Healthy Sandwich Recipe, please help!!!!?

Hey guys, Im on a diet and i go to a school that has no cafeteria which means we have to bring our own food. I usually take to school a turkey sandwhich with mayo, tomatoe and lettuce and white bread and i know it has many calories. I would like to know an easy to make sandwich recipe with not many calories and that is easy to take every where. Thank you.

P.S. Not a very hard to make sanwich, just a VERYYYYY simple sandwich with few calories, and which has fewer calories, brown or white bread? Thank you sooo much :P

First off, sandwiches are a fine food to eat if you're on a diet. They incorporate several food groups and include good nutrition. Whole grain bread is better than white bread - it has more fiber and better nutrients. If you want to cut calories, make a large half sandwich using only one piece of bread, but adding more meat and veggies. Lowfat wraps are also a good way to get lots of protein and veggies in sandwich form without too much bread.

The sandwich you're eating is perfectly healthy. Mayo is an OK condiment if used moderately. It's made with eggs and vegetable oil, and the fat in it helps to keep you full (thus preventing you from overeating and extra snacking later). Don't use more than 2 tbs.

I'm not a big mayo eater, and have lots of things I like to put on sandwich bread instead:
Mustard (try different kinds - Dijon, whole grain, spicy)
Cranberry sauce (great with turkey!)
Hummus
Pesto
Avocado (also has fat and calories but is super healthy)
Oil, vinegar and herbs
Salad dressing

You could also think about salads. They're a great meal, and easy to make the night before.

Choose whole wheat bread, because it's more nutritious than white bread, plus it keeps you feeling full for longer.

Add some salad (lettuce, sliced tomato and cucumber, for example) and then a sliced boiled egg, some smoked ham (or a non-meat alternative, something in slices) or some sliced low-fat cheese, then add some low-fat mayonnaise or salad dressing. Wrap the sandwich in foil to keep it really fresh. You can also take an apple or orange.

Make sure the salad makes up half the filling though, because that bulks out the sandwich and is almost calorie-free. If you want to make something you can scoop into the salad, you could finely chop some celery and onion, and stir it with reduced-fat salad dressing plus a can of tuna or some chopped boiled egg, and use that.

couple of quick recipes for ya....
Brasato di funghi

2 lbs Portabello mushrooms
4 cloves garlic sliced
4 tbsp olive oil plus 2 tbsp
2 ounces pancetta
1/2 tsp red pepper flakes
1 28 ounce can of tomatoes drained and chopped
1 cup red wine
2/3cup fresh bread crumbs

in a large saucepan saute the pancetta and garlic....add the red pepper flakes and cook for 2 more minutes...add the mushrooms and season with salt and pepper...cook until the mushrooms release all their juices and juices have evaporated...add tomatoes and red wine....bring to a simmer...partially cover with lid and simmer on med low for 20-30 minutes

in a small pan add 2 tbsp of olive oil add bread crumbs and cook over med high heat till brown...serve over the top of the mushrooms....this is a great side dish or served over steaks!!


You can also just make a nice pannini with the mushrooms...saute the whole mushrooms in butter till lightly browned....drizzle olive oil and red wine vinegar over your baguette or roll....add provolone or mozzerella cheese..add some roasted red peppers....lettuce... tomatoes...drizzle oil on the outside of the rolls....place in a hot pan and and place a weight on the top of the sandwich(maybe another pan) and brown...turn over and cook till cheese is melted

Southwest Stuffed Potatoes

4-6 boneless, skinless chicken breasts
Figaro Liquid Fajita Seasoning
4 large baking potatoes
4-6 ounces light cheddar cheese, grated
green chili salsa

Wash and cube raw chicken breasts. Marinate in fajita seasoning. Bake potatoes 1 hour and 15 minutes at 400 degrees (adjust time for more or less potatoes). Spray Pam in a large skillet. Turn heat on high and pan fry chicken burning often, about 15-20 minutes. Open potatoes, top with chicken, salsa and grated cheese. A whole meal in itself!

Easy Chicken Lasagna

2 lb boneless chicken
1 onion chopped
1 green pepper, chopped
salt, to taste
pepper, to taste
oregano, to taste
Italian seasoning, to taste
2 8-ounce cans tomato sauce
low fat cottage cheese, small carton
pasta of choice (lasagna, rigatoni, large shells, etc.)
3 c grated cheese

In a large pan sprayed with Pam, cook onion, pepper and chicken until tender. Season, add tomato sauce. Cook pasta according to package directions. Drain and add cottage cheese to pasta and stir. Place in large oblong baking dish and top with chicken, onion and green pepper. Top with grated cheese and bake at 400 degrees until cheese is melted and bubbling.

Well there's the typical salad which is filled with nutrients (you could even fill it with chopped meat, hard-boiled egg, tomato, avocado, etc). Sometimes I bring the previous night's leftovers. Or you could make endless sandwich combos like put anything you want in them (maybe using whold grain or pita bread.) happy lunching :)

I just made an awesome sandwich today which is super healthy AND delicious! It's inspired from a sandwich I ate at a really good Italian restaurant.

Grilled Portabella Mushroom Sandwich:

1 portabella mushroom cap, rinsed well and patted dry
1 jarred roasted red bell pepper
2 slices fresh mozzarella cheese
3 slices plum tomato (or any other ripe, red, juicy tomato)
1 tsp basil pesto
1 multi-grain baguette or roll

Marinate portabella mushroom in some olive oil, balsamic vinegar, salt, and black pepper for 10-15 minutes. Then grill the portabella mushroom for 5 minutes on each side or until tender. Place in sandwich bread and top with roasted bell peppers and sliced mozzarella. Put in toaster oven open faced until cheese melts. Then add sliced tomato, close, and enjoy! Yummy.

