My mum doesn't ever cook and only heats already-made meals, such as pizza or something unhealthy. Or she just makes chips or a chicken sandwich, so I decided to start cooking. Well, I really don't know how to cook, so I'm hoping you can give me some easy vegetarian/vegan recipes??!

I use a lot of canned tomatoes and legumes when I cook. A really simple recipe for a vegetarian soup is to cut up an onion, a few cloves of garlic and shred half of a celeriac. Then heat up some oil in a pot and fry them for a little while. Make sure they don't burn. Add lentils, canned tomatoes and vegetable stock. Some water might be needed. Add salt, pepper and maybe some dried herbs.

If you google for easy vegetarian recipes you'll find lots of stuff. Since I don't know what kind of food you like it's a little hard to come up with tips, but vegetarian chili, Indian dal, pancakes (you can make them with half graham flour and eat them with fruit for a healthier meal), pasta primavera and veggie burgers seems to be popular with most people (vegetarian or not).

Whole Frozen Turkey (10 pounds)

Buying a frozen turkey and making it in less than 2 1/2 hours is so easy and is an unexpected treat for the whole family.
Unwrap the frozen turkey and rinse in cold water. While still wet, season the outside as desired and place on liner pan or 1" rack breast side down. Nu-Wave on HI for 60 minutes. (At this point, the gizzards inside should be defrosted and you can remove for later use. Season or fill cavity with vegetables at this point). Turn turkey breast side up Nu-Wave on HI for another 75-90 minutes or until thermometer reads 165°F. If the skin is becoming too brown, cover with tin foil just as you would a conventional oven.
Let the bird sit as usual and use drippings from pan to make delicious gravy.

FROZEN ROAST BEEF (4 pounds)

Buying a roast beef (or 2) on sale and freezing it for later saves time and money. Just take it out and, and under 2 hours, you can have a delightful surprise for the family.
Rinse the beef in cold water so any dry seasonings may adhere. Place roast on 1" rack, top side down. Nu-Wave on HI for 50 minutes. Turn over, top side up, and continue another 50 minutes (RARE) or more depending on your taste. Let sit 15 minutes and enjoy!

BAKED FRENCH TOAST (4 servings)

4 1-inch thick slices raisin bread or white bread
4 eggs
1 1/3 cups milk or half and half
2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 tablespoons sugar
1/2 teaspoon salt
1 cup maple syrup
1/4 cup butter or margarine



Cut bread slices in half diagonally. In a shallow dish, whisk together eggs, milk, vanilla, cinnamon, nutmeg, sugar, and salt. Dip each bread slice in mixture to saturate both sides.
Lightly butter a shallow aluminum pan and arrange slices in a single layer. Place pan on 4" rack and Nu-Wave HI for 8 minutes (or until browned and puffy). Turn 1/2 way if desired.
While toast bakes, combine syrup and butter. Heat until melted together.
Top off and enjoy!

Hint for Low Fat Version:
Dip bread in egg substitute and roll in corn flake crumbs. Follow cooking directions above and top with low-cal syrup or fruit. This is crispy, healthy, and delicious!





BAKED REUBEN SANDWICH

Butter, softened
2 slices rye bread
1 ounce thinly sliced corned beef
1/4 cup sauerkraut, squeezed dry
1 slice Swiss or Gruyere cheese
1 tablespoon thousand island dressing



Lightly butter one side of each slice of bread. On the unbuttered side, place corned beef, sauerkraut, and cheese. Spread with dressing. Top with second slice of bread, buttered side up.
Place directly on 4" rack and Nu-Wave on HI for 7 minutes or until the top is lightly toasted and the cheese is melted.
Place directly on the 4" rack and Nu-Wave on HI for 4 minutes or until well heated and cheese melts.




STUFFED POTATO SKINS (8 servings)




4 baked potatos
1 cup sour cream
2 cups shredded cheddar cheese
1/2 cup chives or scallions, chopped
4 slices cooked bacon



Cut potatoes in half lengthwise and scoop out cooked potato, leaving thick skins. Mix everything except the skins and fill each skin with equal amounts of the mixture. Place on the 4" rack and Nu-Wave on HI for 5 minutes.




CHINESE STYLE RIBS (20 servings)




1 cup soy sauce
3 tablespoons dry red wine
1 tablespoon each sugar, salt, and garlic powder
2 pounds baby back ribs, cut into individual pieces



Mix all the ingredients and marinate the ribs for at least an hour. Spread the ribs on the 4" rack and Nu-Wave on HI for 20 minutes.




LONDON BROIL (4-6 servings)




1 1/2 -2 pound flank steak , 1" thick
salt, pepper, and garlic powder to taste
2 pounds sliced mushrooms
6 tablespoons butter
1/4 cup Worcestershire sauce



Place mushrooms, butter, and Worcestershire sauce on 10" pie plate and set on liner pan. Place the steak on 4" rack. Nu-Wave on HI for 5 minutes. Turn the meat and cook another 5-7 minutes or to desired temperature. Slice the meat at a 45 degree angle against the grain and serve with the mushrooms.
FROZEN - When you find flank steak on sale, buy a few and freeze them for later. (Freeze flat for later use). Spray or rub vegetable oil on frozen steak and sprinkle with seasonings. Nu-Wave for 10 minutes, turn and cook another 15 minutes or to desired temperature.




CORNISH HENS

These tasty birds are almost always available frozen therefore they are perfect to cook in the Nu-Wave Oven and come out crisp on the outside and moist on the inside!
Remove the wrapper and run under water to remove the glaze. Place on the 1" rack, breast side down, and Nu-Wave on HI for 30 minutes. Pry open the cavity, remove the giblets, and season the cavity. Turn over and cook another 20 minutes or to 170°F.




LOW-CAL CHICKEN PARMESAN (4 servings)

Total time from freezer to table.........30 minutes

4 (5-6 oz) boneless/skinless Chicken Breasts-Frozen
Low-Fat Italian Dressing
Seasoned Bread Crumbs
8 oz. - 2% Mozzarella Cheese (shredded)
Grated Parmesan to taste
12 oz. Pasta Sauce



Dip chicken pieces in Italian dressing and roll in bread crumbs. Place on liner pan. Nu-Wave 8 minutes per side (or until done). Open oven and spoon sauce on each piece and sprinkle with cheese. Cook 2 more minutes.




