Any tips for going vegetarian?

Q. I want to go vegetarian but I want to do it in a healthy way. Also, I am having trouble avoiding meat (especially at school, not alot of vegetarian choices). I have had a bit of a revalation and no longer want to consume innocent little animals. Help please?

1. Do it slow. You are more likely to stick to it if you make it part of your lifestyle instead of making the change all at once.

2. Read about nutrition requirements and understand everything that you need to eat. You have to make up for the protein with beans and greens. It isn't hard once you figure it out, but you need to be sure you understand what your body needs.

3. Take your lunch to school.

4. Take advantage of the meat substitutes in the grocery store. They make it easy to still pack a sandwich and cook many of the same recipes that you are used to. There are fake turkey slices, fake beef and chicken fajita strips, veggie meatballs, fake hot dogs.

5. Read labels - you will be surprised at how many things have animal fat in them.

6. Don't feel bad when you backslide. It happens. It happened to me a lot when I was working the kinks out of becoming vegeterian. I felt discouraged a lot because I felt like I was out of options as a teenager who really didn't have a lot of control over her environment.

7. Talk to your parents. They may be at a loss as to what to cook. After you become educated on vegeterianism you can give them some recipes. A lot of people are surprisingly open to a vegeterian diet. I talked to my parents about it when I was a teenager and they were very supportive. Of course there were some evenings when I had to cook for myself but thats part of life. Over time they have become more vegeterian also and tofu is a regular part of their meals. However your parents may not want to give up meat. Mine were never big meat eaters to begin with, and my dad was actually looking for a low cholesterol diet at the same time so it all worked out.

8. Don't get bummed out when it is hard to fit with your friends. I felt kind of isolated sometimes because people considered it weird to be vegeterian. It was hard to eat at a friend's house.

I started going vegeterian when I was 16 but wasn't a full vegeterian until about 2 yrs later. It just takes time to make such a big switch, but I am so glad that I did! Good luck! By the way tonight my boyfriend and I ate curry tofu which I cooked. He isn't vegeterian but usually likes my veg cooking.

My staple is beans and rice. I can not live without beans and rice because this is an excellent source of protein. There are hundreds of recipes out there so find one you like, and buy a pressure cooker. The pressure cooker is a vegeterian's best friend because dried beans are a great source of protein and a pressure cooker will cook them in a fraction of the time it takes in a pot (about 30 min compared to several hours)

I've teeter-tottered my whole life between a vegetarian life-style and meat-eating life style (mainly chicken, i don't like red meat).... and I just read the book "Skinny B****." After reading it I have decided I want to go vegan, how did you approach this new life style? Did you go cold turkey or did you slowly work certain foods out of your diet. In the book, it says to start with one bad item and not eat it for a week and then the next week to get rid of another bad item on top of the first item, etc. etc. I'm afraid that if I just work on one item than it will be easy to just give up on this new life style and go back to my old habits.... cheese please! I'm changing my eating habits b/c I love animals and don't want to contribute to the cruelty they go through. By just getting rid of only cheese and not the rest of the bad stuff, I feel like I'm not fulfilling my goal b/c I would still be eating other animal products. What do you think? If you have gone vegan, how did you do it?

Just take whatever time is needed for you to adjust. Don't let anyone tell you to go "cold-turkey" if you aren't ready. Getting ahead of yourself will just cause you to eat the wrong foods if nothing else is available or to not get enough food, which will make you hungry and sick. Then you'll blame it on being veg instead of poor planning.

You need to learn how to cook, those companies that actually do cater to vegan eaters usually charge an arm and a leg even if their food sucks just because it is heat-and-eat.

I'm vegan and these are some of my favorite things to eat:

Breakfast: bananas, cream of wheat with brown sugar and soy butter, cereal, pancakes or french toast with real maple syrup, vegan "sausage" patties, smoothies.

Snack: BRUSSEL SPROUTS =) no joke

Lunch: VEGAN "SAUSAGE" SANDWICHES, sandwiches with vegan deli slices(Tofurkey is the only one that's kinda funky), fruit, dinner leftovers, couscous salad, vegan sushi, potato or pasta salad.

Dinner: sloppy joes, "sausage" and gravy with homemade biscuits, Spaghetti and Trader Joe's "meatballs" or TVP, lasagna, Thai pad see ew, pad khi mao(drunkard's noodles), pad prig king, tofu+eggplant with basil sauce, yellow thai curry with tofu or vegan chikn and veggies and jasmine rice, Indian dal with homemade roti or dosai, channa masala, aloo gobi, vegetable or minestrone soup, pizza, STEAMED "PORK" BUNS with potstickers or spring rolls, sweet&sour/orange/lemon chikn, vegan pho or wonton soup, baked tofu, BBQ homemade seitan (tastes like BBQ'd ribs), kabobs

The best thing to remember is to take your time so that for example: when you are comfortable not eating beef and pork you can then give up chicken when you are sure you can make the commitment permanently.
Depending on your age or reliance on parents or regional options, it may not be best to give yourself a label. The important thing is to do your best to make progress and be committed to your compassion towards animals. Never put your focus onto what you or other people use to describe yourself.

If you meet someone that talks down to people for eating meat, dairy, etc or to you because they think they are "more veg" than you, laugh in their face and tell them they are a disgrace to the entire philosophy. People like this only hurt the idea of veg*ism AND the animals. The point of all of this is to live compassionately and and as free from cruelty as you can, all the while maintaining your health and a positive attitude. People who don't maintain either, need not open their mouths and represent our beliefs.

Freeze a whole banana and then serve with a spoon! It tastes like banana ice cream!

Serve frozen peas or other vegetables right out of the freezer as finger food, - they're sweet.

