I need some good- healthy eggplant recipes...?

I don't have a lot of cooking experience, but I am trying to experiment with healthier cuisines...

I cut mine into cubes, coat with olive oil salt and pepper, put in a baking pan with 3 whole cloves of garlic, cover with non fat plain yogurt and season with an Indian spice blend. (you can find them in ethnic food aisles.) If you are not into indian seasoning, sprinkle garlic powder and chili powder.Put in a 400 degree broiler. (Bottom part of your oven) for 45 minutes.

You can also slice into patties, cover with marinara (I like organic marinara) and fresh mozzerlla cheese. Bake at 350 degrees for an hour or so. (until tender) you can serve it up on pasta or on some toasted bread as a sandwich.

Hey, does anyone know any good vegatarian recipes? Relatively easy to make, and something healthy. Anything with proteins and nutrients that vegatarians need. Also, do you know any foods that are good for vegatarians, like beans, eggs, and lentils? By the way, i'm 15, if that gives you a better idea of what i should eat.

I just made an awesome sandwich today which is super healthy AND delicious! It's inspired from a sandwich I ate at a really good Italian restaurant.

Grilled Portabella Mushroom Sandwich:

1 portabella mushroom cap, rinsed well and patted dry
1 jarred roasted red bell pepper
2 slices fresh mozzarella cheese
3 slices plum tomato (or any other ripe, red, juicy tomato)
1 tsp basil pesto
1 multi-grain baguette or roll

Marinate portabella mushroom in some olive oil, balsamic vinegar, salt, and black pepper for 10-15 minutes. Then grill the portabella mushroom for 5 minutes on each side or until tender. Place in sandwich bread and top with roasted bell peppers and sliced mozzarella. Put in toaster oven open faced until cheese melts. Then add sliced tomato, close, and enjoy! Yummy.

If you don't like mushrooms, you can substitute them for eggplants.

For eggs, I would recommend a veggie omelet. My favorite is a Spinach omelet. I just blanch some (about 1 1/2 cups raw) spinach, drain, and squeeze dry. Then crack two eggs in a bowl and add the spinach. You can also add some feta cheese as well if you like. Then heat up some olive oil in a pan (about 1-2 tbsp, just so the omelet doesn't stick) and add your egg mixture. Cook for about 3 minutes or until you can easily flip the omelet. Cook for an additional 30 seconds to 1 minute or until omelet is not runny. Serve with toasted whole-grain bread and you have a healthy delicious meal!

You can also make an easy vegetable sandwich with hummus. Just get some whole-grain pita bread, spread your favorite hummus inside, add some crumbled feta cheese, some sliced olives, cucumber, and tomato, and some romaine lettuce and you're done. This sandwich is the best to make when your in a hurry and don't have time to cook up a lunch.

For beans, you can buy a can of black beans and make a tex-mex (Mexican-inspired) salad. Just mix a 1/2 cup rinsed and drained canned black beans with chopped romaine lettuce, shredded cheddar cheese, chopped avocado, tomatoes, cucumber, red bell pepper, cooked corn kernels, and drizzle with lime-cilantro salad dressing (look for it in your grocery store or use this recipe: http://www.recipesource.com/side-dishes/dressings/00/rec0099.html). Toss to combine. Add some corn tortilla chips to it if you don't mind the extra fat and calories. =)

hello im 14 and i really want to start eating healthier to lose some weight. i don't have any food allergies. i like some veggies like corn peas and carrots, but there are others i don't like - onions, radishes, spinach. i love all fruits, i don't like beans or any kind of fish/seafood (except tuna for sandwiches), i do like chicken. i can be kind of a picky eater as u can see. i am looking for breakfast, lunch and dinner recipes. also lunch that i can pack for school. if u know any good recipes or websites, i'd really appreciate it. thanks!:)

Taco Chicken Bake-Weight Watchers



8 ounces skinless boneless chicken breast, cut into 12 pieces

1/2 cup onion, chopped

1/2 cup green bell pepper. chopped

1 3/4 cups chunky tomato sauce (15 ounce can)

1 1/2 teaspoons taco seasoning mix

1 teaspoon dried parsley

1/4 cup sliced ripe olives

1/2 cup whole kernel corn

1 1/2 cups hot cooked noodles, rinsed and drained

1/3 cup reduced fat Cheddar cheese, shredded

1/4 cup fat free sour cream



Preheat oven to 350 degrees F. Spray an 8-inch square baking dish with olive oil-flavored cooking spray.



In a large skillet sprayed with olive oil-flavored cooking spray, brown chicken pieces, onion, and green pepper, stirring occasionally. Stir in tomato sauce, taco seasoning, parsley flakes, and olives. Add corn and noodles. Mix well to combine. Pour mixture into prepared baking dish. Evenly sprinkle Cheddar cheese over top. Bake 20 to 25 minutes.



Place on a wire rack and let set 2 to 3 minutes. Cut into 4 pieces. Top each piece with 1 tablespoon sour cream.



Hint: 1 1/4 cups uncooked noodles usually cooks to about 1 1/2 cups.



Serves 4 - 5 WW points per serving.

Chicken Omelet



1 cup minced chicken

1/2 tablespoon cornstarch

5 eggs

1/4 cup cold water

1 teaspoon salt

1/8 teaspoon pepper

1 1/2 tablespoons corn oil



Directions

Beat the eggs without separating until very light.

Mix the meat with cornstarch.

Add the water and seasonings to the eggs and stir in the meat mixture.

Heat the corn oil in a medium-sized frying pan, pour in the mixture and cook gently, lifting about the edges until brown on the bottom.

Put in the oven for a moment to "set" the top.

Cut at right angles to the handle to form a hinge, fold over, slide onto a platter and serve garnished with parsley.

Healthy recipes for work?

I work in retail and often miss dinner because I'm working. I can't seem to think of meals that I can bring. We do have a microwave, but we don't have a refrigerator. I am also limited because I do not get a break, I have to eat between customers. Any ideas of what I can bring that is healthy and easy to eat, but doesn't require refrigeration?
It's only the law to have a scheduled lunch if you are over 8 hours. I am not over eight hours. I work 3-9:30.

Consider sandwiches and rolls.
If there is a place where you can keep food cool you could take a meal of leftovers from home or when you do cook a full meal make an extra portion and freeze.
During the day it may pay to keep them in a chilly bin. Thermos have a great range of insulated bags and boxes that will keep hot foods hot and cold foods cold.
There are numerous types of dried packet meals that just require boiling water.
From time to time you could make canned meals, just by opening a can of something like baked beans or a few cans that you can open to make your own meal. Canned sausages, canned peas and canned potatoes. (that would be too much for me using standard sized cans but you can get smaller cans of some foods)

edit.
Looking at your additional detail, have your cooked meal before work and just a lighter meal at dinner time, and as you only have to keep your meal for 3 hours, most foods will easily last that long.
Just remember that if you do have to serve a client to cover your foods

This is a great sandwich.........

Veggie and Cheese Bagel Sandwich...............

½ of a block Cream Cheese
2 whole (to 3) Green Onions
Tomatoes
Cucumbers
Avocado
Red Onion
1 whole Everything Bagel (or Any Kind Of Bagel)
Alfalfa Sprouts.....optional
1 Or 2 Slices Of Muenster Cheese
Slice Of Cheddar Cheese
Lettuce ...I use Romain..your choice...

