Does anyone have any good recipes for NuWave Oven?

Q. I have lost my recipe book that it came with and would like some wonderful recipes. Thanks for your help.

A. Whole Frozen Turkey (10 pounds)

Buying a frozen turkey and making it in less than 2 1/2 hours is so easy and is an unexpected treat for the whole family.
Unwrap the frozen turkey and rinse in cold water. While still wet, season the outside as desired and place on liner pan or 1" rack breast side down. Nu-Wave on HI for 60 minutes. (At this point, the gizzards inside should be defrosted and you can remove for later use. Season or fill cavity with vegetables at this point). Turn turkey breast side up Nu-Wave on HI for another 75-90 minutes or until thermometer reads 165°F. If the skin is becoming too brown, cover with tin foil just as you would a conventional oven.
Let the bird sit as usual and use drippings from pan to make delicious gravy.
(If you want to make up to a 15 pound bird, see our extender ring.)
See Cooking Chart for more times and temperatures

FROZEN ROAST BEEF (4 pounds)

Buying a roast beef (or 2) on sale and freezing it for later saves time and money. Just take it out and, and under 2 hours, you can have a delightful surprise for the family.
Rinse the beef in cold water so any dry seasonings may adhere. Place roast on 1" rack, top side down. Nu-Wave on HI for 50 minutes. Turn over, top side up, and continue another 50 minutes (RARE) or more depending on your taste. Let sit 15 minutes and enjoy!

See Cooking Chart for more times and power settings.

BAKED FRENCH TOAST (4 servings)

1/2 teaspoon salt
1 cup maple syrup
1/4 cup butter or margarine

Cut bread slices in half diagonally. In a shallow dish, whisk together eggs, milk, vanilla, cinnamon, nutmeg, sugar, and salt. Dip each bread slice in mixture to saturate both sides.
Lightly butter a shallow aluminum pan and arrange slices in a single layer. Place pan on 4" rack and Nu-Wave HI for 8 minutes (or until browned and puffy). Turn 1/2 way if desired.
While toast bakes, combine syrup and butter. Heat until melted together.
Top off and enjoy!

Hint for Low Fat Version:
Dip bread in egg substitute and roll in corn flake crumbs. Follow cooking directions above and top with low-cal syrup or fruit. This is crispy, healthy, and delicious!

FROZEN - When you find flank steak on sale, buy a few and freeze them for later. (Freeze flat for later use). Spray or rub vegetable oil on frozen steak and sprinkle with seasonings. Nu-Wave for 10 minutes, turn and cook another 15 minutes or to desired temperature.

CORNISH HENS

These tasty birds are almost always available frozen therefore they are perfect to cook in the Nu-Wave Oven and come out crisp on the outside and moist on the inside!
Remove the wrapper and run under water to remove the glaze. Place on the 1" rack, breast side down, and Nu-Wave on HI for 30 minutes. Pry open the cavity, remove the giblets, and season the cavity. Turn over and cook another 20 minutes or to 170°F.

What are some healthy but tasty sandwhiches I could have for lunch at school?
Q. Since I will be taking these to school I need something that doesn't need to be served hot. It would be great if the recipe was very healthy. Please include the recipe not just a suggestion. That would be great!!!!
These are all great answers!!! ill try them all. who can't get sick of a sandwhich????? i really like the idea of toasted bread. and i love tuna. mayb ill combine them all

A. Chicken salad sandwich

Sliced chicken by itself can be pretty plain, but chopped up into a salad tastes simply scrumptious. We always used cooked chicken leftover from yesterdays meal, which has been chopped in the blender. To the chopped chicken, add a little mayonnaise, some minced dill pickle, minced celery, chopped walnuts and a smidgeon of Dijon mustard. We serve up this winner on either whole wheat hoagie rolls or in a whole wheat wrap for a sandwich that's both healthy as it is tasty.

Ham and Potato sandwich

This crazy concoction has been a children's favorite for decades, at least at my elementary school! To make this silly sandwich, place a couple of thin slices of turkey ham on wheat bread, add a thin slice of American or cheddar cheese and a dollop of mayonnaise. Where does the potato come in? Include a container of five single potato chips which the children can add to their sandwich during lunch. The salty crunch of the chips against the sweetness of the ham is so tasty, they won't want to be trading this sandwich.

Peanut butter and jelly

Organic and natural peanut butters are high in nutrition and pack a lot of protein in a single serving. Since a peanut butter sandwich a la carte can be a little tough to eat , we always match it up with Mom's homemade low-sugar blackberry or strawberry jam for a sandwich that has the kids asking for extras.

Tuna Salad

Tuna salad gets a bad rap, but it's both low in calories and high in protein. The best tuna salad sandwich is a combination of low cal mayonnaise, minced celery, sweet pickle relish, a dash of sugar, and water packed tuna. To add some greens to your child's sandwich, stir in 1/2 of cup of chopped, fresh spinach.

Green eggs and hamwiches
Egg salad sandwiches were mainstay picnic fare when I was a kid, but aren't quite as popular as they once were. It's a shame too, because egg salad really is a healthy, low calorie, low cost sandwich ingredient.

