How do I keep myself motivated to lose weight?

I would exercise for a while then stop either out of laziness and/or getting tired doing the same workout over and over again. I did lose weight but gained it back. I'm having a hard time to force myself to eat healthier because I don't know what healthy foods to come up with to cook on a daily basis.

Hi lovely woman,

Just to let you know, you're not the only person that goes through this, most of us have been there at one point. Like you mentioned, you want to stay motivated and find reasons to stick to it. So, to lose weight- NUTRITION is key, (and I mean almost 70% of the process is based on it). I don't know what your schedule is like but if you have a busy one, work like the rest of us, then I would recommend the following:

1. Eat OATMEAL for breakfast in the morning. Walmart, Costco, and almost every grocery store sell boxed mini packs of oatmeal, many with flavor variety (maple is my favorite). So take one pack a day either in the office (wherever your work) or make at home by simply pouring hot water; adding flavored granola will make a big difference in regards to flavor and body. (I have these packs at my office and it is my breakfast mostly every morning.) Many times we tend to miss breakfast and fail to understand that it is the most important meal of the day (it gets our bodies going). Once oatmeal goes in our stomach it absorbs fats, and keeping us FULL longer, which is a plus for losing weight.

2. Drink plenty of water - after your breakfast make it a habit to drink water shortly after; apply drinking water with every meal. (With every meal after breakfast, try drinking an 8oz glass of water before you eat, it'll get you gong.) Little by little losing the dependency of sugar/flavor drinks and sodas, which is one of the reasons our bodies are overweight, will become easy. Sugar is a source of energy, but too much of it may transform into fat if we don't burn it by exercising. Make it special when you drink soda, meaning that when you do try to think of it as if you're treating yourself to a delicacy. I usually drink soda twice a week, on Fridays or the weekend. In the long run you won't even want to. Water is good for our bodies, it helps our bodies stay clean, and it provides energy to burn fat; and it helps you feel and stay full longer if you drink enough throughout the day.

3. Eat three snacks a day - one between your breakfast and lunch - one between your lunch and dinner - and the last one, between your dinner and sleep time. We tend to get hungry an our or two after we're done with a meal, so snacking is very important. Bananas, pears, granola bars, or even a slimfast (the drink or bar) are good snack options.

4. For other meals such as Lunch and Dinner, try to be creative. Sandwiches, Soups, some frozen food is good (lean cousine). If you try frozen food, though stick to spaghetti's, chicken w/ rice, pad thai, etc...but don't forget to keep the sodium intake within 1,100 to 2,000 mg. a day. I've heard that electronic recipe books supply you with endless food recipes. You may want to give them a try. Here's one that will give you the best value for your money (5 books altogether).

5. WORKOUT makes the last 30%, I don't know how much you workout but if you cardio 3 times a week combined with 1 thru 4, it will more than likely give you results, I'm very sure it will.

Lastly, I recommend you taking a picture of yourself now, and one every month going forward, that alone will keep you motivated as you'll see with your own eyes how your body is changing with every passing month by comparing (how much weight you've shed) and you'll see that you've develop not just a habit but a healthy way of life, and you'll enjoy it because it'll make you feel good about what you've achieved. And remember, repeating something 21 times is proven to become a habit (try it with anything). So, if you can surpass the first 21 days- the rest will become a routine and you'll be on cruise control after that.

To recap:

1. Oatmeal is key
2. Plenty of water
3. 3 meals
4. 3 snacks
5. ...and exercise

Recommended schedule:

1. Breakfast between 7am and 9am (snack between this and lunch)
2. Lunch between 11am and 1pm (snack between this and dinner)
3. Dinner between 5pm and 7pm (snack between this and bedtime)

I have a very limited budget and a very limited lunch break (sometimes I've got 10 minutes to make lunch and eat it between class and work). I have my own apartment with a full kitchen. Any ideas or recipes for balanced, filling lunches in under 5 minutes prep time?