LAMB CHOPS WITH FETA & CHEESE (4 servings)




2 tablespoons olive oil
1 clove garlic
1 tablespoon lemon juice
4 lamb chops, 1" thick
4 ounces feta cheese, crumbled
1/4 cup chopped ripe tomatoes
4-6 pitted Kalamata olives
1 tablespoon chopped parsley
salt and pepper to taste



In shallow dish, mix olive oil, garlic and lemon juice. Add the lamb chops and turn to coat on all sides. Place in refrigerator for 15 minutes. In small bowl mix feta, tomatoes, olives, and parsley. Set aside.
Place lamb chops directly on 4" rack, sprinkle with salt and pepper. Nu-Wave on HI until done to taste, approx. 12-14 minutes (turning over 1/2 way)
When chops are done, spoon equal portion of feta mixture on each chop and NU-Wave on HI until cheese melts.




BREADED SOLE OR FLOUNDER (4 servings)




4 sole or flounder filets, about 2 pounds
4 tablespoons melted butter
lemon seasoning to taste
salt
2 cups bread crumbs



Mix the butter, seasonings, and crumbs and press into the fish. Coat both sides of fish and place on 4" rack. Nu-Wave on HI for about 7 minutes.
Frozen: Cook frozen filets for 5 minutes and then continue the recipe as above.




FRENCH FRIES (4 servings)
Cut off 1/2 inch from the ends of 2 large baking potatoes. Cut 1/2 inch off the sides to make a square sided potato. Cut, lengthwise, into 1/2 inch fries. Toss with vegetable oil and salt and pepper. Lay on 4" rack and Nu-Wave on HI for 20 minutes or until crisp (turning 1/2 way).
Parmesan Fries: Cook as directed above but before serving, toss with 1/2 cup of grated parmesan cheese





APPLE CRISP (8 servings)

4 apples (11/2 lbs.) peeled, cored, and sliced 1/8"-1/4" thick
1/3 cup flour
1/3 cup brown sugar, firmly packed
1/3 cup quick cooking oatmeal
1/4 cup butter, softened
1/4 cup granulated sugar
1/2 teaspoon cinnamon



Grease an 8" round cake pan. Place sliced apples in the pan. In a medium bowl, combine flour, brown sugar, oatmeal, and softened butter until well mixed. Set aside. In a small dish mix granulated sugar and cinnamon. Sprinkle over the apples. Pat the oatmeal mixture on top. Place on the 1" rack and Nu- Wave on #5 (med. heat) for 30 minutes or until apples are tender and juices are bubbly.

I would recommend looking at some of the recipes on this site. Many of them are simple to make, but also healthy and still taste delicious! I pulled up the "quick and healthy" category I think, but the entire site has lots of create ideas from pro chefs on the food network.

I would like to make lunch-appetizer deal and need some ideas. There will be lots of young kids there ranging from baby to age 12 but I don't just want to please the kids I want everyone to be happy and full! Should I make some salad sandwiches and soup and then add some kid friendly appetizers? Recipes would be great!!

Yeah, I`d do appetizers for the kids and the meal geared towards the adults. At that age kids will more interested in playing rather than eating. So, little bites is good.

Kids like hotdogs. And, hotdogs cut in half wrapped in crescent rolls is an easy one to do. If you want, you could even make a slice in the top and add a bit of american cheese. But, not all kids like cheese in their dogs.

Macaroni and cheese is another crowd pleaser for kids.

Or, use your own recipe or even stouffers and put some parm in the bottom of a muffin pan and bake to make the *cups*

And, pot stickers (we buy ours at SAMS). Both my kids really like chopped meats (pepporoni, salami, ham, turkey, and baloney, with cheeses all kids of cheese). You can use toothpicks to pick them up which all kids love. Those are easy no recipes required.

Alexia brand has sweet potato fries that are to die for. Just bake in the oven as directed on the package. Serve with motts applesauce spiked with cinnamin. I heat the applesauce to get it to reduce a bit - thicker. The babies can even eat this. And, the moms will be impressed that it is healthy. Just keep some bananas handy, those are easy for the babies to eat as well.

My kids like vegetable pizza, and I am happy to get them to eat veggies :)

I LOVE this pasta salad!! I swear it is the best ever. I get so many compliments and I have used all kinds of meats/cheese you can really play around with it. I have been craving this since I was pregnant...

I didn`t have the pasta it called for and used fetticune instead and it was to die for. My youngest ate this up, he was 15 months at the time. I did double the dressing recipe and added the extra when serving. The pasta really does eat up the dressing. So creamy!!

I also enjoy broccoli salad. Just take a couple bunches of broccoli and use only the flower part. Chop to nice small bite size pieces. At this time, fry up about 1/2 pound of bacon. I do this on a foil lined baking sheet until crispy. Dice 1/2 of a red onion (less if its strong). Mix broccoli with the bacon (crumbled) and onion. Add 1 to 2 cups of cheese and top with this dressing.

1 cup of MAYO (do not sub with real mayo!!)
1 cup of sugar
some bacon drippings (omit for fat if you want, more compliments if you add)

Kids will like that one as well.

I think chicken salad is a great party food. I just cook the chicken in some water and root veggies and add some peppercorns and salt.

For the salad, I use 1 c mayo to 1 cup sour cream. Add some halved grapes and wala. You can add as you need to serve your guests. I love serving with fresh crescants. (My mom subs the grapes for mandarin oranges)

You could also make an Italian sub under the broiler. Just use the turkey, ham, salami and pepporoni top with provolone and Italian dressing. Wrap in foil and put in the oven at 425 or so (some will do in the broiler, but I always burn bread!)

I'm on a calorie-restrictive diet and need some advice for a healthy, tasteful meal option in the range of 250 calories. I need a long list of foods I can eat to lose weight I heard to eat high fiber and protein and low carb foods. I love all kinds of foods. Seafood all meats fruits veggies cheese so I wanna know what I can eat that will help. I'm going to be doing cardio exercises about everyday. I'll eat about 6 small meals a day to get my metabolism going and drink alot of water. If you have any other helpful hints that will be appreciated!