If you don't like mushrooms, you can substitute them for eggplants.

For eggs, I would recommend a veggie omelet. My favorite is a Spinach omelet. I just blanch some (about 1 1/2 cups raw) spinach, drain, and squeeze dry. Then crack two eggs in a bowl and add the spinach. You can also add some feta cheese as well if you like. Then heat up some olive oil in a pan (about 1-2 tbsp, just so the omelet doesn't stick) and add your egg mixture. Cook for about 3 minutes or until you can easily flip the omelet. Cook for an additional 30 seconds to 1 minute or until omelet is not runny. Serve with toasted whole-grain bread and you have a healthy delicious meal!

You can also make an easy vegetable sandwich with hummus. Just get some whole-grain pita bread, spread your favorite hummus inside, add some crumbled feta cheese, some sliced olives, cucumber, and tomato, and some romaine lettuce and you're done. This sandwich is the best to make when your in a hurry and don't have time to cook up a lunch.

For beans, you can buy a can of black beans and make a tex-mex (Mexican-inspired) salad. Just mix a 1/2 cup rinsed and drained canned black beans with chopped romaine lettuce, shredded cheddar cheese, chopped avocado, tomatoes, cucumber, red bell pepper, cooked corn kernels, and drizzle with lime-cilantro salad dressing (look for it in your grocery store or use this recipe: http://www.recipesource.com/side-dishes/dressings/00/rec0099.html). Toss to combine. Add some corn tortilla chips to it if you don't mind the extra fat and calories. =)

Pour over the cereal and stir until the cereal is evenly coated. Put the powdered sugar in a large size plastic bag, add the coated cereal and shake until evenly coated with the powdered sugar. Spread over a sheet of waxed paper until cooled off. Store in an air tight container in the refrigerator







KIDS COOKING MICROWAVE TORTILLA PIZZA

One 8 inch flour tortilla shell on a double layer paper towel. Cook on high for 1 minute. Spread with 3 tablespoon pizza sauce and sprinkle with Mozzarella cheese. Microwave for 25-35 seconds until cheese melts.
Sprinkle with dried oregano, if you desire. Let stand 1 minute. Cut.







Fruit Loop Candy recipe
20 ounces almond bark
2 cups colored (fruit flavored) marshmallows
2 cups crisp rice cereal
2 cups salted peanut halves
2 cups Fruit Loops

Melt almond bark in microwave according to package directions. Stir in remaining ingredients. Drop by spoonsful onto greased cookie sheet. Chill








Wave your magic wand and this delicious and fluffy treat will separate all by itself! Add strawberries to make this dessert taste berry berry good!


STIR 11/2 cups boiling water into 1 pkg. (4-serving size) JELL-O Gelatin (any flavor) in a large bowl until completely dissolved. Add 2/3 tub of unthawed COOL WHIP Whipped Topping, stir with whisk until melted and mixture is well blended. Stir in 1 cup chopped strawberries.
POUR mixture evenly into 5 dessert dishes.

Easy, healthy, delicious recipes?

I recently moved in with boyfriend and he does NOT eat well. He's always sick and I know it's because literally for breakfast, lunch and dinner he'll just work a bag of doritos. He's finally accepted that this might be the problem but he just doesn't LIKE healthy food. What are some healthy recipes with only a few ingredients what I could make for a very picky 21 year old :) Preferably something with a lot of protein and vegetables because he gets almost none. Also minimal meat since I'm a vegetarian and would prefer not to prepare it. Thanks!

First he should be willing to learn this stuff along with you, not just choosing and meal planning but cooking, to invest in his own health. Not just you. He will also have to approach this with an open mind, man up and learn to like something good for him. There are a million healthy foods. He can't possibly hate them all. He can't shut down. He will have to keep looking. Eventually my guess is he will just realize it is too hard to hate everything.

Second and very important is that he must remove his crutch foods, like the Dorito's. He should not allow himself the option of comparing the new items to the junk he loves. You might not make every switch all at once but if there is a serious go-to that he leans on an item that he cannot control his eating, then it has to leave the house. Then phase in healthiER items until he is eating better and better and feeling better.

Get your hands on corn tortillas and flour tortillas. You can use them as the base for tons of items, and use them to wrap good stuff and make it portable, making it easier to keep away from fast food and convenience store food. They are hearty and satisfying and a pretty simple food, not super healthy but not overly bad for you.

Also since he is a dorito guy...the thing that makes them bad is the spray painted on flavors and colors. You can keep him in plain corn tortilla chips. Even Dorito's brand is fine but plain. Baked is better, so is organic blue corn chips, some are even flavored with sesame! Dip them with fresh salsa, mashed black beans, homemade guacamole, etc. HEALTHY!

A crockpot of beans with onions, garlic, can be delicious as a soup. Scoop some out to whiz up in the food processor for dipping your chips, making burritos. Add some ground beef or ground turkey and some canned tomatoes and zippy spices, and cook it down for a chili. Watch the salt and the greasy meats, go crazy with herbs and spices, otherwise HEALTHY.

Switch out olive oil instead of butter for most of your cooking. Switch to olive oil mayonnaise. Do not use margarine. If you need butter for a recipe, try to use less. You can also use vegetable dips like hummus, guacamole, eggplant dip, for sandwich spread, chip dip, etc instead of greasy sandwich toppings, queso, condiments, etc.

