What is a healthy, easy to make lunch menu?

Iâd like to try out a menu with plenty carbohydrates, vitamins, minerals and preferably low-fat, that is and easy and quick to cook. When I get home at lunch I usually have little time to prepare food, but Iâd like some new ideas for a healthy menu. Thank you in advance!

I would suggest you to make a sandwich. Based on your preferences, you wish to have carbohydrates which you can get from the bread, vitamins and minerals from the vegetables and meat inside the sandwich.

Here's a very simple recipe to make a sandwich.

Smoked Beef and Cheese Sandwich

ingredients:
Cucumber
Lettuce head
Tomato
mayo or any salad dressing you prefer
smoked beef
sliced cheese
breads (wheat bread would be best)

Instruction:

* Spread mayo or dressing of your choice on the breads
* put all the ingredients on top of a slice of bread
* top the second slice of bread on top
* give it a gentle press just to bind all of them together
* and there you have it.

Im looking for some easy healthy recipes. something quick and nothing too special. I mean i eat tuna straight from a can or mix it with fat free yogurt and spread some on bread. I eat cottage cheese on bread (Fat free). Im looking for simple things like that, where i get some good protein while avoiding fat and keeping the carbs rather low. Im not a fan of salads however i do like mixing chopped up vegetables as long as i stay away from the things i dont like.

Ill list some things i do not like:
celery
regular lettuce
raw onion
cabbage

Now some things i do like
cucumber
mushroom
olive
chicken
turkey
fish (all of them)
seafood


Im tring to lose weight and im no chef so i need to come up with ideas so i stop eating the same 3 things every day. Also some healthy deserts would be nice for a snake. i found cinnamon and cottage cheese was actually quite good. something similar that stays very healthy.

I don't know if you like yogurt, but kefir is a great alternative to yogurt - more healthful punch and great if wanting to lose weight. You may want to check into it. You can get it lowfat and drink like a shake or add nutty granola for breakfast. Kefir will also help your digestion and keep bacteria balanced while you diet.

You can also put some kefir in the blender with your favorite fruits and make a great morning drink.

Cucumbers make a great sandwich! We use them here on sandwiches in the summer when they are in season.

Try stir frying your favorite veggies with a bit of chicken. Very easily done by just adding some coconut oil (healthful fats) to a pan and tossing in your favorite chopped veggies and chicken. To season add a bit of soy sauce and giner. Light, easy and served on a bed of rice it makes a great quick low cal meal with lots of nutrients.

Take care with the fish and tuna. Most are contaminated with mercury, which the body doesn't like to eliminate. There are dietary guidelines based on the mercury content. I believe tuna they say no more than once a week.

I was recently laid off so my kids are home with me full-time now, but I'm stumped on what to fix for lunch. My daughter, who is almost 3, would eat pb&j sandwiches everyday if I'd let her. Easy Toddler Lunch Recipes and Lunch Ideas for Toddlers



Below you will find a few easy ideas for lunch for the Toddler. Feel free to substitute any ingredients you feel may be inappropriate for your Toddler!








PEANUT BUTTER & BANANA GRILLED SANDWICH

** See below for a Note concerning Peanuts and Tree Nuts **




Peanut Butter

Bananas

Whole Grain Bread


Warm frying pan
Lightly butter 2 slices of whole grain bread

When frying pan has warmed, lay one slice of bread butter-side down and spread with peanut butter and thinly sliced bananas
Top with remaining slice of bread; butter side up. Fry and flip sandwich as needed until bread becomes golden and toasted.

"TRADITIONAL" GRILLED CHEESE

Warm frying pan and take out 2 slices of cheese from the fridge
Lightly butter 2 slices of whole grain bread
When frying pan has warmed, lay one slice of bread butter-side down top with 2 slices of cheese and then top with remaining slice of bread;
butter side up. Fry and flip sandwich as needed until bread becomes golden and toasted.

Hide meat and/or veggies in there!! Turkey, Chicken, Cooked Broccoli, Carrot Slivers, Onions, Peppers, Tomatoes or even Green Beans for example!