Here is a list of healthy foods :)
- Go for natural, organic food
- For fiber, go for plenty of fresh fruits and vegetables, high fiber cereals that aren't high in sugar - for example bran cereals; oatmeal, brown/wild rice, sweet potato, whole grain breads, whole grain and brown rice pastas, nuts, nut butter, etc.
- For protein: beans, eggs, cheese in moderation, cottage cheese, tofu, tempeh, tuna, salmon, etc.

Protein & fiber, along with veggies & fruit will help keep you full =)

~ Greek yogurt or yogurt (nonfat) - Greek yogurt has more protein than regular yogurt
~ Eggs, cheese, cottage cheese (2% is fine), goat cheese, skim milk or goat milk, etc.
~ Vegetables
~ Fruit & Berries
~ Beans (chickpeas, black beans, kidney beans, mixed beans, etc.) - full of fiber and protein :)
~ Veggie burgers (Amy's makes great veggie burgers)
~ Whole grain breads: multigrain bread, ezekiel bread, rye bread, whole wheat pitas, whole grain tortillas or bagels, etc.
~ Whole grain pasta or brown rice pasta, brown/wild rice, quinoa, buckwheat, etc.
~ Sweet potatoes or potatoes
~ Hummus
~ Oatmeal - great source of fiber, you can add toppings like: almond butter or peanut butter, nuts, fresh berries/fruit, raisins, dried fruit like cherries/cranberries/blueberries, cinnamon, skim milk or non-dairy milk, nonfat greek yogurt, jam, honey, agave nectar, maple syrup, etc.
~ Healthy cereals (Kashi, Nature's Path Organic, etc..high in fiber like raisin bran)
~ Nuts, seeds, almond butter, peanut butter
~ Non-dairy milks like soy, almond or rice milk
~ Ground flax seed to add into a smoothie, top yogurt, etc.
~ Olive oil, good healthy fat, great for stir frys with lots of veggies.
~ Salmon & Tuna
~ Tofu & Tempeh - are great in sandwiches, wraps, on salads, etc.
~ Whole grain crackers
~ Whole grain waffles or pancakes
~ Dark chocolate, in small amounts, great for a treat


A few other helpful tips :)

- Drink green tea. Water + lemon (cleansing, great for your digestive system, skin)

- Avoid: soda, diet soda or any diet drinks, artificial colors or sweeteners, white flour, too much sugar, overly processed foods

- For exercise, you can also try things like simple walking or yoga/pilates - very healthy for you :)

wraps are easy and healthy. you can make them for any meal and put whatever you want inside.
there is also grilled chicken with any kind of salad
tuna salad (sandwich or crackers) only use a tiny bit of mayo and squeeze the juice from one lime in it.
any lean meat on the grill is healthy (if it's too cold, broil it), serve with steamed veggies.
chili or vegetable soup (not high up on the healthy list, but not too bad)
fresh fruit, boiled eggs and cheese are good
you could also keep some fresh veggies already cut and cleaned in the fridge to have as snacks with ranch or any other dip

I'm at work right now, so I don't have the recipe on hand, but if you go check out this month's Better Homes and Gardens they have an awesome recipe for a BLT like wrap.. it only has like 275 calories in the entire thing and its GREAT!

Put a pork rub on Chicken breast marinated in BBQ sauce for 30 min or more. Then place on grill. Cook on medium for 30-45 min (depending on size of breast)

Cut broccolie florets and spray with Pam, sprinkle with salt and garlic. Skewer them and place on grill when chicken is about 2/3 done. Broccolie should be juicy and flavorful (not scorched) when taken off grill.

Leftover Turkey Soup

1/2 cup chopped onion
1 medium carrot, sliced
1 stalk celery, sliced
1 Tbsp. oil
2 cans (14-1/2 oz. each) chicken broth
2 cups water
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
2 cups cubed cooked turkey
1/2 cup bite-sized pasta, uncooked

COOK onion, carrot and celery in hot oil in large saucepan 3 to 5 minutes or until crisp-tender, stirring occasionally.
STIR in chicken broth, water and dressing mix. Bring to boil.
ADD turkey and pasta; cover. Reduce heat to medium-low; simmer 10 to 12 minutes or until pasta is tender.

4 cups chopped cooked chicken
1-1/2 cups chopped celery
1/2 cup KRAFT Mayo Real Mayonnaise
1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. lemon juice
1/8 tsp. ground black pepper
8 lettuce leaves
16 slices rye bread

MIX chicken, celery, mayo, mustard, lemon juice and pepper until well blended.
PLACE 1 lettuce leaf on each of 8 bread slices.
COVER evenly with the chicken salad; top with remaining bread slices.

I like to add cooked chicken to Zatarain's boxed rice. I especially like to add it to the Jambalaya and Red Beans and Rice. It's a one pot meal.

I also shred it and simmer it with salsa and use it for tacos, burritos, or nachos.

My husband shreds it and then sautes some onions until tender, adds bbq sauce and the chicken. He simmers it until everythig is hot and then makes a sandwich with it.

I need something that is easy to make, tasty, healthy! I never have enough time in the morning to do anything! So something I could make the night before would be a lot better! There are no microwaves at school but I don't mind eating hot foods at room temp.. :)

- Egg Salad!- Hard boil the eggs, dice them, and mix them with mayo and seasonings. Put the salad in a container separate from the bread. When you get to lunch, just put it on the bread with a spoon. Have with a fruit, a cup of milk, and a little treat- that way you get a healthy balanced meal.
You can also do this with chicken salad, or tuna salad.

- Grilled Chicken strips and a soft pretzel with honey mustard dip. Have with a fruit and a cup of milk or fruit and a yogurt.

- Grilled chicken sandwich- Bring a packet or little cup of mayo, a container of grilled chicken breast with lettuce and tomato, and a separate bread roll. Spread the mayo on and put the chicken/lettuce/tomato on the bread. Have that with a side salad, or a fruit, or yogurt. You could also have it with cheese and crackers!

- Tacos! Make taco filling- I like some ground beef mixed into refried beans with salsa- pack it in one container. In another container pack some shredded lettuce and cheese. In a third little container have some sour cream. And then pack some taco shells of your choice. Put the tacos together when you get to school.

- Pasta Salad

- Chicken caesar salad wrap

- Tuna Salad Wrap

- Buffalo Chicken Wrap

- Yogurt parfaits with cereal and nuts. Fruit juice. And a snack.

