What are your favorite healthy recipes and food?

My husband and I are eating healthy and was wanting to know what kind of recipes you have that are delicious that are healthy? Also, what kind of snacks or other healthy ideas do you enjoy? Thank you!!!

Answer
Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). I’d try the recipe, if it’s good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.
-----
Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.
----
Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!
----
Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).

Could someone give me a really good healthy whole grain bread recipe for the bread machine?

Bella C <3

'm looking for a really good whole grain bread recipe. It MUST be light and fluffy on the inside, I really dont like when bread turns out too dense

Thanks in advance!

Answer
Yes, first link in "sources," but you can get better results if you'll use the bread machine only for the dough. Hear me out.

King Arthur Flour's classic 100% Whole Wheat Sandwich Bread (second link in "sources") is the bread you want, but it's not one you should BAKE in the bread machine. Bread machines don't shape loaves of bread really well, and they can't give you "ovenspring" -- when you put a loaf of proofed dough into a hot oven, the heat makes the yeast go crazy and gives it a very big boost, giving big rise. The bread machine heats gradually, and you don't get as much spring out of it.

You can make this bread using the "dough" cycle on your bread machine, then shape it, let it rise again (proof), and bake it in a hot oven to get really nice results. But if you try to bake this in a bread machine, it won't rise as high, so it will be more dense.

If your schedule or needs require that it bake in the machine, you'll want the first recipe. It won't be as fluffy and light as a loaf that's properly shaped and proofed and put into an already-hot oven, but it'll be tasty.

Anyone have any fun food recipes that would be good for a 2 yr. old?

Izzy

I am babysitting and the 2 year old wants to make some fun food with me but I dont know what to make. It has to be healthy but good at the same time! And it would be nice if it could be made in at least 30min. So if you have any good, fun, food recipes for a 2 year old let me know! Who ever has the best idea gets 10 points!

Answer
Peanut butter and jelly sandwich... let the kid spread with fingers the peanut butter on toast to make a round circle almost covering the entire piece of bread, then with jelly make eyes and nose, ears and mouth. If he/she likes raisins let him put them in the eyes.
Eat and enjoy!

Healthy food that can be eaten in large amounts.?

Forrest

So I am an overweight man (320 lbs) and I recently got a blood test and it says if I dont change my lifestyle to be healthier I will get type 2 diabetes. so anyway, I need some help. I need some recipes that will help lower my triglycerides (they are at about 300) and my bad cholesterol (this is at about 38) that I can eat alot of and that dont taste horrible. now I dont expect them to be as good as steak or as good as chicken wings, or a nice pulled pork sammich, but I dont want them to taste terrible. here is an example of foods I like:

Pulled pork
chicken wings
ribs
steak
Salad (with about 1/4 cup ranch, some meat, avocados, cheese, croutons, and hard boiled eggs)
Tacos
Hamburgers
Tender beef tips with rice and gravy
spaggetti and meatballs/meatsauce
most chinese food. (although none of the wierd stuff, only the typical americanized chinese food :P)

Foods that I think are particularly gross:
Broccolli (unless in small amounts in stir fry.)
Sauerkraut (unless in reuben sandwich)
Porkchops
Chicken cordon bleu
Carrots (taste reminds me of the musty smell of mold)
All root veggies except potatoes
Asparagus
couscous
All sausage (except kielbasa)
Celery

And I'll probably think of more later.

Anyway, could you maybe give me some links to some recipes that will help me lower my triglycerides and bad cholesterol and that dont taste gross?

Answer
Actually a lot of the foods you like are quite healthy. Just avoid anything that man has altered and eat natural. Avoid refined sugar and flour and processed meats (those with nitrites, nitrates and sugar). Contrary to popular belief the saturated fat in your diet is not the bad guy. That is the natural saturated fat in meat, eggs and butter is not bad. But the trans fats, hydrogenated fats and refined fats will kill you as will the sugars and flour products.

After eating a mostly vegan diet for over two years I added meat, eggs and butter including raw milk into my diet and my HDL went from 50 to 70 and my triglycerides went from 68 to only 46. I was surprised but the numbers don't lie.

Limnit your carbs and only eat until you are full.

