitamin K. They have the highest fiber content of any fruit - including 75% insoluble and 25% soluble fiber. So really . . . ENJOY!

EDIT: I've made black bean brownies, and they were great! They tasted just like chocolate brownies. This is what you should have done. If you didn't, try it again...

You will need:
1 chocolate cake mix
1 can black beans (15 oz, I think)

Drain and rinse the beans well. Then, with the beans still in the can, fill the can up with cool water. Pour the entire contents of the can into a blender or food processor and blend until completely smooth. Mix this puree with the box of cake mix and blend well. Pour into a prepared pan, and bake according to the box directions.

Need easy, healthy lunch ideas!?

cryinginsi

So, I used to have only my little sister to look after and we usually ate Ramen Noodles, but now I have to feed myself, my little sister, my 2 step-brothers, and my step-dad's mom. My 2 step-brothers and my step-dad's mom are very picky eaters. My step-brothers don't eat onions or spicy things or vegetables if they can help it. My step-dad's mom, however, doesn't eat, wait for it, GREEN VEGETABLES! I have no clue how to cook like this! I usually cook very healthy for other people, but now it seems like I have to hide all of the ingredients.
So, anyway, I need easy, healthy, and altogether, good lunch food recipes.
Thank You,
Ashley

Answer
Some ideas:

Chicken tenders/fingers
Leftovers, whatever's leftover from dinner the night before make into sandwiches the next day. Flank steak with lettuce, salt and pepper makes a great lunch, roast beef, fried chicken, pizza, etc, ziti, lasagna warmed up, these all make great lunches. Whatever you've had the night before, warm up the next day for lunch!

Tuna fish sandwiches or tuna salad
Egg salad sandwiches or just egg salad
Omelets

Salad, but add some chicken, tomatos, olives, carrots, hard boiled eggs, cucumbers, fennel, onions, etc.

Wraps, either with cold cuts or with chicken and add lettuce and tomatos. Put on a tortilla and cut in half.

Spaghetti or pasta

cold cut sandwiches

Peanut butter and jelly sandwiches
Bagel with cream cheese or peanut butter

Grilled cheese sandwiches
Hamburgers and hot dogs
Soups
Mac and cheese
Cheese and crackers with fruit

Fruit salad with lemon juice sprinkled on top so it doesn't turn brown

Fruit slices with peanut butter
Cut up carrots, celery, and veggies with dip
pancakes or waffles, as long as they like it!
Scrambled Eggs

I hope some of these ideas help!

Is this a healthy sandwich recipe ?

Nick

White bread (the one you use for toast ) processed cheese ,sliced jam tomato Lettuce mayo honey-mustard salt and pepper ??

Answer
Not exactly. Processed anything really messes with a persons system.

If you HAVE to eat bread, go for the least processed. Make it yourself. Just because it's "Heart Healthy" that doesn't mean anything.

I just found this out a few days ago, but grains have no real nutritional value. At all. As in our bodies don't need it because we can't really process it correctly. Back in the day, people ate bread during famine and hard times. It was meant to be eaten as a last resort when you had to have carbs because you had nothing else.

Just food for thought...

Healthy breakfast sandwich recipe?

CLICKY HER

Please not one on an english muffin. One that i can make with just plain bread, or toast. And preferably no eggs, just either chicken, or any kind of lunch meat. Thankyou!
please include how many calories it is! Thanks
The lowest calorie of bread i have is one slice of dark rye bread (70 cals per slice) so that would only work if i had a half sandwich or an open faced. And the next lowest calorie bread i have is 90 calorie per slice whole wheat bread. And if the sandwich you list isnt enough to have only that for breakfast, please tell me what would be a good addition to it?

Answer
anything you would put together for lunch will also work very well for breakfast!

cheese and cold cut lunch meats with maybe a thin slice of tomato and a leaf of lettuce? I roll all that in a flour tortilla and call it a burrito. but you can use bread if you have only bread.

Healthy/Easy recipes?

Devin!!

Ok all you cooks out there I need some help!

I want to cook my family an absolutely delicious meal that is extremely healthy and made up of cancer-fighting ingredients, weight-loss friendly foods, and just an overall extremely healthy, yet easy meal.