Puzzle sandwiches: Cut a sandwich into odd shapes that fit together like a puzzle.

Serve crepes with many different fillings.

Make and use sprinkles: Chop, grind, or mix together 1/3 cup granola, 1/3 cup nuts, and 1/3 cup wheat germ. Sprinkle on yogurt, fruit, ice cream, cottage cheese.

Pretzel Sparklers recipe
1 package pretzel rods
White chocolate
Sprinkles

Melt chocolate over very low heat. Dip pretzel rods in melted chocolate about halfway. Roll in sprinkles. Let dry on wax paper. Change the sprinkles color to match the season - red and green for Christmas, red, white and blue for the Fourth of July, orange and black for Halloween, etc





Puppy Chow

9 cups rice chex cereal

1 cup semi sweet chocolate chips

1/2 cup creamy peanut butter

1/4 cup margarine

1 teaspoon vanilla

1 1/2 cups powdered sugar

Place the chex cereal in a large bowl. Large enough to have enough room to stir things up. Melt the chocolate chips, margarine, and peanut butter in a microwave safe dish, in the microwave for 1 1/2 minutes, or until smooth and creamy when stirred. Add the vanilla, and stir. Pour over the cereal and stir until the cereal is evenly coated. Put the powdered sugar in a large size plastic bag, add the coated cereal and shake until evenly coated with the powdered sugar. Spread over a sheet of waxed paper until cooled off. Store in an air tight container in the refrigerator







KIDS COOKING MICROWAVE TORTILLA PIZZA

One 8 inch flour tortilla shell on a double layer paper towel. Cook on high for 1 minute. Spread with 3 tablespoon pizza sauce and sprinkle with Mozzarella cheese. Microwave for 25-35 seconds until cheese melts.
Sprinkle with dried oregano, if you desire. Let stand 1 minute. Cut.







Fruit Loop Candy recipe
20 ounces almond bark
2 cups colored (fruit flavored) marshmallows
2 cups crisp rice cereal
2 cups salted peanut halves
2 cups Fruit Loops

Melt almond bark in microwave according to package directions. Stir in remaining ingredients. Drop by spoonsful onto greased cookie sheet. Chill








Wave your magic wand and this delicious and fluffy treat will separate all by itself! Add strawberries to make this dessert taste berry berry good!


STIR 11/2 cups boiling water into 1 pkg. (4-serving size) JELL-O Gelatin (any flavor) in a large bowl until completely dissolved. Add 2/3 tub of unthawed COOL WHIP Whipped Topping, stir with whisk until melted and mixture is well blended. Stir in 1 cup chopped strawberries.
POUR mixture evenly into 5 dessert dishes.

REFRIGERATE 2 hr. or until set. Top with remaining whipped topping before serving. Makes 5 servings.

Due to me working full time and going to school at night i barely have time to make breakfast, lunch, or dinner and barely have an option of eating healthy so i was wondering what are some healthy, fast meals i could use for breakfast and lunch and supper and that are on the cheap side. Thanks for all the help.

I can eat as cheaply as someone bankrupt or as well as a working person.

I have tried the vegan route with beans, brown rice, fruit, vegetables, and started looking very doughy and gained weight.

I will describe the simple plan I follow, and also, I, too, worked full time and went for a masters degree plus taking extra graduate credits on weekends. The key is simplicity, health, and learning to eat less; otherwise, the vegan route of hydrating beans is the cheapest.

You will want to feel satiated, but not ill from greasy vending machine food. You will want to feed your brain. This means fish, eggs, olive oil, oranges, lemons, bananas, apples, broccoli, spinach and other greens. If you omit all the starchy, gummy food that stick in your gut and twist it into knots, you will be able to maneuver your schedule with aplomb. I will provide sample meals, and you can vary as you wish.

Breakfast: poached egg, greens, sliced orange, coffee
Lunch: Deli meat wrapped in lettuce leaves, berries, almond milk or plain water (drink lots of water)
Dinner: Poached fish (poach it in white wine, put a lid on it) served with tartar sauce and lemon, green salad with cut up tomato dressed with olive oil and Balsamic vinegar, medium sliced banana.
If you need more fiber, encapsulate ground flaxseeds or take psyllium fiber tablets.

For supplements, take Vitamin B group, Vitamin D, Magnesium, Calcium (the last three come together with Caltrate). You save money as you don't buy fast foods, don't buy soda, eat no sugar, no salt, don't buy coffee outside of the home, no booze.

If you want to go really cheap, make rice and beans, black bean soup, canned chili with beans, and additional fruit and vegetables. Add lemon to the water. It makes a cleansing beverage. I didn't eat like this when I did the double thing. I think I was a vegetarian then. Also, I would stop at the deli and buy lots of sides to go with the fresh sandwiches, because I don't like to be hungry.

However, the way I am eating now, with fish, and I eat actually more, as I buy expensive smoked fish and smoked lox as well, and organic greens is so filling, I can hardly manage to eat another bite.

If you start your day with oatmeal, you will crave carbohydrates throughout the rest of the day, and be miserable at night classes for cravings. It is better to get the brain food from the fish, not fried from the franchise at the corner, but poached with no butter added. It does take a while to get used to it. The recipe for a poached egg made in the microwave is in YA if you search for it. Unfortunately, food prices have risen, so it is hard to get fine food at a cheap price. There is a market, called Aldi's, that has bargain food, if you have it near you. It is still good to be a man with a plan.

