Heart Healthy Sandwiches

2 slices linseed rye bread
1-2 slice lean meat, such as chicken,turkey,smoked meat,beef or lean ham
3 leaves lettuce
thin tomatoes, slices
thin cucumbers, slices
pepper
mustard

put mustard on both pieces of bread.

put lettuce on one slice.

top with tomato, sprinkle with pepper.

top with meat, cucumber and remaining
piece of bread.

cut in four and wrap in plastic wrap or put in plastic sandwich container.

refrigerate until use.

Heart Healthy Pancakes

1 1/2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 1/2 cups skim milk
2 tablespoons corn oil
2 egg whites

Combine dry ingredients in large bowl.

Add milk, corn oil, and mix until just moistened.

Beat egg whites in small bowl until stiff peaks form.

Fold into batter.

Place on greased griddle (medium high).

When bubbles begin to form, flip pancakes.

Serve with strawberry garnishes and warm real Vermont maple syrup.

1 (6 ounce) carton your favorite yogurt
1 banana or fruit
1/3 cup cranberry-raspberry juice
1 tablespoon soy powder
1/2 cup crushed ice (MORE ICE if you want it thicker)

Add ice to blender with juice.

Add remaining ingredients and blend until thick, ENJOY.

Heart Healthy Fried Rice

1 1/2 cups water
1 cup fat free chicken broth
1 1/3 cups long grain white rice, uncoooked
2 teaspoons canola oil
2 tablespoons onions, finely chopped
1 cup celery, finely chopped
2 tablespoons green peppers, finely chopped
1/2 cup pecans, chopped
1/4 teaspoon ground sage
1/2 cup water chestnuts, sliced
1/4 teaspoon nutmeg
black pepper

Bring water and chicken broth to boil in medium-size saucepan; add rice and stir, cover and simmer for 20 minutes.

Remove pan from heat, let stand, covered, for 5 minutes or until liquid is absorbed, Reserve,.

Heat oil in a large nonstick skillet; Saute onion and celery over moderate heat for 3 minutes; stir in green pepper, pecans, sage, chestnuts, nutmeg and pepper and cooked Rice, fluff with fork before serving.

Heart Healthy Salsa

1 cup diced zucchini
1 cup red onions, chopped
2 red peppers, seeded and diced
2 green peppers, seeded and diced
4 tomatoes, diced
3 garlic cloves, minced
1/2 cup fresh cilantro
1 teaspoon black pepper
2 teaspoons sugar
1/4 cup lime juice
1 teaspoon salt

Combine all ingredients in a large bowl and toss gently to mix. Cover and refridgerate for at least 30 minutes to allow flavours to blend.

If you prefer a hotter version, add 1/2 to 1 tbsp finely chopped jalapeno peppers.

I'm cutting down on the calories so what are some good recipes of healthy eggs.I have only(the only things for eggs):grade A milk,a LARGE thing of large eggs,turkey,all types of shredded cheeses,brown and serve beef sausage,parsley,black pepper,salt,and cinnamon.I might have more things you might use for eggs so please just give me as many recipes as you can.THANKS!!

Chicken or Turkey Salad Sandwich

2 skinless, boneless chicken or turkey breast
4 eggs
1 red apple, diced (optional)
3 green onions, chopped
1/3 cup relish
1/2 cup mayonnaise
2 stalks celery, thinly sliced
1 (8 ounce) can pineapple chunks, juice reserved
1/4 cup chopped fresh cilantro
Salt and pepper



Directions:

1.Bring a large pot of water to a boil. Add chicken or turkey and cook until thoroughly cooked and no longer pink inside, approximately 20 minutes. Drain, cool and chop.

2.Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, rinse with cold water, 2 minutes, peel and slice.

3.In a large bowl, mix together the chicken, sliced eggs, apple, onions, relish, mayonnaise, celery, pineapple (with just a little juice for flavor), cilantro, seasoning to taste.

Serve on bread, buns, pitas or wraps with shredded lettuce, sliced tomato and any other fresh sliced veggies.

Turkey Omelette

4 eggs
1 green onion, sliced
2 tablespoons minced fresh parsley
1/4 teaspoon dried tarragon
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter or margarine
1/2 cup cooked turkey meat, shredded
1/2 cup seeded diced tomato ( you can add sauteed onion, peppers, mushrooms, steamed broccoli)
1/2 cup shredded cheddar cheese


Directions:

In a bowl, beat eggs, onion, parsley, tarragon, salt and pepper. Melt butter in a skillet over medium heat; add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. Sprinkle with turkey, tomatoes and cheese. When the eggs are set, remove from the heat; fold omelet in half.