Place ½ a block of cream cheese on a plate and mash it a bit with a fork. Next.. chop up 2-3 green onions and mix them with the cream cheese until thoroughly combined....
Slice all veggies (tomatoes, cucumbers, avocados, red onions) thinly.
Split the bagel. Then toast it. Then let it cool completely. Toasting it gives it the perfect crunch and flavor, and texture Toasting is optional of course....... Spread the cream cheese generously on both sides of the bagel.

Layer the vegetables. First lay the avocados right along the cream cheese to help them stay put. Next the alfalfa sprouts which are optional and then one slice of each kind of cheese. On the other half of the bagel arrange the cucumber slices in a circle. Sprinkle the cucumbers with a pinch of salt if you would like.
Next lay the onion slices on top of the cucumbers, then the tomatoes, followed by a slice of lettuce, and if youâre feeling naughty, another slice of Muenster cheese. LOL

Put the whole thing together and Voila A cool, crisp, and deliciously fabulous Veggie and Cheese Bagel Sandwich.

Choose whole wheat bread, because it's more nutritious than white bread, plus it keeps you feeling full for longer.

Add some salad (lettuce, sliced tomato and cucumber, for example) and then a sliced boiled egg, some smoked ham (or a non-meat alternative, something in slices) or some sliced low-fat cheese, then add some low-fat mayonnaise or salad dressing. Wrap the sandwich in foil to keep it really fresh. You can also take an apple or orange.

Make sure the salad makes up half the filling though, because that bulks out the sandwich and is almost calorie-free. If you want to make something you can scoop into the salad, you could finely chop some celery and onion, and stir it with reduced-fat salad dressing plus a can of tuna or some chopped boiled egg, and use that.

Hey guys, Im on a diet and i go to a school that has no cafeteria which means we have to bring our own food. I usually take to school a turkey sandwhich with mayo, tomatoe and lettuce and white bread and i know it has many calories. I would like to know an easy to make sandwich recipe with not many calories and that is easy to take every where. Thank you.

First off, sandwiches are a fine food to eat if you're on a diet. They incorporate several food groups and include good nutrition. Whole grain bread is better than white bread - it has more fiber and better nutrients. If you want to cut calories, make a large half sandwich using only one piece of bread, but adding more meat and veggies. Lowfat wraps are also a good way to get lots of protein and veggies in sandwich form without too much bread.

The sandwich you're eating is perfectly healthy. Mayo is an OK condiment if used moderately. It's made with eggs and vegetable oil, and the fat in it helps to keep you full (thus preventing you from overeating and extra snacking later). Don't use more than 2 tbs.

I'm not a big mayo eater, and have lots of things I like to put on sandwich bread instead:
Mustard (try different kinds - Dijon, whole grain, spicy)
Cranberry sauce (great with turkey!)
Hummus
Pesto
Avocado (also has fat and calories but is super healthy)
Oil, vinegar and herbs
Salad dressing

You could also think about salads. They're a great meal, and easy to make the night before.

I'd like to be able to bake healthy cookies (preferably chocolate chip) that doesn't make me break out/gain weight, etc. I'm a teen, if that helps.

Jumbo Breakfast Cookies --



INGREDIENTS
2 cups white sugar
1 cup peanut butter
1 cup butter or margarine
1/2 cup water
2 tablespoons vanilla extract
2 eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups rolled oats
1 1/2 cups chocolate chips
6 cups toasted oat cereal rings (Cheerios)


DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C).

In a very large bowl, mix together the sugar, peanut butter, butter, water, vanilla and eggs until smooth. Combine the flour, baking soda and salt; stir into the batter. Mix in the oats and chocolate chips, then carefully stir in the cereal. Drop 1/2 cupfuls of dough onto ungreased cookie sheets, spacing cookies about 4 inches apart. Flatten cookies to 1 inch thick.

Bake for 12 minutes in the preheated oven, until cookies are lightly browned at the edges. Let stand on the cookie sheets for 5 minutes before removing to wire racks to cool completely. Store at room temperature. I like to put each cookie into a sandwich bag which makes them easy to grab on the way out the door.

1 cup quick-cooking rolled oats
1/2 cup whole wheat flour
1/2 cup wheat and barley nugget cereal (e.g. Grapenuts TM)

1/4 cup applesauce
1/4 cup honey
3 tablespoons brown sugar
2 tablespoons vegetable oil
1/4 cup unsalted sunflower seeds
1/4 cup chopped walnuts
1 (7 ounce) bag chopped dried mixed fruit


DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Line a 9 inch square baking pan with aluminum foil. Spray the foil with cooking spray.

In a large bowl, stir together the oats, flour, cereal, and cinnamon. Add the egg, applesauce, honey, brown sugar, and oil. Mix well. Stir in the sunflower seeds, walnuts, and dried fruit. Spread mixture evenly in the prepared pan.

Bake 30 minutes, or until firm and lightly browned around the edges. Let cool. Use the foil to lift from the pan. Cut into bars or squares, and store in the refrigerator.

You are in a tight spot. I was once in your situation and I learned 2 things. The 1st is that you CAN eat healthy on a budget. 2nd is things DO get better.
Certain things like meat, dairy, and prepared food is usually more expensive. Use canned tuna, chicken, sardines, and salmon packed in water. Compare prices and labels. Cans that are in the middle shelves of the display are usually more expensive than the ones on top or boton shelves. But DO compare labels. Cheap doesn't always mean healthy. Compare the cost of fresh, canned, and frozen veggies. Eat beans, lentils, and peas, they are very cheap and very healthy. Don't be ashamed of using coupons and shopping when stores have big sales. Here are some ideas:
*tuna or salmon casserole
*chicken salad
*chicken tacos
*tuna or salmon croquettes
*pasta with tuna or sardines
*sardines in tomato sauce
*sardine sandwich
Here are some recipes. I make these all the time and just eye ball it so adjust ingredients to your taste.
***Tuna salad***
â¢1 can tuna
â¢1/4 of a small onion
â¢2 celery ribs
â¢1 cup mix of any other crunchy veggie that can be eaten raw like bell peppers, radishes, jicama, carrot, cucumber
â¢1/2 tablespoon fat free mayo
â¢1 tablespoon light vinaigrette
1. In a bowl mix mayo and vinaigrette until well combined.
2. Chop onion, celery, and veggies. Put in bowl. Mix with dressing.
3. Add tuna and toss.

***Pasta Primavera***
â¢1 small package
â¢1 cup frozen spinach
â¢1/2 cup frozen chopped veggie mix
â¢4 garlic cloves sliced
â¢1 jalapeño or red pepper flakes if you like spicy
â¢cheese if you have some extra cash
1. Cook pasta acording to directions. Save cooking water for veggies.
2. Cook veggies according to directions. Don't over cook, veggies should be crunch.
3. While pasta and veggies cook fry the garlic and peppers (if using) in olive oil.
4. Toss pasta, veggies, oil, and garlic 'chips'.
Add cheese if using.