These are some of my favorite things to eat:

Breakfast: bananas, cream of wheat with brown sugar and soy butter, cereal, pancakes or french toast with real maple syrup, vegan "sausage" patties, smoothies.

Lunch: VEGAN "SAUSAGE" SANDWICHES, sandwiches with vegan deli slices(Tofurkey is the only one that's kinda funky), fruit, dinner leftovers, couscous salad, vegan sushi, potato or pasta salad.

Dinner: sloppy joes, "sausage" and gravy with homemade biscuits, Spaghetti and Trader Joe's "meatballs" or TVP, lasagna, Thai pad see ew, pad khi mao(drunkard's noodles), tofu+eggplant with basil sauce, yellow thai curry with tofu or vegan chikn and veggies and jasmine rice, Indian dal with homemade roti or dosai, channa masala, aloo gobi, vegetable or minestrone soup, pizza, STEAMED "PORK" BUNS with potstickers or spring rolls

I have lots of fresh veggies, veg. mayo & cream cheese, bread, tofu, rice, vegetable broth etc. all the basics, so nothing too too fancy. I am trying to cut back on sodium and I'm trying to lose weight so nothing too salty and too fattening. I just need simple easy recipes that are healthy and low sodium. Any ideas?

You might not have this laying around your house, but I like to make a sandwich with baby spinach leaves, swiss cheese, tomato, avocado, and mayo and honey mustard. Or I'll grate some cheese into a tortilla, fold it in half, and make a mini quesadilla. You could always steam some rice and vegetables.

When the school cafeteria isn't serving hamburgers, chicken nuggets, or pizza, I have to bring my own lunch. This usually consists of chips and Dr. Pepper that I buy from the bookstore at school with my own money. I would make a sandwich, but every sandwich I've ever tasted makes me gag. Please help!! I would like to discontinue my unhealthy habits.

peanut butter and crackers

celery and peanut butter

hard boiled eggs (sometimes deviled eggs - Mom used to make penguins out of them somehow using olives)

graham crackers and frosting (my favorite was cream
cheese - yummm)

rolled up sandwich meat

or even better

ham with cream cheese spread on it, then rolled and cut into pinwheels

pimento cheese and crackers

WE loved Jello

I just found a recipe for apple volcanos too...They might enjoy that.

(serves two)

- 2 apples

- 2 large marshmallows

- cup peanut butter

- cup chocolate chips

- cup chopped nuts

- 2 tbsp shredded coconut

Wash apples. Remove stem and core out apple with spoon, enlarging the hole slightly. Press marshmallows in center of cored apple to fill the bottom. Spoon peanut butter into apple to fill to the top. Spread peanut butter over top of apple. Sprinkle with chocolate chips and coconut.

lets just say i eat WAY too much fast food. (but i'm not fat cuz i have a fast metabolism!) so i need some healthy fast food to make in 5-15 minutes. i'd prefer if they were'nt vegetables (i don't like them) but if they are, that's ok... but i REALLY don't like vegetables! lol thanks!

You can actually make sandwiches ahead of time and freeze them if you like cold sandwiches. They don't have to be unhealthy either. You can use a healthy type of margarine like smart balance light instead of a real cream butter to cut major calories. Mayonnaise actually doesn't freeze well, which is why this says to use butter. High cream contents also do not freeze well. You could always put mayo on it after it defrosted.

1 pack of sub sandwich rolls
1 package cold cut meat (or you can do multi-meat sandwiches)
1 pack cheese slices
Low fat margarine or butter

Spread a thin layer of the butter on both inside sides of the sub rolls. Place meat and cheese inside. Wrap each sandwich in cling wrap and then place them in individual freezer zip-locks or one big one. Take a sandwich out of the freezer 4-5 hours before you will eat it or the night before and place it in a cooler or fridge. It should be defrosted by the time you want to eat it. If you work or go to school full time, you can take it before work/school and it would be ready to eat by lunch. If you want to have lettuce and tomato on it, put those in a ziplock separately in the cooler when you take the sandwich out in the morning.

If you like tuna, chicken or have hard boiled eggs on hand you can make creamed tuna or chicken or eggs goldenrod.

2 tablespoons butter
2 tablespoons flour
1 cup milk
4-6 slices of toast
1 can tuna or chicken breast or 2 hard boiled eggs
Salt and pepper to taste.

1. Put the butter in a small or medium pot or skillet over medium heat.
2. When the butter it melted, add the flour and stir it to make a roux that looks like a light yellow paste. Turn the heat to medium high
3. Add the milk immediately all at once. Whisk continuously until it is thick and bubbles break the surface. Remove from the heat.
4. Using a fork, flake the tuna or chicken into the sauce. Salt and pepper to taste. If making eggs goldenrod, dice the eggs and put them into the sauce.
5. Cut the toast into little squares. Pour the sauce over the squares and enjoy. I make this all the time, it's super fast, cheap and easy. Canned tuna and chicken breast are high in protein and low in fat. This recipe makes 2 good sized portions or one huge one. The only disadvantage is that I don't believe it keeps in the fridge so you will have to eat it immediately. You could always half the recipe and put the rest of the can of chicken or tuna in a little tupperware in the fridge and use it later.

Quesadillas

2 tortillas
Cheese (any kind, cheddar or mexican blend works best)
Any other fillings you would like - canned chicken breast, jalapeño slices, fresh diced tomato pieces, black beans

Skillet: You can spray a non-stick skillet with non-stick spray, but it isn't necessary. Heat the skillet over medium heat. Place one tortilla on it. Sprinkle the cheese and other ingredients on it. Place the second tortilla on top. When the cheese just starts melting, flip it over. You can also flip it if the tortilla on that side is browning too fast. Eat it whole or slice it into wedges.

Microwave: Assemble the tortilla and place it on a microwave safe plate. Microwave it for about 30-45 seconds. Then eat and enjoy.

Black Bean Tacos

1 can black beans, drained and rinsed
several tortillas
Any toppings desired - shredded cheese, salsa, diced tomatoes, shredded lettuce, sour cream, guacamole

1. Cook the black beans in the microwave in 30 second intervals, stirring until hot.
2. Heat the tortillas for 15-30 seconds until hot.
3. Put the black beans in tortillas like a taco. Top with toppings. Enjoy. For any leftover black beans, put them in a tupperware in the fridge and use them in more tacos or quesadillas later.