Lean on the ethnic foods. Basically that means learn more about the local foods, herbs and spices and flavor pairings for those areas. Cajun, Mexican, Mediterranean, Italian, Indian, Chinese, Thai, etc....all these cultures have lots of seafood and vegetables, can be a bargain, too! When your recipe asks for lots of fat or salt, make swaps with things you know are better.

There is nothing wrong with a turkey meatloaf, mashed potatoes, and carrots or green salad on the side.

Pasta with sauteed veggies and some lean sausage? Healthy. You can get better pasta such as whole wheat, or you can swap out for brown rice.

PBJ is a pretty healthy meal if you do it right. All fruit spread (Polaner's), lower sugar peanut butter, whole wheat bread.

At school, we have to make an interesting bread snack. We can make ANYTHING we want. As long as we use bread. Any sort of bread. I have to take the ingredients to school and I have 30 minutes to make the snack. I'm not allowed to use the cooker or anything though.
It has to look good on a plate and be sort of healthy.

Pan Bagnat, a Provençal-style tuna sandwich. The juices seep into the bread while it is being pressed.

Ingredients:
1 1-pound loaf unsliced French bread, about 14 inches long
1/4 cup extra-virgin olive oil
1/3 cup basil leaves, plus sprigs for garnish

2 6-ounce cans tuna packed in olive oil, undrained
2 plum tomatoes, diced
2/3 cup coarsely chopped pitted assorted brine-cured olives
1/2 cup chopped sweet onion
2 tablespoons fresh lemon juice

METHOD:
Slice bread in half lengthwise. Using hands, remove interior of loaf, leaving 3/4-inch shell. Brush interior of both halves with olive oil and line with basil leaves in single layer.

Combine undrained tuna, tomatoes, olives, onion, and lemon juice in medium bowl to blend. Season to taste with salt and pepper.

Spoon salad evenly into bottom bread shell. Cover with top half and wrap tightly with plastic. Place in shallow baking pan; top with another baking pan and weight with heavy cans. Let stand 20 minutes.

Unwrap pan bagnat and cut into 1 1/2-inch slices. Place on platter, garnish with basil sprigs, and serve.

If you are allowed to bring in pre-cooked stuff, since you are not allowed to use the cooker at school, you could also add grilled vegetables, such as grilled eggplant, zucchini, peppers, and other goodies, and also sliced boiled eggs. If not, stick to salad items that need no cooking.

Beef stroganoff :

1/2 cup chopped onion
1/2 pound boneless beef round steak, cut 3/4-inch thick, all fat removed
4 cups uncooked yolkless egg noodles
1/2 can fat-free cream of mushroom soup (undiluted)
1/2 cup of water
1 tablespoon all-purpose (plain) flour
1/2 teaspoon paprika
1/2 cup fat-free sour cream

how to:
-- In a nonstick frying pan, saute the onions over medium heat until they're translucent, about 5 minutes. Add the beef and continue to cook for another 5 minutes or until the beef is tender and browned throughout. Drain well and set aside.

-- Fill a large pot 3/4 full with water and bring to a boil. Add the noodles and cook until al dente (tender), 10 to 12 minutes, or according to the package directions. Drain the pasta thoroughly.

-- In a saucepan, whisk together the soup, water and flour over medium heat. Stir until the sauce thickens, about 5 minutes.

-- Add the soup mixture and paprika to the beef in the frying pan. Over medium heat, stir the mixture until warmed through. Remove from heat and add the sour cream. Stir until combined.

-- To serve, divide the pasta among the plates. Top with the beef mixture and serve immediately.

Pear and toasted pecan chutney :
(..can be used with curries or to dress up grilled chicken or a sandwich)

1 cup white grape juice or apple juice
4 firm yet ripe Bosc pears, peeled, cored and coarsely chopped
1/4 cup cider vinegar
1 1/2 teaspoons peeled and minced fresh ginger or 1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon mustard seed
1/4 teaspoon red pepper flakes
1/4 cup chopped pecans, lightly toasted

how to:
-- In a saucepan over high heat, bring the grape juice to a boil. Reduce the heat to low and simmer until reduced by half, 5 to 10 minutes.

-- Add the pears, vinegar, ginger, cinnamon, mustard seed and red pepper flakes. Raise the heat to medium and bring the mixture to a boil. Reduce heat to low and simmer, uncovered, stirring occasionally, until the pears are tender and the juices have thickened, about 20 minutes. Remove from the heat and let cool to room temperature.

-- Stir in the pecans. Cover and refrigerate for up to 1 week. Bring to room temperature before serving. Makes about 2 cups.

1 tablespoon water
48 tiny frozen shrimp, thawed (about 1 cup)
2 tablespoons chopped red onion
3 apples, cored and cubed
1/4 cup lemon juice
1/2 cup diced celery
1 tablespoon chopped parsley
1 teaspoon dried dill
4 teaspoons horseradish
1/2 cup fat-free mayonnaise
Ground black pepper, to taste
4 tomatoes, cored

how to:
-- In a nonstick frying pan, heat the water over medium heat. Add the shrimp and onion, and saute until the shrimp is opaque and the onions are translucent, 5 to 7 minutes. Transfer to a bowl, cover and refrigerate until well chilled.

-- In a small bowl, add the apples and lemon juice. Toss to coat evenly and set aside.

-- In a large bowl, combine the celery, parsley, dill, horseradish and mayonnaise. Add the black pepper to taste. Stir in the shrimp mixture and the apples. Refrigerate until well chilled, 45 to 60 minutes.

-- Just before serving, stuff the shrimp salad into the cored tomatoes. Serve immediately.