To trick my kids into eating egg salad sandwiches, I turned them into Green Egg and Hamwiches. To make this silly recipe, use any basic egg salad recipe, but add a tablespoon of minced ham and a drop of green food coloring. If you really want to be sneaky, this is a great time to add alfalfa sprouts! The sandwich looks crazy but is so weird looking that your children can't help but gobble it down

What is an extrememly fast way to lose weight?
Q. I'm 13 and I already keep a food journal, count calories (trying to stay between 1,000 and 1,500) and work out...a lot. I still need to know some exercises and foods that help you burn fat, though. I am basically living off of smoothies, salads, and sometimes a treat like an eggroll or something but basically mostly salads and smoothies. I'm starting to get tired of them so if anyone has any recipes (that dont include seafood) that are only 300 calories or under will you please post them? Also if anyone can tell me how to lose more weight faster or something I'm doing wrong..please help. Thanx in advance!

A. I would stop doing the smoothies as there are lots of calories in them; I know because my husband & I tried them for over six months and we did not lose very much weight. And we were still hungry afterwards. What really helped us was Weight Watchers and eating a variety of foods and of course exercise. You need to do aerobic exercise. Your body also needs to have energy (calories) to lose weight and I think you are actually giving yourself too few calories. I would try to up the calorie count a little bit, say to 2000.

Drink your milk with 1 or 2% fat, eat apples and berries (lots of fiber) have some lean meat (like broiled chicken or pork loin), eat oatmeal (not the little packs but the real stuff) for breakfast (my husband swears by it-and he lost lots of weight by having breakfast) have sandwiches with low cal bread and low fat meat or cheese with mustard for lunch and have veggies like brocolli and carrots (broiled or steamed) with your meat for dinner. Do not eat fried foods at all as they will set you back a bit. And lastly, drink your water - you do not talk about that at all and that is probably the most important thing about nutrition and being healthy. It will also keep you feeling fullish. One last thing, I would strongly recommend going to a doctor and a nutritionist to make sure about what you are doing and before you start to do any of these things recommended by anyone on this topic.

What is a healthy, easy to make lunch menu?

Q. I’d like to try out a menu with plenty carbohydrates, vitamins, minerals and preferably low-fat, that is and easy and quick to cook. When I get home at lunch I usually have little time to prepare food, but I’d like some new ideas for a healthy menu. Thank you in advance!

A. I would suggest you to make a sandwich. Based on your preferences, you wish to have carbohydrates which you can get from the bread, vitamins and minerals from the vegetables and meat inside the sandwich.

Here's a very simple recipe to make a sandwich.

Smoked Beef and Cheese Sandwich

ingredients:
Cucumber
Lettuce head
Tomato
mayo or any salad dressing you prefer
smoked beef
sliced cheese
breads (wheat bread would be best)

Instruction:

* Spread mayo or dressing of your choice on the breads
* put all the ingredients on top of a slice of bread
* top the second slice of bread on top
* give it a gentle press just to bind all of them together
* and there you have it.

Enjoy

What are some healthy meals\snacks for breakfast, lunch and dinner that I can make at home?
Q. What are some healthy, easy meals\snacks for breakfast, lunch and dinner that I can make at home?
10 points for the most ideas for all the meals\snacks!

A. Breakfast:

- Egg whites (better for you than the whole egg) with a little salt and pepper, maybe some cheese to add flavor, on wheat toast.
- Grapefruit (it's sooo healthy for you, it can be a snack too)
- Cottage Cheese Pancakes: http://www.wholefoodsmarket.com/recipes/351
- Oatmeal
- All fruit smoothie. Have non frozen fruit and add ice or use frozen fruit and add a little 100% fruit juice. You can make it a *healthy* milk shake by using low fat milk instead of juice and adding a little sugar (sugar isn't unhealthy in small amounts, but fake sugar like sweet and low and equal are bad for you)

Lunch/Dinner:

- Chicken breast with lemon pepper or other seasonings
- A spinach tortilla with chicken cooked in some bbq sauce. Add lots of lettuce and a little bit of light ranch (like a teaspoon, if even that).
- Salad- there are thousands of possible salads you can make but what I love doing is a bunch of lettuce, some spinach if you like that, salt, pepper, garlic (powder and only a small amount) and vegetables like tomatoes, cucumbers, or even carrots and peppers
- Taco Salad: brown some lean beef, drain any fat, add seasonings (McCormick has a taco seasoning packet for 50 cents). Make a bowl full of lettuce, tomatoes if you want, some beef, some cheese if you want, and tortilla chips if you want (less healthy version).
- Chicken in a bag- McCormick's has these awesome chicken bag seasonings where you throw chicken in the bag (they provide) with some carrots, potatoes, whatever you want, add the seasoning and bake for about an hour. One of my husbands favorites!
- Costco sells individual salmon fillets. Take one out of the fridge/freezer, season to your liking, throw on a pan, the grill, or in the oven and cook.
- a sandwich- between whole wheat bread slices, pita style, or wrapped up (spinach wraps are really delicious, or whole wheat wraps which I'm not a huge fan of).
- Make some quinoa or brown rice in a rice cooker or in a pot if you don't have one. Add some black beans, salt and pepper, and some mozzarella if it's still to bland. I like to add some sriracha (chili hot sauce) into the rice as it cooks and some garlic seasoning. It adds some kick and makes it taste really good without adding the sodium from cheese.

Snacks:
- peppers
- celery. If you hate it alone add some organic peanut butter (no preservatives) you can even go to many stores and grind your own peanuts into peanut butter.
- peas, green beans, cucumbers, tomatoes, other vegetables but not potatoes or corn.
- apples, pears, bananas, berries, grapefruit, and other fruits.
- some nuts or a homemade trail mix (raisins, peanuts, almonds, some dark chocolate chips, whatever else you want)

Dessert
- a small amount of dark chocolate is actually really good for you. The higher the cocoa content the better :) But only a small amount.