***Lentil or Bean Soup***
â¢2 cups cooked lentils or beans
â¢1 cup chunky salsa
â¢4 or 5 slices bacon chopped
â¢1 can low sodium chicken broth
â¢fresh pico de gallo salsa
1. Fry bacon in large pot. Remove most of the fat.
2. Add chunky salsa and sautee briefly.
3. Add lentils or beans and broth. Bring to a boil, season with salt and pepper. Remove from heat.
4. Serve with a big spoonful of pico de gallo

***Chicken Pasta***
â¢1 can chicken
â¢1 can diced tomatoes
â¢1 package large pasta shells
â¢garlic, chopped
â¢onion, chopped
â¢Italian spices
â¢cheese
1. Cook pasta according to package
2. While pasta is cooking sautee onion and garlic.
3. Add tomatoes, spices and chicken.
4. Toss chicken with pasta and top with cheese

Try this negative calories sandwich:

Ingredients:

100 grams of cooked chicken fillet. Cut it so that it can be fitted into sandwiches.

Four slices of tomatoes. Cut the tomatoes vertically, each cut is around 0.5cm in thickness
1 teaspoon of freshly squeezed lemon juice.
4 tablespoons of low fat mayonnaise
2 slices of cucumber. Peel the cucumber and remove both end. Then slice it.
1 teaspoon of chopped celery
1 teaspoon of olive oil
3 tablespoons of plain low fat yogurt
Salt, pepper and tomato ketchup to taste

Instructions:

Sprinkle the cooked chicken fillet with salt and pepper. Then mix the yogurt, mayonnaise and lemon juice in a bowl. Dip each chicken pieces into the dressing mix before putting it on the bread. Then arrange the cucumber, tomatoes and celery on the bread neatly. Last, sprinkle it with the olive oil and the remaining of the dressing.

Is this a healthy Diet? ...?

I have been trying to lose weight pretty fast. I want to drop at least 20 or 25 pounds in the next five months. So far, I have lost about 7 pounds with the following diet, and I would like to know if it is healthy and how I can prevent from gaining back quickly:
Breakfast- medium sized bowl of all bran fiber cerial with non fat or skim milk.
Lunch- a plate of veggies, OR a couple of eggs
Dinner- small portions of whatever my mom is serving, but no bread. (I am sixteen, by the way)
Snacks- Plain non fat yogurt and plenty of almonds

I have only been doing this for a little over a week, and the results have been good so far. I feel great, and I exercise at least three or for times a week, but very very lightly (weight lifting, VERY short distant jogs, etc. I can't do too much because of asthma).
I drink quite a lot of water as well. (no soda, or pretty much anything else)
Is this diet OK? Do you think I will gain it back quickly?
I'm also a girl, so I don't think I have to worry about man boobs, but thanks for the concern! :D

Your diet doesn't have enough variety and honestly it sounds boring. Healthy doesn't mean tasteless. Do you seriously eat this everyday? Can you stick to this diet for life? I see you have drastically reduced your carbs you need carbs for energy. Fiber aid digestion and will keep you fuller longer. You will gain back if you don't stick to healthy eating for life. Make a diet and exercise plan you can honestly live with forever. Aim to eat 100 different foods a week, you need to be sure to get all your vitamins and nutrients. Healthy fats (avocado, olives and olive oil, plain nuts and seeds, flaxseed oil) don't cut out all fat boys actually do need some fat cut out too much and you will actually end up with man boobs it causes excess estrogen production just as if you eat too much fat, so moderation is key.

Divide your plate
1/2 fruit and veggies (make sure to eat a variety and try new ones when you have the chance)
1/4 of a lean protein or protein substitute if you are vegetarian. Don't just eat eggs all the time
1/4 fiber rich carbs (red or brown rice, bulgar, oatmeal or oatbran, quinoa etc.)


Your breakfast is good but try a little variety some other options
Oatmeal with honey and fresh fruit
Homemade fruit and veggie smoothies
1 egg, 1/2 cup bulgar or some wholegrain toast, baked beans, fresh fruit, you can have 2 slices of turkey bacon if you aren't vegetarian
1 natural peanut butter or almond butter sandwich, milk, 1 banana.
2-3 oz of fish (if vegetarian skip and add tofu to the miso), miso soup (excellent for weight loss), 1/2 cup brown or red rice, raw veggies or small side salad, green tea, fresh fruit
2 open-faced sandwiches on wasa crackers or a healthy bread, thin slices of cheese, loaded with veg, fresh fruit
Japanese omelet (I add grated daikon to mine and I use only 1 tsp of oil get a good nonstick pan so you need less oil) alternatively a plain egg prepared to your tastes, stir-fried sesame bok-choy, fresh fruit, 1/2 cup rice or bulgar, green tea
Muesli and kefir (it's like plain yoghurt

You should be getting at least 1800 calories b/c you are a growing boy so please don't reduce more than that. I am happy to hear no soda =) Treats are okay in moderation be realistic or when the holidays come around you will gorge. It takes about 3 bites to satisfy a sweet craving. So portion out snacks. I like baked chips for fries I bake them or make sweet potato fries. If you like cakes sub oil with applesauce and have a small slice, 1/2 cup ice cream or frozen yoghurt topped with fresh fruit. There should be some healthy dessert recipes on the site too. So you don't need to forever forego treats of course if you honestly don't care for junk food don't eat it but if you love it learn moderation.

Remember you will likely go out to eat again so look up your favorite restaurants (even fastfood joints b/c they are hard to avoid for life) and look up nutritional info so you can plan healthy meals ahead of time. Ask for a smaller plate, order side dishes or appetizers instead of main entrees, split the meal if a main entree, and you can in a restaurant at least specify more how you want food prepared. Be realistic and flexible.

Yoghurt and nuts are good snacks also try some plain seeds (sunflower and pumpkin seeds contain zinc which is crucial for boys), hummus with veg is a good snack too

Tea (like coffee or water) has ZERO calories.

Lipton is a good brand (as far as I care to know).

Tea can be a very powerful diuretic...the water loss due to dehydration is often misconstrued as âbody fatâ loss, because itâs still weight loss on a scale.
When you want to lose weight, your goal should not be to end up lighter with chapped lips, dry, itchy skin and constipation.
Body fat loss is 3,500 calories of exercising for each pound of fat reserves that you wish to lose, providing that you eat enough to cover your BMR and your growth, so your body does not adapt to lower caloric intake and lower your metabolism.

I eat diuretics with salty food as to not have to fight dehydration by having to drink too much water and also be bothered by having to pee a lot. Youâre not peeing more because you drink more but because of the effect of the diuretics and drinking more water just helps you not dehydrate.

This is why some recipes have ingredients that complete one another. Cabbage is a diuretic so you have to eat it with something very salty in order to not dehydrate, like the âcorned beef and cabbageâ recipe Iâll cook for St. Patrickâs Day or sauerkraut/sausage combination, cauliflower/ham casserole, adding ham/bacon to your lettuce, tomato, onion sandwich, crunchy celery in your tuna salad, salty vinaigrette with artichokes or asparagus. If you eat a fresh tomato like an apple, biting into it (a tasty organic one), it will taste much better with some salt, same with radishes, as your body knows that those are powerful diuretics.
If you eat/drink sodium separately from your diuretics (as you donât add salt to your tea!), try to do it before and not after.
I cannot drink tea without having something containing sodium beforehand (anything salty or things like V8, cheese, canned veggies like carrots, peas or green beans, tomato juice...).