I would prefereably like it to be things that most people have in their house or ingredients that arent to expensive to buy.

Do you know of any drink recipie, main course and 2-3 side dish meal like this?

I appreciate it so much!

Answer
Healthy dinner? No problem! ;)

Here's a menu for a soup-sandwich combo! Start with Chilled Tomato Soup, next comes Turkey Veggie Wraps and a side of Tangy Coleslaw. Also included is a delicious smoothie recipe =)

Chilled Tomato Soup:
1/4 cup olive oil
3 cups peeled and thinly sliced onions
3 tablespoons thinly sliced garlic
2 bay leaves
4 pounds firm, heirloom tomatoes, cored, seeded, and cut into eighths
1 tablespoon plus 1/4 teaspoon salt
1/2 teaspoon thyme leaves
4 cups water
2 cups chicken stock
2 tablespoons lemon juice
Hot sauce

In a large saucepan over medium heat, heat the olive oil. When the oil is hot, add the onions and saute until soft, about 5 minutes. Add the garlic and bay leaves and cook for 5 more minutes. Add the tomatoes, 1 tablespoon salt, and thyme and cook for 15 minutes or until the tomatoes soften. Add the water and stock and bring to a boil. Reduce heat to a simmer and continue to cook until the tomatoes are very tender, about 10 minutes. Remove the bay leaves. Using a handheld blender, puree the soup until smooth. Chill the soup. Add 1 tablespoon of the lemon juice and hot sauce to taste, as desired.

Turkey Veggie Wraps:
2 cups coarsely chopped smoked turkey breast (about 8 ounces)
2 cups gourmet salad greens
1/2 cup fresh corn kernels (about 1 ear)
1/2 cup chopped red bell pepper
1/4 cup thinly sliced green onions
3 tablespoons light ranch dressing
4 (8-inch) flour tortillas

Answer
This is an easy vegetarian recipe for whole grain quinoa flavored with garlic and Parmesan cheese. Although this is a very basic recipe, you can vary it by adding some fried tofu or whatever veggies you happen to have on hand. For a vegan version of this quinoa recipe, I smothered my quinoa in nutritional yeast instead of Parmesan cheese and used olive oil in place of the butter.

Ingredients:

1 tbsp butter
1 small yellow onion, diced small
3-4 cloves garlic, minced
2 cups vegetable broth
1 cup uncooked quinoa
1/4 tsp salt, or to taste
1/4 cup Parmesan cheese

Preparation:
In a medium sized pan, sautee the onion and garlic in butter or olive oil over medium-high heat for 3-5 minutes, until onions are just soft. Reduce heat to medium low.

Add the vegetable broth and quinoa. Cover, and allow to simmer until liquid is mostly absorbed and quinoa is cooked, about fifteen minutes.

Remove from heat, and gently mix quinoa to distribute any excess moisture. Season with salt to taste, and top with Parmesan cheese, or, for a vegan version, mix in nutritional yeast instead of the cheese.

Makes 3 servings of vegetarian quinoa.

What are some healthy, delicious sandwich recipes?

Nick Saiz

Please put something healthy and unique, not just Peanut Butter and Jelly.

Answer
This is a great sandwich.........

Veggie and Cheese Bagel Sandwich...............

½ of a block Cream Cheese
2 whole (to 3) Green Onions
Tomatoes
Cucumbers
Avocado
Red Onion
1 whole Everything Bagel (or Any Kind Of Bagel)
Alfalfa Sprouts.....optional
1 Or 2 Slices Of Muenster Cheese
Slice Of Cheddar Cheese
Lettuce ...I use Romain..your choice...

Place ½ a block of cream cheese on a plate and mash it a bit with a fork. Next.. chop up 2-3 green onions and mix them with the cream cheese until thoroughly combined....
Slice all veggies (tomatoes, cucumbers, avocados, red onions) thinly.
Split the bagel. Then toast it. Then let it cool completely. Toasting it gives it the perfect crunch and flavor, and texture Toasting is optional of course....... Spread the cream cheese generously on both sides of the bagel.