This would also work with the sausage instead of the turkey, just brown then add to the omelette.

Deviled Eggs

6 eggs
1/2 teaspoon paprika
2 tablespoons mayonnaise
1/2 teaspoon mustard powder
Salt and pepper


Directions:

1.Place eggs in a pot of salted water. Bring the water to a boil, and let eggs cook in boiling water until they are hard boiled, approximately 10 to 15 minutes. Drain eggs, and let cool.

2.Cut eggs in half, lengthwise. Remove the egg yolks and mash them together in a small mixing bowl. Mix in the paprika, mayonnaise, dry mustard, salt ans pepper. Spoon mixture into the egg shells, chill for 1 hour and serve.

(You can add cooked, chopped bacon and shredded cheddar cheese to the egg yolk mixture if desired.)

4 sausages, cooked and sliced
1 tablespoon butter or margernie
4 eggs
2 green onions, sliced
1/3 cup milk
salt, pepper
cheddar cheese
2-4 slices tomato

Directions:

1. Heat butter in skillet. Whisk eggs and green onions with milk, season with salt and pepper.
2. Scramble fry eggs, when almost doen add cooked, sliced sausage, top with cheese. Remove from heat, cover 2 minutes, or until cheese melts.
3. Toast buns, (if desired) add sliced tomato, top with egg/sausage mixture, top with top bun.
Also works with cooked, crumbled bacon.

Fried Egg Sandwich - serves 4

Ingredients:

2 teaspoons butter
4 eggs
4 slices processed American cheese
8 slices toasted white bread
salt and pepper to taste
2- 4 tablespoons ketchup


Directions:

1.In a large skillet, melt butter over medium high heat. Crack eggs in pan and cook to desired firmness. Just before eggs are cooked, place a slice of cheese over each egg.

2.After cheese has melted, place each egg on a toasted slice of bread. Season eggs with salt and pepper. Spread ketchup on remaining slices of bread and cover eggs with bread to make 4 sandwiches. Serve warm.
(Can add slices of cooked bacon or ham)

Healthy sandwich recipes?

Q. Any really healthy sandwich recipes? NOTE: I'm on a diet, so no fattening things! PS NOTE: I'm 14, keep it easy. Something that I can take to school!
NOTE: I don't eat pig at all. Also I don't want meat/chicken in it xx


Answer
Choose whole wheat bread, because it's more nutritious than white bread, plus it keeps you feeling full for longer.

Add some salad (lettuce, sliced tomato and cucumber, for example) and then a sliced boiled egg, some smoked ham (or a non-meat alternative, something in slices) or some sliced low-fat cheese, then add some low-fat mayonnaise or salad dressing. Wrap the sandwich in foil to keep it really fresh. You can also take an apple or orange.

Make sure the salad makes up half the filling though, because that bulks out the sandwich and is almost calorie-free. If you want to make something you can scoop into the salad, you could finely chop some celery and onion, and stir it with reduced-fat salad dressing plus a can of tuna or some chopped boiled egg, and use that.

Red, White & Blue Cream Cake

1 pkg. low fat white cake mix
1 envelope Dream Whip (whipped topping mix)
1/2 tsp. baking powder
1 cup cold water
1/2 cup egg whites
1 tbsp. olive oil
1 tsp. vanilla
3 ozs. strawberry gelatin powder
1/2 cup boiling water
3 ozs. fat free vanilla pudding
1 1/2 cups skimmed milk
1 1/2 envelopes Dream Whip (prepared 3 cups)
1 1/2 cups fresh strawberries
1 cup fresh blueberries
1/2 cup miniature marshmallows

1. Preheat oven to 350. Prepare two 13" x 9" pans with cooking spray, set aside.
2. In a mixing bowl combine cake mix, 1 envelope of dry Dream Whip mix and baking powder.
3. In another bowl combine water, egg whites, oil and vanilla.
4. Mix dry ingredients with wet ingredients just to moisten.
5. Pour mixture into prepared pans. Bake for 20 minutes or until golden brown.
6. Place aluminum foil on wire racks. Remove both cakes from their pans and cool completely on wire racks.
7. Poke cakes with fork at one-inch intervals. Dissolve gelatin in boiling water and slowly drizzle over both cakes allowing gelatin to seep into holes. Chill for 1 hr.
8. Prepare pudding according to the package directions using 1 1/2 cups of milk. Fold pudding into 1 cup of prepared Dream Whip and 1/2 cup of blueberries.
9. Spread bottom layer with pudding mixture and spread remaining 1/2 cup of prepared Dream Whip on the top layer and the sides of the cake. Arrange strawberries, blueberries and miniature marshmallows on cake to resemble the American Flag. Place some miniature marshmallows around edge of cake.