Those are my favorites but check out this site: http://www.lifehack.org/articles/lifehack/over-100-quick-and-easy-healthy-foods.html

for more options. There are an unlimited amount of healthy foods out there you just have to find what you like and stick with it :)

What are your favorite healthy recipes and food?
Q. My husband and I are eating healthy and was wanting to know what kind of recipes you have that are delicious that are healthy? Also, what kind of snacks or other healthy ideas do you enjoy? Thank you!!!

A. Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). I’d try the recipe, if it’s good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.
-----
Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.
----
Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).

can someone give me a healthy recipe that is made with artichoke hearts?
Q. im looking for a good healthy recipe that I can use artichokes with. I love them but can't eat them by themselves. Thank you!

A. Recipes for Health
Panini With Artichoke Hearts, Spinach and Red Peppers. Here’s a great way to pack a lot of nutrients into a sandwich. If you use frozen artichoke hearts, the panini are quickly assembled.

6 ounces (1 bag) baby spinach
3 tablespoons olive oil
2 garlic cloves, minced
12 ounces frozen or fresh cooked artichoke hearts, sliced
1 teaspoon fresh thyme leaves
Salt, preferably kosher salt, and freshly ground pepper
1 large or 2 smaller roasted sweet red peppers, sliced
1/4 pound fontina or Gruyère, thinly sliced or grated
8 slices whole grain country bread

1. Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 10 to 20 seconds. Transfer to the ice water to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely.

2. Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat, and add the garlic. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the artichoke hearts. Stir for a few minutes, until the artichoke hearts are beginning to color, and add the thyme leaves and the spinach. Toss together and season to taste with salt and pepper. Remove from the heat.

3. Preheat a panini grill. Top four of the bread slices with the artichoke hearts and spinach. Add strips of roasted pepper, then cheese. Top with the remaining bread and press together. Brush the outside of the bread (top and bottom slices) with olive oil. Place in the panini maker and grill for four to five minutes, until the cheese has melted and the bread is toasty. Slice in half and serve hot.

Yield: Serves four
Advance preparation: You can prepare the artichoke filling through step 2 several hours or even a day ahead of assembling the panini.

Artichoke Heart Frittata. You can make this easy Italian frittata with the fresh, tiny artichokes that arrive with spring or, more quickly, with frozen artichoke hearts.
1 pound baby artichokes, trimmed, or one 12-ounce package frozen artichoke hearts
8 eggs
2 tablespoons low-fat milk
Salt, preferably kosher salt, and freshly ground pepper
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
3 tablespoons minced Italian parsley, dill, fennel fronds or wild fennel
1 tablespoon freshly grated Parmesan or pecorino

1. If using fresh artichokes, steam until tender or boil gently in a pot of generously salted water, 10 to 15 minutes. Drain, refresh with cold water and quarter the artichokes. Thaw frozen artichokes as directed, and drain off any liquid in the bowl.

2. Beat the eggs in a medium bowl. Whisk in the milk, about 1/2 teaspoon salt and freshly ground pepper to taste.

3. Heat the oil over medium-high heat in a 10-inch, heavy nonstick skillet, and add the artichokes. Cook, stirring often, until golden brown, about five to eight minutes. Add the garlic, and cook for another 30 seconds to a minute until fragrant. Stir in the herbs, and season with salt and pepper. Pour in the egg mixture. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with a spatula in your other hand, so that the eggs run underneath during the few minutes of cooking.

4. Turn the heat down to low, cover (use a pizza pan if you don’t have a lid that will fit your skillet) and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid and loosen the bottom of the omelet with a wooden spatula, tilting the pan so that the bottom doesn’t burn. Instead it should turn a deep golden brown. Meanwhile, heat the broiler.

5. Finish the omelet under the broiler for one to two minutes, watching very carefully to make sure the top doesn’t burn. (It should brown slightly, and it will puff under the broiler.) Remove from the heat and immediately sprinkle on the Parmesan or pecorino. Serve hot, warm or room temperature.

Yield: Serves four to six
Advance preparation: You can prepare the artichokes a day ahead. The frittata is good served at room temperature, so you can make it hours before serving. It also will keep well in the refrigerator overnight.

What are some good healthy recipes for making ahead of time and freezing?
Q. My husband and I are students about to start another busy semester. I wanted to cook this weekend and freeze for those moments in the semester when I don't want to spend more than 15 min preparing a meal.

Any suggestions besides spaghetti sauce? I really appreciate it:)

A. There's a book by Cooking Light called "5 ingredients, 15 min or less" that has good recipes in it that you could use during the week when you don't want to pull from the freezer.

But, for making ahead, try making the sauce part of beef stroganoff (then you'd just have to reheat the sauce and cook the noodles when you want dinner later)

lasagna is involved, but it makes a lot and you can freeze it in two person servings. Serve it with a fresh bagged salad and storebought garlic bread.

Chili, again freeze it in two person serving sizes.

Soup

Meatloaf

enchiladas

taco meat (then you can use it to make nachos, tacos, mexican-stuffed baked potatoes, etc....)

crab cakes (serve plain or in crab cake sandwiches later)

brown a bunch of ground beef, grill some chicken breasts....you can throw those into storebought whatever later

creamy chicken and rice casserole

Stuffed peppers

What kind of HEALTHY recipes can I make with whole wheat Pita bread and Tortillas?

Q. I love vegetables and I need some healthy recipes for whole wheat pita bread and whole wheat tortillas... what can i make with them? Thanks.