Layer the vegetables. First lay the avocados right along the cream cheese to help them stay put. Next the alfalfa sprouts which are optional and then one slice of each kind of cheese. On the other half of the bagel arrange the cucumber slices in a circle. Sprinkle the cucumbers with a pinch of salt if you would like.
Next lay the onion slices on top of the cucumbers, then the tomatoes, followed by a slice of lettuce, and if youâre feeling naughty, another slice of Muenster cheese. LOL

Put the whole thing together and Voila A cool, crisp, and deliciously fabulous Veggie and Cheese Bagel Sandwich.

Enjoy..Its mouth watering...

Healthy Vegatarian recipes?

Jane Doe.

Hey, does anyone know any good vegatarian recipes? Relatively easy to make, and something healthy. Anything with proteins and nutrients that vegatarians need. Also, do you know any foods that are good for vegatarians, like beans, eggs, and lentils? By the way, i'm 15, if that gives you a better idea of what i should eat.
Thank you. :)

Answer
I just made an awesome sandwich today which is super healthy AND delicious! It's inspired from a sandwich I ate at a really good Italian restaurant.

Grilled Portabella Mushroom Sandwich:

1 portabella mushroom cap, rinsed well and patted dry
1 jarred roasted red bell pepper
2 slices fresh mozzarella cheese
3 slices plum tomato (or any other ripe, red, juicy tomato)
1 tsp basil pesto
1 multi-grain baguette or roll

Marinate portabella mushroom in some olive oil, balsamic vinegar, salt, and black pepper for 10-15 minutes. Then grill the portabella mushroom for 5 minutes on each side or until tender. Place in sandwich bread and top with roasted bell peppers and sliced mozzarella. Put in toaster oven open faced until cheese melts. Then add sliced tomato, close, and enjoy! Yummy.

If you don't like mushrooms, you can substitute them for eggplants.

For eggs, I would recommend a veggie omelet. My favorite is a Spinach omelet. I just blanch some (about 1 1/2 cups raw) spinach, drain, and squeeze dry. Then crack two eggs in a bowl and add the spinach. You can also add some feta cheese as well if you like. Then heat up some olive oil in a pan (about 1-2 tbsp, just so the omelet doesn't stick) and add your egg mixture. Cook for about 3 minutes or until you can easily flip the omelet. Cook for an additional 30 seconds to 1 minute or until omelet is not runny. Serve with toasted whole-grain bread and you have a healthy delicious meal!

You can also make an easy vegetable sandwich with hummus. Just get some whole-grain pita bread, spread your favorite hummus inside, add some crumbled feta cheese, some sliced olives, cucumber, and tomato, and some romaine lettuce and you're done. This sandwich is the best to make when your in a hurry and don't have time to cook up a lunch.

For beans, you can buy a can of black beans and make a tex-mex (Mexican-inspired) salad. Just mix a 1/2 cup rinsed and drained canned black beans with chopped romaine lettuce, shredded cheddar cheese, chopped avocado, tomatoes, cucumber, red bell pepper, cooked corn kernels, and drizzle with lime-cilantro salad dressing (look for it in your grocery store or use this recipe: http://www.recipesource.com/side-dishes/dressings/00/rec0099.html). Toss to combine. Add some corn tortilla chips to it if you don't mind the extra fat and calories. =)

Hope this helped!

Five minute healthy meals?

Angela

I am trying to compile healthy recipes for my mother for Christmas. One problem she has with eating healthy is she feels it takes too long (not saying I agree with her). She has health problems which have definitely been worsened by her diet. I really love her and have been trying to get her to eat healthy for years.

Another thing I am going to include is a list of foods that I can cook before she gets home, so that she doesn't have to worry about time.

She wants to eat healthy, but she just doesn't know how.

Does anyone have any ideas on fast meals that are also healthy? Some ideas I had were tuna sandwiches, soup, canned vegetables, baked potatoes, tacos, mashed potatoes, and fruit salad. I also included snacks, such as yogurt, bananas, apples, and carrots.