My children are real picky eaters. Most of the time I cook something half of it always ends up in the trash, then I resort to little snacks which is unhealthy for them, and then I worry that they are not eating enough. I need a quick and easy and preferably healthy meal that children 5 and under will eat up. Thank you :)

Could it be that your kids are refusing to eat becasuse they know that if they don't eat dinner, Mommy will give them the junk instead? My daughter is two weeks into her sixth year and my son is less than two months from turning three. They both try that. They both know that if they refuse to eat for the sake of refusing to eat, they don't get a bedtime snack (which is usually a small treat, i.e., a cookie, a small Girl Scout bar [which we bought up while they had them], etc. The pure junk.) If they do want something before bed, it's bread with something (whole wheat bread with SmartBalance spread, peanut butter, etc.) or fruit or leftover vegetable from dinner.

We live with my husband's parents, and his younger sister. My husband and is parents are not veg*n, my sister-in-law is vegetarian (but eats a lot of junk "food"), my daughter is a "flexitarian" (i.e., she could have tofu or a veggie deli "meat" sandwich for lunch, and have meat with dinner), and my son and I are vegan. Even though three different meals are often made (except on Fridays; My FIL is member of Catholic Church and does not eat any meat but fish on Fridays, regardless of the liturgical season), then it's all veg*n or leftovers. Even with all of that, we are nto short order cooks. We cook what we think everybody will like and if they don't, then they don't eat.

There are exceptions, though. Monday of this week my husband took his brother to the nearest cancer hospital for his treatments. He wasn't sure when he would be home and we didn't think about story hour at the library that evening. We had dinner after we got home and the kids were tired. My daughter smartly refused the Kraft macaroni and cheese my MIL made and wanted the tomatoes, lettuce and whole wheat bread from the BLTs that were also available. I didn't have a problem with that and was quite happy with her choices. My MIL made macaroni and cheese for my two-year-old and me-- whole wheat pasta with rice milk cheese and a bit of soy milk and Smart Balance spread. He at half of his bowl with struggle. It was late and he was tired and I think he decided that he didn't have to eat if his older sister (who was also fighting) didn't have to. Ugh. Most nights, it's easy, but my son still thinks that he can run around and eat at the same time-- a habit I have tried to discourage, but my husband and his mother are cool with. (My husband thinks it's okay for our son to sit and eat if my husband is feeding him. I help my son when it's difficult to get some of the food out, like the last few bites, but I don't sit and feed him like a baby learning.)

Anyway, quit giving in to your kids. They are smart and seem to know they can manipulate Mommy. On very rare occasions, I let my kids get away with it-- i.e., when I am tired, when they are tired, when we're both quite tired and I just want them to eat something so they sleep better at night with food in them, or when I'm just being nice and letting them get away with it just to think they got the upper hand that time.

Healthy-n-Herby (n-tomato-free):

Salad Sandwich:

two slices bread or toast
several leaves of various lettuces and spinach
dandelion greens
watercress
cucumber slices
herb dressing

Salmon and herb cream finger sandwiches:

250g light cream cheese
2 tablespoons dill leaves, finely chopped
2 tablespoons finely chopped chives
1/2 lemon, rind finely grated, juiced
16 slices wholemeal bread
400g sliced smoked salmon

Place cream cheese, dill, chives, lemon rind and 1 teaspoon lemon juice in a bowl. Season with salt and pepper. Stir until well combined.
Lightly spread 1 side of each piece of bread with cream cheese mixture. Top 8 with salmon. Sandwich with remaining bread. Using a sharp knife, remove crusts and cut each sandwich into 3 fingers. Arrange on a serving plate. Serve.

Black Bean Burgers: 6

1 can black beans, drained
1 small carrot, minced
1/2 onion, minced
2 cloves garlic, minced
2 tbsp sesame seeds
1 tbsp ground cumin
1 tbsp fresh oregano
1 tbsp fresh thyme
1 tbsp fresh basil
1 1/2 tsp salt
1 tsp black pepper
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cayenne
2 eggs
3/4 cup quick oats

Mash drained black beans (food processor or potato masher work well). Combine with all ingredients except eggs and oats. Once mixed well add eggs until thoroughly mixed (it's really easier to do this by hand even though it's a bit messy). Once mixed add oats (you may need slightly more oats depending on consistency, mixture should hold together fairly well and not be too mushy). Shape into 2-3 inch balls and press flat to form a patty. Place on hot fry pan sprayed with nonstick cooking spray. Cook until browned on both sides (3-4 minutes per side). Serve on a bun with cheese, on a bed of fresh greens, or let cool and store in fridge for later use.

Notes: You may substitute dried herbs for fresh (1 tbsp fresh = 1 tsp dried). These burgers make a wonderful meat substitute; crumble them on pizza, nachos, or in a salad. You may also vary the ingredients (e.g. add some minced green pepper or minced sweet potato). Be as creative as you wish. Very healthy and low fat. Enjoy and happy eating.

Hummus Sandwiches: 2-3

Spread:
1/2 cup cooked white beans
1 tbsp Dijon mustard
1 tsp sugar
2 tbsp lemon juice

Filling:
1 cup uncooked assorted vegetables
2 egg whites
1/2 tsp: basil, parsley, salt, and black pepper
2-3 slices of whole wheat bread

Combine white beans, mustard, and lemon juice in a food processor. Add additional lemon juice for desired consistency. Set aside. In a greased skillet on low heat, cook vegetables until almost done. Add egg white and spices and continue cooking until mixture is done. Spread some bean mixture over each slice of toasted bread, then add a small portion of egg mixture on top. Serve immediately.

Notes: This is a very healthy and quick meal to make when you're on the go. It can be a protein-filled breakfast or lunch item. You can always substitute any flavoured tortilla with the bean spread and egg mixture.

How to Get the Motivation to Lose 100lb+?