A. I like to fill pita with hard salami and parsley (you could substitute leaner meat, though). Parsley is a great sandwich green and is friggin' loaded with vitamins and minerals.

Another favorite of mine is to make enchiladas with home-made red sauce. (Use lean meat like chicken breast and use a low-fat cheese. Authentic Mexican food doesn't have as much cheese as Americanized Mexican food anyhow.)

Red sauce:
Heat a few Tbsp. of oil in a 2qt. pot and add an equal amount of flour. Heat and stir until the combo (roux) bubbles for a minute or so.
Add ~1/2 cup of paprika (sounds weird, but bear with me...) and a little cayenne or other spicy ground red pepper to taste and continue to stir. You may need to add a little more oil.
Once this is mixed thoroughly and heated (you want the paprika to toast a bit) add ~ 1 1/2 c. water and stir with heat until the sauce thickens. (If sauce is too thick, add more water. Too thin, add a little corn starch/water slurry. You want it to be kinda like pizza sauce consistency.)
Salt to taste.
Fill tortugas with chicken, cheese, onions, olives, cilantro, whatever the hell you want. Have fun with it!
Put ~a third of the sauce in the pan, layer the enchiladas on top, then spread the rest of the sauce on them. Top with a little more cheese.
Bake @ 375F for about 40 min (until sauce is bubbling and cheese browns a little).

I love this recipe and always make it with whole wheat tortugas (good source of fiber) and this red sauce (TONS of vitamin A and other antioxidants).

I never use a recipe, so your results may vary. But it's cheap and pretty easy, so a few practice batches won't be too hard.
(Everyone tells me that they're WAY better than anything from any Mexican restaurant they've had!)

Is getting a chicken sandwich from these places a bad idea?
Q. My goal is to slim down. Possibly to get a flat stomach or a 6-pack. I'm trying to eat healthy now, so instead of my usual burger & other garbage like that, I eat chicken sandwiches mainly at fast food restaurants like Checker's/McDonald's. Would this still be a bad thing if I was trying to get a flat stomach/6-pack? Same question about Chinese food.

A. If the chicken is grilled and on a whole grain bun and has no mayo or ketchup. The only healthy fast food choices Ive found are grilled tilapia from Captain D's and grilled chicken and green beans from kfc. Even then you should throw out the breadstick that comes with the tilapia from capn d's.

Don't let salads fool you, the dressings crutons and cheeses they come with are loaded with greese in most cases. You're better off learning some healthy recipes and cooking at home, the healthy home cooked stuff can taste better anyway if you just know some recipes. You can make a healthy pizza with a whole grain crust, natural pizza sauce, low fat and fat free cheeses, and turkey pepperoni.

I also shred it and simmer it with salsa and use it for tacos, burritos, or nachos.

My husband shreds it and then sautes some onions until tender, adds bbq sauce and the chicken. He simmers it until everythig is hot and then makes a sandwich with it.

Wash and dry several large leaves of the Romain lettuce.
Lay the wrap out and spread a medium thick layer of Caesar dressing across them.
Add a couple leaves of lettuce on top of that and heap on some cubed chicken and croutons.

What are some healthy, easy meals to make for myself?
Q. So I've been trying to work out and get a little bit more health oriented. But, when I run or do anything my stomach tells me that what I've chosen to eat agrees with it. In other words, microwave dinners and fast food aren't helping me any.

So, I was wondering if anyone knew some easy, preferably cheap, healthy foods that I could make. Like, for example, peanut butter and honey sandwiches are delicious and healthy(ish), but that's about as far as I can think of anything I've eaten that's close to healthy lately.
Thanks!

A. PB&J may be delicious. But it's no where near "healthy-ish".. it' contains carbohydrates, fat and sugar.. so.. not good! only gonna make you gain weight!!

Eat lean meat (chicken, turkey, some kinds of fish). Avoid dark/red meats as these tend to contain the most fat.

Idk if you're trying to lose weight or just maintain it?

If you want to lose weight: simply cut down on carbohydrates.. so Pasta, Bread, Rice, Potatoes.. and this will do you wonders!

Buy some skinless chicken breasts and season with basic dried herbs (found at every supermarket) and bake or cook in frying pan. You can buy other cuts of chicken, but I suggest chicken breasts, as although thighs are cheaper.. they contain lots of fat.

Eat wholegrain bread instead of white bread. White bread is just full of refined sugar. They say that if you can squish a piece of bread up into a ball, and if it stays a ball, then it's probably not healthy.

Change milk to 2% or 1%

I'm not sure how often you use flour.. but change to wholegrain flour from the normal white stuff

In terms of meals...

Get into the habit of grilling, poaching, steaming or baking foods.

Try steaming or stir frying your vegetables to retain nutrients.

Use oil sprays or olive oil to cook with.
Drain off any excess fat. Fat will rise to the top of dishes and can be removed.

Use lower fat / lower calorie alternatives for recipes.

Eggs are awesome. The whites are the best for you. I suggest cooking a basic 2-egg omelette.. and throw in as many veggies as you like.

Stir-fry is another option. Cook up meat of your choice, throw in loads of frozen vegetables, some premade stir-fry sauce (make sure you buy one with low sugar/salt content) and you can either serve it by itself, with rice, or noodles

3 Healthy Breakfast Ideas

2 slices of whole-wheat toast with 1 tablespoon of peanut butter or apple butter (apple puree that tastes great but does not contain any actual butter and has very little fat) and 1 medium apple.