Chicken strips with honey mustard sauce :
(... did you know that by using skinless, boneless chicken breast instead of chicken wings, you cut fat and saturated fat by half and save more than 100 calories??! ;)

4 skinless, boneless chicken breasts, each 4 ounces and cut into 3 strips
1/4 cup fat-free milk
1/4 cup all-purpose (plain) flour
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
2 tablespoons canola oil

~ For the dipping sauce:
1/2 cup honey
1/4 cup Dijon mustard

how to:
-- In a large bowl, add the chicken strips. Pour milk over the chicken and mix to coat well. Place in a single layer on wax paper.

-- In a small bowl, mix together the flour, salt and pepper. Sprinkle over the chicken strips, turning the chicken to coat evenly. Shake to remove excess.

-- In a large, nonstick frying pan, heat the canola oil over medium-high heat. Place the chicken strips in an even layer in the pan. Saute, turning once on each side until golden brown, about 2 minutes. Remove and place on paper towels to drain.

-- To make the dipping sauce, combine the honey and Dijon mustard in a small bowl. Stir to mix evenly.

(tangy, refreshing drink - an excellent source of vitamin C and is also relatively low in calories. Using calcium-fortified orange juice adds 44 milligrams of calcium per serving... :)

2 packages (10 ounces each) frozen unsweetened strawberries
1 can (30 ounces) crushed pineapple with juice
3 cups orange juice
2 quarts carbonated water, chilled
16 fresh strawberries

how to:
-- In a blender, combine the frozen strawberries, pineapple with juice and orange juice. Blend until smooth and frothy.

-- Pour the strawberry mixture into ice cube trays and freeze.

-- To serve, put 3 strawberry cubes into a tall glass and fill with 1/2 cup of the carbonated water. Wait until the mixture becomes slushy. Garnish with a strawberry and serve.

I'm a vegetarian and generally I eat a PB and J sandwich on whole wheat bread, some sort of fruit, and either some nuts or something of that maner.

Any ideas on how I can spice it up? I'm just trying to eat healthier and would like some ideas!

I'm vegetarian BTW and I don't have access to the microwave.

Provolone cheese, fontina cheese, sun-dried tomatoes, artichoke hearts, pre-sautéed red onion and mushroom, fresh basil and chopped olives.
Havarti cheese (terrific in paninis), mozzarella cheese, artichoke hearts, fresh tomatoes, and pesto spread.
Havarti-dill cheese, sliced onions, sliced tomatoes, sliced zucchini. If desired, try a sauce made with mayo, horseradish & mustard of choice. (Perhaps on Sourdough bread)
Sliced firm tofu, sliced, zucchini slices, red bell pepper slices, Swiss cheese, fresh spinach or basil leaves. Use a hearty panini bread that can stand up to the moisture in the tofu.
Plain hummus, baby spinach, grilled mushrooms, tomatoes, chopped onions, shredded aged cheddar cheese.

To prepare in advance and take somewhere of just do it just before you eat it?
If you prepare it in advance, you need a refrigeration system (because of the meat/poultry/egg).

Also anything healthy becomes unhealthy if you eat it every day as you do not allow your taste buds to diversify and cannot satisfy a 2 weeks nutritional requirement if you eat the same thing over and over.



Letâs analyze in orderâ¦

Whole wheat bread is my favorite (crust removed and so fulfilling) beside my homemade bread which I mostly use for a hearty breakfasts (I cannot make fluffy whole wheat bread like commercial breads, one day Iâll find out how they can do it).

The provolone cheese or whatever cheese you like is fine as long as you like the taste by itself so it enhances your sandwich (taste it before using it) as commercial sliced cheeses in some countries (like the US) can ruin a sandwich (I find aged Swiss and Munster ok, but still mild). I ruined a Panini once and after investigation I discovered that the cheese I used tasted more like water (I think it was mozzarella, sometimes, youâre not even sure your cheese actually contains cheese if itâs highly processed food). It was more hurtful because I had high expectations, going out of my way with the prosciutto and the pesto and using my Foreman grill as a Panini press. You cannot always succeed when you experiment new sandwiches and recipesâ¦just donât proudly give them to somebody else before even tasting itâ¦and then theyâre disappointed and like âwhat it this? I want your awesome usual sandwichâ.
After all the effort you put into it!?
Some brands (I wonât name those) will have some good tasting kinds of cheese along with dreadful bland taste other kinds of cheese.


The egg fried with olive oil is a mystery to me.
I only use hard boiled eggs for sandwiches as theyâre easy to cook (just boil water), easy to slice in an egg slicer and you can make a batch in advance.
But the olive oil is very healthy (men need 2 Tbsp/day, women need only 1 Tbsp) if you can manage to get olive oil in a sandwich without making it greasy.
Olive oil is rich in monounsaturated fats (oleic acids) which not only raise the good HDL cholesterol but also lower the bad LDL cholesterol.
Itâs the best healthy fat (along with peanut oilâ¦unless somebody is allergic to peanuts, so go with olive oil and be safe).
Hopefully, youâre using extra light olive oil or your sandwich is going to taste âoffâ if you cook with extra virgin olive oil that degrades to toxic compounds with heat.
And youâre not using the 100% pure olive oil, which is the lowest quality as itâs not virgin.
Use extra virgin olive oil for salad dressings but extra light olive oil (same calorie content but lighter in COLOR) ) for cookingâ¦baking/frying/roasting as it was refined to withstand cooking temperatures (+375F but has less flavor). Use a big black marker and write âsaladâ on the label of your extra virgin olive oil and âcookingâ on the label of the extra light one because if youâre not confused, somebody else could be.
In a bind, you can use extra light olive oil for salad dressing but itâs bland so youâll need more herbs/spices/mustard/shallots, etc.
BUT do not use extra virgin olive oil for cooking (you can use canola oil).
I use canola oil (polyunsaturated fats) to deep fry healthy homemade French fries.