So I've been depressed and on a lot of medications for about 3 years now. So the combination of not caring about my health, being really lazy, coping with all types of emotions by eating, and side effects from like 10 different meds have obviously taken a toll. I was never skinny, and was mostly slightly overweight. Now, I am classified as morbidly obese. I have so much weight to lose before I am even close to being back to how I was (and even then I wasn't happy with my weight). But instead of wanting to lose 10 pounds and being able to do it in a couple weeks, I need to lose 100+ pounds just to be healthy. And I know that doesn't take a couple weeks. I'm starting a new college in less than 3 months, and I do want to lose weight and feel more confident, but it feels so hopeless. I mean 150 and I'd be back to where I was before. I never ever would have thought I'd have to lose over 100lbs ever in my life. But I do now, except most days I act like I really couldn't care.

So, I really need motivation to lose weight. (Besides, tiredness and like no endurance to do normal physical activity, I'm lucky enough not to have any health problems related to my weight). So there's no motivation there, the only motivation comes from wanting to look better (and even that's not a 24/7 thing). I'm also a really picky eater. I eat family size bags of potato chips in one sitting when I get mad. I really only cook pasta or frozen pizza for dinner. I hardly ever eat breakfast, sometimes lunch, and then a thousand snacks and a huge dinner. I'm not lacking time to exercise or eat healthy, I just don't have the motivation 7 days a week (or even 3 days a week).

Five years ago I was 5'1'' and 125, that didn't last too long. My normal weight for the exception of these past 3 years has been around 140/150. Which I hated, but now I want back more than anything. Today (I hate to weigh myself), but I'm still 5'1'' and around 240 pounds. (I've always wanted to be under 100lbs, but that will be a goal for sometime later). Getting below the 200 mark would be a huge confidence booster, and getting back down to 140 is what I want, but don't think I could do.

Anyone who's going through this/has lost a lot of weight have any tips?

P.S. I've looked into surgery, a few people in my family and family friends have done it with success but I don't think I could handle only being able to drink 1oz of water over the course of an hour. And all the requirements just to be considered are what I'm having difficulty with. (Like, if I could lose 10 pounds or stick with a diet plan for 6 months I wouldn't be in this position).

Hey there hun don't give up! You can do it if you put your mind to it. I know how difficult it is to loose the pounds. I was once 200 pounds and I lost 55 pounds, unfortunately I have regained nearly 20 pounds, but I'm working towards loosing it. I know that weight loss can be a daunting process but once you get into it and start losing weight it's a lot easier. I know it seems easier to say sod it im fat anyway, i'll just eat some more.

Eating is often a response to difficult emotions, I sometimes binge eat and it always makes me worse. In order to loose weight you've got to create a healthy meal plan. It's no good going on crash diets, they only make you regain the weight quicker. The good news is that overweight people do loose the weight very quickly. When I first lost weight I lost the weight very fast. You can easily loose 10 pounds in a week without severely restricting yourself. Larger people loose weight more quickly as its mostly water and they're creating a very large deficit in calories. Say you go from eating 5000 calories a day to 2000, you're creating a 3000 calorie deficit when the normal deficit for a person is 500-1000 calories. I lost 9 pounds in one week at the time I was loosing weight. However as your body looses weight it stabilizes a bit more and you may notice the weight loss is slower and you may have weeks where you don't loose weight (known as a plateau), but keep on going and dont let that get you down. It's very difficult for the body to loose weight all the time.

I say eat a healthy diet, no crash diets. Stick to 1500-2000 calories a day. Breakfast is the most important meal of the day! Do not skip breakfast. Even if you're not in the mood for breakfast, have a cereal bar and a banana. Frozen pizza is not good for you nor is too much pasta. Instead eat foods like jacket potato (easy to make, put it in the oven and have it with maybe tuna or mackeral or coronation chicken, look for low fat topping. Don't use cheese), salads (again easy to make, buy whatever toppings you want; tomatoes, sweetcorn, chicken, even cut up a few potatoes and use a low fat sauce), scrambled eggs or omelett (also very simply). Grilled chicken is also very good and slimming and takes a few minutes to cook, you can serve it with vegetables. Couscous is also really good and healthy, you could have it with the chicken. For more recipes maybe order a recipe book which has healthy recipes. For lunch you could combines some of these things or have a sandwich with less fat (shoo brought sandwiches often have a lot of fat and sat fat so be careful) or sushi (you could also have that for dinner) or you could have salads or make your own lunch.

Loosing weight doesn't mean cutting out your favourite foods, you can still have a bit of chocolate or crisps if you crave it but dont have it too often and only in moderation. Have a normal packet of crisps instead of a family sized pack. You can still enjoy treats, having the odd indulgence is ok and doesn't mean that you've failed. For low fat treats I have frozen yoghurt and low fat popcorn however buy it in small seperate pots or bags as I know it can be tempting to have more. I brought three small pots of frozen yoghurt and i ate them all in one day. Too much of anything even if its healthy isnt good for you.

Also dont keep junk food in the house, ask your family to buy healthy stuff. Exercise is also great in loosing weight, maybe sign up to your local gym. Everyone is really nice at the gym and a trainer there can give you a good exercise programe to stick to. If you dont want to join a gym maybe go for walks or for light jogs or maybe join some classes. There are people all shapes and sizes at the gym and no one stares at them or jeers at them, so don't be afraid. Most people are too busy doing their own thing to notice other people so no need to feel self conscious. At least you're there to do something about your weight right?

One last thing, drink plenty of water. Water really fills you up. Good luck sweetie, you can do this, believe in yourself! Think about how much you want this and be determined. Think to yourself I will be the size of my dreams. Like you said first aim for a healthy weight, maybe 140 and maintain it for a bit and then if you want to loose a bit more weight go for it but you can slow the weight loss down a bit and take your time with it. 120 seems like a good weight, but between 120-140 is also fine. It takes time to loose weight, but its worth the journey. It's like with everything else it takes time, for example it takes time and practise to get better at a hobby or skill, it doesn't just happen immediately. Believe in yourself, you can do this! Melt the Crisco Shortening in a large skillet over medium heat. Add the garlic and onions and cook, stirring often until just tender. Do not allow to brown.