<start> I get an hour for lunch. I use 10 minutes to walk home and 10 minutes to walk back, that leaves 40 minutes to come up with something. My default is a sandwich ... typically ham & cheese (I save time by buying cheese slices (Apple Gate Farms makes great cheese) and knowing exactly where everything is (often creating a picture in my mind where everything is before I even get in the door). To ensure that it is filling, I use whole grain bread. I allow myself a handful of chips (or other type of snack to go with it and (if I'm cruising on the sandwhich making) will allow myself an extra moment to open a jar of my sister-in-laws homemade bread & butter pickles. Then I pour a soda into a glass and the whole lunch goes to my desk where I keep my laptop. I eat lunch and multi-task and am usually done inside the 40 minutes. For a treat, I allow myself a Klondike Bar or some cookies (better to eat treats during the day rather than late at night, or even after dinner). The other option is leftovers. Nothing is faster to prepare than unwrapping last night's leftovers and eating them. If you really want to ensure you're having a healthy lunch, you might be more mindful of what you're making for dinner. Lastly, sometimes I make scrambeled eggs and toast for lunch. Get the whole grain bread in the toaster after you put a frying pan over medium heat. Whisk the eggs, oil the pan and scramble the eggs. The eggs and the toast will likely be done at the same time. Starting in the fall, I will be in class from 9am to 4pm straight on a few days. I need ideas/recipes for lunches/snacks that I can make the night before and eat in class. A very important part of this is that these foods cannot be noisy or hard to eat so as to not disturb the rest of my class. Does anyone have any ideas?

-Salads with carrots, cucumbers, onions, tomatos, olives, add chicken for protein!
-Sandwiches, like cold cuts, with lettuce, tomatoes, on rolls
-Wraps, use cold cuts like ham or even grilled chicken and lettuce, tomatos, on tortillas, and cut in half.
-cheese with fruits cut up and crackers
-fruit salad and sprinkle with lemon juice so it doesn't turn brown by the time you eat it. You won't taste the lemon!
-chicken fingers
-Any leftovers from the night before's dinner made into a sandwich. If you had a flank steak, add some argula and you have a great sandwich, have fried chicken, bring that, chicken cutlets, put that on bread with lettuce and tomatos and you have a great sandwich! You can always bring leftovers! If you made beef stew, keep it in a thermos like the soup and bring that, it's hearty and it's comfort food!
-pizza, you can bring a few slices with you.
-Egg salad in bowl or on a sandwich
-Tuna on a sandwich or tuna salad on sandwich or in a bowl
-Hard boiled eggs in a salad
-You can always bring like an antipasto, which is the cold cuts, some cheeses, lettuce, tomato, bread, etc, in a tupperware container with a fork, and just eat it as you please. Add some olives in it. It's VERY filling!
-Pasta salad

Q. I eat out of my truck to eat healthier instead of eating all that fast food. Anyone have any good recipes they can share? I have a microwave and a small rifrigarator in my truck. I am just tired of eating soup's and sandwiches all the time. I have tried a few to the microwave meals and was not very happy with them.

Microwave meatloaf:

1 lb ground beef or turkey
1/2 tsp onion powder
1/4 cup ketchup
1 tblsp brown sugar
1 egg
1 tsp worcestershire sauce
1/4 cup bread crumbs

Mix meat, egg, onion powder, worcestershire, and bread crumbs together. Using a pie plate, put inverted custard cup in the center and shape the meat in a ring around the cup. Mix ketchup and brown sugar in separate bowl and top meat mixture with this. Cover with paper towels. Microwave on high for about 8 minutes, rotating dish half-way through cooking time.

You may want to prepare this ahead and refridgerate then pop in the microwave when you're on the road.

I'm curious to try making some tofu dinner dishes, but I'd like this to go over well with the kids. Any suggestions or ideas of tofu dishes that the kids won't shun? (or is this an impossible task?)

When I wrote an article on tofu recipes for kids for a national magazine some years ago, I used my friends' children (as well as my children's friends) as guinea pigs. My own children, after all, had cut their teeth, so to speak, on tofu dishes and so the "T" word didn't faze them. I was surprised at how open most kids were to trying these new tofu dishes. They didn't have as many preconceived notions about the white stuff as many adults do. The result was a plethora of kid-pleasing recipes that my own sons and their friends still ask for. The real trick here was not in getting them to eat these dishes, but in getting them to share them with their parents!

Tofu Basics Parents always welcome new options for healthy eating, and tofu is a superb food to add to the repertoire of growing children. Itâs high in easily digestible protein, low in fat, and is a good source of calcium, iron, and B vitamins. To increase your chances of kid-pleasing results, prepare tofu simply, combining it with other mild or familiar flavors. Hereâs a brief lexicon of the most common tofu varieties:

Silken tofu: Available in 16-ounce tubs or 12.3 ounce aseptic packages, this type of tofu is very soft and smooth. Itâs great pureed and used as a base for soups (âCreamyâ Corn Chowder), dressings and dips, and sauces (Macaroni and Cheese With Secret Silken Tofu Sauce). It also makes an ideal dessert puddings or pie filling (Miniature Chocolate Pudding Pies). This may be the best type of tofu to use when you need to âsneakâ it into your childâs meal!