Limit your egg yolks to one/day. Studies find that eating up to 6 yolks per week is healthy.
(I guess they did not work on Sundays).
You donât get higher cholesterol eating egg cholesterol but eating saturated fat (which an egg yolk has less than one third of it).
Weâve come a long way from âno more than 2 yolks/week to 4 to 6. Maybe one day theyâll study the 8 yolks/week effect (you can have as many egg whites as you want though, more protein there, super low calories, 17 per egg whites, and no fats).

Follow portion control, low sugar, low fat-lots of fruit and vegetables, lean cuts of fish and meat. Artifical sweetners should be avoided.

Breakfast: fruit, low fat yogurt, whole grain cereal with 1 or 2 % low fat milk, 100% juice(no sugar added), oatmeal with fruit and no more than 2 teaspoons of raw sugar, occassionally a poached or soft boiled egg with whole grain bread with 1 tbspn real butter, or with peanut butter and honey

Lunch/ dinner: fresh fruit, steamed vegetables, 4 oz broiled boneless skinless chicken breast, fish filets, tuna, lean beef or turkey breast. Pasta with tomato based sauces. Homemade soups.

Snacks and treats: fresh fruit and vegetables, all natural fruit snacks and fruit roll ups, string cheese, low fat,and salt crackers, peanut butter, whole fruit spreads, sandwiches of whole grain bread, vanilla wafers, molasses, or ginger bread cookies(any low fat, low sugar varieties).

Drinks:water, 100% fruit juices, 1 or 2% low fat milk, herbal teas(hot or iced) lightly sweetened.

This doesn't mean an occassional piece of candy, chocolate chip cookie, pizza or hamburger can't be had, these just shouldn't be first and constant fare.

As for recipes follow the above guidelines. Suggestions: Grill meats and steam vegetables then season with herbs and spices. Use as natural ingredients as you can get: raw sugar, nothing with high fructose sugar or syrup, sea salt(has trace minerals and natural iodine), watch for added salt, too.

I'm on a calorie-restrictive diet and need some advice for a healthy, tasteful meal option in the range of 250 calories. I'd like to implement some lean protein if possible, and definitely veggies, but nothing too exotic (I want to keep it to what I've already got in the fridge or pantry). Any suggestions?

I like to make different types of wrap sandwiches to take to work. They are easy and healthy to eat. Any favorites anyone has they would like to share. I just had one the other day made with sliced cooked sweet potatoes,lettuce,rice and black beans. It was so different yet very good. Thanks in advance! Peace!

mmm wraps are delicious. i found this recipe online and it sounds extremely good, try it out. it's also surprisingly healthy:


Ingredients:
1 can (19 ounce size) mild plain chili (heated)
3 cups Fritos or other corn chips (original style)
1 cup shredded mild Cheddar cheese
1/2 cup diced onions (to taste)
4 large flour tortillas
Turn this recipe into a puzzle! [click]

Directions:

Mix Fritos with chili; place chili mixture in the middle of one flour burrito shell. Sprinkle chili with shredded cheese and diced onions to taste.

Fold one side of shell halfway on top of chili. Fold each side over each other. The bottom should be tucked in and filling will be seen from the top of wrapped shell. Microwave for 15 to 20 seconds.

Repeat with each tortilla shell. Serve immediately.

Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). Iâd try the recipe, if itâs good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).

Whole Frozen Turkey (10 pounds)

Buying a frozen turkey and making it in less than 2 1/2 hours is so easy and is an unexpected treat for the whole family.
Unwrap the frozen turkey and rinse in cold water. While still wet, season the outside as desired and place on liner pan or 1" rack breast side down. Nu-Wave on HI for 60 minutes. (At this point, the gizzards inside should be defrosted and you can remove for later use. Season or fill cavity with vegetables at this point). Turn turkey breast side up Nu-Wave on HI for another 75-90 minutes or until thermometer reads 165°F. If the skin is becoming too brown, cover with tin foil just as you would a conventional oven.
Let the bird sit as usual and use drippings from pan to make delicious gravy.

FROZEN ROAST BEEF (4 pounds)

Buying a roast beef (or 2) on sale and freezing it for later saves time and money. Just take it out and, and under 2 hours, you can have a delightful surprise for the family.
Rinse the beef in cold water so any dry seasonings may adhere. Place roast on 1" rack, top side down. Nu-Wave on HI for 50 minutes. Turn over, top side up, and continue another 50 minutes (RARE) or more depending on your taste. Let sit 15 minutes and enjoy!

BAKED FRENCH TOAST (4 servings)

4 1-inch thick slices raisin bread or white bread
4 eggs
1 1/3 cups milk or half and half
2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 tablespoons sugar
1/2 teaspoon salt
1 cup maple syrup
1/4 cup butter or margarine



Cut bread slices in half diagonally. In a shallow dish, whisk together eggs, milk, vanilla, cinnamon, nutmeg, sugar, and salt. Dip each bread slice in mixture to saturate both sides.
Lightly butter a shallow aluminum pan and arrange slices in a single layer. Place pan on 4" rack and Nu-Wave HI for 8 minutes (or until browned and puffy). Turn 1/2 way if desired.
While toast bakes, combine syrup and butter. Heat until melted together.
Top off and enjoy!