Stir in the curry powder and cook about 1 minute. Add the cauliflower, broccoli, carrots, and salt and pepper. Cover and cook, stirring occasionally, about 5 minutes or until the vegetables are crisp tender. Stir in the tomatoes and scallions. Cook about 1 minute uncovered.

To serve, place the filling in the middle of each tortilla or chapati, top with a little yogurt or sour cream and roll up. Serve immediately

I usually eat pretty healthy foods for breakfast and lunch, but when it comes to dinner, my family tends to go for more of the fried foods. Right now, dinner is often a lot of white rice and some fried meat (chicken, steak, etc.) ... :p
What are healthy alternatives that aren't that hard to prepare?

You could try switching the white rice to brown/wild rice, or trying quinoa instead sometimes. With salmon or grilled tofu. As well as adding vegetables, like broccoli, green beans, carrot, cauliflower, asparagus, zucchini, etc and or a salad. If you can use organic natural ingredients.

Here are some healthy dinner food ideas:

~ Pasta dish with whole grain or brown rice pasta.
For example, with tomato sauce or basil pesto sauce, baby spinach, goat cheese or shredded cheese. Or a pasta salad with baby spinach or grilled vegetables, goat or mozzarella cheese, chopped cherry tomatoes, cucumber, red onion, etc.

~ Salad: mixed baby greens, baby romaine, baby spinach, Italian salad mix, romaine lettuce, etc. with things like cherry tomatoes/tomato, cucumber, low-fat salad dressing or olive oil/vinegar, red onion, dried cranberries, goat or feta crumbles, walnut crumbles or almond slithers, grated carrot, etc.

These are some of my favorite things to eat:

Breakfast: bananas, cream of wheat with brown sugar and soy butter, cereal, pancakes or french toast with real maple syrup, vegan "sausage" patties, smoothies.

Lunch: VEGAN "SAUSAGE" SANDWICHES, sandwiches with vegan deli slices(Tofurkey is the only one that's kinda funky), fruit, dinner leftovers, couscous salad, vegan sushi, potato or pasta salad.

Here's what you need to eat. Please make a note of the pulses and vegetables which I've mentioned. Apart from those mentioned, it would be beneficial to purchase fruits and vegetables which are native to your region so that you can formulate your own recipes in the future.
You need to make sure you eat pulses at least three times a week and fruits and vegetables everyday.
Have a fruit for breakfast(apart from something else of course) and vegetables/pulses for lunch and dinner.
Make sure you include ALL varities of fruits, vegetables, pulses, grains, nuts, seeds and dry fruits in your grocery list.

Don't eat mock meat and soybean as mock meat contains sodium and soybean is bad for health.
Mock meat is also soy based so too much soy can be bad for health.
Actually even a little soy is bad for health.
What's wrong with soy?
Soy beans are naturally toxic to humans, but they're harmless when they go through a fermentation process, which is how we get tofu.
But soy is being used in more and more things these days.
Just look through your cabinet. You'll be surprised.
Anyway, most companies aren't putting their soy beans through this process because it takes too much time, and time = money.
Instead, they put it through a chemical process, but this rarely gets rid of the soy's toxicity completely.
Symptoms of a high soy diet are thyroid problems, breast cancer, and other complications.
People get these symptoms because the soy they eat isn't fermented.

Mock meat can never be part of a staple diet(food what you eat everyday) as it is highly processed.
You CAN have it ONCE IN A WAY.
Its a luxury and not a need.
Now looking at a staple diet, You'll need to consume naturally occurring FRUITS,VEGETABLES(cauliflower,carrot, potato, beetroot, broccoli, okra, eggplant, radish, turnip, cabbage, bitter gourd, spinach,capsicum(aka bell peppers)),PULSES(chickpeas,kidney beans,black eyed peas,green gram,black gram,lentils,lablab bean,moth bean,horse gram,cow pea,double beans),NUTS(cashew nuts,peanuts,walnuts,pistachios,raisins) and GRAINS.
Also, do have figs once in a while as it is good for blood purification.
Make something like rice and bread your staple diet.
You can have rice with vegetables or lentils/legumes for lunch and bread(I have Indian bread usually) with pulses for dinner.
You will get all vitamins and minerals from fruits,vegetables,pulses, legumes and nuts provided you consume them in variety so don't fall for the myth that says vegans/vegetarians need to take multivitamin supplements.
Vegans/vegetarians don't need to take supplements as they get all their nutrients from the above mentioned sources.
Supplements are supposed to be taken by people with deficiencies so do not take them UNLESS they have been prescribed to you by a doctor.

I need something that is easy to make, tasty, healthy! I never have enough time in the morning to do anything! So something I could make the night before would be a lot better! There are no microwaves at school but I don't mind eating hot foods at room temp.. :)

- Egg Salad!- Hard boil the eggs, dice them, and mix them with mayo and seasonings. Put the salad in a container separate from the bread. When you get to lunch, just put it on the bread with a spoon. Have with a fruit, a cup of milk, and a little treat- that way you get a healthy balanced meal.
You can also do this with chicken salad, or tuna salad.

- Grilled Chicken strips and a soft pretzel with honey mustard dip. Have with a fruit and a cup of milk or fruit and a yogurt.

- Grilled chicken sandwich- Bring a packet or little cup of mayo, a container of grilled chicken breast with lettuce and tomato, and a separate bread roll. Spread the mayo on and put the chicken/lettuce/tomato on the bread. Have that with a side salad, or a fruit, or yogurt. You could also have it with cheese and crackers!