Answer
When originally diagnosed with prostate cancer, MM was given only 2-3 months to live....that was over ten years ago and this diet was his only treatment:
Amazon.com
When Michael Milken was diagnosed with advanced prostate cancer in 1993, he wasted no time switching from his daily egg-and-bacon-sandwich breakfasts to a low-fat, vegetarian diet. He also founded CaP CURE, the Association for the Cure of Cancer of the Prostate. Through research supported by CaP CURE, Milken learned that cutting down on fat was not enough--that soy protein could be an important missing ingredient in his diet. He duly incorporated all of the cancer-fighting ingredients into his diet, but he missed the joy of eating.
Enter Beth Ginsberg, Culinary Institute of America (CIA) graduate and natural foods chef. When Milken hired her in 1995, she turned his medicinal soy drinks into tasty, healthy fruit smoothies, his tofu-spread sandwiches into Vegetable Reubens--with tempeh bacon! It became clear that a healthy, cancer-fighting diet need not mean an end to culinary pleasure. In the beautifully photographed The Taste for Living Cookbook, Ginsberg collects more than 75 of Milken's favorite dishes, from Tofu Dog Casserole with a Pretzel Crust to Greek Spinach Pie in a Phyllo Nest to Devil's "Fool" Cake with Cocoa Frosting. Colorful icons next to each recipe let you know how long a dish will take to prepare--many are under an hour from kitchen to table. Nutritional details are given at the end of each recipe, and Ginsberg notes when a substitution can be made (say, low-fat turkey in place of tempeh in a sandwich). Proceeds from the sales of The Taste for Living Cookbook will go to further CaP CURE's research--resulting, one hopes, in even more delicious, healthful meals from chef Ginsberg. --Rebecca A. I need some healthy and easy recipes for lunch?

Jordan

I want some healthy and easy recipes that I can make for lunch. With cheap ingredients and that I can eat on a regular basis. Also maybe some healthy snack ideas?(preferably cheap) thanks!

Answer
I like to make chicken salad for lunches. It’s healthy, fast, and full of protein to keep you full for a long time. Just boil 4 skinless/boneless chicken breasts (around $7), then dice into small squares. Mix in a big bowl with 1 cup mayonnaise, ¼ cup mustard, 1 tsp lemon juice, 1 diced onion, 5 diced stalks of celery, salt & pepper (around $5). So, for a total of only 12 bucks, you have lunch for every day of the week.

I pre-portion the Chicken Salad into ziplock sandwich baggies and keep in the fridge, so they are ready to go for each day. Just use a small insulated lunch bag with a freezer pack, to keep the food fresh until lunch time. For a snack, I bring along a bag of baby carrots and ranch dressing. I work in an office, and this is a great lunch for Mon-Fri. Saves me bundles of money and is much healthier than eating fast food every day. If you want, you can take bread to put the salad on, but since I eat low-carb foods, I skip the bread.

What are some good healthy spices or seasonings to add to my food and where can I get them?

Thinking

I'm looking for some good healthy seasonings and spices that will make my food taste better like rice, eggs, chicken, etc.

Answer
Common herbs and spices may help protect against certain chronic conditions, such as cancer, diabetes, and heart disease.

Herbs, including basil and parsley, are from plants and plant parts. Spices often come from the seeds, berries, bark, or roots of plants. You can purchase fresh herbs in most supermarkets and produce shops. Almost all groceries and supermarkets carry a variety of dried herbs and spices.

Seasonings, such as cinnamon, often lead lists of commonly eaten foods with the highest levels of measured antioxidant activity.

You don’t need to make drastic changes in your eating plan to benefit from seasonings. Here’s how to incorporate more herbs and spices into your favorite foods.

Fresh herbs are healthier than dried and can be used as a garnish for your rice, eggs, chicken, beef, etc. Dried herbs are best cooked with your rice, chicken etc. Ground seasonings can be used as a garnish, but use lightly and as an ingredient in the cooking process of recipes.

Ground cinnamon: Add 1.25 teaspoons to prepared oatmeal; 1 cup Greek yogurt mixed with 2 teaspoons molasses or honey, or artificial sweetener; and French toast batter.
Sprinkle half a teaspoon of cinnamon over ground coffee before brewing.
Top a fat-free latte or hot cocoa with ground cinnamon. Toss rice with ground cinnamon and a squeeze of lemon juice.

Chili peppers: Add chopped peppers to chili, burgers, soups, stews, salsa, and egg dishes.