You can add sugar to your tea or coffee, as long itâs not the zero calorie fake sugar (donât get me started on that...). A sugar cube is like 9 calories...sugar = energy, so you exercise instead of lacking motivation. Gosh! Now Iâm going to have to exercise one more minute to compensate for the sugar cube I ate!!

Your other question mentions that youâre a teenage girl...you need milk or at least some form of calcium (dairies, collard greens, turnip greens, sardines with bones, broccoli, beans...). I heard stories about teenage girls having 80 years old skeletons and getting osteoporosis (you fall, you break some porous weak bone) because they donât eat enough calcium. Eating tons of calcium while forming your skeleton while growing (up till you reach your 20s) is crucial for strong bone density.

Milk would make your skeleton strong (or at least not fragile) and sugar would give you energy to be active. You do not eat/drink food to burn calories. You eat/drink food (the kind with calories in it) to get enough energy to be active, exercise, gain muscle mass and become a mean fat burning machine with a high metabolism.

These days, instead of preparing delicacies for sophisticated palates in expensive eateries, Ann Cooper schleps to an austere industrial kitchen before sunrise each weekday morning. From 5 a.m. on, the pace is nonstop as she guides kitchen employees through the fine art of preparing healthy, kid-friendly recipes from her latest book, Lunch Lessons: Changing the Way We Feed Our Children (HarperCollins, 2006).

Cooperâs latest culinary claim to fame stems as much from what she refuses to cook as it does from what she insists on preparing: fresh, wholesome and â whenever possible â organic eats served daily to nearly 5,000 Berkeley, California public school students.

âIâm trying to change the food we feed kids and actively educate children and their parents,â says Cooper, one of the first 50 women certified as an executive chef by the American Culinary Federation.

Each weekday morning, Cooper spends the pre-dawn hours in the district kitchen playing a combination of drill sergeant and chef. A typical day might find her simultaneously presiding over an army-sized batch of homemade organic marinara sauce while ensuring that scores of chunky, bright green broccoli spears donât get overcooked. (Kids gobble them up like candy, she says, if they remain crunchy and not soggy.) As ingredients simmer, Cooperâs morning is on high boil. Her cell phone rarely leaves her ear. Has any of her staff called in sick? Have any trucks broken down? Will tomorrowâs ingredients arrive? Will deliveries make it to all 17 schools on time? When lunch is over, the pace continues with staff meetings and office work that often keeps her on the clock 12 hours a day.

So why does she do it?

âBecause weâre killing our kids with food,â Cooper tells LifeScript, citing recent statistics suggesting that todayâs seven-year-olds will be the first generation of children to live shorter lives than their parents.

âOf the children born in 2000, one in two African Americans and Hispanics and one in three Caucasians will have diabetes in their lifetime, with most of them getting the disease before they graduate from high school,â Cooper warns. She blames much of it on the food fed to children at school and the lack of nutrition education.

âWe could have forty to forty-five percent of all school-age children insulin-dependent. It couldnât be worse,â she says. âItâs all about the food we feed them. Weâre getting too fat. Weâre eating too much crap.â

Cooper says among her main goals in writing Lunch Lessons was to provide readers with an easy-to-digest primer on childhood nutrition and to bring nutrition education and healthy foods back into public schools. But without lunch ladies, who were a regular school presence before budget cuts, healthy cafeteria food is hard to come by. Today a typical school lunch entrée is pre-processed and mass-produced at off-campus facilities.

Cooper recalls her shock when she first witnessed some of the government-sanctioned fare that now passes for nutritious food. âIt made me cry,â she says of the meals she saw. Among them: cellophane-wrapped faux grilled cheese sandwiches with brown imitation grill marks stamped on the sides, and pre-packaged turnovers stuffed with hard-to-pronounce preservatives and additives. Itâs no wonder 78% of all school lunches fail to meet basic USDA nutrition standards, Cooper says.

But without an infusion of cash, most public schools canât afford to serve the nutritious food Cooper cooks. In Berkeley, the shift to good eats is underwritten in part by an annual grant from chef Alice Waterâs Chez Panisse Foundation. Nationwide, however, most schools have less than a dollar a day to spend on each student meal once payroll and overhead are covered. And with millions of children getting their main meals from school, the need for change is urgent.

Cooper argues that, despite budget woes, we canât afford not to make the changes. Diet-related illness already costs the U.S. $200 billion annually. âIf we donât do something,â Cooper warns, âweâre going to become an entire nation on medication.â

To that end, Cooper suggests five steps you can take to make a difference in your familyâs health and your own.

1. If you donât do so yet, begin cooking â even a few days a week â at home. Healthy cooking doesnât require hours in the kitchen. Nutritious meals can be fast and easy, Cooper assures, especially when youâre cooking for a family and not an entire school district.

2. Save time by dropping the ingredients into a crockpot, which safely slow-cooks your meals over several hours while youâre busy with other tasks.

3. When you cook, prepare more than you need for one meal. âIf youâre going to roast a chicken, roast three,â Cooper says. Then make chicken soup and chicken salad, and freeze the leftovers. âEvery meal doesnât have to be a big deal. Just start by cooking sometimes and think of cooking meals that can be stretched,â she suggests.

4. Find out what your local public schools are doing to promote nutrition in the classroom and in the cafeteria. In Berkeley, this means offering cooking classes and playground gardening programs that allow children to plant, grow and eat fresh fruits and vegetables. Lunch Lessons provides a number of easy suggestions for schools to get on the right nutrition track. âIf weâre going to change childrenâs relationship with food, we have to give them hands-on experience as well as curriculum,â Cooper says.

5. Take a stand for nutrition. Email or call your congressional representatives to tell them school lunches need more funding. Talk to your neighbors and community. âWe spend more on two pairs of shoes than we spend on feeding a school child for a year,â Cooper says. âWe should double or triple what we spend on school lunches. We just havenât made it a priority.â

I work out every day, seeing muscle definition but no weight loss?!?

So here's the deal, I have been working out every day for about 9 months, I have definitely noticed great definition in my legs and arms but I am continuing to gain weight or just maintain it. I weigh about 117(on a good day) to 121lbs. I know that is not bad but I'm 5'4 and my fat goes to all the WRONG places. I feel sick when I haven't eaten-and feel like i'm about to pass out-so I snack..also I'm a college student so dinner is anything from..pizza, steaks, hamburgers(boxed food with meat, spaghetti) chicken(sandwiches, pasta) and so on..and I have to eat around 9 every night because I work from 3-8 mon-thurs.ALSO I am a receptionist so I am sitting on my ass for 5 hours daily, I TRY to be as active as possible but I can't hardly leave the desk....

What all am I doing wrong and do you have any suggestions?! I've got a little cellulite starting to form on my thigh and I just dread it getting worse...help! oh, and I DONT drink pop and I DONT eat fast food, I drink beer almost every weekend if not a crown and coke (my only acception with pop)...

Firstly fat is very light and fluffy compared to muscle. Muscle is very compact and when defined, you can gain quite a bit and its surprising on the scale. However, the scale is not measuring your muscle gain and is not accurate.

Now, I don't mean to be snooty, but our fast paced lives have caused a generation of people who don't realize that pizza and hamburgers and boxed pasta are all junk foods. YES, they are junk foods.

