1 ounce is how many deli chicken slices?
does anybody have a healthy sandwich recipe using deli chicken slices?

im stuck for ideas for lunch..

Answer
The amount of chicken you get in one ounce will vary with the thickness of the slice. If you don't have a scale then when you get your deli meat make sure you order only 3/4 of a pound (12 ounces). This will give you a better idea of how to measure an ounce - 12 one ounce servings, 6 two ounce servings or 4 three ounce servings.
When you make a sandwich use 100% whole wheat bread (more fiber, will fill you up more, easy to metabolize, etc.). Toast the bread. Skip the mayo and use mustard. Use low sodium turkey or chicken and low fat cheese. Tomato slices, lettuce or arugula.
I like to use red pepper hummus and don't use cheese or mustard (very moist and creamy). Lots of protein, low fat.

Healthy cooking?

Rhea

I'm looking for some really simple, fast, healthy recipes that I can pack and take to work. Sandwiches and wraps are great, but I'd also like somethings I can take left-over-style. I'd like to stick as vegetarian as possible, and sugar-free.

Please know that I am new to the kitchen, so nothing too scary :)

Thanks!

Answer
Tasty, High fiber, black beans and brown rice

can of S&W Caribbean Black beans (has Red Bell Pepper, Anaheim Chili Peppers,Diced Onion & Lime, Juice in Caribbean Sauce)
can of mexican stewed tomatoes (has green pepper and onion)
chili paste (tablespoon of Huy Fong Sambal Oelek, Chili Paste)
Uncle Ben's Brown Rice (Microwave in bag)

Drain juice from cans and add 1-2 tablespoons cornstarch, mix

Cook beans, tomatoes till bubbling. If you would like it thicker and more sauce, add cornstarch mixture, stir till the sauce comes out clear.

Meanwhile, microwave brown rice for 90 seconds. Place beans mixture on top or mix together. This makes 2 servings.
-------

Black Bean Salad
2 Large Cans Black Beans
1 Can White Corn
4 Plum Tomatoes
1 Medium Red Onion
1/2 Green Pepper
Handful Fresh Cilantro Or 1/2 Tablespoon Dried Cilantro
1/2 Tablespoon Salt
1/4 Cup Balsamic Vinegar
1 Tablespoon Olive Oil
2 Chipotle Peppers
1/2 Tablespoon Minced Garlic

Drain and rinse black beans.

Drain white corn.

Dice red onion, green pepper, chipotle peppers, plum tomatoes.

Chop cilantro.

Mix together. Add salt, olive oil, garlic and vinegar.

Chill, covered at least 4 hours.

Serves: 8
Preparation time: 1 hour
------
Homemade Black Bean Veggie Burgers

1 (16 ounce) can black beans, drained and rinsed
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Suggestions:
How to keep them from falling apart, though.

First, you must rinse the black beans and dry them off before mashing them. Second, you must strain the onion, garlic and pepper mixture through a fine strainer to remove any excess water. Also, I freeze mine and grill them frozen.

Blended everything in the food processor, beginning with onions, peppers, and garlic, then oats, then eggs and spices, beans last. I chilled the mixture, then rolled (more like poured -- think thick muffin batter) onto waxed paper. I froze the burgers. To grill, oiled some foil that was folded over burger.

As a substitute, use frozen pepper stir fry (red, yellow, green pepper slices and onion slices.

You can find them in the freezer section at the grocery) instead of individual bell pepper and onion.

Served them with a "dipping sauce" of 1/2 salsa mixed with 1/2 sour cream. delicious.

1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.

2. In a medium bowl, mash black beans with a fork until thick and pasty.

3. In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

4. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.

5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties. (Note: Made them smaller (ended up with 6 and served them with a "dipping sauce" of 1/2 salsa mixed with 1/2 sour cream. delicious.)

6. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on cookie sheet, and bake about 10 minutes on each side.

Note: put a little oil on your hands when shaping the patties to prevent sticking.

3 T black pepper
2 T garlic powder
1 t onion powder
1 t nutmeg
2 T parsley flakes (crunched)
4 T red pepper (ground) (cayenne)
2 T chili powder

The amount of chicken you get in one ounce will vary with the thickness of the slice. If you don't have a scale then when you get your deli meat make sure you order only 3/4 of a pound (12 ounces). Answer
wraps are a good way to go. You can put anything in them, chicken breast, chicken salad, meats, etc. The trick is to take your items separately, not wrap it at home. Tomatoes and lettuce may wilt in the wrap so wrap them in plastic wrap and put your wrap together at school.

healthy, simple recipes a teen can take to school?
Q. I'm trying to get together a shopping list of things for healthy stuff to make and take to school (i'm in highschool) for lunch. I really like cooking, and prefer taking things i cooked over sandwichs and things like that. Does anyone have some recipes they could share(preferably something easy that doesn't need to be heated)?

*edit*
i'd prefer not taking wraps, I used to take them so often I don't like them as much anymore.