If anyone has any ideas or knows where I could find some recipes, I would be very happy to know.
Thanks, foodieNY, those are wonderful ideas :).
Human:
Are you saying salad, tuna sandwiches, baked potatoes, soup, and canned vegetables cannot make healthy meals?
Are you also saying that those three-minute, processed "diet" meals are actually healthy?
Kiwi:
Yes, I realize that preparation is very important to making foods healthy. I am thinking of also including some tips on how to make them healthier.

---

To be honest, even if she eats these foods in the less-healthy way, it would be better than the stuff she eats now.
And no, I do not mean just "low-fat."
Been There:
Thank you so much. Your answer is very useful.
I forgot about the lost vitamins thing. I think I will write a note about that.

Answer
Tuna sandwiches: are moderately healthy, especially if you use low-fat or non-fat mayonnaise and if you put lettuce on them. Don't eat tuna too often, not more than once a week, because of the high Mercury content.

Soup, if made from scratch is very healthy. If canned, most of the vitamins have been destroyed by the canning process. Same with eating canned vegetables. The healthiest way to eat vegetables is to eat them fresh and raw. Second healthiest is steaming fresh vegetables or cooking up frozen vegetables.

The healthy part of potatoes is the part right up against the outside skin. Most of the rest of the potato is quickly-digested starch. While it has some vitamins in it, the speed with which the starch goes into our bloodstream can be bad for our pancreas. Mashed potatoes, unless cook and mashed WITH the skin left on, are not very healthy at all.

Fruit is good, but canned fruit salad - like vegetables - has lost most of its vitamins.

Tacoes are relatively healthy, especially if packed with lettuce and tomato, and you go easy on the cheese (which is high in fat and salt).

Good 5-minute meals:
1. Microwaved instant oatmeal, with fresh berries and vanilla yogurt.
2. Whole wheat pita, sliced in half and opened into a pocket, stuffed with sliced chicken breast, sliced green pepper, sliced cucumber, sliced lettuce, and just a bit of low-fat Ranch salad dressing. Served with a cup of milk.
3. Scrambled eggs, buttered whole wheat toast, fresh sliced tomato, glass of milk. But don't eat eggs more than twice a week.

Generally, healthy eating should have daily portions of:
1. Protein: chicken, fish, peanut butter.
2. Oils and healthy fats. Cook with olive oil. Margarine. You don't need much of these, but you do need a bit every day. 10 almonds a day provide both oils and some protein. Raw walnuts have Omega 3 in them.
3. Whole grains: Brown bread, brown rice, brown basmati rice
4. Vegetables: raw fruit is the best.
5 Fruit. Not too much, it's high in sugar.
6. Milk and yogurt.

Stirfry is an excellent way to get good nutrition. I add chicken or shrimp for protein, although sometimes I will make a beef stir fry. I add whatever veggies I have on hand: broccoli, cauliflower, green pepper, carrot, celery, bok choy, cabbage, bean sprouts, garlic, onion, zucchini, mushrooms. And I serve it over brown rice. Sometimes I cook up rice noodles instead. Or both rice and rice noodles.

Your mother is an adult.
She needs to do what she needs to do .. this is how adults behave.
If she needs to eat properly, and if that takes more than 5 minutes to prepare, then she needs to take more than 5 minutes to make her meals.
This is not optional.
If she cannot or will not take care of herself, then she can no longer remain within her home and will have to go into assisted living.
The choice is hers.

Hey, does anyone have any HEALTHY breakfast recipes that will fill me up in the morning?

Dot

I'm in highschool and I needed some quick, nutritious ideas. Thanks a bunch!

Answer
Please be careful with the "to go" bars. The quaker oatmeal bars all contain hydrogenated oils and other terrible preservatives. Kashi makes some great bars. Their pumpkin bars are amazing!! Some other things you can do is to hardboil eggs so that when you get up in the morning you can just grab one and go. Make yourself a sandwich the night before. There is nothing wrong with grabbing a sandwich in the morning. I would suggest oatmeal but that takes a bit more time. Get some preservative free graham crackers. Eat them plain or spread natural peanut butter on them and grab a banana.

If you have time to throw something in a blender there are a ton of smoothie recipes you could make. Invest in a good travel cup with a straw or whatever so you can make your smoothie and go.