12 Servings. 335 calories; 7g fat (19% calories from fat); 5g Protein; 61g Carbohydrate; 476mg sodium


Barbecued Sandwiches

4 c turkey light meat, skinless, cooked and cubed
1/2 c white vinegar
1/2 c ketchup
2 tsps Worcestershire sauce
1/2 tsp salt
1/8 tsp black pepper
8 pcs hamburger buns, split and toasted

1. Combine vinegar, ketchup, Worcestershire, salt, and black pepper in a large saucepan. Bring to boil.
2. Reduce heat and simmer uncovered for 30 minutes.
3. Stir in turkey and cook five minutes.
4. Spoon hot barbecue mixture over bottom half of toasted buns.
5. Top with other half of toasted buns.

8 servings. 189 Calories; 3g Fat; 21g Protein; 18g Carbohydrate; 48mg Cholesterol; 485mg Sodium

Green Bean Potato Salad


Serves: 8 person(s)

Preparation Time: 10 mins
Cooking Time: 15 mins


Each serving of this healthy salad equals one and a half veggie servings.


Ingredients:
1 lb green beans, with ends cut

2 lb red potatoes, cut into bite-sized pieces

1 cup diced red bell pepper

1/2 cup chopped red onion

3 cloves garlic, minced

3 Tbsp fresh dill

4 Tbsp balsamic vinegar

3 Tbsp olive oil

1 Tbsp dijon mustard

1 black pepper, to taste



Directions:
SALAD: Steam green beans in a steamer for 5 to 8 minutes. Cook potatoes in boiling water until tender. Cool green beans and potatoes and place in a bowl.

When cooled, add bell pepper and onion to the cooled green beans and potatoes.

DRESSING: As green beans and potatoes are cooling, prepare the dressing by mixing together garlic, dill, vinegar, olive oil, mustard, and black pepper. Top salad with dressing.

What are some simple, yummy, healthy recipes?

I am looking for some easy, healthy, yummy recipes. Short preparation and cook time preferred. Please keep in mind that I'm a college student that works part time and I cannot spend tons of money either. Also, I do not eat chicken or pork. I prefer to eat seafood most of the time as it is lean and healthy. I eat beef very rarely because I prefer it over iron tablets. Thanks! :)

Stir fry - Put a bunch of vegetables in the wok with a touch of oil, serve over short grain brown rice.

Soup - Boil vegetables, throw in some noodles, drop in a raw egg or some cooked beans, how about a few shrimp.

Tortillas, beans & cheese. Slice in some tomatoe and avocado.

Sandwiches - Get nice crusty bread, good cheeses, fresh tomatoes, grilled vegetables, tuna fish. Also smoked fish on bagels.

Pilaf - Rice with herbs & seasonings, mix in toasted nuts & seeds, stir in some minced broccoli, carrot or cauliflower, cook using broth for more flavor, add fresh melon on top

Get some good Indian, Chinese and South Asian cookbooks!

I love the taste of eggs, but I hate the smell of it. What are some healthy egg sandwich recipes that will hide the smell of eggs?


Answer
Add a lot of diced up celery, that does it for me. Also the crunchiness is great and it makes a very tasty sandwich. (For each egg use about a tbsp. of your favorite mayo.) Best to chill before eating; then all you'll smell is the celery.

any of these could be healthy if u substitue.except for the salad i think its as healthy as its gunna get..

i just asked the same question about 15 minutes ago and i made it in about 5 minutes:
the recipe was

mix frozen spinach but thaw it out first eggs and chopped up hot dogs in a bowl and then fry..put seasonings and hot sauce in also if u want..put on a piece of toast...and or just bread...it was actually very good---

u could boil them and then drain and add veggies, and pasta sauce and if u really want some kind of meat..do u have canned meat? if so there u go..

huevos ranchers: take some tortillas fry them and then put them asided to drain the oil from the pan. take a couple of eggs and for my i dont cook them all the way through i love them drainy like u know..ne ways cook the eggs sunny side up and while they are cooking put some tomatoe sauce (small can) and add sugar to it....make sure u keep tasting it as ur adding the sugar bc u want the taste to be sweet not bittery..ne ways take the sunny side up eggs put them on the tortillas and drizzle the tomatoe sauce mixture..