Turmeric: Sprinkle on egg salad. Mix half a teaspoon turmeric with 1 cup Greek yogurt and use as a dip or sandwich spread.
Add to chicken or seafood casseroles, and to water when cooking rice.

Garlic: Add fresh chopped or minced garlic to pasta dishes, stir-fry dishes, pizza, fresh tomato sauce, and meat and poultry recipes.

Oregano: Add 1/8 teaspoon dried to scrambled eggs, salad dressings, and store-bought or homemade marinara sauce.
Sprinkle some on top of pizza, and stir into black bean soup.

Basil: Make a sandwich with low-fat mozzarella cheese, sliced tomatoes, and fresh basil leaves; add fresh leaves to green salads. Fresh Basil is good mixed into eggs or sprinkled on chicken.

Thyme: Sprinkle dried thyme onto cooked vegetables in place of butter or margarine.
Add 1/8 teaspoon dried thyme to two scrambled eggs, and to salad dressings.
Use it in a rub when cooking salmon.
Add fresh thyme to chicken salad and chicken soup.

Rosemary: Add dried crushed rosemary to mashed potatoes and vegetable omelets.

Parsley: Add chopped flat leaf parsley to meatballs and meat loaf, and to bulgur salad.

Ginger: Grate fresh ginger into quick bread batters and vinaigrettes.
Add chopped ginger to stir-fries. Sprinkle ground ginger on cooked carrots.

Cloves: Sprinkle ground cloves on applesauce, add to quick bread batters, and add a pinch to hot tea.

Vickey

I want to go on a diet to be healthy, but I don't want it to have to be too hard. I work out a lot, and am very fit, but I feel that I am not making the healthiest choices when it comes to eating. What should I do when it comes to disciplining my food choices?

Answer
Thats great that your active and want to eat healthy :)
Go for natural, organic foods. Eat smaller portions more often rather than big portions less often. Avoid things like soda, diet soda or any diet drinks, artificial colors or sweeteners, too much sugar, overly processed foods. Remember to drink plenty of water. Green tea is great to =) As well as water with lemon which is cleansing, good for your skin, digestive system.

You can also try out healthier alternatives with food.
Examples:

- Replace fast food french fries with homemade sweet potato or regular fries (made with a touch of olive oil, salt)

- For chips, you could try natural sweet potato chips, pita chips, fat free popcorn, pop chips or a natural potato chip brand like Kettle. You can also make your own chips by thinly slicing potatoes or sweet potatoes, glazing with olive oil, sprinkling with salt (pepper, basil if you'd like - cinnamon goes well with sweet potatoes) & baking them.

- Replace candy with things like frozen grapes or banana slices, dried mango strips, dried blueberries/cranberries/cherries/papaya, raisins, etc.

- Try a veggie burger on a whole wheat bun, topped with some things you like.

- If you want soda, try cold sparkling water with lemon or mixed with 100 % organic fruit juice instead

- Replace white pasta with whole grain in pasta dishes + add veggies (for example adding baby spinach to pasta, grilled vegetables to lasagna, broccoli/grated carrot/spinach/kale to pasta salad, etc.

- For a creamy pasta sauce try tomato sauce with goat cheese mixed in, for a healthier dish

- Enjoy pizza, try it on thin multigrain crust topped with fresh veggies.

- For healthier treat options try things like: frozen yogurt, vanilla greek yogurt with berries & grated dark chocolate, whole grain baked goods, etc. Desserts are fine in moderation :)

Here is a list with some healthy food ideas :)