PASTA SALAD

1 bag of tri-color pasta (shaped in wheels or another "fun" shape if possible)
1 C chopped fresh broccoli
1/4 C sliced black olives
1/2 C baby Carrots, julienne
1/2 C zucchini, sliced thin
1/2 red onion, sliced very thin
2 T olive oil
black pepper and lemon juice (low-fat salad dressing if your choose)

Boil pasta al dente. Sauté broccoli, carrots, zucchini in olive oil until crisp yet tender. Drain & rinse pasta. Combine pasta and vegetables in large bowl and add parmesan cheese to lightly coat. Add black pepper and lemon juice if you wish. Serve warm or cold

PINWHEEL PLATTER

Cheese Slices
Veggie and Fruit sticks or slices
Turkey, Chicken Breast or other Meat Slices ** NATURAL ONLY - CHECK FOR PRESERVATIVES**

Lay meat slices on plate, top with cheese slices and roll into a tube.
Cut the "tube" into separate portions.
If appropriate, use colourful toothpicks to hold the "pinwheel" slices together.
Your toddler will have fun eating the portions from the toothpicks
(you may even lay these out if find them inappropriate!) as if on an hors de vours tray! Add sliced veggies and fruits to your pinwheel platter for colour and variety to tempt the toddler palate!

CHICKEN POTATO CHOWDER

1/3 C. diced and cooked boneless breast or ground chicken
1/4 C. cubed and cooked potato
3 T. shredded mild Cheddar or American cheese
1/4 C. milk
2 tsp. butter
Peas, carrots and/or corn

Mix chicken, veggies, potato, milk, and butter in a small saucepan. Simmer over low heat for 10 minutes. Stir in cheese. Serve warm.

CHEESE MELTS

Top a slice of bread, open pita or flour tortilla with the following:
2 tomato slices
Strips of cooked thinly sliced chicken, natural ham, beef or ground turkey sausages, (you may also use tuna fish if your toddler may have fish).
Top off with a slice of cheese (deli style "real" cheese).

Hide some veggies like cooked Broccoli, Carrot Slivers, Onions, Peppers, even Green Beans for example!
Broil in oven or toaster oven until cheese is melted.
Allow to cool prior to serving



NANA'S CREAMED PEAS & NUGGETS

4 cups peas, fresh, frozen (or canned as a last resort)
1 cup milk
2 tablespoons flour
2 tablespoons butter
salt and pepper to taste
pieces of chicken, fish, pork or beef

Melt butter in a large sauce pan and whisk in flour- allow to cook for 1 minute.
Slowly add milk, whisking to prevent lumps. Add salt, pepper and other spices as desired. Cook until sauce begins to thicken. Add peas, stir and cook until peas are heated through (about 5-7 minutes) Add meat Serve warm alone or over multi-grain toast. **Other veggies may be added if you desire, however - ensure that ratio of veggies equals 4 cups!**

PUPS IN A BLANKET

One pack of all-beef, or turkey all-natural (or tofu) hot dogs
Puff pastry dough or Ready-to-Bake Crescent Rolls or Lavash or Wraps
Veggies & Cheese

Directions:
In a skillet, cook the (tofu) dogs until they brown and blister- may boil if using meat dogs, while the dough sits out defrosting.
Wrap the dogs in a square of the dough and roll them up like a cigar with veggies & cheese.
Cut into smaller pieces to desired Toddler-friendly size.
In an oven preheated to 375-400 degrees F, bake the rolled dogs for about 25min. or until they are fluffy and golden brown.

Serve with Sweet Potato Fries or Veggie Sticks and Dipping Sauce

Hiya,

Healthy-n-Herby (n-tomato-free):

Salad Sandwich:

two slices bread or toast
several leaves of various lettuces and spinach
dandelion greens
watercress
cucumber slices
herb dressing

* * * *

Salmon and herb cream finger sandwiches:

250g light cream cheese
2 tablespoons dill leaves, finely chopped
2 tablespoons finely chopped chives
1/2 lemon, rind finely grated, juiced
16 slices wholemeal bread
400g sliced smoked salmon

Place cream cheese, dill, chives, lemon rind and 1 teaspoon lemon juice in a bowl. Season with salt and pepper. Stir until well combined.
Lightly spread 1 side of each piece of bread with cream cheese mixture. Top 8 with salmon. Sandwich with remaining bread. Using a sharp knife, remove crusts and cut each sandwich into 3 fingers. Arrange on a serving plate. Serve.