I want to cook breakfast for my family tomorrow, and I want it to be something healthy, and something they would like. They do like healthy stuff, just not alot. Is there any healthy foods I can cook for my family? And if possible can you give me a link to the recipe?

Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). I’d try the recipe, if it’s good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).

Panini With Artichoke Hearts, Spinach and Red Peppers.Here’s a great way to pack a lot of nutrients into a sandwich. If you use frozen artichoke hearts, the panini are quickly assembled.

6 ounces (1 bag) baby spinach
3 tablespoons olive oil
2 garlic cloves, minced
12 ounces frozen or fresh cooked artichoke hearts, sliced
1 teaspoon fresh thyme leaves
Salt, preferably kosher salt, and freshly ground pepper
1 large or 2 smaller roasted sweet red peppers, sliced
1/4 pound fontina or Gruyère, thinly sliced or grated
8 slices whole grain country bread

1. Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 10 to 20 seconds. Transfer to the ice water to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely.

2. Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat, and add the garlic. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the artichoke hearts. Stir for a few minutes, until the artichoke hearts are beginning to color, and add the thyme leaves and the spinach. Toss together and season to taste with salt and pepper. Remove from the heat.

3. Preheat a panini grill. Top four of the bread slices with the artichoke hearts and spinach. Add strips of roasted pepper, then cheese. Top with the remaining bread and press together. Brush the outside of the bread (top and bottom slices) with olive oil. Place in the panini maker and grill for four to five minutes, until the cheese has melted and the bread is toasty. Slice in half and serve hot.

Yield: Serves four
Advance preparation: You can prepare the artichoke filling through step 2 several hours or even a day ahead of assembling the panini.

Filling, quick breakfast recipes besides the same old thing?

I'm a college student (well, on summer break, but still). My mornings are usually pretty busy, and I generally don't have time to make a big breakfast (ie: eggs, bacon, pancakes). Besides, I get tired of eating the same breakfast foods every morning. Don't get me wrong...I love eggs and bacon. It's just a pain to make all that on a school morning, and I usually tend to get hungry not long after. So, I usually end up running through McDonalds drive-thru. I'm unbelievably sick of that, as well.

So, what I'm wondering is if anyone has any relatively healthy, quick and filling recipes for breakfast besides the same-ole-same-ole. No oatmeal or scrambled-egg sandwiches, please. Gimme some p'zaz to start the day off (and make it snappy, plz, mmmk, thks) *grin*

Since you want something quick different from the norm, I'm assuming you don't feel like making something the night before.

As far as something filling, you need specialized protiens. THe stuff most people think of as a normal breakfast is mostly starches. They are mostly sugar and tend to burn up quickly, which means you burn out. Honestly, when I was having this problem, I just bought some of the Slim Fast Optima shakes, and one would at least hold me until lunch.

If you want an easy recipe, here's the best I can offer, though it is a bit plain.

Wheat Bread, Lettuce, Tomato, sausage, and cheese.

Just toast the bread (You can spread mayo if you want.)
One leaf of lettuce, one tomato slice.
Use ground sausage, (usually comes in a tube of some sort)
Sqeeze out the desired amount of sausage and press into a thin patty. (The thinner it is the quicker it cooks.)
Cook the patty, lay a slice of your favorite cheese on top of the sausage to melt a little.
Place on bread.

It's a great sandwich and you can change out the meat as you'd like.

You could use ham slices, or make tuna salad with apple chunks instead of relish.
You could also trade up the bread for a bagel once in a while. I've tried the sausage and cheese on a blueberry bagel once, and it was surprisingly good.

It's kind of basic, but if you keep sliced tomatoes in a container and already have a head of lettuce, there is almost no work involved in making it. Plus it's surprisingly filling with a glass of milk or orange juice.