If you eliminate all white flower products and fried foods, you will get lean.

Here is a new one. Fat does not make fat in the body. That is a myth.

Pizza, pasta, and any fried potatoes or chips or anything that converts to sugars easily causes your body to produce triglycerides in the blood.

Triglycerides are what cause that fat surrounding your middle that you can't seem to get rid of.

Its the kind of fat Sumo wrestlers work on by creating triglycerides by overeating lots of white rice and then sleep so that they do nothing but store it all as fat.

You need to look up recipes and learn how to prepare your own food. You need to include 7 to 9 servings of raw fruits and vegetables in your diet. Meat is fine, but stay away from white flower products, white potatoes of any kind or anything that is converted to sugars by the body easily, because you will not burn it as energy, you will store it as fat and get hungrier because you didn't eat right.

About beer. Its the LIGHT beer that causes weight gain more than a hardy regular hoppy or barley beer. No corn beers like Mexican beers because they are brewed from corn syrup. No bud or coors because they too, are loaded with sugar. Get a good carb beer like Heffe Veis or something really healthy if your gunna drink a beer, ok?

Stick with carbohydrates that are harder to digest, like grains or breads that have sprouts, eat raw nuts, seeds. Athletes that work out know to make these awesome protein shakes that include flax seeds and other really healthy stuff. They get lean that way.

Take care, you sound like a down to earth no nonsense person who may not want to change your eating habits because you hate anything green! LOL.

Healthy cooking?

I'm looking for some really simple, fast, healthy recipes that I can pack and take to work. Sandwiches and wraps are great, but I'd also like somethings I can take left-over-style. I'd like to stick as vegetarian as possible, and sugar-free.

Please know that I am new to the kitchen, so nothing too scary :)

Tasty, High fiber, black beans and brown rice

can of S&W Caribbean Black beans (has Red Bell Pepper, Anaheim Chili Peppers,Diced Onion & Lime, Juice in Caribbean Sauce)
can of mexican stewed tomatoes (has green pepper and onion)
chili paste (tablespoon of Huy Fong Sambal Oelek, Chili Paste)
Uncle Ben's Brown Rice (Microwave in bag)

Drain juice from cans and add 1-2 tablespoons cornstarch, mix

Cook beans, tomatoes till bubbling. If you would like it thicker and more sauce, add cornstarch mixture, stir till the sauce comes out clear.

Meanwhile, microwave brown rice for 90 seconds. Place beans mixture on top or mix together. This makes 2 servings.

Black Bean Salad
2 Large Cans Black Beans
1 Can White Corn
4 Plum Tomatoes
1 Medium Red Onion
1/2 Green Pepper
Handful Fresh Cilantro Or 1/2 Tablespoon Dried Cilantro
1/2 Tablespoon Salt
1/4 Cup Balsamic Vinegar
1 Tablespoon Olive Oil
2 Chipotle Peppers
1/2 Tablespoon Minced Garlic

Drain and rinse black beans.

Drain white corn.

Dice red onion, green pepper, chipotle peppers, plum tomatoes.

Chop cilantro.

Mix together. Add salt, olive oil, garlic and vinegar.

Chill, covered at least 4 hours.

Serves: 8
Preparation time: 1 hour

Homemade Black Bean Veggie Burgers

1 (16 ounce) can black beans, drained and rinsed
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Suggestions:
How to keep them from falling apart, though.

First, you must rinse the black beans and dry them off before mashing them. Second, you must strain the onion, garlic and pepper mixture through a fine strainer to remove any excess water. Also, I freeze mine and grill them frozen.

Blended everything in the food processor, beginning with onions, peppers, and garlic, then oats, then eggs and spices, beans last. I chilled the mixture, then rolled (more like poured -- think thick muffin batter) onto waxed paper. I froze the burgers. To grill, oiled some foil that was folded over burger.

As a substitute, use frozen pepper stir fry (red, yellow, green pepper slices and onion slices.

You can find them in the freezer section at the grocery) instead of individual bell pepper and onion.

Served them with a "dipping sauce" of 1/2 salsa mixed with 1/2 sour cream. delicious.

1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.

2. In a medium bowl, mash black beans with a fork until thick and pasty.

3. In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

4. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.

5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties. (Note: Made them smaller (ended up with 6 and served them with a "dipping sauce" of 1/2 salsa mixed with 1/2 sour cream. delicious.)

6. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on cookie sheet, and bake about 10 minutes on each side.

Note: put a little oil on your hands when shaping the patties to prevent sticking.

2 T parsley flakes (crunched)

Red, White & Blue Cream Cake

1 pkg. low fat white cake mix
1 envelope Dream Whip (whipped topping mix)
1/2 tsp. baking powder
1 cup cold water
1/2 cup egg whites
1 tbsp. olive oil
1 tsp. vanilla
3 ozs. strawberry gelatin powder
1/2 cup boiling water
3 ozs. fat free vanilla pudding
1 1/2 cups skimmed milk
1 1/2 envelopes Dream Whip (prepared 3 cups)
1 1/2 cups fresh strawberries
1 cup fresh blueberries
1/2 cup miniature marshmallows

1. Preheat oven to 350. Prepare two 13" x 9" pans with cooking spray, set aside.
2. In a mixing bowl combine cake mix, 1 envelope of dry Dream Whip mix and baking powder.
3. In another bowl combine water, egg whites, oil and vanilla.
4. Mix dry ingredients with wet ingredients just to moisten.
5. Pour mixture into prepared pans. Bake for 20 minutes or until golden brown.
6. Place aluminum foil on wire racks. Remove both cakes from their pans and cool completely on wire racks.
7. Poke cakes with fork at one-inch intervals. Dissolve gelatin in boiling water and slowly drizzle over both cakes allowing gelatin to seep into holes. Chill for 1 hr.
8. Prepare pudding according to the package directions using 1 1/2 cups of milk. Fold pudding into 1 cup of prepared Dream Whip and 1/2 cup of blueberries.
9. Spread bottom layer with pudding mixture and spread remaining 1/2 cup of prepared Dream Whip on the top layer and the sides of the cake. Arrange strawberries, blueberries and miniature marshmallows on cake to resemble the American Flag. Place some miniature marshmallows around edge of cake.

12 Servings. 335 calories; 7g fat (19% calories from fat); 5g Protein; 61g Carbohydrate; 476mg sodium


Barbecued Sandwiches

4 c turkey light meat, skinless, cooked and cubed
1/2 c white vinegar
1/2 c ketchup
2 tsps Worcestershire sauce
1/2 tsp salt
1/8 tsp black pepper
8 pcs hamburger buns, split and toasted

1. Combine vinegar, ketchup, Worcestershire, salt, and black pepper in a large saucepan. Bring to boil.
2. Reduce heat and simmer uncovered for 30 minutes.
3. Stir in turkey and cook five minutes.
4. Spoon hot barbecue mixture over bottom half of toasted buns.
5. Top with other half of toasted buns.

1 cup diced red bell pepper

3 Tbsp fresh dill

4 Tbsp balsamic vinegar

3 Tbsp olive oil

1 Tbsp dijon mustard

1 black pepper, to taste



Directions:
SALAD: Steam green beans in a steamer for 5 to 8 minutes. Cook potatoes in boiling water until tender. Cool green beans and potatoes and place in a bowl.