String cheese or other kinds of cheese. They make all kinds now that are already cut and easy to take with you. Bake muffins on the weekends (if you are willing to bake). Then you'll have muffins for the week. Or do the same with healthy cookie recipes. There are also all kinds of recipes for cereal and granola bars. If you're willing to put in a littl work on the weekend then you'll have quick breakfasts for the entire week.

There are all kinds of things you can do. Just be imaginative and willing to think outside the box. And try really hard to avoid the prepackaged convenience foods because they are not healthy--even if many of them say they are. If they have a list of preservatives then they are NOT healthy.

Looking for an out of this world recipe for peanut butter cups, I so adore that candy, if you can help thanks so very much. Please something that is close to Reeseâs peanut butter cup, and if you had tried the recipes please say so. Thanks for all your help and have a wonderful day!!! Happy Cooking!

Answer
This recipe is a copycat recipe for Reese's Peanut Butter Cups. They take some time to make, but it's well worth it.
Ingredients:

* 1/3 cup powdered sugar
* 1/4 cup sour cream
* 2 tablespoons heavy whipping cream
* 1/4 teaspoon vanilla flavoring
* 3/4 cup creamy peanut butter (not fresh or natural, they are too runny)
* 1 1/2 bags semi-sweet chocolate chips
* 36 foil mini muffin liners

Preparation:
Mix sugar, sour cream, whipping cream and vanilla.

Stir in peanut butter and refrigerate for 3 hours or longer.

Place muffin liners on cookie sheets.

Melt chocolate chips in microwave or double boiler.

Drop 1 teaspoon of melted chocolate into each liner.

Use a small knife or the tip of a spoon to spread the chocolate about half an inch up the side of the liner.

Refrigerate about half an hour or until chocolate is firm.

Remove liners from refrigerator and drop 1 teaspoon of peanut butter mix into each liner.

Flatten the mix with the back of a spoon, but do not spread to the very edge of the liners.

The remaining chocolate will have cooled and become thick, so remelt it in the microwave or double boiler.

When it is smooth, spoon 1 teaspoon more into each liner, or enough to cover the peanut butter completely and form a flat top.

Refrigerate or freeze until chocolate is firm.

Store in airtight containers in the refrigerator.

Peanut Butter Cup Recipe

Makes 32 - 40 peanut butter cups
Ingredients

* 2 cups of creamy peanut butter
* 1 ½ sticks of butter or margarine
* 2 ½ cups of confectioners sugar (powdered sugar)
* 2 ½ cups of graham cracker crumbs (well crushed)
* 2 teaspoons of vanilla
* 12 ounces of chocolate chips (semi-sweet or milk chocolate)

Directions

1. Melt the peanut butter and the butter together.
2. Remove peanut butter and butter mixture from heat. Add sugar, crumbs and vanilla.
3. Press mixture into 13â x 9â x 2â pan.
4. Melt the chocolate in a double boiler. If no double boiler is available, use two saucepans, one on top of the other. Boil about 2â of water in the bottom pan. Put the chocolate in the top pan to melt. The double pan allows the chocolate to melt slowly, without burning.
5. Pour melted chocolate over the peanut butter mixture.
6. Freeze for 15 minutes.
7. Cut into squares. Refrigerate when not enjoying them.

Variations on this Recipe

Just like Reeseâs has variations on their world renowned peanut butter cup, this candy recipe can be altered in a similar way.

* Replace the semisweet chocolate chips with the same amount of white chocolate.
* Replace the semisweet chocolate chips with a dark chocolate chip to add healthy antioxidants to this sweet treat.
* Use the same amount of crunchy peanut butter in place of the creamy peanut butter.
* Put a layer of chocolate on the bottom of the dish before laying down the peanut butter. Add another layer on top of the peanut butter for a sandwich type peanut butter cup.

Chicken Salad recipe?