~ Greek yogurt or yogurt (nonfat) - Greek yogurt has more protein than regular yogurt
~ Eggs, cheese, cottage cheese (2% is fine), goat cheese, skim milk or goat milk, etc.
~ Vegetables
~ Fruit & Berries
~ Beans (chickpeas, black beans, kidney beans, mixed beans, etc.) - full of fiber and protein :)
~ Veggie burgers (Amy's makes great veggie burgers)
~ Whole grain breads: multigrain bread, ezekiel bread, rye bread, whole wheat pitas, whole grain tortillas or bagels, etc.
~ Whole grain pasta or brown rice pasta, brown/wild rice, quinoa, buckwheat, etc.
~ Sweet potatoes or potatoes
~ Hummus
~ Oatmeal - great source of fiber, you can add toppings like: almond butter or peanut butter, nuts, fresh berries/fruit, raisins, dried fruit like cherries/cranberries/blueberries, cinnamon, skim milk or non-dairy milk, nonfat greek yogurt, jam, honey, agave nectar, maple syrup, etc.
~ Healthy cereals (Kashi, Nature's Path Organic, etc..high in fiber like raisin bran)
~ Nuts, seeds, almond butter, peanut butter
~ Non-dairy milks like soy, almond or rice milk
~ Ground flax seed to add into a smoothie, top yogurt, etc.
~ Olive oil, good healthy fat, great for stir frys with lots of veggies.
~ Salmon & Tuna
~ Tofu & Tempeh - are great in sandwiches, wraps, on salads, etc.
~ Whole grain crackers
~ Whole grain waffles or pancakes
~ Dark chocolate

How to eat healthy and loose weight when you do not cook?

Blue B

After finding out that I weight almost 30 pounds more than I thought I have started to exercise in the evenings and drink more water ( which I hardly drank before ). I know that I also need to eat healthier but I find it hard because I do not cook. Also, It's expensive to buy fresh vegetables and meats. So being broke and an awful cook what should I do? Right now I basically live off tv dinners maybe fast food once every week.

Answer
First off, I would highly recommend stopping the TV dinners. Most of them contain extremely high fat and salt content.

You need to be willing to spend at least a little more time to eat healthier. I'd like to share the few tips I know of with you:

Most fast food restaurants offer healthier choices now. IE:

Wendy's: Stick to their chili or a baked potato. Put on light butter and no-fat sour cream @ home. Also, eat their salads with low fat dressing.

Taco Bell: They have a FRESCO menu. This is basically with no cheese or sour cream. This cuts a TON of calories. Order off this menu only.

Anywhere else--stick to grilled chicken instead of fried.

AT HOME: You will need to buy at least some groceries at the beginning of the week. I would recommend going to your supermarket's deli section and buying a whole rotisserie chicken. They cost between $5 and $7 dollars.Use the HECK out of that chicken--eat it for meals, use it for sandwiches, then throw the carcass into a pot and make chicken soup. It will probably give you 5 meals if you are one person. Buy some brown rice from the store, as well as frozen veggies (about $1.25 per box). (CHEAP CHEAP CHEAP) Boil the rice according to the directions on the bag. Add some salt and pepper, and olive oil. Add some lo-salt canned tomato sauce if you want more flavor ($.49 cents). Stick the veggies in the microwave for as long as the box says.

My estimation: 2 chicken pieces from the big chicken, a serving of brown rice, and frozen veggies will cost you about $2.75 TOPS for a dinner. You can't even get a fast food combo for that price. That meal I just described will probably take you 5 minutes to put together once the rice is cooked.

Healthy chicken soup with the remaining carcass: peel the carcass and throw the chicken pieces in a pot. Buy cheap chicken broth with low sodium/low fat. Fill the pot up with the chicken broth and some water. Throw in some rice and veggies-carrots, celery, whatever you want. Even buy frozen veggies if you have no time to cut them up. Boil it till the veggies are soft. EASY. It will probably take you 15 mins to make a whole pot of soup.

Other suggestion:

Turkey burgers. Buy the cheapest ground turkey you can find. Chop a small onion. Mix it with the turkey with some pepper and a tad of salt. Make a patty shape with your hands. Cook the patties on a frying pan with a bit of oil. Stick it on a whole grain bun with lettuce and ketchup. EASY. You will be able to make 5 burgers with that one pack of turkey meat.

Snacks: Bananas ($.69 cents a pound), Nature Valley granola bars, light popcorn, cucumber and dip/salad dressing. All very cheap.

Lunch: lunchmeat on whole grain bread.

My point is--If you know how to shop, easy cooking will actually be less expensive than fast food and TV dinners. Here is a link to my favorite recipe site for "cooking on a budget"

http://allrecipes.com/HowTo/Cooking-on-a-Budget/Detail.aspx

Go to your supermarket's website, or look at their store circular before you go shopping and see what's on sale that week. Cut out coupons, and look for their buy one, get one free deals.

I hope this helped. Ultimately, if you take those few minutes a week to cook a simple meal, you will be a much healthier person. Being healthy will save you from many expensive medical bills later on. I wish you the best!