It should stick with you for a little longer than a bowl of cereal or some other sugar based item.

i just asked the same question about 15 minutes ago and i made it in about 5 minutes:
the recipe was

mix frozen spinach but thaw it out first eggs and chopped up hot dogs in a bowl and then fry..put seasonings and hot sauce in also if u want..put on a piece of toast...and or just bread...it was actually very good---

Chicken or Turkey Salad Sandwich

2 skinless, boneless chicken or turkey breast
4 eggs
1 red apple, diced (optional)
3 green onions, chopped
1/3 cup relish
1/2 cup mayonnaise
2 stalks celery, thinly sliced
1 (8 ounce) can pineapple chunks, juice reserved
1/4 cup chopped fresh cilantro
Salt and pepper



Directions:

1.Bring a large pot of water to a boil. Add chicken or turkey and cook until thoroughly cooked and no longer pink inside, approximately 20 minutes. Drain, cool and chop.

2.Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, rinse with cold water, 2 minutes, peel and slice.

3.In a large bowl, mix together the chicken, sliced eggs, apple, onions, relish, mayonnaise, celery, pineapple (with just a little juice for flavor), cilantro, seasoning to taste.

Serve on bread, buns, pitas or wraps with shredded lettuce, sliced tomato and any other fresh sliced veggies.

Turkey Omelette

4 eggs
1 green onion, sliced
2 tablespoons minced fresh parsley
1/4 teaspoon dried tarragon
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter or margarine
1/2 cup cooked turkey meat, shredded
1/2 cup seeded diced tomato ( you can add sauteed onion, peppers, mushrooms, steamed broccoli)
1/2 cup shredded cheddar cheese


Directions:

In a bowl, beat eggs, onion, parsley, tarragon, salt and pepper. Melt butter in a skillet over medium heat; add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. Sprinkle with turkey, tomatoes and cheese. When the eggs are set, remove from the heat; fold omelet in half.

This would also work with the sausage instead of the turkey, just brown then add to the omelette.

Deviled Eggs

6 eggs
1/2 teaspoon paprika
2 tablespoons mayonnaise
1/2 teaspoon mustard powder
Salt and pepper


Directions:

1.Place eggs in a pot of salted water. Bring the water to a boil, and let eggs cook in boiling water until they are hard boiled, approximately 10 to 15 minutes. Drain eggs, and let cool.

2.Cut eggs in half, lengthwise. Remove the egg yolks and mash them together in a small mixing bowl. Mix in the paprika, mayonnaise, dry mustard, salt ans pepper. Spoon mixture into the egg shells, chill for 1 hour and serve.

(You can add cooked, chopped bacon and shredded cheddar cheese to the egg yolk mixture if desired.)

Breakfast Buns

4 sausages, cooked and sliced
1 tablespoon butter or margernie
4 eggs
2 green onions, sliced
1/3 cup milk
salt, pepper
cheddar cheese
2-4 slices tomato

Directions:

1. Heat butter in skillet. Whisk eggs and green onions with milk, season with salt and pepper.
2. Scramble fry eggs, when almost doen add cooked, sliced sausage, top with cheese. Remove from heat, cover 2 minutes, or until cheese melts.
3. Toast buns, (if desired) add sliced tomato, top with egg/sausage mixture, top with top bun.
Also works with cooked, crumbled bacon.

Fried Egg Sandwich - serves 4

Ingredients:

2 teaspoons butter
4 eggs
4 slices processed American cheese
8 slices toasted white bread
salt and pepper to taste
2- 4 tablespoons ketchup


Directions:

1.In a large skillet, melt butter over medium high heat. Crack eggs in pan and cook to desired firmness. Just before eggs are cooked, place a slice of cheese over each egg.

2.After cheese has melted, place each egg on a toasted slice of bread. Season eggs with salt and pepper. Spread ketchup on remaining slices of bread and cover eggs with bread to make 4 sandwiches. Serve warm.
(Can add slices of cooked bacon or ham)

In a bowl, beat eggs, onion, parsley, tarragon, salt and pepper. Melt butter in a skillet over medium heat; add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. Sprinkle with turkey, tomatoes and cheese. When the eggs are set, remove from the heat; fold omelet in half.

This would also work with the sausage instead of the turkey, just brown then add to the omelette.

Deviled Eggs

6 eggs
1/2 teaspoon paprika
2 tablespoons mayonnaise
1/2 teaspoon mustard powder
Salt and pepper


Directions:

1.Place eggs in a pot of salted water. Bring the water to a boil, and let eggs cook in boiling water until they are hard boiled, approximately 10 to 15 minutes. Drain eggs, and let cool.

2.Cut eggs in half, lengthwise. Remove the egg yolks and mash them together in a small mixing bowl. Mix in the paprika, mayonnaise, dry mustard, salt ans pepper. Spoon mixture into the egg shells, chill for 1 hour and serve.