Q. Looking for the healthiest chicken salad recipe.

Answer
Healthier Chicken Salad

Dressing:
1/2 cup non-fat plain yogurt
3 Tbsp mayonnaise
2 Tbsp whole-grain mustard
juice of one lemon wedge
2 Tbsp chopped fresh dill
2 Tbsp chopped chives
fresh parsley or tarragon, if you have it!
a dash of salt and pepper

4 skinless, boneless chicken breasts
1 apple, diced
1 small red onion, chopped
1/2 cup sliced green grapes
1/2 cup pecans, toasted and chopped
1/3 cup diced celery, if you have it

Bring a pot of water to a boil. Throw in a tablespoon of salt. Lower the temperature so that the water is barely simmering. It's what Julia Child calls a shiver stage. Add the chicken breasts, cover the pot and let the chicken poach for 10 minutes, maybe 15 depending on the size. Keep the water just at the point where it's beginning to boil and you'll have tender chicken.

Combine the diced fruit, onion, pecans and celery in a mixing bowl. In a seperate bowl, combine all the ingredients for the dressing. Dice the chicken and add to the bowl with the fruit and nuts. Add half of the dressing and toss to coat. Add more dressing as needed, but you might not have to use all of it depending on the amount of chicken you have. I didn't use it all.

Chill for several hours until cold, or make it a day ahead. Serve on some salad greens (spinach leaves are great!) or in a sandwich. Serves 4.

Healthy FAT FREE or VERY LOW FAT Crock Pot Recipes?

Anne C

I need some good crock pot recipes because I have a newborn and teach piano in the evenings so cooking dinner has been a little tricky. My husband and I are VERY healthy eaters, so I am looking for FAT FREE or VERY, VERY, VERY low-fat recipes to use in our crock pot. I've searched online a bit, but so many have a LOT of fat! Do you have any good ideas? Thanks for passing along the recipes, everyone!

Happy New Year.

Answer
this isnt really a recipe.. but I cook a whole bunch of chicken breast in my crock pot once a week and use a bunch of different ways for the rest of the week. Put your crock pot on an 8 hour setting, and put as many boneless skinless chicken breasts in there that will fit, then fill the crock pot with sodium free fat free chicken broth. Always make sure to check the internal temp of the chicken to be sure it cooked all the way.. it should come out very tender, and should pull apart and shred really easy! I put it in ziplock baggies and freeze them, then to thaw just pop it in the microwave for a minute or so, or leave it in the fridge for about an hour to two hours.. and use it on whatever you want!
We use it in everything from whole wheat wraps.. to pita sandwiches.. to enchiladas.. I even came up with a cashew chicken salad sandwich, using yogurt.. that is so good I could eat it every day. you can also make quick chicken soup with it with some fresh veggies, also!
If you want, you can send me a message on here and I will Email you any of the recipes you would like :)

Healthy recipes for work?

Kimberly L

I work in retail and often miss dinner because I'm working. I can't seem to think of meals that I can bring. We do have a microwave, but we don't have a refrigerator. I am also limited because I do not get a break, I have to eat between customers. Any ideas of what I can bring that is healthy and easy to eat, but doesn't require refrigeration?
It's only the law to have a scheduled lunch if you are over 8 hours. I am not over eight hours. I work 3-9:30.

Answer
Consider sandwiches and rolls.
If there is a place where you can keep food cool you could take a meal of leftovers from home or when you do cook a full meal make an extra portion and freeze.
During the day it may pay to keep them in a chilly bin. Thermos have a great range of insulated bags and boxes that will keep hot foods hot and cold foods cold.
There are numerous types of dried packet meals that just require boiling water.
From time to time you could make canned meals, just by opening a can of something like baked beans or a few cans that you can open to make your own meal. Canned sausages, canned peas and canned potatoes. (that would be too much for me using standard sized cans but you can get smaller cans of some foods)

edit.
Looking at your additional detail, have your cooked meal before work and just a lighter meal at dinner time, and as you only have to keep your meal for 3 hours, most foods will easily last that long.
Just remember that if you do have to serve a client to cover your foods

Easy HEALTHY recipe ideas! (breakfast and lunch/dinner)?

A

I am running out of recipe ideas to feed my daughter.

She will practically eat anything, not allergic to anything so it's pretty much open. The only catch is it has to be healthy.I feed her mostly organic with exceptions here and there.

I usually cook enchiladas, tacos, stew, lasagna, pizza, sandwiches, eggs, pancakes, french toast, spaghetti, thanksgiving dinner, cheeseburgers, hamburger helper, hot dogs, ravioli, soups and salads.