What would be the best food to make for a boxer?

JOHNO

What would be the best food to make for a boxer?
I have to make lunch for around a dozen amateur boxers. Do you need to eat regularly or is a lunch break ok? What would be a good cold lunch? I am thinking meat and salad sandwiches and fruit is that ok?

Answer
Best Breakfast
"'Oatmeal makes a hard day's work easier,' my grandpa always told me," says Michael Barry, a USPS cyclist married to Dede Demet-Barry, who rides for T-Mobile, "It's true; this power-packed, hearty dish of oats carries Dede and I up the mountains in Boulder even on the coldest spring day." The two, who compete on the US Pro Cycling Tour, add eggs to up the protein content. "You can also just use egg whites if you're concerned about fat, which is harder to digest before a race."

Grandpa Lapp's Porridge

2 cups oats
1/3 cup millet
6 cups water, soy milk or milk.
1/4 cup of raisins or currants.
4 eggs
Pinch of salt

Put all ingredients, except the eggs, in a pan and bring to a boil. Add eggs. Turn down the head to simmer. Stir with a wooden spoon vigorously for about 5 minutes, or until the oats have absorbed the liquid. If you like, add any of the following: honey, apples, bananas, pumpkin or sunflower seeds, maple syrup, or a splash of cold milk or soymilk.

Best Power Lunch
"I keep this in my fridge all week long and eat it before I run," says Jenny Adams, an Olympic-hopeful hurdler, who likes to add fresh herbs from her garden to the salad. To keep it light, Adams prefers to top whole wheat crackers with the salad; for people going out for at least an hour, Ryan recommends making a sandwich on multi-grain bread with it, and eating it two to three hours before a workout.

Chicken Salad

1 cup cooked, chopped chicken
1/2 cup of plain, non-fat yogurt
1 apple, diced
1 celery stick, diced
1/2 c of red grapes, cut in half
fresh chives
salt and pepper to taste
Add any other fresh herbs you like: parsley, cilantro, etc.

Mix ingredients together, chill and serve.

Best Training Dinner
While this Thai chicken recipe, a favorite of Olympic high jumper Amy Acuff, takes a little longer than ten minutes to prepare, it's time well spent: the well-balanced meal is prepared according to the healthy, healing tenets of traditional Chinese medicine. "The cool water chestnuts and bean sprouts neutralize the warming chili oil and balsamic vinegar," says Acuff, currently studying the discipline. If you're going to use this as a pre-race dinner, be sure the spices don't upset your stomach, warns Ryan.

Quick Thai Chicken

1 cup basmati rice
1/4 cup sesame oil
1/4 cup soy sauce
1 teaspoon chili oil
1/4 cup balsamic vinegar
3 chicken breasts, chopped into small pieces
2 tablespoons grated ginger
2 cloves chopped garlic
1 bunch cilantro, chopped
1 can water chestnuts
1 cup bean sprouts
1 cup smooth peanut butter

Boil the rice. In another pan, heat the oil, soy sauce, chile oil and vinegar, then add the chicken. Cook for five minutes, or until thoroughly cooked. Add the ginger, garlic, water chestnuts, and sprouts and cook until the water chestnuts and sprouts soften—about 2-3 minutes. Remove the pan from the heat and add the peanut butter and rice. Mix thoroughly, top with the chopped cilantro, and serve.

Epi Goop

1 Extreme Chocolate METRX protein drink packet
2 tablespoons chunky peanut butter
15 small marshmallows (or 5 large ones)
1 egg
2 cups water
1 cup Silk
2 cups ice

Put all ingredients in a blender and blend for 30 seconds.

Best Mid-Day Snack
"I like to cook, but rarely have the time to make anything extravagant," admits Darcy Piceu, an ultrarunner who placed fifth in the 2002 Leadville 100. She relies on staples like cereal, sliced banana and soy milk for breakfast, and swears by her low-maintenance burrito, which, because of high-protein peanut butter and high-carb tortilla, honey, and apple, works nicely as an at-work snack or pre-race fuel.

Simple Burrito

tortilla
2 tablespoons natural peanut butter
1/2 green apple, thinly sliced
Squirt of honey

Spread the peanut butter on the tortilla, top with apple slices and drizzle with honey, then roll.