A. wraps are a good way to go. You can put anything in them, chicken breast, chicken salad, meats, etc. The trick is to take your items separately, not wrap it at home. Tomatoes and lettuce may wilt in the wrap so wrap them in plastic wrap and put your wrap together at school.

can someone give me a healthy recipe that is made with artichoke hearts?
Q. im looking for a good healthy recipe that I can use artichokes with. I love them but can't eat them by themselves. Thank you!

A. Recipes for Health
Panini With Artichoke Hearts, Spinach and Red Peppers. Here’s a great way to pack a lot of nutrients into a sandwich. If you use frozen artichoke hearts, the panini are quickly assembled.

6 ounces (1 bag) baby spinach
3 tablespoons olive oil
2 garlic cloves, minced
12 ounces frozen or fresh cooked artichoke hearts, sliced
1 teaspoon fresh thyme leaves
Salt, preferably kosher salt, and freshly ground pepper
1 large or 2 smaller roasted sweet red peppers, sliced
1/4 pound fontina or Gruyère, thinly sliced or grated
8 slices whole grain country bread

1. Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 10 to 20 seconds. Transfer to the ice water to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely.

2. Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat, and add the garlic. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the artichoke hearts. Stir for a few minutes, until the artichoke hearts are beginning to color, and add the thyme leaves and the spinach. Toss together and season to taste with salt and pepper. Remove from the heat.

3. Preheat a panini grill. Top four of the bread slices with the artichoke hearts and spinach. Add strips of roasted pepper, then cheese. Top with the remaining bread and press together. Brush the outside of the bread (top and bottom slices) with olive oil. Place in the panini maker and grill for four to five minutes, until the cheese has melted and the bread is toasty. Slice in half and serve hot.

Yield: Serves four
Advance preparation: You can prepare the artichoke filling through step 2 several hours or even a day ahead of assembling the panini.

Recipes for Health
Artichoke Heart Frittata. You can make this easy Italian frittata with the fresh, tiny artichokes that arrive with spring or, more quickly, with frozen artichoke hearts.
1 pound baby artichokes, trimmed, or one 12-ounce package frozen artichoke hearts
8 eggs
2 tablespoons low-fat milk
Salt, preferably kosher salt, and freshly ground pepper
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
3 tablespoons minced Italian parsley, dill, fennel fronds or wild fennel
1 tablespoon freshly grated Parmesan or pecorino

1. If using fresh artichokes, steam until tender or boil gently in a pot of generously salted water, 10 to 15 minutes. Drain, refresh with cold water and quarter the artichokes. Thaw frozen artichokes as directed, and drain off any liquid in the bowl.

2. Beat the eggs in a medium bowl. Whisk in the milk, about 1/2 teaspoon salt and freshly ground pepper to taste.

3. Heat the oil over medium-high heat in a 10-inch, heavy nonstick skillet, and add the artichokes. Cook, stirring often, until golden brown, about five to eight minutes. Add the garlic, and cook for another 30 seconds to a minute until fragrant. Stir in the herbs, and season with salt and pepper. Pour in the egg mixture. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with a spatula in your other hand, so that the eggs run underneath during the few minutes of cooking.

4. Turn the heat down to low, cover (use a pizza pan if you don’t have a lid that will fit your skillet) and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid and loosen the bottom of the omelet with a wooden spatula, tilting the pan so that the bottom doesn’t burn. Instead it should turn a deep golden brown. Meanwhile, heat the broiler.

5. Finish the omelet under the broiler for one to two minutes, watching very carefully to make sure the top doesn’t burn. (It should brown slightly, and it will puff under the broiler.) Remove from the heat and immediately sprinkle on the Parmesan or pecorino. Serve hot, warm or room temperature.

Yield: Serves four to six
Advance preparation: You can prepare the artichokes a day ahead. The frittata is good served at room temperature, so you can make it hours before serving. It also will keep well in the refrigerator overnight.

What are some good healthy recipes for making ahead of time and freezing?
Q. My husband and I are students about to start another busy semester. I wanted to cook this weekend and freeze for those moments in the semester when I don't want to spend more than 15 min preparing a meal.

Any suggestions besides spaghetti sauce? I really appreciate it:)

A. There's a book by Cooking Light called "5 ingredients, 15 min or less" that has good recipes in it that you could use during the week when you don't want to pull from the freezer.

But, for making ahead, try making the sauce part of beef stroganoff (then you'd just have to reheat the sauce and cook the noodles when you want dinner later)

lasagna is involved, but it makes a lot and you can freeze it in two person servings. Serve it with a fresh bagged salad and storebought garlic bread.

Chili, again freeze it in two person serving sizes.

Soup

Meatloaf

enchiladas

taco meat (then you can use it to make nachos, tacos, mexican-stuffed baked potatoes, etc....)

crab cakes (serve plain or in crab cake sandwiches later)

brown a bunch of ground beef, grill some chicken breasts....you can throw those into storebought whatever later

creamy chicken and rice casserole

Stuffed peppers