Hint for Low Fat Version:
Dip bread in egg substitute and roll in corn flake crumbs. Follow cooking directions above and top with low-cal syrup or fruit. This is crispy, healthy, and delicious!





BAKED REUBEN SANDWICH

Butter, softened
2 slices rye bread
1 ounce thinly sliced corned beef
1/4 cup sauerkraut, squeezed dry
1 slice Swiss or Gruyere cheese
1 tablespoon thousand island dressing



Lightly butter one side of each slice of bread. On the unbuttered side, place corned beef, sauerkraut, and cheese. Spread with dressing. Top with second slice of bread, buttered side up.
Place directly on 4" rack and Nu-Wave on HI for 7 minutes or until the top is lightly toasted and the cheese is melted.
Place directly on the 4" rack and Nu-Wave on HI for 4 minutes or until well heated and cheese melts.




STUFFED POTATO SKINS (8 servings)




4 baked potatos
1 cup sour cream
2 cups shredded cheddar cheese
1/2 cup chives or scallions, chopped
4 slices cooked bacon



Cut potatoes in half lengthwise and scoop out cooked potato, leaving thick skins. Mix everything except the skins and fill each skin with equal amounts of the mixture. Place on the 4" rack and Nu-Wave on HI for 5 minutes.




CHINESE STYLE RIBS (20 servings)




1 cup soy sauce
3 tablespoons dry red wine
1 tablespoon each sugar, salt, and garlic powder
2 pounds baby back ribs, cut into individual pieces



Mix all the ingredients and marinate the ribs for at least an hour. Spread the ribs on the 4" rack and Nu-Wave on HI for 20 minutes.




LONDON BROIL (4-6 servings)




1 1/2 -2 pound flank steak , 1" thick
salt, pepper, and garlic powder to taste
2 pounds sliced mushrooms
6 tablespoons butter
1/4 cup Worcestershire sauce



Place mushrooms, butter, and Worcestershire sauce on 10" pie plate and set on liner pan. Place the steak on 4" rack. Nu-Wave on HI for 5 minutes. Turn the meat and cook another 5-7 minutes or to desired temperature. Slice the meat at a 45 degree angle against the grain and serve with the mushrooms.
FROZEN - When you find flank steak on sale, buy a few and freeze them for later. (Freeze flat for later use). Spray or rub vegetable oil on frozen steak and sprinkle with seasonings. Nu-Wave for 10 minutes, turn and cook another 15 minutes or to desired temperature.




CORNISH HENS

These tasty birds are almost always available frozen therefore they are perfect to cook in the Nu-Wave Oven and come out crisp on the outside and moist on the inside!
Remove the wrapper and run under water to remove the glaze. Place on the 1" rack, breast side down, and Nu-Wave on HI for 30 minutes. Pry open the cavity, remove the giblets, and season the cavity. Turn over and cook another 20 minutes or to 170°F.




LOW-CAL CHICKEN PARMESAN (4 servings)

Total time from freezer to table.........30 minutes

4 (5-6 oz) boneless/skinless Chicken Breasts-Frozen
Low-Fat Italian Dressing
Seasoned Bread Crumbs
8 oz. - 2% Mozzarella Cheese (shredded)
Grated Parmesan to taste
12 oz. Pasta Sauce



Dip chicken pieces in Italian dressing and roll in bread crumbs. Place on liner pan. Nu-Wave 8 minutes per side (or until done). Open oven and spoon sauce on each piece and sprinkle with cheese. Cook 2 more minutes.




LAMB CHOPS WITH FETA & CHEESE (4 servings)




2 tablespoons olive oil
1 clove garlic
1 tablespoon lemon juice
4 lamb chops, 1" thick
4 ounces feta cheese, crumbled
1/4 cup chopped ripe tomatoes
4-6 pitted Kalamata olives
1 tablespoon chopped parsley
salt and pepper to taste



In shallow dish, mix olive oil, garlic and lemon juice. Add the lamb chops and turn to coat on all sides. Place in refrigerator for 15 minutes. In small bowl mix feta, tomatoes, olives, and parsley. Set aside.
Place lamb chops directly on 4" rack, sprinkle with salt and pepper. Nu-Wave on HI until done to taste, approx. 12-14 minutes (turning over 1/2 way)
When chops are done, spoon equal portion of feta mixture on each chop and NU-Wave on HI until cheese melts.




BREADED SOLE OR FLOUNDER (4 servings)




4 sole or flounder filets, about 2 pounds
4 tablespoons melted butter

Mix the butter, seasonings, and crumbs and press into the fish. Coat both sides of fish and place on 4" rack. Nu-Wave on HI for about 7 minutes.
Frozen: Cook frozen filets for 5 minutes and then continue the recipe as above.




FRENCH FRIES (4 servings)
Cut off 1/2 inch from the ends of 2 large baking potatoes. Cut 1/2 inch off the sides to make a square sided potato. Cut, lengthwise, into 1/2 inch fries. Toss with vegetable oil and salt and pepper. Lay on 4" rack and Nu-Wave on HI for 20 minutes or until crisp (turning 1/2 way).
Parmesan Fries: Cook as directed above but before serving, toss with 1/2 cup of grated parmesan cheese





APPLE CRISP (8 servings)

4 apples (11/2 lbs.) peeled, cored, and sliced 1/8"-1/4" thick
1/3 cup flour
1/3 cup brown sugar, firmly packed
1/3 cup quick cooking oatmeal
1/4 cup butter, softened
1/4 cup granulated sugar
1/2 teaspoon cinnamon



Grease an 8" round cake pan. Place sliced apples in the pan. In a medium bowl, combine flour, brown sugar, oatmeal, and softened butter until well mixed. Set aside. In a small dish mix granulated sugar and cinnamon. Sprinkle over the apples. Pat the oatmeal mixture on top. Place on the 1" rack and Nu- Wave on #5 (med. heat) for 30 minutes or until apples are tender and juices are bubbly.