Black Bean Burgers: 6

1 can black beans, drained
1 small carrot, minced
1/2 onion, minced
2 cloves garlic, minced
2 tbsp sesame seeds
1 tbsp ground cumin
1 tbsp fresh oregano
1 tbsp fresh thyme
1 tbsp fresh basil
1 1/2 tsp salt
1 tsp black pepper
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cayenne
2 eggs
3/4 cup quick oats

Mash drained black beans (food processor or potato masher work well). Combine with all ingredients except eggs and oats. Once mixed well add eggs until thoroughly mixed (it's really easier to do this by hand even though it's a bit messy). Once mixed add oats (you may need slightly more oats depending on consistency, mixture should hold together fairly well and not be too mushy). Shape into 2-3 inch balls and press flat to form a patty. Place on hot fry pan sprayed with nonstick cooking spray. Cook until browned on both sides (3-4 minutes per side). Serve on a bun with cheese, on a bed of fresh greens, or let cool and store in fridge for later use.

Notes: You may substitute dried herbs for fresh (1 tbsp fresh = 1 tsp dried). These burgers make a wonderful meat substitute; crumble them on pizza, nachos, or in a salad. You may also vary the ingredients (e.g. add some minced green pepper or minced sweet potato). Be as creative as you wish. Very healthy and low fat. Enjoy and happy eating.

Hummus Sandwiches: 2-3

Spread:
1/2 cup cooked white beans
1 tbsp Dijon mustard
1 tsp sugar
2 tbsp lemon juice

Filling:
1 cup uncooked assorted vegetables
2 egg whites
1/2 tsp: basil, parsley, salt, and black pepper
2-3 slices of whole wheat bread

Combine white beans, mustard, and lemon juice in a food processor. Add additional lemon juice for desired consistency. Set aside. In a greased skillet on low heat, cook vegetables until almost done. Add egg white and spices and continue cooking until mixture is done. Spread some bean mixture over each slice of toasted bread, then add a small portion of egg mixture on top. Serve immediately.

Notes: This is a very healthy and quick meal to make when you're on the go. It can be a protein-filled breakfast or lunch item. You can always substitute any flavoured tortilla with the bean spread and egg mixture.

Here are some cools & easy cooking meals receipe

Grilled Bullseye

2 eggs
2 pieces of bread
1 slice cheese
Butter

Cut a hole in the center of each piece of bread using a glass, glass jar, or cookie cutter. Butter the pan. Turn stove on Low at first then move to Medium once eggs are in.

Place both pieces of bread on the pan. Crack each egg and drop one into each hole in the center of the bread. Cook egg to your liking, take two peices of bread off pan and let cool. Put cheese slice in-between slices of bread. Place in microwave for 30 seconds or under the grill to melt cheese.

BLC (Bacon, Lettuce, Ceasar) Sandwich

Multigrain bread, sandwich sliced
Lettuce, shredded
Cheese slices (American, Swiss, or your favorite)
Ceasar salad dressing
Pepper to taste
Bacon strips


Toast bread. Top with cheese slices and melt cheese in toaster oven. In a small bowl, add dressing to lettuce and toss. Smother salad over cheese and lightly pepper. Cook bacon in microwave or frypan and place strips over salad. Add some pickles or olives if you like. Place toasted bread on top to make a delicious lunch that kids will enjoy!

Robin Hood Wrap

1 package tortillas
Cold cuts, sliced from the deli (ham and turkey)
American cheese
Swiss cheese
Chopped vegies (lettuce, cucumbers, pickles, olives)
Mustard and mayonaise

Lay a tortilla out flat and spread with mayonaise, then mustard. Then layer with a slice of ham and a slice of turkey. Next add a slice of American chesse and a slice of Swiss cheese. 1 hot dog bun per person, toasted

prepared instant mashed potatoes
1 package frozen peas and carrots, cooked
salt and pepper to taste

Toast buns, heat hot dogs, and cover hot dog with mashed potatoes, peas and carrots. Add ketchup if you like. A healthy twist to the old hot dog.

I usually bring water( I don't like any other drinks), a sandwich, and and a snack, and normally it comes to around 250-300 calories. Does anyone know any more exciting meals that I can take to school?