1 small whole-wheat bagel with 1 tablespoon of light cream cheese and 1 tablespoon of light strawberry jam.

What to avoid:
Buttered toast
Muffins
Danishes
Donuts

3 Healthy Lunch Ideas:

Maine crab rolls: 6 ounces of cooked jumbo lump crab meat, 1 teaspoon of light mayonnaise, 1 teaspoon of sweet pickle relish, ½ scallion (thinly sliced), 1 pinch ground pepper, and 2 hot dog buns.

What to avoid:
Caesar salad (its dressing is packed with fat)
Breaded or battered chicken
French fries (as a side order)

3 Healthy Dinner Ideas:

4 ounces of baked or grilled seasoned chicken or 4 ounces of broiled filet of fish (sole, flounder, salmon, etc.), 1 small baked potato with 1 tablespoon of low-fat sour cream, ½ cup of steamed broccoli, and 1 teaspoon margarine.

Fajitas: 1 flour tortilla, 3 ounces of grilled chicken or steak, ½ cup grilled onions and green peppers, ¼ cup salsa and 1 tablespoon low-fat sour cream.

Pasta Primavera: ½ cup of cooked bow tie pasta, 1 cup of steamed broccoli, carrots, and zucchini, ¼ cup of marinara sauce, and 1 tablespoon of parmesan cheese.

What to avoid:
Creamy high-fat sauces
Huge portions
High-calorie, high-fat desserts

Breakfast

You've probably heard this a thousand times: Breakfast is the most important meal of the day. According to The National Weight Control Registry, breakfast is one of the key factors to long-term weight control. In fact, studies published in The American Journal of Clinical Nutrition show that people who skip breakfast tend to be heavier than those who eat a healthy morning meal.

Eating within the first hour after you wake up helps to maintain your blood sugar and hormone levels, which keeps your energy level high throughout the morning and ensures that you don't overeat at lunchtime. It also kick-starts your metabolism, which will actually burn more calories throughout the day.

However, choose wisely since lots of typical breakfast foods are comprised of simple carbohydrates, such as white bread, many breakfast cereals (particularly brands for kids) and regular bagels. Because they are very easily digested, simple carbs send your blood sugar shooting up. When it comes back down, you'll feel ravenous. What are some quick and easy whole wheat sandwich recipes?

Q. I'm trying to lose weight and I recently found out that whole wheat is better then the normal tasty bread for you.

What are some ways I can make whole wheat bread taste better? What kind of recipes do you got?

A. Whole wheat is great and actually adds flavor too!! Use it for whatever sandwiches you enjoy!

If you like peanut butter and jelly (and really who doesn't?) you can make it so much healthier. You can actually make it into a complete healthy meal, rather than a high processed sugar bomb with no nutritive value. Try a natural peanut butter (less sugar, no preservatives), whole wheat bread, and a sugar free all fruit spread (like Polaner's). It will offer you a balanced meal of proteins, fats, and carbs. Not to mention high fiber, low or natural sugars, and nutrient dense calories. This means you get a full belly and steady energy for hours.

A bit more of a grown up taste but not bad by any means!

What is a good diet for someone trying to stay healthy?
Q. I want to go on a diet to be healthy, but I don't want it to have to be too hard. I work out a lot, and am very fit, but I feel that I am not making the healthiest choices when it comes to eating. What should I do when it comes to disciplining my food choices?

A. Thats great that your active and want to eat healthy :)
Go for natural, organic foods. Eat smaller portions more often rather than big portions less often. Avoid things like soda, diet soda or any diet drinks, artificial colors or sweeteners, too much sugar, overly processed foods. Remember to drink plenty of water. Green tea is great to =) As well as water with lemon which is cleansing, good for your skin, digestive system.

You can also try out healthier alternatives with food.
Examples:

- Replace fast food french fries with homemade sweet potato or regular fries (made with a touch of olive oil, salt)

- For chips, you could try natural sweet potato chips, pita chips, fat free popcorn, pop chips or a natural potato chip brand like Kettle. You can also make your own chips by thinly slicing potatoes or sweet potatoes, glazing with olive oil, sprinkling with salt (pepper, basil if you'd like - cinnamon goes well with sweet potatoes) & baking them.

- Replace candy with things like frozen grapes or banana slices, dried mango strips, dried blueberries/cranberries/cherries/papaya, raisins, etc.

- Try a veggie burger on a whole wheat bun, topped with some things you like.

- If you want soda, try cold sparkling water with lemon or mixed with 100 % organic fruit juice instead

- Replace white pasta with whole grain in pasta dishes + add veggies (for example adding baby spinach to pasta, grilled vegetables to lasagna, broccoli/grated carrot/spinach/kale to pasta salad, etc.

- For a creamy pasta sauce try tomato sauce with goat cheese mixed in, for a healthier dish

- Enjoy pizza, try it on thin multigrain crust topped with fresh veggies.

- For healthier treat options try things like: frozen yogurt, vanilla greek yogurt with berries & grated dark chocolate, whole grain baked goods, etc. Desserts are fine in moderation :)

Filling, quick breakfast recipes besides the same old thing?

Q. I'm a college student (well, on summer break, but still). My mornings are usually pretty busy, and I generally don't have time to make a big breakfast (ie: eggs, bacon, pancakes). Besides, I get tired of eating the same breakfast foods every morning. Don't get me wrong...I love eggs and bacon. It's just a pain to make all that on a school morning, and I usually tend to get hungry not long after. So, I usually end up running through McDonalds drive-thru. I'm unbelievably sick of that, as well.