When cooled, add bell pepper and onion to the cooled green beans and potatoes.

DRESSING: As green beans and potatoes are cooling, prepare the dressing by mixing together garlic, dill, vinegar, olive oil, mustard, and black pepper. Top salad with dressing.

Your sandwich sounds fine. I would improve it by adding alfalfa sprouts, a bit of mayo, and a slice or two of tomato for a good vitamin C hit.

Lunch meat is high in sodium and nitrates. While convenient, it lacks substance that can be had from sliced cooked meats---which are far more healthy for you. You need fat to help use the carbs in the bread (mayo), and you need vitamin C (tomato) to assist with absorption of iron. I would add a slice of unprocessed cheese, too, for a calcium hit and additional protein and fat.

You don't need recipes for lunch meat sandwiches. Just try to get in as many FRESH food groups as possible between the slices of bread.

Hi! I am 16 and want to become alot healthier! Anyway I was wondering if someone can tell me some really fast to make breakfast and lunches to grab and go (can be made night before but still needs to be fast to prepare next morning) Also I was wondering if anyone knew any healthy filling meals and snacks that are moderatley fast to make. Also if anyone could reccomend a good cookbook that has all healthy meals so i don't have to worry about looking at the calorie count or anything and just add ingredients to the shopping list. Here are some healthy meal ideas:

Breakfast:

~ Oatmeal - for a quick cook oatmeal you could try McCann Irish quick cooking oatmeal
Topping ideas: berries/fruit, nut butter, nuts, seeds, dried fruit, cinnamon, natural jam, honey, agave nectar, milk or non-dairy milk or greek yogurt or unsweetened organic fruit sauce, etc.
* Non-dairy milk like - almond, soy, rice or coconut milk.

~ Healthy cereal (like Kashi or Nature's Path organic) with milk or non-dairy milk or greek yogurt. You can top with fresh berries/fruit.

~ Greek yogurt with fresh fruit or a side of fruit salad. You can also add in nuts, seeds or ground flax seed to the yogurt. Or a parfait with greek yogurt, berries, organic granola or muesli.

~ Muesli with yogurt & fruit salad


Lunch & Dinner:

Well, i am following this diet where i have to eat alL these things for lunch, i will list them down, you can probably follow the same. This diet is called IDIOT PROOF DIET.
The trick with this diet is to stop eating when you feel you are almost full, but not completely full. youhave to stop eating just when you feel you can still eat a few morsels.

besides, this diet tries to trick your body by giving carbs every 2nd or 3rd day. just so that you dont become weak & still continue loosing weight.

The absolute easiest way to start eating more healthy, is sandwiches, fruit, and vegetables. You don't have to be a cook or put forth a lot of effort.

I've noticed a difference in the way I feel just by changing my lunch habits.

Get some whole grain bread, lean deli meat (private selection honey turkey is awesome), good cheese, and berries (blackberries, strawberries). It makes for a quick, easy, very healthy lunch.

You can get fish (which is really healthy too), or chicken from the market for dinner. Choose your favorite green vegetable to go with it (fresh from the produce dept is better). You can season it with almost anything, so long as you bake it (much better than the fried or char grilled crap we eat at fast food restaraunts.

That will get you started. Buying frozen "healthy" dinners will get you tired of eating that gross under-portioned crap real quick.

hello im 14 and i really want to start eating healthier to lose some weight. i don't have any food allergies. i like some veggies like corn peas and carrots, but there are others i don't like - onions, radishes, spinach. i love all fruits, i don't like beans or any kind of fish/seafood (except tuna for sandwiches), i do like chicken. i can be kind of a picky eater as u can see. i am looking for breakfast, lunch and dinner recipes. also lunch that i can pack for school. if u know any good recipes or websites, i'd really appreciate it. thanks!:)

Taco Chicken Bake-Weight Watchers



8 ounces skinless boneless chicken breast, cut into 12 pieces

1/2 cup onion, chopped

1/2 cup green bell pepper. chopped

1 3/4 cups chunky tomato sauce (15 ounce can)

1 1/2 teaspoons taco seasoning mix

1 teaspoon dried parsley

1/4 cup sliced ripe olives

1/2 cup whole kernel corn

1 1/2 cups hot cooked noodles, rinsed and drained

1/3 cup reduced fat Cheddar cheese, shredded

1/4 cup fat free sour cream



Preheat oven to 350 degrees F. Spray an 8-inch square baking dish with olive oil-flavored cooking spray.



In a large skillet sprayed with olive oil-flavored cooking spray, brown chicken pieces, onion, and green pepper, stirring occasionally. Stir in tomato sauce, taco seasoning, parsley flakes, and olives. Add corn and noodles. Mix well to combine. Pour mixture into prepared baking dish. Evenly sprinkle Cheddar cheese over top. Bake 20 to 25 minutes.



Place on a wire rack and let set 2 to 3 minutes. Cut into 4 pieces. Top each piece with 1 tablespoon sour cream.



Hint: 1 1/4 cups uncooked noodles usually cooks to about 1 1/2 cups.



Serves 4 - 5 WW points per serving.

Chicken Omelet



1 cup minced chicken

1/2 tablespoon cornstarch

5 eggs

1/4 cup cold water

1 teaspoon salt

1/8 teaspoon pepper

1 1/2 tablespoons corn oil



Directions

Beat the eggs without separating until very light.

Mix the meat with cornstarch.

Add the water and seasonings to the eggs and stir in the meat mixture.

Heat the corn oil in a medium-sized frying pan, pour in the mixture and cook gently, lifting about the edges until brown on the bottom.

Put in the oven for a moment to "set" the top.

Cut at right angles to the handle to form a hinge, fold over, slide onto a platter and serve garnished with parsley.

I work in retail and often miss dinner because I'm working. I can't seem to think of meals that I can bring. We do have a microwave, but we don't have a refrigerator. I am also limited because I do not get a break, I have to eat between customers. Any ideas of what I can bring that is healthy and easy to eat, but doesn't require refrigeration?
It's only the law to have a scheduled lunch if you are over 8 hours. I am not over eight hours. I work 3-9:30.

Consider sandwiches and rolls.
If there is a place where you can keep food cool you could take a meal of leftovers from home or when you do cook a full meal make an extra portion and freeze.
During the day it may pay to keep them in a chilly bin. Thermos have a great range of insulated bags and boxes that will keep hot foods hot and cold foods cold.
There are numerous types of dried packet meals that just require boiling water.
From time to time you could make canned meals, just by opening a can of something like baked beans or a few cans that you can open to make your own meal. Canned sausages, canned peas and canned potatoes. (that would be too much for me using standard sized cans but you can get smaller cans of some foods)

edit.
Looking at your additional detail, have your cooked meal before work and just a lighter meal at dinner time, and as you only have to keep your meal for 3 hours, most foods will easily last that long.
Just remember that if you do have to serve a client to cover your foods

I like to make vegetarian sandwiches. Ubber healthy.

Take high fiber bread such as Squirrly bread, spread on light or non fat cream cheese to each slice, add thinly sliced tomatoes and cucumbers (whatever appeals to you) and some alphalfa sprouts.
NUM!

Or for higher proteins roast chicken or turkey slices with roasted red peppers on the same type of bread with low fat mayo.