Grilled Bullseye

2 eggs
2 pieces of bread
1 slice cheese
Butter

Cut a hole in the center of each piece of bread using a glass, glass jar, or cookie cutter. Butter the pan. Turn stove on Low at first then move to Medium once eggs are in.

Place both pieces of bread on the pan. Crack each egg and drop one into each hole in the center of the bread. Cook egg to your liking, take two peices of bread off pan and let cool. Put cheese slice in-between slices of bread. Place in microwave for 30 seconds or under the grill to melt cheese.

BLC (Bacon, Lettuce, Ceasar) Sandwich

Multigrain bread, sandwich sliced
Lettuce, shredded
Cheese slices (American, Swiss, or your favorite)
Ceasar salad dressing
Pepper to taste

Toast bread. Top with cheese slices and melt cheese in toaster oven. In a small bowl, add dressing to lettuce and toss. Smother salad over cheese and lightly pepper. Vegetarian Sandwich

Ingredients:

1 small zucchini
1 yellow bell pepper
4 to 5 large fresh mushrooms, sliced
Cooking spray
1/4 teaspoon salt
1/4 teaspoon black pepper
Dried, sweet basil leaves, flavor to taste
2 tablespoons light, garden vegetable cream cheese
4 slices bread, toasted
1 medium tomato, 1/4-inch thick slices
Spinach leaves (optional)

Preparation:

Cut zucchini lengthwise into 4 (1/4-inch thick) slices. Cut pepper in fourths; remove seeds. Coat both sides of zucchini, pepper and mushrooms with cooking spray.

Place zucchini and peppers on grill rack or broiler pan coated with cooking spray; broil for 3 to 4 minutes on each side or until tender. Add mushrooms and broil for 1 to 2 minutes. Remove from grill; sprinkle with salt, pepper and sweet basil leaves.

Spread cream cheese on toast. Layer zucchini, peppers, mushrooms and tomato on two slices of toast; add spinach, if desired. Top with remaining toast slices. Cut each sandwich in half.

Instructions:

Salt & pepper to taste Spread mayonnaise on 1 side of each bread slice. Set the top 2 slices aside. Mash the avocado with the lemon juice. Spread on 2 slices of bread. Sprinkle with parsley. Next top with cheese slices. Lay half of the roasted pepper on the cheese. Cover with cucumber and tomato slices. Season with salt and pepper to taste. Top each with sprouts cover with the top slices of bread. Cut in half; wrap them up. Nutritional Information: per sandwich: 384 calories 21g fat : 25 mg cholesterol

"I came up with this recipe to entertain friends. Since I am a semi-vegetarian and love to BBQ, I am always inventing something new. The first time I made this, my meat-lover friends raved about this dish! I prefer mesquite coals over gas barbeques...however, either works fine."

INGREDIENTS:

1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1/8 cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
1/2 cup crumbled feta cheese

DIRECTIONS:

In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
Preheat the grill for high heat.
Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer the with vegetables. Enjoy as open faced grilled sandwiches.

DIRECTIONS:

Preheat oven to broil.

Bake frozen fries til nearly done, then spoon a can of chili over the top & sprinkle with shredded cheese. Pop in the oven til hot & bubbly.

Make pizza from english muffins, bagel halves, or french bread topped with sauce, mozzarella, and whatever you have handy.

A bowl of cereal sometimes hits the sweet snack spot.

Ramen noodles are also fast & tasty. Cinnamon toast, PB&J toast, a fried egg sandwich, Nachos (spread the chips on a plate, top w/cheese and what-have-you, and nuke).

If anyone has any suggestions for something healthy, that would be ideal. I am planning a nice night for our 1 year. I usually make something like chicken and pasta, but I'm looking for something different.

1/2 block firm tofu
2 cups oats

Cut up 1/2 tofu block into small cubes. Then mash the tofu with your hands and place in a large bowl. Add oats and soy sauce. Mix together well using your hands. Make tofu burger patties with your hands. Fry in oil until golden and crispy.

1 pound ground beef
1/2 onion, minced

1 large can of tuna
2 tablespoons cole slaw dressing
1 package cole slaw mix
12 flour tortillas

In a medium bowl mix the tuna, cole slaw mix and cole slaw dressing. Spoon into flour tortillas. Serve with corn chips and salsa.