I love this non-traditional chili made with canned tomatillos, green chilies and white beans. It goes together quickly, can be prepared in advance and leftovers freeze beautifully. The optional toppings add fresh color and bright flavor. Serve with brown or white rice, if desired.

WHITE TURKEY CHILI
Serves 6 to 8
Ingredients
1 1/2 tablespoons olive oil, divided
2 pounds ground turkey breast
1 green bell pepper, cored, seeded and chopped
1 medium yellow onion, chopped
1 teaspoon ground coriander
2 tablespoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1 bay leaf
1 (28-ounce) can tomatillos, drained and chopped
1 (4-ounce) can diced green chiles, drained
1 small jalapeno, seeded and finely sliced
2 cups low-sodium chicken broth
3 cups cooked Great Northern beans, drained
Chopped cilantro, for garnish (optional)
7 teaspoons grated Monterey Jack cheese, for garnish (optional)
7 teaspoons sour cream, for garnish (optional)
Method
Heat 1/2 tablespoon of the oil in a large pot over medium high heat. Add turkey and cook, stirring often, until browned. Transfer to a bowl and return pot to heat. Add remaining 1 tablespoon oil, bell pepper and onion and cook until softened and golden brown. Return turkey to pot and add coriander, cumin, oregano and salt. Stir well to combine. Add bay leaf, tomatillos, chiles, jalapenos and broth, reduce heat and simmer, uncovered, 45 to 50 minutes. Gently stir in beans and cook for 30 minutes more. Stir in cilantro, ladle chili into bowls and garnish with cheese and sour cream, if you like.

Other cooked meals or entrees that freeze well are meatballs (either Italian style or Swedish; beef or turkey Meatballs), Meatloaf, Lasagna, Chicken Parmigiana, Veal or Beef Rollatine, Beef stew without the potatoes. Meatloaf and meatballs also make great hero sandwiches or turn them into Shepherds pie which also freezes well. The filling for chicken pot pies freezes well; just defrost the filling and top with refrigerated crescent or biscuits and bake until hot and bubbly or just serve the filling over toast.

I like to add cooked chicken to Zatarain's boxed rice. I especially like to add it to the Jambalaya and Red Beans and Rice. It's a one pot meal.

I also shred it and simmer it with salsa and use it for tacos, burritos, or nachos.

My husband shreds it and then sautes some onions until tender, adds bbq sauce and the chicken. He simmers it until everythig is hot and then makes a sandwich with it.

OK so I like really REALLY love Philly cheese steak sandwiches, but I'm on a strict diet and they are very high in fat and calories. Could I get some recipes on how to make it very healthy? Like what if I use Turkey ground instead of steak and low-fat cheese? Help!

Sorry Chris is right. If you change it up a lot and use chicken or turkey you can't call it a Philly Cheese Steak but the flavor will be sort of similar.

For a healthy alternative try using portobello mushrooms. They have really meaty flavor. Slice up the mushrooms, toss with a bit of olive oil, minced garlic, thinly sliced onion and parsley then saute or broil until soft.

Pile it on to a whole grain bun and top with some low fat or no fat cheese. (Kraft makes no fat Sharp Cheddar singles.) Put the sandwich under the broiler for a minute or two or in the oven for a bit longer to melt the cheese. This sandwich should be under 300 calories.

I'd like some vegetarian recipes that work for people that eat meat typically?

Sandwiches on whole wheat bread wraps with tofu (extra firm) or if you dont like use some vegan hqm or turkey col cuts, or half a mashed avocado they are all good sources of protein also on your sandwich have some hummus(whatever kind you like, my favorite is jalepeno and roasted red pepper) or veganaise and your fav cheese (i use either vegan swiss or laughing cow lite spreadable cheese) and your favorite veggies, i like cucumbers, bean sprouts, spinach, onions, but red peppers, tomato, or lettuce would all be good mix it up andtry all different stuff throughiut the week

Make some vegetable soup, or but some tomato or whatever kind you like from the can (just make sure its not made with chicken or beef broth) keep it warm in a thermos and bring a toasted cheexe sandwich to dip in or eat sepertatly

Bring your favorite cold cereal in a thermos and milk or buy a milk and have cereal as a little treat

On the side make some wholesome cookies with lots of whole grain oats raisins and seeds or trail mix with your favorite dry cereal, nuts, and dryed fruit. Or fresh fruit. Or hummus with veggie sticks.

I can eat as cheaply as someone bankrupt or as well as a working person.

I have tried the vegan route with beans, brown rice, fruit, vegetables, and started looking very doughy and gained weight.

I will describe the simple plan I follow, and also, I, too, worked full time and went for a masters degree plus taking extra graduate credits on weekends. The key is simplicity, health, and learning to eat less; otherwise, the vegan route of hydrating beans is the cheapest.

You will want to feel satiated, but not ill from greasy vending machine food. You will want to feed your brain. This means fish, eggs, olive oil, oranges, lemons, bananas, apples, broccoli, spinach and other greens. If you omit all the starchy, gummy food that stick in your gut and twist it into knots, you will be able to maneuver your schedule with aplomb. I will provide sample meals, and you can vary as you wish.