So, what I'm wondering is if anyone has any relatively healthy, quick and filling recipes for breakfast besides the same-ole-same-ole. No oatmeal or scrambled-egg sandwiches, please. Gimme some p'zaz to start the day off (and make it snappy, plz, mmmk, thks) *grin*

A. Since you want something quick different from the norm, I'm assuming you don't feel like making something the night before.

As far as something filling, you need specialized protiens. THe stuff most people think of as a normal breakfast is mostly starches. They are mostly sugar and tend to burn up quickly, which means you burn out. Honestly, when I was having this problem, I just bought some of the Slim Fast Optima shakes, and one would at least hold me until lunch.

If you want an easy recipe, here's the best I can offer, though it is a bit plain.

Wheat Bread, Lettuce, Tomato, sausage, and cheese.

Just toast the bread (You can spread mayo if you want.)
One leaf of lettuce, one tomato slice.
Use ground sausage, (usually comes in a tube of some sort)
Sqeeze out the desired amount of sausage and press into a thin patty. (The thinner it is the quicker it cooks.)
Cook the patty, lay a slice of your favorite cheese on top of the sausage to melt a little.
Place on bread.

It's a great sandwich and you can change out the meat as you'd like.

You could use ham slices, or make tuna salad with apple chunks instead of relish.
You could also trade up the bread for a bagel once in a while. I've tried the sausage and cheese on a blueberry bagel once, and it was surprisingly good.

It's kind of basic, but if you keep sliced tomatoes in a container and already have a head of lettuce, there is almost no work involved in making it. Plus it's surprisingly filling with a glass of milk or orange juice.

It should stick with you for a little longer than a bowl of cereal or some other sugar based item.

Examples of good healthy meals to eat throughout the day?
Q. I need to start eating healthy but its hard for me to formulate three healthy meals to have throughout the day. Please include everything the body needs in a day in your meals. Thanks this is a huge help!

Take into concideration: I don't eat any meat besides chicken, and some salami/pepperoni. If I had to, I'd eat a burger and thats about it.

A. Breakfast- 1 Poached egg on a pice of multigrain toast and a banana

Snack- Yogurt and a carrot

Lunch- Chicken sandwich, apple and a muesli bar

Snack- 2 rice cakes with a little peanutbutter on them

Dinner- Baked chicken breast, 1 cup of brown rice, and any vegetables you like.

Dessert- Frozen yogurt or make a fruit smoothie.

recipe:
6 strawberries
5 ice cubes
a little orange juice and blencd until smooth

I want to become a vegetarian, need some good recipes to convince my husband meals are fine without meat!?
Q. My entire family loves meat, but after seeing a video about KFC's slaughter houses I don't think I can ever buy meat again. I knew they where not killed with kindness but I had no idea how bad the animals where treated. I need some really good recipes because my husband is a "meat and potatoes" kind of guy and I need to convince him vegetarian meals are just as good! I am also wondering if cutting out the meat will cut down our grocery bill? We are on a tight budget and if he see's less money going towards the store I think he would be more open minded about the change.

A. Learn to cook without meat and make it seem it seem like you did. If you don't have a BBQ, buy one. People associate that smoky flavor with charred flesh, but its really all about the charcoal or wood chips you use. It WILL be cheaper without a doubt if you use bulk TVP and homemade seitan or even grilled extra firm tofu as your main meat replacements instead of pre-made frozen stuff at the store.

I'm vegan and these are some of my favorite things to eat:

Breakfast: bananas, cream of wheat with brown sugar and soy butter, cereal, pancakes or french toast with real maple syrup, vegan "sausage" patties, smoothies.

Snack: BRUSSEL SPROUTS =) no joke

Lunch: vegan "sausage" sandwiches, sandwiches with vegan deli slices(Tofurkey is the only one that's kinda funky), fruit, dinner leftovers, couscous salad, vegan sushi, potato or pasta salad.

Dinner: sloppy joes, "sausage" and gravy with homemade biscuits, Spaghetti and Trader Joe's "meatballs" or TVP, lasagna, Thai pad see ew, pad khi mao(drunkard's noodles), pad prig king, tofu+eggplant with basil sauce, yellow thai curry with tofu or vegan chikn and veggies and jasmine rice, Indian dal with homemade roti or dosai, channa masala, aloo gobi, vegetable or minestrone soup, pizza, STEAMED "PORK" BUNS with potstickers or spring rolls, sweet&sour/orange/lemon chikn, vegan pho or wonton soup, baked tofu, BBQ homemade seitan (tastes like BBQ'd ribs), kabobs

If you want to become a lacto-ovo vegetarian, the transition should be quite simple. Almost all meats have widely available commercial replacements. All that you have to do is replace any flesh in your diet (beef, pork, poultry, seafood) with meat analogs or just leave it out altogether.

You should keep in mind that a journey such as this can be quite short but should just be the beginning of a longer one to a plant-based diet with no animal products. This is because of the reality of factory farming in which animals that are kept alive to produce milk, eggs, etc suffer much more and longer than animals that are raised to a certain weight and then slaughtered.http://www.veganoutreach.org/whyvegan/
http://meat.org
Some people use the word "vegan" in reference to this idea, but be aware that applying that label to yourself should always come with the inclusion of wise activism and advocacy.http://www.veganoutreach.org/advocacy/index.html
Two extremely important examples of this are that you should never speak to someone about vegetarianism/veganism without their consent and genuine interest or as a comment on what they are eating AND your dietary beliefs should never be used as an introduction or explanation of who you are as a person. Veg*ism should be something that comes up AFTER people get to know you and they offer you a situation that makes it confusing to withhold the information/discussion. Also, if you are presented something that you choose not to eat or you are
ordering food/eating together somewhere/picking the best place to eat.