- Tacos! Make taco filling- I like some ground beef mixed into refried beans with salsa- pack it in one container. In another container pack some shredded lettuce and cheese. In a third little container have some sour cream. And then pack some taco shells of your choice. Put the tacos together when you get to school.

- Pasta Salad

- Chicken caesar salad wrap

- Tuna Salad Wrap

- Buffalo Chicken Wrap

Sesame Chicken
This recipe really satisfies my craving for Chinese food. I serve it over rice and steamed vegetables on the side. I usually double the sauce to make it especially decadent.
6 servings 21 min 5 min prep

6 boneless skinless chicken breasts
1/4 cup honey
1/4 cup soy sauce
1/2 cup water
1 tablespoon cornstarch
1 teaspoon ground ginger
1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds

Cut chicken breast into 1 inch strips.
Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
Cook chicken strips for about 6 minutes until no longer pink.
Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
Whisk until no corn starch lumps appear.
Pour sauce mixture into skillet with chicken.
Cook until sauce thickens slightly.
You can add more water if sauce is too thick.
Sprinkle with sesame seeds.
Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.

Easy and Tasty Barbecue Chicken Sandwiches in the Crock Pot
This is almost too easy to be called a recipe, but I had to share it anyway. I came up with it one night when I wanted a nice meal but wasn't feeling too motivated. I love crock pot cooking!
4-6 servings ½ day 10 min prep

1-2 lb boneless skinless chicken breasts
1 (18 ounce) jar of your favorite barbecue sauce (I love K.C. Masterpiece!)
1 medium sweet onion, sliced
4-6 hamburger buns

Remove all visible fat from the chicken and toss it in the crock pot.
Place the onion slices on top of the chicken.
Pour the barbecue sauce over top.
You may not need the entire jar, just enough to cover the chicken.
Cook it on LOW for 8 hours or until the chicken is nice and tender.
Shred the chicken with a fork and knife; scoop the mixture onto the bottom buns and top it with the top buns.
Or, if you're like my dad, you might prefer leaving the breasts whole and eating it that way.
Voila!
An easy weeknight meal that doesn't heat up your kitchen in the summertime!
I love this with potato chips and a carrot and raisin salad.

Chicken Scaloppine With Lemon Sauce (Low Fat)
This is a wonderful lower-fat restaurant-quality dish that is easy to make, I have served this many times in the past at my dinner parties and always receive rave reviews, the chicken alone even by itself is very good, the capers are only optional if you are a lover of capers then add them in as it really adds to the flavour of this dish, I would strongly suggest to double the sauce I most always do and please be certain to use only dry breadcrumbs as fresh will not stick to the chicken as well --- this is very good!
4 servings 35 min 25 min prep

4 boneless skinless chicken breasts (pounded to about 1/3-inch thickness)
2 tablespoons Dijon mustard
2 eggs
1 cup dry breadcrumbs
1/4 teaspoon poultry seasoning (or to taste)
1/2 teaspoon garlic powder
seasoning salt
olive oil (for frying)
2 tablespoons butter (optional)
1/4 cup chicken broth
2 tablespoons fresh lemon juice
1 tablespoon capers (or to taste) (optional)
1/4 teaspoon salt (can use more to taste)
4-5 thin lemon slices
fresh parsley, chopped

In a small bowl, whisk together mustard and eggs; set aside.
Combine the dry bread crumbs, poultry seasoning, garlic powder and seasoning salt; spread on a piece of waxed paper.
Dip the breasts in egg/mustard mixture (shake off any excess egg).
Then coat well with the crumb mixture.
Heat the oil with 2 tablespoons butter(if using) in a frypan.
Saute the chicken for 5 minutes on each side, or until it is no longer pink inside. Remove and transfer to a plate to keep warm.
In the same pan add in the broth, lemon juice, capers (if using) and 1/4 teaspoon salt (or to taste) bring to a boil, scraping brown bits from the pan.
Add in lemon slices and parsley; mix to combine for about 1 minute.
Spoon the glaze/sauce over chicken.
Delicious!

Black Bean and Tortilla Bake
6 servings 35 min 5 min prep

1 garlic clove, minced
1/2 cup chopped onions
1 cup chopped tomatoes
1/2 cup chopped green onions
1/2 teaspoon chili powder
2 teaspoons cumin powder
1 (8 ounce) can tomato sauce
1 (16 ounce) can black beans, rinsed and drained
1 tablespoon chopped cilantro
salt and pepper
12 soft corn tortillas
8 ounces low-fat cheddar cheese, shredded, reserve 2 tablespoons (I used fat free)

Preheat oven to 350* F.
Spray a large skillet with cooking spray.
Add garlic, onions, tomato, green onion, cumin, and chili powder.
Cook on medium heat until onion is tender.
Add tomato sauce and cook 5 minutes more.
Stir in beans, cilantro, salt and pepper.
Spray a 9 inch square baking dish with cooking spray.
Layer 4 tortillas, 1/3 cheese, and 1/3 of the bean mixture; repeat 2 more times.
Top with reserved 2 tablespoons of cheese.
Bake 20 minutes, covered, then 10 minutes uncovered or until bubbly.

my dad has been eating chips and sandwiches for years it's time to try some good wholesome means but ti's hard when you have to eat on the go so I need some good nutritional tasty food for a truck driver on the go that's easy to eat and fast. I am diabetic too, and I know it's super hard to eat out or on the go because you don't know what it put in the food, and I just recently found out and it's been hard to figure out the amounts I need to balance everything since I love sugar and carbs! The best tip is to replace your favorites with diabetic things. Now when I bake cookies, instead of sugar I use apple sauce or splenda for example.