Panini With Artichoke Hearts, Spinach and Red Peppers.Here’s a great way to pack a lot of nutrients into a sandwich. If you use frozen artichoke hearts, the panini are quickly assembled.

6 ounces (1 bag) baby spinach
3 tablespoons olive oil
2 garlic cloves, minced
12 ounces frozen or fresh cooked artichoke hearts, sliced
1 teaspoon fresh thyme leaves
Salt, preferably kosher salt, and freshly ground pepper
1 large or 2 smaller roasted sweet red peppers, sliced
1/4 pound fontina or Gruyère, thinly sliced or grated
8 slices whole grain country bread

1. Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 10 to 20 seconds. Transfer to the ice water to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely.

2. Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat, and add the garlic. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the artichoke hearts. Stir for a few minutes, until the artichoke hearts are beginning to color, and add the thyme leaves and the spinach. Toss together and season to taste with salt and pepper. Remove from the heat.

3. Preheat a panini grill. Top four of the bread slices with the artichoke hearts and spinach. Add strips of roasted pepper, then cheese. Top with the remaining bread and press together. Brush the outside of the bread (top and bottom slices) with olive oil. Place in the panini maker and grill for four to five minutes, until the cheese has melted and the bread is toasty. Slice in half and serve hot.

Yield: Serves four
Advance preparation: You can prepare the artichoke filling through step 2 several hours or even a day ahead of assembling the panini.

2. Beat the eggs in a medium bowl. Whisk in the milk, about 1/2 teaspoon salt and freshly ground pepper to taste.

3. Heat the oil over medium-high heat in a 10-inch, heavy nonstick skillet, and add the artichokes. Cook, stirring often, until golden brown, about five to eight minutes. Add the garlic, and cook for another 30 seconds to a minute until fragrant. Stir in the herbs, and season with salt and pepper. Pour in the egg mixture. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with a spatula in your other hand, so that the eggs run underneath during the few minutes of cooking.

4. Turn the heat down to low, cover (use a pizza pan if you don’t have a lid that will fit your skillet) and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid and loosen the bottom of the omelet with a wooden spatula, tilting the pan so that the bottom doesn’t burn. Instead it should turn a deep golden brown. Meanwhile, heat the broiler.

5. Finish the omelet under the broiler for one to two minutes, watching very carefully to make sure the top doesn’t burn. (It should brown slightly, and it will puff under the broiler.) Remove from the heat and immediately sprinkle on the Parmesan or pecorino. Serve hot, warm or room temperature.

Yield: Serves four to six
Advance preparation: You can prepare the artichokes a day ahead. The frittata is good served at room temperature, so you can make it hours before serving. It also will keep well in the refrigerator overnight.

Filling, quick breakfast recipes besides the same old thing?

I'm a college student (well, on summer break, but still). My mornings are usually pretty busy, and I generally don't have time to make a big breakfast (ie: eggs, bacon, pancakes). Besides, I get tired of eating the same breakfast foods every morning. Don't get me wrong...I love eggs and bacon. It's just a pain to make all that on a school morning, and I usually tend to get hungry not long after. So, I usually end up running through McDonalds drive-thru. I'm unbelievably sick of that, as well.

So, what I'm wondering is if anyone has any relatively healthy, quick and filling recipes for breakfast besides the same-ole-same-ole. No oatmeal or scrambled-egg sandwiches, please. Gimme some p'zaz to start the day off (and make it snappy, plz, mmmk, thks) *grin*

Since you want something quick different from the norm, I'm assuming you don't feel like making something the night before.

As far as something filling, you need specialized protiens. THe stuff most people think of as a normal breakfast is mostly starches. They are mostly sugar and tend to burn up quickly, which means you burn out. Honestly, when I was having this problem, I just bought some of the Slim Fast Optima shakes, and one would at least hold me until lunch.

If you want an easy recipe, here's the best I can offer, though it is a bit plain.

Wheat Bread, Lettuce, Tomato, sausage, and cheese.

Just toast the bread (You can spread mayo if you want.)
One leaf of lettuce, one tomato slice.
Use ground sausage, (usually comes in a tube of some sort)
Sqeeze out the desired amount of sausage and press into a thin patty. (The thinner it is the quicker it cooks.)
Cook the patty, lay a slice of your favorite cheese on top of the sausage to melt a little.
Place on bread.

It's a great sandwich and you can change out the meat as you'd like.

You could use ham slices, or make tuna salad with apple chunks instead of relish.
You could also trade up the bread for a bagel once in a while. I've tried the sausage and cheese on a blueberry bagel once, and it was surprisingly good.

It's kind of basic, but if you keep sliced tomatoes in a container and already have a head of lettuce, there is almost no work involved in making it. Plus it's surprisingly filling with a glass of milk or orange juice.

It should stick with you for a little longer than a bowl of cereal or some other sugar based item.

Easy low fat recipes for picky kids?

Q. Maybe even vegetarian type meals? I have a few picky eaters and on some weekends we have all the kids so there are 7 plus my husband and myself so it would need to be relatively easy and of course healthy, low fat and nutritious. I have one kiddo who hates almost everything except pasta, sandwiches and cereal(of course, it could be also that he just prefers his moms cooking which I can respect). I feel guily trying to make my kids eat foods they don't like but for the sake of their health they need to eat veggies, beans, whole grains, proteins, etc.

So anyone with good recipes for picky eaters would be appreciated.

And please don't just say 'make them eat what you serve'. I've tried that and it seems cruel to watch them sit there so long and then leave the table hungry because after awhile I tell them to just go if they refuse to eat their veggies or whatever. I also have tried withholding any snacks or desserts if they won't eat their dinner - doesn't work either.

CRUNCHY FRIED FISH

Here's a low fat version of fried fish. Simply coat chunks of white fish fillets in breadcrumbs and bake in a hot oven. Serve with tarter sauce and russet fries baked alongside. Kids LOVE this!!

1 1/4 pounds firm white fish, such as cod or halibut
1 egg lightly beaten
1 1/2 cups breadcrumbs
1 tsp dried mixed herbs
1 tsp paprika
Freshly ground black pepper

Preheat oven to 450 degrees. Place a large cookie sheet coated with nonstick cooking spray in the oven.
Meanwhile cut fish into chunks. Put beaten egg into a small bowl, and combine breadcrumbs, herbs, paprika and pepper in a large shallow bowl.