Best During-Workout Snack
Xterra athlete Jamie Whitmore takes an even simpler burrito on long mountain bike rides with her. "It's the only thing that isn't too messy to eat," she admits. If you're out longer than 75 minutes, you need to have a refueling strategy, says Ryan. If you're tired of using gels or sports drinks to get the 30-60 grams of carbs you need every hour, here's another option.

Simpler Burrito

Tortilla
1-2 tablespoons natural peanut butter
Sonic Strawberry Clif Shot or 1 tablespoon fruit spread

Spread peanut butter, then Clif Shot or fruit spread on the tortilla. Roll and cut into easily-consumable, bite-size pieces.

Peanut Butter Cookies

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 egg yolk
2 teaspoons vanilla extract
18 ounces peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped peanuts

In a large bowl, cream butter, and white and brown sugars until smooth. Add eggs, yolk and vanilla; mix until fluffy. Stir in peanut butter. Sift together the flour, baking soda, and salt, and stir into peanut butter mixture. Stir in peanuts. Refrigerate the dough for at least 2 hours. Preheat oven to 350. Lightly grease cookie sheet. Roll dough into walnut-sized balls. Place on cookie sheet and slightly flatten with fork. Bake for 12-15 minutes; when done, cookies should look dry on top.

Best Recovery Meal
"Black beans are high in protein and carbs, which makes them a great choice for refueling after a tough effort," says Deena Kastor, who holds the marathon record for American women, "With just one bowl, you restore glycogen and repair damaged muscle tissue." In addition, she adds, black beans are an excellent source of iron and magnesium, both of which assist in oxygen delivery to your muscles.

Black Bean Soup

1Tbsp. olive oil
1 yellow onion, diced
4 cans of black beans, rinsed and drained
1/2 tsp each cumin, oregano
1tsp red wine vinegar
1 bottle of favorite beer
water or chicken broth to desired consistency
cayenne pepper, salt & pepper to taste

In a pot, saute onions in olive oil until browned. Add all other ingredients and let them come to a rapid boil. ("I usually jump in the shower then," Deena says.) Pour all the contents into a blender, and purée. Top with freshly chopped cilantro, tomatoes, and/or avocado. Eat with tortillas.

Best Smoothie
Jamie Whitmore, who finished second at the 2002 and 2003 Xterra World Championships, often swigs down a smoothie after a long training ride or run. The banana and orange juice provides a good dose of potassium, which you lose copiously during long exercise sessions and may contribute to muscle cramps. "It also helps to rehydrate," adds Ryan.

Orange Protein Shake

1/2 cup orange juice
1/2 cup vanilla soy milk
1 1/2 frozen or fresh banana
1-2 scoops orange sorbet
1 scoop protein powder
1 handful of mixed berries
ice

I am trying to conceive and I was wondering what foods are good to eat when pregnant. There are so many restrictions on what you can and can't eat so I was hoping some people might be willing to share their favourite Pregnancy Friendly recipes.

Answer
Bear in mind that I'm part of the group of people who thinks nuts are fine when you're pregnant. Not everyone agrees, but I personally don't think they have a lot of hard facts to support their claims that it causes nut allergies in your children.

I like grilled sunflower butter banana sandwiches on whole wheat. You slice the bananas and put them on one slice of whole wheat bread, sprinkle a tiny bit of brown sugar on top, spread sunflower butter on the other slice of whole wheat bread, put it together, butter the outside faces of the bread, then grill it just like grilled cheese. It was one of the high protein, high nutrient foods I could stand when I was queasy, besides being great comfort food.

I'm also a big fan of alfredo sauce on whole wheat spaghetti. Whole grains + calcium is good stuff.

There aren't really a ton of restrictions on what you *can* eat, you just have to stay away from those fishes that are mercury risks, any soft cheese made with a visible mold like blue or brie, and any fish, meat, or egg that is raw or undercooked. And alcohol, of course.

What are some ideas for a healthy school lunch?

wakawakapo

When the school cafeteria isn't serving hamburgers, chicken nuggets, or pizza, I have to bring my own lunch. This usually consists of chips and Dr. Pepper that I buy from the bookstore at school with my own money. I would make a sandwich, but every sandwich I've ever tasted makes me gag. Please help!! I would like to discontinue my unhealthy habits.

what other ways can you eat tuna in a can?

healthy tuna sandwich recipes no mayo

healthy tuna sandwich recipes no mayo image

bigshot226

Besides putting all that unhealthy mayo and making a sandwich, what other healthier ways are there?