Just an idea anyway.

Choose whole wheat bread, because it's more nutritious than white bread, plus it keeps you feeling full for longer.

Add some salad (lettuce, sliced tomato and cucumber, for example) and then a sliced boiled egg, some smoked ham (or a non-meat alternative, something in slices) or some sliced low-fat cheese, then add some low-fat mayonnaise or salad dressing. Wrap the sandwich in foil to keep it really fresh. You can also take an apple or orange.

Make sure the salad makes up half the filling though, because that bulks out the sandwich and is almost calorie-free. If you want to make something you can scoop into the salad, you could finely chop some celery and onion, and stir it with reduced-fat salad dressing plus a can of tuna or some chopped boiled egg, and use that.

You can make-over your current lunch into something healthier. If a sandwich is quick and easy for you, then keep having one-just use healthy ingredients like 100% whole wheat bread, lean turkey or ham, and lots of veggies. Try lettuce, tomato, and even avocado! Avoid fatty condiments like mayonnaise and try mustard or a light vinaigrette dressing instead.

If you like cookies, you can still bring one for a treat, but bring a healthier side dish too. An apple, orange or a banana is quick and easy to throw into your lunch bag, and they're super good for you! Also you might try buying individual bags of baby carrots, almonds or other nuts, or whole wheat crackers like Triscuits! Yogurt cups make great healthy side dishes and are easy to pack. Or try a small tupperware bowl full of low fat cottage cheese.

Finally, instead of Coke, try bringing a bottle of water or tea.

If you get tired of this lunch every day, you can easily mix it up by making your sandwich into a wrap using a whole wheat tortilla!

Wheat bread is better for you. However, not many people like wheat bread so when you buy Weight Watchers white bread you can eat and still be healthy. Take your bread and toast it if you like.

Step 2 Turkey is a lot healthier then other lunch meats. Take a few moments when you are at the store to pick out a turkey that is low in fat. Take out three slices of turkey and place them on your bread.

Step 3 Lettuce. It is important to always have a vegetable with every meal even it is a small amount. Slice and wash your lettuce. Place the lettuce on your sandwich.

Step 4 To keep your sandwich from becoming to dry place a few tomatoes or pickles on your sandwich. It is better to add more vegetables on your sandwich then adding mayonnaise.

Step 5 Your sandwich is complete. Now you need a few health snacks to go with your lunch. Have a delicious sliced red apple.

Step 6 Top you lunch off with a 100 calorie snack pack. Make sure you have enough health food for lunch. A full healthy lunch can keep you going until dinner.

You just have to take it one day at a time, and don't give up! It takes a while to lose weight, but in the end, it's worth it. Trust me, if losing weight was easy, we'd all be thin. You're going to have to be committed to this goal.

DO NOT starve yourself by going on a crash diet. It doesn't work, believe me! Sure, you lose weight, but not the weight you want. Your body eats at muscle mass and bone first. Your heart is a muscle, so by doing this, you can cause extreme damage. Then once you do actually eat something, it turns directly to FAT because your body is trying desperately to store excess calories & food for energy because it thinks that its starving - And you end up gaining everything you lost, and then some!

Try eating more fruits and veggies in place of other fatty meals, like junk food, cookies, or high calorie meals. Like most people (I'm guilty sometimes!), you've probably brainwashed yourself into thinking that fast food tastes better than healthy food, but that's not entirely true! Try eating MorningStar Garden Burgers, grapes, clemintines, apples chunks in vanilla yogurt (good for sweet cravings!), blueberries, hummus (it sounds gross but it's really not, you can make low-calorie wraps with whole-grain wraps), granola, low-fat yogurt, low-fat string cheese, light brand whole wheat bread, 100 - calorie popcorn / kettle corn bags, steamed broccoli with a buttery garlic sauce, microwavable veggies etc. I also snack on South Beach Diet oatmeal chocolate chip cookies, sugar-free puddings, sugar-free popsicles for chocolate cravings. And eat SLOWLY. Take one bite at a time, chew completely, then take another bite. If you eat slower, you'll become fuller quicker, and you won't overeat. Drink a glass of water before each meal - You'll feel fuller faster and won't overindulge. Try to spread your meals out so that you're eating 5-6 smaller meals throughout the day - It keeps your metabolism up to speed. Try bringing a sandwich or a bag or fruits with you to eat at work or in your locker between classes.

Incorporate more exercise into your daily life. Take the dog for a 20 minute walk, do jumping jacks while watching TV, do laps around the block, or the house for that matter. Don't let yourself sit down for too long. If you can, get a gym membership. I use an elliptical for 30 minutes 5-6 times a week and it works great for me.

And don't eat out of boredom! It's a nasty habit to break, TRUST ME. Whenever you feel like eating, watch a movie with no commercial breaks so you don't have time to get up, call a friend, read a book or magazine, or get out of the house, away from the food.

And don't "DIET". Because the moment you go off your "diet", you'll regain the all the weight you lost quickly, believe me. Instead, make "healthy living choices."

I recently lost weight, about 20 lbs, and what really helped for me was planning my meals. I planned when and what I was going to eat, and made sure the calorie count was 1400. For your height and weight, I'd recommend 1800 calories a day. But never go under 1200! Whatever you do, don't let yourself stray from your plan. Write it all down or type it out and leave it up on your computer so you don't forget, that's what I do.

You'll never get to your "ideal" body by eating crap food and sitting around, no matter how much you want it to happen. It takes dedication to get the body you want! Make it like a game. How much weight can I lose? Prove it to yourself you DO have the willpower to get what you want.

But allow yourself a cheat day every now and then. Life is too short! If you restrict your body of all the "good foods", you will one day EXPLODE and eat everything in sight. Trust me!

One more thing: Once you do become thinner, DON'T think you can eat whatever you want now! You'll regain all the weight back, which is absolutely mortifying, especially after all the hard work to lose it.

I did this and lost 40 lbs in just under 3 months:
Breakfast: Choose one

Fiber One Cereal: There are like 8 different choices on flavors, caramel, fruit, honey, raisen bran, original, ect. All very healthy for you and a great way to start off the day with minimal sugar and a boost of fiber. (1 full cup of cereal + milk is more than I can eat and it's less than 200 calories)

Thomas Whole Grain English Muffins: If you're in the mood for some warm bread, pop one into the toaster and spread some organic peanut butter, No sugar added jam, or I can't believe it's not butter for a warm and delicious breakfast pastry (Note: buy peanut butters in which the oil is at the top and you have to mix it in; avoid brands like Skippy or Jif.) (Each english muffin is 100 calories but be careful of toppings, they add up quickly)

Egg Beater/Egg Whites: You can buy cartons of egg beaters or egg whites in the store. they are delicious, you will not be able to tell the difference between them and regular eggs. Except for the fact that EB/EW cook faster and more easily than regular eggs with no beating the eggs or shells to clean up. Make an ommlete or scrambled eggs and throw in some chopped peppers, spinach, turkey bacon, or skim cheese.

For luches and dinners I recommend Clean Eating. It's a delicious way to Eat without lots of sodium, or artificial chemicals. I have lost 40lbs eating clean. And in over a year of cooking there meals, not ONCE have I been disappointed with the flavor of their recipies!