Remove cookie sheet from oven. Dip the fish first into the egg and then into the breadcrumb mixture and on to the cookie sheet. Repeat with each piece of fish. Bake for 8-10 minutes, turning once, until fish is cooked through.

LOW FAT FISH TACOS

Halibut and cod work especially well with these low fat fish tacos. Bake, broil or grill the fish after briefly marinating it, and serve with your choice of low fat or fat free garnishes on top of warm corn tortillas.

2 tbsp lime juice
1 tsp cumin
1 tsp olive oil
2 tbsp freshly chopped cilantro
1 pound firm white fish fillets such as halibut or cod
8 corn tortillas

In a small bowl, combine lime juice, cumin, olive oil and cilantro. Place fish in a glass baking dish or in a resealable plastic bag. Add marinade. Cover and marinate in the refrigerator for 15 minutes. Coat a nonstick baking sheet with cooking spray and preheat oven to 350 degrees. Place marinated fish on baking sheet and bake for 15-20 minutes, until fish flakes easily with a fork. Alternatively, broil or grill fish, allowing 10 minutes per inch of thickness. Warm corn tortillas according to instructions on package. When fish is cooked, cut into strips or chunks and divide among corn tortillas. Add shredded cabbage, low fat or fat free sour cream and salsa for garnish.

Serves 4.


LOW FAT CHICKEN ENCHILLADAS

This a is a great way to use leftover chicken or rotisserie chicken. These creamy enchiladas are quick and easy to make. It's comfort food with a fraction of the fat.

4 corn tortillas
1 1/2 cups shredded cooked chicken (skinless, white meat)
1/2 cup black beans
1/2 cup sweet corn
1 cup medium or hot salsa
1 cup plain low fat yogurt
1/2 cup reduced fat sour cream
1/2 cup reduced fat shredded Jack cheese

Preheat oven to 350 degrees.
Coat an 8-inch by 8-inch baking dish with nonstick cooking spray. Warm tortillas according to instructions on package.
Mix salsa, yogurt and sour cream and spoon half the salsa mixture into the chicken, beans and corn. Blend well.
Divide chicken mixture among the tortillas. Carefully roll tortillas and place them seam down in the baking dish. Spoon remaining salsa mixture over the tortillas. Sprinkle cheese on top. Cover with foil and bake for 30 minutes.

Serves 4.


BEEF AND PENNE CASSEROLE

This is comfort food at its best (and a family favorite), combining extra lean ground beef, tomatoes, penne pasta and a sprinkling of reduced fat cheese. Sometimes I wilt half a 10-ounce pack of fresh baby spinach (squeezed dry) and stir it into the beef and tomato mixture.

1/2 pound penne pasta
1 14-ounce can crushed tomatoes
1 8-ounce can tomato sauce, no salt added
1 tsp oregano
1 pound lean or extra-lean ground beef
1 medium onion, finely chopped
1/2 cup shredded reduced fat mozzarella and cheddar cheese blend

Preheat oven to 350 degrees.
Boil pasta according to instructions on package. Do not overcook. Drain and set aside. Meanwhile, in a large skillet sprayed with cooking spray, saute onions and ground beef on a medium to high heat until the beef is browned. Add crushed tomatoes, sauce and oregano, and stir well. Cover and simmer for about 10 minutes. Empty pasta into a 2 quart baking dish; add beef and tomato mixture and toss well to coat. Sprinkle with cheese blend and bake for 25 minutes.

Serves 4-6

You can also do a lot of wonderful things with POLENTA, which is very healthy, pre-cooked and you can buy it in the supermarket in a roll you just have to slice. It's a great substitute for pasta. Try covering it with fresh tomato sauce and a little reduced fat cheese as a side dish to broiled chicken or veal, etc.

Starting in the fall, I will be in class from 9am to 4pm straight on a few days. I need ideas/recipes for lunches/snacks that I can make the night before and eat in class. A very important part of this is that these foods cannot be noisy or hard to eat so as to not disturb the rest of my class. Does anyone have any ideas?

-Salads with carrots, cucumbers, onions, tomatos, olives, add chicken for protein!
-Sandwiches, like cold cuts, with lettuce, tomatoes, on rolls
-Wraps, use cold cuts like ham or even grilled chicken and lettuce, tomatos, on tortillas, and cut in half.
-cheese with fruits cut up and crackers
-fruit salad and sprinkle with lemon juice so it doesn't turn brown by the time you eat it. You won't taste the lemon!
-chicken fingers
-Any leftovers from the night before's dinner made into a sandwich. If you had a flank steak, add some argula and you have a great sandwich, have fried chicken, bring that, chicken cutlets, put that on bread with lettuce and tomatos and you have a great sandwich! You can always bring leftovers! If you made beef stew, keep it in a thermos like the soup and bring that, it's hearty and it's comfort food!
-pizza, you can bring a few slices with you.
-Egg salad in bowl or on a sandwich
-Tuna on a sandwich or tuna salad on sandwich or in a bowl
-Hard boiled eggs in a salad
-You can always bring like an antipasto, which is the cold cuts, some cheeses, lettuce, tomato, bread, etc, in a tupperware container with a fork, and just eat it as you please. Add some olives in it. It's VERY filling!
-Pasta salad

Scotch Eggs
Serve hot or cold
6 hard boiled eggs
1 lb. spicy sausage meat
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 C flour, divided
1 C breadcrumbs
1 tsp. salt
2 tsp. pepper
1 tsp. paprika
2 eggs, beaten

oil for frying
Makes 6 Eggs

Peel the eggs and set aside. Mix sausage and spices in a small bowl. Divide sausage into 6 equal portions, set aside. Mix breadcrumbs with salt, pepper and paprika, set aside.

Dry each egg with a paper towel, then roll lightly in flour to coat. Take one portion of sausage and using hands, shape a coating around the hard boiled egg, completely enclosing it (see photos). Roll in flour again, then dip in beaten egg then roll in breadcrumb mixture. Repeat with remaining eggs.