Answer
In my "Substituting Ingredients" book, it states that you can replace mayo with yogurt or sour cream, but I'm honestly not sure how that would go with tuna.

I do have a recipe (untried) for tuna burgers (you bake them in the bun wrapped in aluminum foil) but that recipe also calls for mayo.

Sorry I can't be more help. Maybe a lowfat mayo?

What are some healthy meals that are easy to make?

I am 16 and can't cook, so when my parents don't make dinner I usually eat frozen dinners. But they are high in sodium. I need some ideas for food low in sodium, fat and sugar because I like eating healthy. Thanks a lot!

Answer
-salad (letttuce, tomatoes, carrots, celery) with balsamic vinagrette dressing on the side

-fat free meatloaf (www.applesforhealth.com- healthy recipes)

-tuna with 1 tbsp mayo and 1/2 can corn on a tostada

-peanut butter sandwich (1 tbsp all natural peanut butter and lettuce on 2 slices whole grain bread)

Healthy Sandwich recipe?
Or anything else you'd recommend..

Answer
any of these could be healthy if u substitue.except for the salad i think its as healthy as its gunna get..

i just asked the same question about 15 minutes ago and i made it in about 5 minutes:
the recipe was

mix frozen spinach but thaw it out first eggs and chopped up hot dogs in a bowl and then fry..put seasonings and hot sauce in also if u want..put on a piece of toast...and or just bread...it was actually very good---
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...
ok with top ramen noodles the possibilities are endless!..seriously
u could boil them and then drain and add veggies, and pasta sauce and if u really want some kind of meat..do u have canned meat? if so there u go..
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...

u can also cook, and drain them and then fry them in a pan with shredded or any kind of cheese that you have..add a few vegetables and some already cooked meat if u want..
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...
chopped hot dogs and scrambled eggs..
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...