I bought an Atkins cookbook since they are lower in carbs but it's not the unhealthy junk the media portrays it to be, not just bacon, steak, and hot dogs.

You can make him healthy meals and freeze them in little tupperwares so he can heat them up in a microwave at a truckstop or in the truck if he has one.

Wraps are a great on the go food, for breakfast lunch and dinner. Examples:
Turkey Bacon, Eggs, Cheese on a whole wheat tortilla or pita.
Chicken, bacon, cheese, light sauce (ranch, hummus, mustard,etc) and veggies on whole wheat wrap or pita

A sandwich is just fine if he loves them, but make sure it's the healthiest possible. Whole wheat bread (make sure the first ingredient is 100% whole wheat/stone ground flour, not enriched wheat flour) it should have at least 2 grams of fiber per slice. I eat lunch at Subway almost everyday, and I just make sure to get mustard as a sauce since I know it's sugar free and no carbs, and make sure the bread is wheat or honey oat.

He should only be drinking water or crystal light if he can because this will allow him to use the sugars he does eat daily for foods he enjoys. I love pepsi but I rather drink water all day if it means I can have a small bowl of ice cream or snack cake when I want a regular dessert.

Peanut Butter (Great alone, or with an apple, etc-its filling, quick, and if you buy the ones with only peanuts and salt in it it's healthy too)

Since he is on the road so much he needs to make sure he gets enough exercise as that helps lower blood sugar and improve circulation.

It's summer, and I am home alone for quiet some time. So I have to cook for myself.
I am kind of a health freak, I won't eat anything really unhealthy even though I might crave it (mostly sweet things like ice cream, cookies, and stuff.) But I am quiet picky.
Is there a website that has some easy healthy recipes I can make?
Or can you just list the name of the dish so I can look up the recipe?

Summer is a good time for single raw foods that you can just eat without a lot of fussing around and without heating up the house. I always think of summer as a time for snacks which means, to me at least, just means smaller amounts of food that is easy to prepare. Still can be balanced nutrition and healthy stuff!

Go for things like grapes, bananas, apples, berries, carrots, cucumbers, tomatoes...whatever produce looks good dipped in ranch if you like. Whatever looks good and is in season. Make yourself a big old salad and toss it with some olive oil and citrus juice, salt, pepper, garlic. Don't be afraid to mix fruits and veggies together. Berries go great in a mixed green salad, and tropical fruits like pineapple, melons, and mango can be made into spicy salsas!

You can also grill up some chicken breasts, add a baked potato (or a sweet potato) from the microwave, and some of your salad. If you grill a couple chicken pieces ahead of time, you can store them a couple days, and mix them with some honey mustard and pickles for a chicken salad. Ham steak is also pretty lean and cooks up quickly and easily. Maybe you have a George Foreman grill laying around which makes things easy in the summer. You can also grill up almost any vegetable. Just slice it about half inch thick and rub a little olive oil, salt, and pepper on it. Good summer veg to grill include squashes, eggplants, onions, tomatoes, and even fruit.

Tortilla chips and pita are pretty healthy, so are triscuit crackers. You can use these to dip with or to make tiny little sandwiches with. When you read the ingredients on a package of food, the easier they are to understand, and the fewer the ingredients are in a food, the better. So...when you look at chips, the plain old tortilla chips are basically just corn, oil, and salt. That is pretty simple for a snack food, unlike a chip that has been spray painted with cheese like Doritos or Cheetos.

There is also yogurt, which is a lovely snack and can be used for smoothies. Try to keep some fruit pieces frozen up to thicken your smoothies instead of ice. Pure flavor, and an excellent use of fruits that are getting a little too soft to eat like bananas...which helps you not to waste them.

Eggs are also pretty good for you in moderation, and they are really easy to fix and super versatile.

If you like peanut butter get some of that. You can get healthier kinds with no added sugar, and you can also get a better jelly...basically a fruit spread with fiber (really yummy...just plain mashed up fruit with its pulp and seeds, it is just like jam only not much added ingredients like sugar)...and then make your PBJ with some whole grain bread.

You might enjoy growing your own herbs. Try it as a hobby and to improve your food! They are cheap to get started and then as long as you give it some water every now and then and don't over harvest them, they will continue to produce for a very long time, for FREE. You don't pick them, you trim off what you need and the plant keeps growing. Since some herbs are really expensive, this is a good way to get a delicious bargain. When the weather gets cool, bring them inside. Tomatoes and cucumbers and peppers are really easy to grow as well!

wraps are a good way to go. You can put anything in them, chicken breast, chicken salad, meats,etc. The trick is to take your items separately, not wrap it at home. Tomatoes and lettuce may wilt in the wrap so wrap them in plastic wrap and put your wrap together at school.

I am a preschool teacher who serves countless chicken nuggets to children on a weekly basis. Increasingly, I am bothered by the lack of variety in children's diets. Now, I am taking an anonymous poll for a statistics class I am in. So tell me, what does your child eat?

I have three kids, and of course they have different tastes. I'll sum up what each of them eats:

My 9 year old daughter eats most things you'd expect a kid to like. She doesn't like anything remotely spicy (tacos, burritos), anything with tomatoes, onions, green or red peppers. She'll eat a few veggies but doesn't like green beans or cauliflower. She likes fresh fruit and will not eat canned, except pineapples. I dinner she'd love would be meatloaf, broccoli, and sliced canteloup. She doesn't really like chicken nuggets but will eat them if I make them for lunch.