Heat about 2-3 inches of oil in a large skillet. Fry eggs, turning frequently, until golden brown on all sides. Drain on paper towels. Let cool slightly before serving. To serve, cut each in half and serve with some good mustard.

Veggie Tortilla Wraps
1 (9") flour tortilla
2 thin slices cheese (Monterey Jack or Swiss is good)
1/2 avocado, sliced thinly
1/3 C leftover grilled vegetables (like zucchini, mushrooms, onions, peppers, etc.)
1 large lettuce leaf
2 T balsamic vinaigrette dressing

Serves 1 (multiply by the number you are making)

Place lettuce leaf across the middle of the tortilla. Top with cheese, avocado and grilled vegetables. Sprinkle with dressing. Fold egg-roll style, tucking in sides as you roll.


Cilantro Tomato Pasta Salad
1 cucumber
1 C ripe red tomatoes, diced
1/2 C red onion, finely chopped
2 T fresh lime juice
1 T cilantro, chopped
1 tsp. granulated sugar
1/4 tsp. salt
1/4 tsp. black pepper
1 C dry small shell pasta, cooked and drained
Serves 4

Peel the cucumber and cut in half lengthwise. Use a spoon to gently scrape away the seeds. Cut in half again lengthwise and dice the cucumber. Place cucumber, tomato, red onion, lime juice, cilantro, sugar, salt and pepper in a bowl with pasta. Toss gently. Transfer to a serving bowl; chill at least 15 minutes before serving.

mix frozen spinach but thaw it out first eggs and chopped up hot dogs in a bowl and then fry..put seasonings and hot sauce in also if u want..put on a piece of toast...and or just bread...it was actually very good---

huevos ranchers: take some tortillas fry them and then put them asided to drain the oil from the pan. take a couple of eggs and for my i dont cook them all the way through i love them drainy like u know..ne ways cook the eggs sunny side up and while they are cooking put some tomatoe sauce (small can) and add sugar to it....make sure u keep tasting it as ur adding the sugar bc u want the taste to be sweet not bittery..ne ways take the sunny side up eggs put them on the tortillas and drizzle the tomatoe sauce mixture..

I like to make vegetarian sandwiches. Ubber healthy.

Take high fiber bread such as Squirrly bread, spread on light or non fat cream cheese to each slice, add thinly sliced tomatoes and cucumbers (whatever appeals to you) and some alphalfa sprouts.
NUM!

Or for higher proteins roast chicken or turkey slices with roasted red peppers on the same type of bread with low fat mayo.

Just an idea anyway.

If you can, go for natural organic foods.
Avoid sodas, diet sodas or diet drinks, artificial colors or sweeteners, white flour, too much sugar, overly processed foods, fast foods.

~ Eggs, cheese, cottage cheese, goat cheese, skim milk or goat milk, etc.
~ Vegetables
~ Fruit & Berries
~ Beans (chickpeas, black beans, kidney beans, mixed beans, etc.) - full of fiber & protein

Follow portion control, low sugar, low fat-lots of fruit and vegetables, lean cuts of fish and meat. Artifical sweetners should be avoided.

Breakfast: fruit, low fat yogurt, whole grain cereal with 1 or 2 % low fat milk, 100% juice(no sugar added), oatmeal with fruit and no more than 2 teaspoons of raw sugar, occassionally a poached or soft boiled egg with whole grain bread with 1 tbspn real butter, or with peanut butter and honey

Lunch/ dinner: fresh fruit, steamed vegetables, 4 oz broiled boneless skinless chicken breast, fish filets, tuna, lean beef or turkey breast. Pasta with tomato based sauces. Homemade soups.

Snacks and treats: fresh fruit and vegetables, all natural fruit snacks and fruit roll ups, string cheese, low fat,and salt crackers, peanut butter, whole fruit spreads, sandwiches of whole grain bread, vanilla wafers, molasses, or ginger bread cookies(any low fat, low sugar varieties).

Drinks:water, 100% fruit juices, 1 or 2% low fat milk, herbal teas(hot or iced) lightly sweetened.

I don't like to eat breakfast, so if you can give me some very quick, easy to make, healthy and not too filling breakfasts, that'd be great.

Breakfast: Yogurt is always good. You got some calcium, some protein, and some vitamins, assuming you get some fruit flavored yogurt. If you want a little extra crunch, you can sprinkle some of your favorite cereal on top. Fresh fruit is also a wonderful way to start your day.

Lunch: Sandwiches are your bread and butter, literally! Mix it up. Turkey and tuna are both great for you, and if you put some healthy green lettuce (none of that iceberg stuff) and a tomato you will round things out. Go easy on the mayo, if you even want any. On other days you can mix it up with peanut butter and your favorite jelly. For some healthy, quick side snacks, I'd recommend a combination of string cheese, carrot sticks, and grapes. These don't take any prep time, and all have their own benefits. To drink, well, I think that's up to you. Bottled water is the simplest.

I like to make chicken salad for lunches. It’s healthy, fast, and full of protein to keep you full for a long time. Just boil 4 skinless/boneless chicken breasts (around $7), then dice into small squares. Mix in a big bowl with 1 cup mayonnaise, ¼ cup mustard, 1 tsp lemon juice, 1 diced onion, 5 diced stalks of celery, salt & pepper (around $5). So, for a total of only 12 bucks, you have lunch for every day of the week.

I pre-portion the Chicken Salad into ziplock sandwich baggies and keep in the fridge, so they are ready to go for each day. Just use a small insulated lunch bag with a freezer pack, to keep the food fresh until lunch time. For a snack, I bring along a bag of baby carrots and ranch dressing. I work in an office, and this is a great lunch for Mon-Fri. Saves me bundles of money and is much healthier than eating fast food every day. If you want, you can take bread to put the salad on, but since I eat low-carb foods, I skip the bread.

I know I should eat my veggies, but they taste so bitter. If there is a recipe that will cut down on the bitterness from them, that would help me out a lot.

Cabbage
1 package of bacon(chipped/fried)
3 large chopped vadalia onions
1 head of cabbage(chipped)

Fry bacon an onions together until bacon browns.
Poor in 5/6 cups of water.
Bring the bacon, onions and water together to a boil.
Add cabbage.
Boil for ten minutes
(If you are going TOTAL vegetarian, still include the bacon, but don't eat it. The flavoring from the bacon is what makes the cabbage REALLY amazing.)