pb and j but instead of the jelly use nutella if u have it?
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...
huevos ranchers: take some tortillas fry them and then put them asided to drain the oil from the pan. take a couple of eggs and for my i dont cook them all the way through i love them drainy like u know..ne ways cook the eggs sunny side up and while they are cooking put some tomatoe sauce (small can) and add sugar to it....make sure u keep tasting it as ur adding the sugar bc u want the taste to be sweet not bittery..ne ways take the sunny side up eggs put them on the tortillas and drizzle the tomatoe sauce mixture..
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...
oh and this is really good and healthy..if u have ne lettuce green lead preferable take it rinse it off dry it and then chopped off some tomatoes, cucumbers and what ever other veggies u like in a salad...and just throw some olive oil and vinegar salt and pepper if u want..this is the BEST most simple salad i have ever eaten..
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...
i hope my low budget college recipes for meals helped u:)
What are some healthy sandwich recipes?
I need to some healthy sandwich recipes,..peanut butter and jelly isn't working for me (p.s. -i'm a body builder)
Answer
I like to make vegetarian sandwiches. Ubber healthy.
Take high fiber bread such as Squirrly bread, spread on light or non fat cream cheese to each slice, add thinly sliced tomatoes and cucumbers (whatever appeals to you) and some alphalfa sprouts.
NUM!
Or for higher proteins roast chicken or turkey slices with roasted red peppers on the same type of bread with low fat mayo.
Just an idea anyway.
Tired of sandwiches, and no access to microwave at work. Thanks!
Answer
try this link, most of the recipes can be eaten hot or cold
http://www.fabulousfoods.com/features/brnbag/brnbag.html
Scotch Eggs
Serve hot or cold
6 hard boiled eggs
1 lb. spicy sausage meat
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 C flour, divided
1 C breadcrumbs
1 tsp. salt
2 tsp. pepper
1 tsp. paprika
2 eggs, beaten
oil for frying
Makes 6 Eggs
Peel the eggs and set aside. Mix sausage and spices in a small bowl. Divide sausage into 6 equal portions, set aside. Mix breadcrumbs with salt, pepper and paprika, set aside.
Dry each egg with a paper towel, then roll lightly in flour to coat. Take one portion of sausage and using hands, shape a coating around the hard boiled egg, completely enclosing it (see photos). Roll in flour again, then dip in beaten egg then roll in breadcrumb mixture. Repeat with remaining eggs.
Heat about 2-3 inches of oil in a large skillet. Fry eggs, turning frequently, until golden brown on all sides. Drain on paper towels. Let cool slightly before serving. To serve, cut each in half and serve with some good mustard.
Veggie Tortilla Wraps
1 (9") flour tortilla
2 thin slices cheese (Monterey Jack or Swiss is good)
1/2 avocado, sliced thinly
1/3 C leftover grilled vegetables (like zucchini, mushrooms, onions, peppers, etc.)
1 large lettuce leaf
2 T balsamic vinaigrette dressing
Serves 1 (multiply by the number you are making)
Place lettuce leaf across the middle of the tortilla. Top with cheese, avocado and grilled vegetables. Sprinkle with dressing. Fold egg-roll style, tucking in sides as you roll.
Cilantro Tomato Pasta Salad
1 cucumber
1 C ripe red tomatoes, diced
1/2 C red onion, finely chopped
2 T fresh lime juice
1 T cilantro, chopped
1 tsp. granulated sugar
1/4 tsp. salt
1/4 tsp. black pepper
1 C dry small shell pasta, cooked and drained
Serves 4
Peel the cucumber and cut in half lengthwise. Use a spoon to gently scrape away the seeds. Cut in half again lengthwise and dice the cucumber. Place cucumber, tomato, red onion, lime juice, cilantro, sugar, salt and pepper in a bowl with pasta. Toss gently. Transfer to a serving bowl; chill at least 15 minutes before serving.
Anyone got a cool Sandwich recipe?
Sarah
Lately I've found my sandwiches boring. I only use meat (usually ham or turkey), mayo, and bread. If you guys could help me out and give me some recipes for my school lunches it would help. It needs to be easy also, because I need to be able to make it the night before. Oh, and I don't like pita bread. It just tastes funny to me, sorry.
Thank you guys for your help!
I would appreciate your input :)
What are some recipes or foods to buy that are healthy and cheap???
I'm wondering what foods I can eat that's not too much and lasts
Answer
This is a question I struggle with daily. Unfortunately the healthy stuff tends to be more expensive than the not-so-healthy stuff (produce mainly). There are some good tips I have discovered over the years. More recently I've been doing much of my shopping at WalMart. their prices are great and they carry almost all the foods you would want.
So, here goes....
Pasta is always an option.... try Ronzoni's Smart taste... it has tons of fiber and calcium in it and tastes just like regular pasta. And marinara sauces are low in fat/cal and cheap to make or buy.
If you like beans and corn, one of my favorites is a black bean salsa (goya black beans are great), canned sweet corn, some diced red onion, a minced jalapeno, lime juice and cilantro. It's great with chips or with chicken breast made with mexican spices. Use plain strained yogurt in place of sour cream.
Also, try a can of white northern beans in the food processor with some fresh and roasted garlic. Add a litttle milk or water to slightly thin this mixture. Add salt, pepper, and a touch of olive oil and a pinch of dried thyme. Use this on a low fat pizza crust (Wal Mart sells one for 44cents that is so simple... you just add water) instead of pizza sauce. top with shredded chicken, brocccoli, onions, whatever and top with part skim shredded mozz. Bake about 12 minutes and finish with a touch of olive oil.
okay... some cheap fish.... if you like fish.... tilapia is great and usually about 7.99/pd. take a portion size fillet and put it in a parchment or foil pouch with some lemon juice a touch of olive oil or Brummel and Brown (my personal favorite butter substitute made with yogurt) and fresh herbs and veggies. super healthy, tasty, and cheap depending on your veggie choice. Serve with brown rice.
Potatoes are also very cheap, so make baked wedges or a traditional baked potato. There are also several good low fat cheese products out there. not always cheap,, but.look for coupons for laughing cow, alpine lace. Baked potato with broccoli and diet cheese is one of my favorite dinners.
Also a good idea is buying a whole turkey breast or roaster chicken and using it for several applications. slice turkey for sandwiches (I love Arnolds double the fiber whole grain bread) or in salads. Lettuce is pretty cheap, and try making your own croutons!
obviously i could go on and on, if you'd like more ideas contact me through my website, www.completelyculinary.com
what is your favorite, cheap and healthy recipe?