Crispy Bacon Tortilla

one tortilla
4 pieces of bacon
4 slices of American cheese


Cook 4 pieces of bacon in microwave (or in frypan - kids, have parents fry for you). Put the tortilla on a plate and add cheese. Put in microwave for 20 secounds to melt. Then put bacon on the chese and roll your tortilla up. Add salsa, avocado, or sour cream.

Healthy-n-Herby (n-tomato-free):

Salad Sandwich:

two slices bread or toast
several leaves of various lettuces and spinach
dandelion greens
watercress
cucumber slices
herb dressing

Salmon and herb cream finger sandwiches:

250g light cream cheese
2 tablespoons dill leaves, finely chopped
2 tablespoons finely chopped chives
1/2 lemon, rind finely grated, juiced
16 slices wholemeal bread
400g sliced smoked salmon

Place cream cheese, dill, chives, lemon rind and 1 teaspoon lemon juice in a bowl. Season with salt and pepper. Stir until well combined.
Lightly spread 1 side of each piece of bread with cream cheese mixture. Top 8 with salmon. Sandwich with remaining bread. Using a sharp knife, remove crusts and cut each sandwich into 3 fingers. Arrange on a serving plate. Serve.

Black Bean Burgers: 6

1 can black beans, drained
1 small carrot, minced
1/2 onion, minced
2 cloves garlic, minced
2 tbsp sesame seeds
1 tbsp ground cumin
1 tbsp fresh oregano
1 tbsp fresh thyme
1 tbsp fresh basil
1 1/2 tsp salt
1 tsp black pepper
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cayenne
2 eggs
3/4 cup quick oats

Mash drained black beans (food processor or potato masher work well). Combine with all ingredients except eggs and oats. Once mixed well add eggs until thoroughly mixed (it's really easier to do this by hand even though it's a bit messy). Once mixed add oats (you may need slightly more oats depending on consistency, mixture should hold together fairly well and not be too mushy). Shape into 2-3 inch balls and press flat to form a patty. Place on hot fry pan sprayed with nonstick cooking spray. Cook until browned on both sides (3-4 minutes per side). Serve on a bun with cheese, on a bed of fresh greens, or let cool and store in fridge for later use.

Notes: You may substitute dried herbs for fresh (1 tbsp fresh = 1 tsp dried). These burgers make a wonderful meat substitute; crumble them on pizza, nachos, or in a salad. You may also vary the ingredients (e.g. add some minced green pepper or minced sweet potato). Be as creative as you wish. Very healthy and low fat. Enjoy and happy eating.

Hummus Sandwiches: 2-3

Spread:
1/2 cup cooked white beans
1 tbsp Dijon mustard
1 tsp sugar
2 tbsp lemon juice

Filling:
1 cup uncooked assorted vegetables
2 egg whites
1/2 tsp: basil, parsley, salt, and black pepper
2-3 slices of whole wheat bread

Combine white beans, mustard, and lemon juice in a food processor. Add additional lemon juice for desired consistency. Set aside. In a greased skillet on low heat, cook vegetables until almost done. Add egg white and spices and continue cooking until mixture is done. Spread some bean mixture over each slice of toasted bread, then add a small portion of egg mixture on top. Serve immediately.

Notes: This is a very healthy and quick meal to make when you're on the go. It can be a protein-filled breakfast or lunch item. You can always substitute any flavoured tortilla with the bean spread and egg mixture.

Place zucchini and peppers on grill rack or broiler pan coated with cooking spray; broil for 3 to 4 minutes on each side or until tender. Add mushrooms and broil for 1 to 2 minutes. Remove from grill; sprinkle with salt, pepper and sweet basil leaves.

Spread cream cheese on toast. Layer zucchini, peppers, mushrooms and tomato on two slices of toast; add spinach, if desired. Top with remaining toast slices. Cut each sandwich in half.

Bake frozen fries til nearly done, then spoon a can of chili over the top & sprinkle with shredded cheese. Pop in the oven til hot & bubbly.

Make pizza from english muffins, bagel halves, or french bread topped with sauce, mozzarella, and whatever you have handy.

A bowl of cereal sometimes hits the sweet snack spot.

Ramen noodles are also fast & tasty. Cinnamon toast, PB&J toast, a fried egg sandwich, Nachos (spread the chips on a plate, top w/cheese and what-have-you, and nuke).