(You can add cooked, chopped bacon and shredded cheddar cheese to the egg yolk mixture if desired.)

Breakfast Buns

4 sausages, cooked and sliced
1 tablespoon butter or margernie
4 eggs
2 green onions, sliced
1/3 cup milk
salt, pepper
cheddar cheese
2-4 slices tomato

Directions:

1. Heat butter in skillet. Whisk eggs and green onions with milk, season with salt and pepper.
2. Scramble fry eggs, when almost doen add cooked, sliced sausage, top with cheese. Remove from heat, cover 2 minutes, or until cheese melts.
3. Toast buns, (if desired) add sliced tomato, top with egg/sausage mixture, top with top bun.
Also works with cooked, crumbled bacon.

Fried Egg Sandwich - serves 4

Ingredients:

2 teaspoons butter
4 eggs
4 slices processed American cheese
8 slices toasted white bread
salt and pepper to taste
2- 4 tablespoons ketchup


Directions:

1.In a large skillet, melt butter over medium high heat. Crack eggs in pan and cook to desired firmness. Just before eggs are cooked, place a slice of cheese over each egg.

2.After cheese has melted, place each egg on a toasted slice of bread. Season eggs with salt and pepper. Spread ketchup on remaining slices of bread and cover eggs with bread to make 4 sandwiches. Serve warm.
(Can add slices of cooked bacon or ham)

What's a healthy breakfast for my family?

Q. I want to cook breakfast for my family tomorrow, and I want it to be something healthy, and something they would like. They do like healthy stuff, just not alot. Is there any healthy foods I can cook for my family? And if possible can you give me a link to the recipe?

Cereal

A. Omelets with eggs, cheese, avocado, spinach and tomatoes would be good.

A. Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). I’d try the recipe, if it’s good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).

A. Breakfast:

- Egg whites (better for you than the whole egg) with a little salt and pepper, maybe some cheese to add flavor, on wheat toast.
- Grapefruit (it's sooo healthy for you, it can be a snack too)

- Oatmeal
- All fruit smoothie. Have non frozen fruit and add ice or use frozen fruit and add a little 100% fruit juice. You can make it a *healthy* milk shake by using low fat milk instead of juice and adding a little sugar (sugar isn't unhealthy in small amounts, but fake sugar like sweet and low and equal are bad for you)

Lunch/Dinner:

- Chicken breast with lemon pepper or other seasonings
- A spinach tortilla with chicken cooked in some bbq sauce. Add lots of lettuce and a little bit of light ranch (like a teaspoon, if even that).
- Salad- there are thousands of possible salads you can make but what I love doing is a bunch of lettuce, some spinach if you like that, salt, pepper, garlic (powder and only a small amount) and vegetables like tomatoes, cucumbers, or even carrots and peppers
- Taco Salad: brown some lean beef, drain any fat, add seasonings (McCormick has a taco seasoning packet for 50 cents). Make a bowl full of lettuce, tomatoes if you want, some beef, some cheese if you want, and tortilla chips if you want (less healthy version).
- Chicken in a bag- McCormick's has these awesome chicken bag seasonings where you throw chicken in the bag (they provide) with some carrots, potatoes, whatever you want, add the seasoning and bake for about an hour. One of my husbands favorites!
- Costco sells individual salmon fillets. Take one out of the fridge/freezer, season to your liking, throw on a pan, the grill, or in the oven and cook.
- a sandwich- between whole wheat bread slices, pita style, or wrapped up (spinach wraps are really delicious, or whole wheat wraps which I'm not a huge fan of).
- Make some quinoa or brown rice in a rice cooker or in a pot if you don't have one. Add some black beans, salt and pepper, and some mozzarella if it's still to bland. I like to add some sriracha (chili hot sauce) into the rice as it cooks and some garlic seasoning. It adds some kick and makes it taste really good without adding the sodium from cheese.

Snacks:
- peppers
- celery. If you hate it alone add some organic peanut butter (no preservatives) you can even go to many stores and grind your own peanuts into peanut butter.
- peas, green beans, cucumbers, tomatoes, other vegetables but not potatoes or corn.
- apples, pears, bananas, berries, grapefruit, and other fruits.
- some nuts or a homemade trail mix (raisins, peanuts, almonds, some dark chocolate chips, whatever else you want)


Dessert
- a small amount of dark chocolate is actually really good for you. The higher the cocoa content the better :) But only a small amount.