But, if you were to follow my advice, eating one of my breakfast options at about 300 calories, a clean lunch at about 300 calories, a dinner at about 300-400 calories, and a dessert at about 150, you ate 3 HUGE meals and a decadent dessert at a grand total of 1050-1150 calories a day.

The average male burns 2200 calories in one day without working out (females is anywhere from 1600-2000 depending on many many thing; you guys are just.... complex =P) A Pound is equal to 3500 calories. therefore without working out, you will lose a pound every 3 days. stick to the diet for a month and you are at 10 lbs, do it this fall: 30lbs. I dropped 40 lbs in 3 months (although I did run once or twice a week but nothing too intense, but that was negated by the fact that I cheated on days I ran by going to my local bakery and ordering all sorts of sweets for breakfast!)

Healthier Chicken Salad

Dressing:
1/2 cup non-fat plain yogurt
3 Tbsp mayonnaise
2 Tbsp whole-grain mustard
juice of one lemon wedge
2 Tbsp chopped fresh dill
2 Tbsp chopped chives
fresh parsley or tarragon, if you have it!
a dash of salt and pepper

4 skinless, boneless chicken breasts
1 apple, diced
1 small red onion, chopped
1/2 cup sliced green grapes
1/2 cup pecans, toasted and chopped
1/3 cup diced celery, if you have it

Bring a pot of water to a boil. Throw in a tablespoon of salt. Lower the temperature so that the water is barely simmering. It's what Julia Child calls a shiver stage. Add the chicken breasts, cover the pot and let the chicken poach for 10 minutes, maybe 15 depending on the size. Keep the water just at the point where it's beginning to boil and you'll have tender chicken.

Combine the diced fruit, onion, pecans and celery in a mixing bowl. In a seperate bowl, combine all the ingredients for the dressing. Dice the chicken and add to the bowl with the fruit and nuts. Add half of the dressing and toss to coat. Add more dressing as needed, but you might not have to use all of it depending on the amount of chicken you have. I didn't use it all.

Chill for several hours until cold, or make it a day ahead. Serve on some salad greens (spinach leaves are great!) or in a sandwich. Serves 4.

Cheap Healthy Salads Recipes?

I'm looking for healthy salad recipes that I can make at home on a strict budget of 50 dollars for the whole month to cover 1-2 out of 3 meals a day. The reason is I'm trying to lose weight and my goal is to prepare something healthy for at least two of my daily meals since dinner is usually cooked for the house by someone else. Salads have caught my attention just because I really like salads and my diet currently has few fruits and veggies in it so I'm killing two birds with one stone there. Anyone have some salad recipes that can cover lunch for a week that incorporate chicken (i hate chicken breasts it's so dry) and some kind of pasta for around 300-350 calories a serving? I'm not a picky eater but I'm also not a chef. If the salads voluminous enough I wouldn't mind swapping out snacks for salads and eating a lighter lunch. If it helps I'll lay out the regime the nutritionist gave me.

Breakfast: 300-500 calories
Snack: 100 calories
Lunch: 300-500 calories
Snack: 100 calories
Dinner: 400-500 calories

The recommended amount of calories consumed was less than 2000 calories with regular walking exercises. I'm morbidly obese trying to get healthy so obviously I'm not going to actually consume 2000 calories a day. I've looked uo all the tips there can be found on stretching a meal I don't need more tips I'm asking for salad recipes to try.

I used to make fairly cheap salads for lunchâa wedge of cabbage, some carrot, celery and cucumber sticks, sliced yellow paprika and red cherry radish, a few cherry tomatoes, 3-4 slices of rolled supermarket ham, and 6-8 half-inch cubes of cheese, usually natural, sharp cheddar. For dressing? A pinch of salt and a dash of pepper! VERY occasionally, my wife would put a teensy tub (about one ounce) of miso + mayo + soy or Worcestershire sauce, for dipping the vegetable sticks and sometimes I'd throw a whole, or half a boiled egg into the lunch-box. I could eat this 3-4 days running, but would want a ham & cheese sandwich or a burger at least once per week

I've been eating only fresh fruits for breakfast for the past 18 months, and lost 28lbs (13 kilos) in less than a year without any change in exercise, which shocked my doctor! My previous weight was 93kg/200+lbs (borderline obese at 5'11") and my last 'target' weight was 88kg, but I was a smidgen under 80kg at our next meeting. I was eating 'mostly' salads for lunch, but I could also do a small ham and *real* cheese bagel (180-190kcal) and a cup of cold Vichysoisse/corn/pumpkin soup (70-80kcal) and I could work all evening on that.

Best of luck with the weight loss. Watch out for the 'stealth calories' in salad dressings, please!

Easy, meat free meals:

Mexican, like burritos with grilled veggies (peppers, onion, zucchini, etc), beans, rice, guacamole, salsa, lettuce. If you're still going to eat dairy, you could also include cheese and sour cream. Vegetarian chili is tasty, easy and meat free. Tons of recipe versions online.

Soups and stews: instead of meat add beans or lentils or don't even replace the meat. There's tons of great soup/stew recipes that are easy to make and sans meat.

Pizza: Make a bunch of doughs and freeze them, then when you want to make pizza, just thaw, roll out, top, and bake.

Pasta dishes with no meat; could even try making bean balls (instead of meatballs). Casseroles like shepherd's pie or pot pie are tasty without meat.

Curries/indian/chinese food. Veg web has good orange tofu and general tso's recipes for when you want to try tofu.

I wouldn't recommend stocking up on tons of "fake" meat products. Having a box of veggie burgers for when you don't feel like cooking isn't bad, but trying to use fake chicken, fake beef, etc in your normal recipes will just frustrate you and probably disappoint your husband. I think it would be better to try completely new recipes. I also think it is better to do the 30 days completely vegetarian rather than 3 times a week sort of deal. That way you're more committed to trying it out and sticking with it. Plus you have an end date to reassess!

I'd also recommend you hit up your local library and request some veg*n cookbooks for additional ideas. Some cookbooks I like:

im a vegitarian and its hard to eat dinner everynight when my parents cook meat and the dinner microwave meals have to much sodium. i love tofu and most vegtibles. i want a meal easy to cook and healthy

If you want to learn to cook, that is great. It's a very important step for veg people. All of those frozen and prepackaged meals are inexcusably overpriced. Foods containing only plant products should be CHEAPER and NOT pricier.

These are some of my favorite things to eat:

Breakfast: bananas, cream of wheat with brown sugar and soy butter, cereal, pancakes or french toast with real maple syrup, vegan "sausage" patties, smoothies.

Lunch: VEGAN "SAUSAGE" SANDWICHES, sandwiches with vegan deli slices(Tofurkey is the only one that's kinda funky), fruit, dinner leftovers, couscous salad, vegan sushi, potato or pasta salad.

Dinner: sloppy joes, "sausage" and gravy with homemade biscuits, Spaghetti and Trader Joe's "meatballs" or TVP, lasagna, Thai pad see ew, pad khi mao(drunkard's noodles), tofu+eggplant with basil sauce, yellow thai curry with tofu or vegan chikn and veggies and jasmine rice, Indian dal with homemade roti or dosai, channa masala, aloo gobi, vegetable or minestrone soup, pizza, STEAMED "PORK" BUNS with potstickers or spring rolls