When you you hold off on the subject until it's necessary and then act like it isn't a big deal at all, people are usually surprised and WAY more interested and curious than if you were to bring it up when someone's eating or just using it as a conversation starter.

A responsible vegan ALWAYS studies the subject of their own health and how to keep their body completely provided for in every sense. http://www.veganhealth.org/sh
To neglect their body is to define a plant-based diet as unhealthy and is the opposite of helping the animals.

Just to clear things up, the vegetarian/vegan diet is not composed of salads, vegetables, fruit and fake meat. Fruits and vegetables are always important but they DO NOT make up the largest portion of any healthy diet.
A balanced plant-based diet includes grains(breads, pasta, rice, cereal), legumes(soy, beans, peas, lentils), fruit and vegetables.

Being vegan can be an art, one whose challenge is to take things that involve the suffering of the innocent and change them into something free of cruelty.

A vegan woman can create an ENTIRELY NEW,HEALTHY HUMAN BEING INSIDE OF HER. Many of these children stay vegan and grow up to be perfectly healthy adults. So just keep yourself educated about what you eat and don't let anyone tell you that a veg diet is lacking anything essential.

Technically the term "vegetarian" does imply that you don't consume anything that comes from the body of an animal that requires killing it. Many ingredients such as gelatin and glycerin are found in many candies, Fig-Newtons, and many of other foods as well as rennet found in many cheeses.
http://www.happycow.net/health-animal-ingredients.html
The best thing to remember is to take your time so that for example: when you are comfortable not eating beef and pork you can then give up chicken when you are sure you can make the commitment permanently.
Depending on your age or reliance on parents or regional options, it may not be best to give yourself a label. The important thing is to do your best to make progress and be committed to your compassion towards animals. Never put your focus onto what you or other people use to describe yourself.

If you meet someone that talks down to people for eating meat, dairy, etc or to you because they think they are "more veg" than you, laugh in their face and tell them they are a disgrace to the entire philosophy. People like this only hurt the idea of veg*ism AND the animals. The point of all of this is to live compassionately and and as free from cruelty as you can, all the while maintaining your health and a positive attitude. People who don't maintain either, need not open their mouths and represent our beliefs.

If you actually choose to read all of this, I hope it helps. If not, feel free to e-mail me if you have questions.

What are some healthy, delicious sandwich recipes?

Q. Please put something healthy and unique, not just Peanut Butter and Jelly.

A. This is a great sandwich.........

Veggie and Cheese Bagel Sandwich...............

½ of a block Cream Cheese
2 whole (to 3) Green Onions
Tomatoes
Cucumbers
Avocado
Red Onion
1 whole Everything Bagel (or Any Kind Of Bagel)
Alfalfa Sprouts.....optional
1 Or 2 Slices Of Muenster Cheese
Slice Of Cheddar Cheese
Lettuce ...I use Romain..your choice...

Place ½ a block of cream cheese on a plate and mash it a bit with a fork. Next.. chop up 2-3 green onions and mix them with the cream cheese until thoroughly combined....
Slice all veggies (tomatoes, cucumbers, avocados, red onions) thinly.
Split the bagel. Then toast it. Then let it cool completely. Toasting it gives it the perfect crunch and flavor, and texture Toasting is optional of course....... Spread the cream cheese generously on both sides of the bagel.

Layer the vegetables. First lay the avocados right along the cream cheese to help them stay put. Next the alfalfa sprouts which are optional and then one slice of each kind of cheese. On the other half of the bagel arrange the cucumber slices in a circle. Sprinkle the cucumbers with a pinch of salt if you would like.
Next lay the onion slices on top of the cucumbers, then the tomatoes, followed by a slice of lettuce, and if you’re feeling naughty, another slice of Muenster cheese. LOL

Put the whole thing together and Voila A cool, crisp, and deliciously fabulous Veggie and Cheese Bagel Sandwich.

Enjoy..Its mouth watering...

What are some easy and cheap lunch ideas?

Q. I have a very limited budget and a very limited lunch break (sometimes I've got 10 minutes to make lunch and eat it between class and work). I have my own apartment with a full kitchen. Any ideas or recipes for balanced, filling lunches in under 5 minutes prep time?

On your marks, get set, GO!

A. <start> I get an hour for lunch. I use 10 minutes to walk home and 10 minutes to walk back, that leaves 40 minutes to come up with something. My default is a sandwich ... typically ham & cheese (I save time by buying cheese slices (Apple Gate Farms makes great cheese) and knowing exactly where everything is (often creating a picture in my mind where everything is before I even get in the door). To ensure that it is filling, I use whole grain bread. I allow myself a handful of chips (or other type of snack to go with it and (if I'm cruising on the sandwhich making) will allow myself an extra moment to open a jar of my sister-in-laws homemade bread & butter pickles. Then I pour a soda into a glass and the whole lunch goes to my desk where I keep my laptop. I eat lunch and multi-task and am usually done inside the 40 minutes. For a treat, I allow myself a Klondike Bar or some cookies (better to eat treats during the day rather than late at night, or even after dinner). The other option is leftovers. Nothing is faster to prepare than unwrapping last night's leftovers and eating them. If you really want to ensure you're having a healthy lunch, you might be more mindful of what you're making for dinner. Lastly, sometimes I make scrambeled eggs and toast for lunch. Get the whole grain bread in the toaster after you put a frying pan over medium heat. Whisk the eggs, oil the pan and scramble the eggs. The eggs and the toast will likely be done at the same time. To make the eggs extra good for you, top them with salsa. I hope these ideas help. Enjoy! <end>