Breakfast: poached egg, greens, sliced orange, coffee
Lunch: Deli meat wrapped in lettuce leaves, berries, almond milk or plain water (drink lots of water)
Dinner: Poached fish (poach it in white wine, put a lid on it) served with tartar sauce and lemon, green salad with cut up tomato dressed with olive oil and Balsamic vinegar, medium sliced banana.
If you need more fiber, encapsulate ground flaxseeds or take psyllium fiber tablets.

For supplements, take Vitamin B group, Vitamin D, Magnesium, Calcium (the last three come together with Caltrate). You save money as you don't buy fast foods, don't buy soda, eat no sugar, no salt, don't buy coffee outside of the home, no booze.

If you want to go really cheap, make rice and beans, black bean soup, canned chili with beans, and additional fruit and vegetables. Add lemon to the water. It makes a cleansing beverage. I didn't eat like this when I did the double thing. I think I was a vegetarian then. Also, I would stop at the deli and buy lots of sides to go with the fresh sandwiches, because I don't like to be hungry.

However, the way I am eating now, with fish, and I eat actually more, as I buy expensive smoked fish and smoked lox as well, and organic greens is so filling, I can hardly manage to eat another bite.

If you start your day with oatmeal, you will crave carbohydrates throughout the rest of the day, and be miserable at night classes for cravings. It is better to get the brain food from the fish, not fried from the franchise at the corner, but poached with no butter added. It does take a while to get used to it. The recipe for a poached egg made in the microwave is in YA if you search for it. Unfortunately, food prices have risen, so it is hard to get fine food at a cheap price. There is a market, called Aldi's, that has bargain food, if you have it near you. It is still good to be a man with a plan.

You can buy an electric or manual seed/ herb grinder, burr mill grinder or coffee grinder (in various price ranges with varying features) that will do just fine! There are even manual flax seed grinders that are handy, relatively inexpensive, and similar to familiar hand-cranked pepper grinders. Yes, first link in "sources," but you can get better results if you'll use the bread machine only for the dough. Hear me out.

King Arthur Flour's classic 100% Whole Wheat Sandwich Bread (second link in "sources") is the bread you want, but it's not one you should BAKE in the bread machine. Bread machines don't shape loaves of bread really well, and they can't give you "ovenspring" -- when you put a loaf of proofed dough into a hot oven, the heat makes the yeast go crazy and gives it a very big boost, giving big rise. The bread machine heats gradually, and you don't get as much spring out of it.

You can make this bread using the "dough" cycle on your bread machine, then shape it, let it rise again (proof), and bake it in a hot oven to get really nice results. But if you try to bake this in a bread machine, it won't rise as high, so it will be more dense.

If your schedule or needs require that it bake in the machine, you'll want the first recipe. It won't be as fluffy and light as a loaf that's properly shaped and proofed and put into an already-hot oven, but it'll be tasty.

We need more ideas. Our favorite to date is Sweet Potato Balls.

Mix Together:
insides of 2 sweet potatoes
1 beaten egg
2 tablespoons milk

Form into balls and roll in
1/2 cup wheat germ
1/2 teas. fresh finely minced parsely

cook by baking on greased baking sheet in pre-heated oven for 10-15 mintes or until egg is throughly cooked.

They both know that if they refuse to eat for the sake of refusing to eat, they don't get a bedtime snack (which is usually a small treat, i.e., a cookie, a small Girl Scout bar [which we bought up while they had them], etc. The pure junk.) If they do want something before bed, it's bread with something (whole wheat bread with SmartBalance spread, peanut butter, etc.) or fruit or leftover vegetable from dinner.

We live with my husband's parents, and his younger sister. My husband and is parents are not veg*n, my sister-in-law is vegetarian (but eats a lot of junk "food"), my daughter is a "flexitarian" (i.e., she could have tofu or a veggie deli "meat" sandwich for lunch, and have meat with dinner), and my son and I are vegan. Even though three different meals are often made (except on Fridays; My FIL is member of Catholic Church and does not eat any meat but fish on Fridays, regardless of the liturgical season), then it's all veg*n or leftovers. Even with all of that, we are nto short order cooks. We cook what we think everybody will like and if they don't, then they don't eat.

There are exceptions, though. Monday of this week my husband took his brother to the nearest cancer hospital for his treatments. He wasn't sure when he would be home and we didn't think about story hour at the library that evening. We had dinner after we got home and the kids were tired. My daughter smartly refused the Kraft macaroni and cheese my MIL made and wanted the tomatoes, lettuce and whole wheat bread from the BLTs that were also available. I didn't have a problem with that and was quite happy with her choices. My MIL made macaroni and cheese for my two-year-old and me-- whole wheat pasta with rice milk cheese and a bit of soy milk and Smart Balance spread. He at half of his bowl with struggle. It was late and he was tired and I think he decided that he didn't have to eat if his older sister (who was also fighting) didn't have to. Ugh. Most nights, it's easy, but my son still thinks that he can run around and eat at the same time-- a habit I have tried to discourage, but my husband and his mother are cool with. (My husband thinks it's okay for our son to sit and eat if my husband is feeding him. I help my son when it's difficult to get some of the food out, like the last few bites, but I don't sit and feed him like a baby learning.)

Anyway, quit giving in to your kids. They are smart and seem to know they can manipulate Mommy. On very rare occasions, I let my kids get away with it-- i.e., when I am tired, when they are tired, when we're both quite tired and I just want them to eat something so they sleep better at night with food in them, or when I'm just being nice and letting them get away with it just to think they got the upper hand that time.