On school days, she eats cold cereal and oatmeal for breakfast and on weekends I usually make homemade breakfast.

I am just running out of ideas and was wondering if anybody had any suggestions? (preferably nothing with sweet and sour or teryioki because the smell of both of those make me nauseous and I cannot cook with it)

Any tips to start eating healthy?

*-*

What are some healthy recipes and foods I should be buying/trying? Whats your favorite healthy meal for breakfast lunch and dinner? Also can I still eat beef and chicken?

Answer
The general tips for eating healthily are:

- Choose wholegrain pasta and bread, and brown rice instead of the white variety. They're higher in fibre and will help your digestion. They can also make you feel full/satisfied for longer.
- Eat lots of fruit and vegetables. They're full of vitamins and fibre and pretty nutrient dense.
- Choose low fat milk, cheeses and yogurts. Dairy products are important for calcium. If you're lactose-intolerant, find calcium-enriched types of soy/oat/rice-milk or other calcium-enriched foods. Dairy products, especially yogurt, can help our digestive systems. They're also high in protein, which is needed for our body's growth and repair.
- Fish and lean meat/poultry are better choices than more fatty-types such as lamb and ham. If the meat you're eating has visible fat, cut it off and avoid eating it.
- Eat more unsaturated types of fat, cut down on saturated fat and eliminate trans fat from your diet. The unsaturated fats, found in foods like nuts, seeds, avocados plant oils and oily fish are good for your heart and brain.
- Cut down on salt. Too much salt can cause problems with blood pressure.
- Use cooking methods such as baking, boiling, grilling and steaming over frying and deep-frying.

For breakfast, I quite like having fruit dipped in fat-free yogurt along with some soy milk and a high-fibre cereal bar (the alpen light ones). Sometimes, when it's cold, I enjoy having some wholemeal toast with olive oil spread, egg whites and tomato.
For lunch, I love the layered salads - especially the prawn and tuna ones - that supermarkets like M&S and Sainsbury's do. I also love trying some of their sandwiches - especially salmon or tuna ones. I usually also have some fruit and low-fat cheese or a yogurt with it.
For dinner, I like having the layered salads. I also love chicken lasagne with some cut vegetables (e.g. tomato, cucumber, pepper). Seafood dishes taste great too. I love it when my mom makes steamed sea bass with chilli and vegetables and boiled potatoes with a little drizzle of olive oil. She grows her own spring onions and chilli, and make everything taste amazing. <3

Chicken and beef are actually quite healthy sources of protein. Just remember to choose lean cuts of beef. Chicken breast is usually the lowest in fat, sometimes leg is ok too, just avoid the skin and usually the thighs.

I need some very simple, yummy and healthy vegetarian meal ideas?

Q. I think I have breakfast sorted, but I'm getting bored of what I have for lunch, and especially dinner. Lunch is usually salad, soup or beans on toast. What else could I make? And I'm really running out of ideas for dinner. Sometimes I have different kinds of beans with dressing, or Quorn burgers or something but I need something more interesting.

Answer
There are probably an infinite variety of options based on sandwiches!

Try some of the following:
Rice and Peas. There are lots of recipes for this online. Here is a very simple one: http://www.bbc.co.uk/food/recipes/riceandpeas_81543

Baked potato with butter, or with beans, or with cheese, or with pesto (ready-made from a jar if you are in a hurry)

Stir-fried vegetables with noodles, possibly with marinated tofu. Web search "vegetarian Pad Thai" for a particularly nice variant, or take a "normal" Pad Thai recipe and miss out the shrimp and fish sauce.

Pasta with red sauce made from chopped onions, garlic, basil, oregano, chopped courgette (zucchini), chopped bell pepper (capsicum) and topped with grated cheese or mixed with a dollop of cream, fresh natural yoghurt or mascarpone.

Cheese Pasty and chips (with peas maybe). Healthy enough if it's once in a while, just for a bit of variety.

Fried mushrooms on toast. Use just a tiny drizzle of olive oil (no need to spend a fortune on extra virgin olive oil) so no worries about fat. Add black pepper perhaps.