How to lose 25 pounds in 2 and a half months?
Q. I'm a 17 year old female that weighs 175 pounds. I'm 6 feet tall and moderately active. I'm training for the NROTC and I want to look and feel fantastic. I'm a vegetarian that is looking for healthy recipes that are fast. I'm pretty busy especially in the morning so I'd appreciate ideas for breakfast, I usually don't eat breakfast. I just got a membership to a nearby gym so fitness ideas would be great also! Thanks so much!

A. You're on the right track with the exercise, just keep on it!
As for food, eat only whole foods, and no fast food, junk food, or sweets.
Breakfast: Really is the most important meal of the day. It jump starts your metabolism and keeps you from craving and eating a ton later.

Eat oatmeal or multigrain cheerios and some fruit.

Snacks: Also important. Eating 5 times a day, (3 meals and 2 snacks) increases your metabolism (you lose weight faster).

Eat an apple or some carrots.

Lunch: Important to eat, gives you energy, etc. You get the picture.

-Sandwich (turkey, with lettuce and mustard or something, on whole wheat bread) Try to avoid mayonaise. It's quite fattening. Eat some fruits and veggies with it.
or... -Healthy soups. You can find healthy, low calorie soups easily by scanning the soup aisle. Most will be labeled: "Lean..., healthy..., low calorie..., low carb..., etc.) Of course, eat this with fruits and veggies.

Snack: Apples or carrots. Or other fruits or veggies.

Dinner: There are many healthy dinners out there, just a click away. In fact, you can easily find a diet plan on the internet. These are just examples.

Good luck! :)

What is your best tasting lowfat/low-calorie healthy recipe?

Q. I am looking for healthy dishes. Soups, sandwiches, dinner dishes that I can make... But I want something that you have tried that tastes really good. I am open to any kind of food. Thanks!!!

A. Put a pork rub on Chicken breast marinated in BBQ sauce for 30 min or more. Then place on grill. Cook on medium for 30-45 min (depending on size of breast)

Cut broccolie florets and spray with Pam, sprinkle with salt and garlic. Skewer them and place on grill when chicken is about 2/3 done. Broccolie should be juicy and flavorful (not scorched) when taken off grill.

What foods/recipes are good for pregnant woman?
Q. This is my 2nd pregnancy. Last time around I had a rough time at the end of the pregnancy. So I am trying to eat healthier. I am so used to eating mcdonalds though( I work there, so its free) that I can't really remember how to cook and prepare meals. I don't want this kid to be unhealthy so I would like him to get as much healthy food as I can get.
I don't care much for onions & mushrooms.
Anything is appreciated(:

A. There is no special diet and recipes for a pregnancy. You should eat a healthy diet that gives all the nutrients to help your baby develop and grow.

Remember that the food you eat is the main source of energy for your baby growing inside. A pregnant women should know that she is not only responsible for herself, but also for the unborn child inside her. The child's physical and mental development after birth will have a influence of anything seen, thoughts and the food eaten by the pregnant woman.

1.There is no special diet for a pregnant women, but eating a healthy balanced diet that gives all the nutrients for your baby to develop and grow is recommended.

2.For the first 3 months, the diet of a pregnant woman should include food rich in iron, folic acid and foods high in calcium. You may take iron and folic acid tablets if you are pregnant or lactating.

3.Folic Acid & Birth Defects
Women should get enough folic acid from their diet before and during the pregnancy to prevent major birth defects involving baby's brain or spine, according to Canadian researcher Louise Pilote of McGill University, Montreal as reported in the British Medical Journal, May 2009.
A cup of Brussels sprouts supplies 93.6 mg of folic acid. Brussels sprouts recipe

4.Fortifying flour products with folic acid may cut the number of babies born with congenital heart disease, the most common of all birth defects.

5.In the next 3 month (i.e.3 to 6 month pregnancy), the woman needs extra protein and calcium. Look for foods with high protein.

6.Pregnancy & Weight Gain
Most women gain between 10-15 kgs, but too much weight gain should be avoided. However, the weight gain during pregnancy will vary according to your pre-pregnancy weight. According to the experts, an overweight woman is advised to gain only 7 kg (15 pounds) and an underweight woman to gain up to 18 kg (40 pounds).
7.Do Not Eat For Two
Many pregnant women wrongly think that they should eat for two. Note that you need only 200-300 extra calories daily in pregnancy, i.e. a cup of reduced fat milk or yogurt and a medium orange. This is because your body actually absorbs more nutrients from food you eat during pregnancy.
Researcher Alison Stuebeworking at Brigham and Women's Hospital in Boston found that pregnant women should avoid eating for two since too much weight gain is linked with complications at birth. Pregnant women who eat fried foods and dairy products and food for two are more likely to gain as much as 35 pounds. Women with vegetarian diets and eating more monounsaturated fat found in olive oil and nuts in early pregnancy are half as likely to gain an unhealthy amount of weight.

If you MUST eat at McDonald's, make healthier choices. Salads, fruits, and sandwich wraps, as opposed to a big Mac and fries is in your best interest.