My 5 year old son will eat almost anything. He likes chicken nuggets just fine, but since he'll happily eat just about anything else, I don't usually give them to him. This kid loves sushi and will only eat a turkey sandwich if it has spicy brown mustard on it. Even though he'll eat whatever I put in front of him, he doesn't eat a lot of junk because I like to cook good meals. We usually have fresh fruit with meals too.

Now, my 3 year old son. He's the challenge! This is the kid who DOES eat chicken nuggets on almost a daily basis because it's one of the few things he will eat. Not just any chicken nuggets--dinosaur shaped chicken nuggets. He won't eat any other kind of meat. Once in a while he'll eat some roast chicken, but that's it. I think he likes this one particular type of chicken nugget because it doesn't have a lot of seasonings, so is pretty bland. He'll also eat cheese pizza, grilled cheese, mac and cheese, plain pasta, cereral, bread, American cheese slices, and most "snack" foods like crackers and pretzels. He will not eat any veggies at all or any canned fruit. He'll eat apples, pears, bananas, watermelon, strawberries, and raspberries. He's the main reason we eat so much fresh fruit! His favorite meal is chicken nuggets, sliced strawberries, and cheese. We always have milk with meals. Soda is only for parties, juice boxes are for school snack, and between meals or with snacks, the kids have water.

Usually I plan meals around what my two oldest kids will eat, and give my youngest something else if it's not on his list of approved foods. I don't try to make him eat anything he doesn't like, but do encourage him to try things. He will take a little bite, and genuinely seems to not like anything else. He has actually improved a lot--when he was about a year old, he would literally eat nothing except bread and cheese. No fruits, no veggies, no meats at all. I used to work in a daycare center, and the menu repeated every three weeks. It wasn't bad, but a lot of the food was so processed. Mostly canned vegetables and fruits, frozen pizzas and chicken nuggets, pasta with too much butter on it, white bread instead of whole grain, etc. My daughter is the only of our kids to have lunch at school, and most days she packs a lunch. Even things she will eat at home, she doesn't like at school. It must be hard to feed hundreds of kids at once, fit in fresh produce that can go bad quickly, or spend extra money on healthier choices, and then prepare mass amounts of food in an appetizing manner.

Also, I'd keep in mind that just because the kids don't eat a lot of variety at school, doesn't mean they don't have variety at home. If the lunches you serve at the preschool are brought from home, maybe you could gently encourage parents to send in healthier items. Does the preschool have a monthly newsletter? If so, add an article about healthy school lunch ideas. Maybe feature a different "recipe" for each newsletter. If the preschool provides the lunches, you're restricted by state nutrition guidelines, budget, and ease of preparation. I have heard that some schools partner with local farms to provide fresh, local produce for school meals. You could look into something like that. Is there space on the school grounds for a small garden? Or space in the classroom for a container garden? The kids could help grow some plants and then make a snack from the resulting vegetables. The kids will learn something new, and probably end up trying something new as well. Good luck!

My entire family loves meat, but after seeing a video about KFC's slaughter houses I don't think I can ever buy meat again. I knew they where not killed with kindness but I had no idea how bad the animals where treated. I need some really good recipes because my husband is a "meat and potatoes" kind of guy and I need to convince him vegetarian meals are just as good! I am also wondering if cutting out the meat will cut down our grocery bill? We are on a tight budget and if he see's less money going towards the store I think he would be more open minded about the change.

Learn to cook without meat and make it seem it seem like you did. If you don't have a BBQ, buy one. People associate that smoky flavor with charred flesh, but its really all about the charcoal or wood chips you use. It WILL be cheaper without a doubt if you use bulk TVP and homemade seitan or even grilled extra firm tofu as your main meat replacements instead of pre-made frozen stuff at the store.

I'm vegan and these are some of my favorite things to eat:

Breakfast: bananas, cream of wheat with brown sugar and soy butter, cereal, pancakes or french toast with real maple syrup, vegan "sausage" patties, smoothies.

Snack: BRUSSEL SPROUTS =) no joke

Lunch: vegan "sausage" sandwiches, sandwiches with vegan deli slices(Tofurkey is the only one that's kinda funky), fruit, dinner leftovers, couscous salad, vegan sushi, potato or pasta salad.

Dinner: sloppy joes, "sausage" and gravy with homemade biscuits, Spaghetti and Trader Joe's "meatballs" or TVP, lasagna, Thai pad see ew, pad khi mao(drunkard's noodles), pad prig king, tofu+eggplant with basil sauce, yellow thai curry with tofu or vegan chikn and veggies and jasmine rice, Indian dal with homemade roti or dosai, channa masala, aloo gobi, vegetable or minestrone soup, pizza, STEAMED "PORK" BUNS with potstickers or spring rolls, sweet&sour/orange/lemon chikn, vegan pho or wonton soup, baked tofu, BBQ homemade seitan (tastes like BBQ'd ribs), kabobs

If you want to become a lacto-ovo vegetarian, the transition should be quite simple. Almost all meats have widely available commercial replacements. All that you have to do is replace any flesh in your diet (beef, pork, poultry, seafood) with meat analogs or just leave it out altogether.

The best thing to remember is to take your time so that for example: when you are comfortable not eating beef and pork you can then give up chicken when you are sure you can make the commitment permanently.
Depending on your age or reliance on parents or regional options, it may not be best to give yourself a label. The important thing is to do your best to make progress and be committed to your compassion towards animals. Never put your focus onto what you or other people use to describe yourself.

If you meet someone that talks down to people for eating meat, dairy, etc or to you because they think they are "more veg" than you, laugh in their face and tell them they are a disgrace to the entire philosophy. People like this only hurt the idea of veg*ism AND the animals. The point of all of this is to live compassionately and and as free from cruelty as you can, all the while maintaining your health and a positive attitude. People who don't maintain either, need not open their mouths and represent our beliefs.