Squash and Onions
3lbs. fresh squash (sliced)
3 or 4 large onions (any kind)

Spray frying pan to keep from sticking.
Sautee squash and onions until mushy. (about 30 minutes)
Add salt and pepper. (I like light salt and pepper.)

These are my faves. My mother concocted these through experimentation(they are straight from her head).

Baked sweet potatoes are really great and really healthy. Use nonfat butter substitute(I like the squirtable kind) with substitute sweetener and cinnamon.
Don't give up too quickly, I've found sweet potatoes to be very bitter myself, just keep adding stuff until you get the right taste. They DO get better the more stuff you add. Trust me.

My dad also enjoys cinnamon and sugar on mushy carrots.

A good thing to keep in mind is that vegetables make everything taste better. If you get a sandwich with meat on it, just pile on some green peppers, onions, and tomatoes(I love tomatoes). If you are planning on going total vegetarian, I am a BIG fan of tomato sandwiches.

Tomato Sandwich
Put mayonaise on two slices of bread and but two thick slices of tomato on the bread and put salt and pepper on the tomato.

There are some really great store brand vegetable packs that are REALLY easy to make. Experiment with different fried ocra that is already breaded. Also try different packages of cream and whole kernel corn.

Lately I've been into shrimp salad sandwiches. It's easy, just buy a bag of frozen, cooked shrimp. Take out a handfull for each person, let them sit in a bowl of warm water until there are defrosted (5 min) then cut them up and mix with lowfat mayo. On a roll with lettuce- amazing!

A whole roast chicken is always great. It's not quick but all you have to do is pull the guts out, sprinkle with garlic powder, and roast at 425 for an hour an hour and a half. My mom does 350 for 2 hours but I'm impatient.

Shake & Bake pork chops only take 20 minutes and while they are cooking, put in a seperate cookie sheet with cut up veggies tossed in olive oil & garlic seasonings. They are so good, I use zucchini & carrots!

Pasta- instead of the standard tomato sauce, mix with olive oil, minced garlic, parm cheese, and some veggies. I always add black olives!

Steak tips only take 5 minutes if you buy them small enough. I cook them in a frying pan with butter but you can use cooking spray to be healthier.

Ice cream cake:
In a flat glass dish:
Lay out ice cream sandwiches so that they cover the bottom of dish.
Top with Cool Whip.
Do another layer of ice cream sandwiches
Top with Cool Whip.
Garnish as desired. Place in freezer until ready to use.

Or buy a cake and make mini ice cream cups in clear small cups (bathroom cups will work) topped by Cool Whip. Place in airtight container; freeze until ready to use. Garnish as desired just before serving.

Suggested garnish (any or all):
chocolate syrup (or any of variety available;
strawberry, butterscotch; etc)
cherries and a small swizzle stick straw
chocolate chips, mini
multitude of mini candies
candle on birthday child's ice cream

Garnish will work on cake or cups. Could even put a small piece of pound cake in bottom of larger ice cream cup holder (some of those 8 or 9 ounce low clear plastic cups) before adding ice cream and topping. Would only need to add spoon. No flat plates.

Pigs in a blanket/corn dogs and/or peanut butter and jelly triangles, chips, drink. Use small plates or shallow bowls.

Not healthy exactly, but run the ideas by some kids. Hot dogs are okay but some kids always lose the meat or drop the bun.

Don't know if you have your menu planned or for how many you are fixing dessert; the above ideas are flexible and need only a small amount of last minute preparation.
Precook or prepare the sandwiches ahead of time; just heat and eat. Can even buy chips in small individual containers for lunches--bulk. Don't have to worry about where the kids hands have been.

That's pretty healthy and sounds yummy. For homemade salad dressing or dip, you can mix caesar dressing and plain nonfat yogurt together -- about 2 parts dressing to 1 part yogurt. It makes the caesar flavor less intense, and cuts the fat a lot. You can substitute plain nonfat yogurt for part or all of the sour cream in most dressing/dip recipes, too, with good results. When my mom makes onion dip for parties, she uses 1 c low-fat sour cream, 1 cup plain nonfat yogurt, and a packet of Lipton onion soup mix. It's darn good!

I am looking for some easy, healthy, yummy recipes. Short preparation and cook time preferred. Please keep in mind that I'm a college student that works part time and I cannot spend tons of money either. Also, I do not eat chicken or pork. I prefer to eat seafood most of the time as it is lean and healthy. I eat beef very rarely because I prefer it over iron tablets. Thanks! :)

Stir fry - Put a bunch of vegetables in the wok with a touch of oil, serve over short grain brown rice.

Soup - Boil vegetables, throw in some noodles, drop in a raw egg or some cooked beans, how about a few shrimp.

Tortillas, beans & cheese. Slice in some tomatoe and avocado.

Sandwiches - Get nice crusty bread, good cheeses, fresh tomatoes, grilled vegetables, tuna fish. Also smoked fish on bagels.

Pilaf - Rice with herbs & seasonings, mix in toasted nuts & seeds, stir in some minced broccoli, carrot or cauliflower, cook using broth for more flavor, add fresh melon on top

Get some good Indian, Chinese and South Asian cookbooks!

What are some healthy, tasty meals for the school year?

Can anyone give me tasty but healthy recipes for the school year?
I don't like to eat breakfast, so if you can give me some very quick, easy to make, healthy and not too filling breakfasts, that'd be great.

And lunch I need to be able to make in about 15 minutes, be eaten in about 35ish minutes, healthy, and can fit into a lunch box.

Breakfast: Yogurt is always good. You got some calcium, some protein, and some vitamins, assuming you get some fruit flavored yogurt. If you want a little extra crunch, you can sprinkle some of your favorite cereal on top. Fresh fruit is also a wonderful way to start your day.

Lunch: Sandwiches are your bread and butter, literally! Mix it up. Turkey and tuna are both great for you, and if you put some healthy green lettuce (none of that iceberg stuff) and a tomato you will round things out. Go easy on the mayo, if you even want any. On other days you can mix it up with peanut butter and your favorite jelly. For some healthy, quick side snacks, I'd recommend a combination of string cheese, carrot sticks, and grapes. These don't take any prep time, and all have their own benefits. To drink, well, I think that's up to you. Bottled water is the simplest.