Soft tofu: This comes in 16-ounce tubs and is good for using crumbled, as in faux scrambled egg recipes or imitation âegg saladâ or patties (Tofu Patties). Finely crumbled, this is also a good substitute for ricotta cheese (Vegetable Lasagna). Like silken tofu, soft tofu can also be pureed and used as a soup or sauce base, with a somewhat heftier consistency.

Firm or extra firm tofu: Again, available in 16-ounce tubs, and also fresh in chunks or cakes, use this when you want the tofu to hold its shape. Firm tofu is ideal for use in stir fries, stews, and as cutlets or nuggets (Baked Tofu Nuggets).

Baked marinated tofu: Of the tofu varieties listed here, this one is the most difficult, alas, to get in supermarkets. Look for this chewy, dense, and flavorful form of tofu in natural foods stores. Sliced, diced, or (with effort) crumbled, it can be used as a chicken or tuna substitute in stir fries, sandwiches, casseroles, and tortilla dishes (âChickenâ-Style Tofu Fajitas).

"Chicken"-Style Tofu Fajitas
Makes: 8 fajitas (2 fajitas per serving)

In this super-easy, nearly-instant tortilla recipe, chewy baked tofu stands in for chicken. Letting the kids make their own fajitas becomes part of the fun!
8 fajita-size (6- to 7-inch) flour tortillas
10- to 12-ounce package baked tofu, cut into strips
Prepared salsa, your favorite brand
1 cup plain low-fat organic yogurt or soy yogurt
2 cups finely shredded lettuce
1 cup grated cheddar cheese or cheddar-style nondairy cheese, optional
Wrap the entire batch of tortillas in foil and warm in a preheated 400-degree oven or toaster oven.

Place the tofu strips on a plate and microwave briefly until well warmed, about 3 minutes.

Spread a little salsa and yogurt down the center of each tortilla, then arrange a few tofu strips over them. Sprinkle with some lettuce, and if desired, a little cheese. Roll up snugly and eat out of hand.

Baked Tofu Nuggets
Makes: 4 to 6 kid-sized servings

These breaded nuggets become firm and chewy as they bake. Kids enjoy dipping them into their favorite sauce.
16-ounce tub firm or extra firm tofu
3 tablespoons wheat germ
2 tablespoons cornmeal
1 teaspoon seasoned salt
Marinara or barbecue sauce (warmed), or ketchup
Preheat the oven to 400 degrees.

Cut the tofu into 3/4-inch-thick slices. Blot well between clean tea-towels or several layers of paper towel, then cut into 3/4-inch dice. Combine the wheat germ, cornmeal, and seasoned salt in a mixing bowl. Add the tofu chunks and stir gently until evenly coated.

Arrange the tofu on a lightly oiled non-stick baking sheet. Bake for 15 minutes, stirring once or twice during this time, or until golden and firm. Serve at once with sauce of your choice for dipping or topping.

Macaroni and Cheese with a Secret Silken Tofu Sauce
6 to 8 kid-sized servings

The same children I tested this on 5 years ago still request this each and every time they come to my house for dinner. This basic macaroni and cheese is rich and comforting. Using pureed silken tofu as a base for the sauce gives the kids a good dose of soy goodness.
10 to 12 ounces elbow macaroni (or other short pasta shape such as cavatappi)
12.3-ounce package silken tofu
2 tablespoons nonhydrogenated margarine
1 1/2 cups firmly packed organic grated cheddar cheese or cheddar-style nondairy cheese
Salt to taste
Cook the macaroni in plenty of rapidly simmering water until al dente, then drain.

Meanwhile, puree the tofu until perfectly smooth in a food processor or blender. Transfer to a medium sauce pan and add the margarine and cheese. Slowly bring to a gentle simmer, stirring often, then cook over low heat until the cheese is thoroughly melted.

Combine the cooked macaroni and sauce in a serving container and stir together. Season with salt to taste and serve at once.

VARIATION: Bake in a casserole dish at 400 degrees for 20 to 30 minutes, or until the top is golden and crusty.

Creamy Corn Chowder
Makes: 8 kid-sized servings, or about 6 average servings

Pureed silken tofu is a superb base for creamy soups, such as chowders. It provides substance without the need for thickening. The mild, familiar flavors will entice kids of all ages to enjoy a soothing bowl of soup.
1 1/2 tablespoons light olive oil
1 medium onion, finely chopped
1 large celery stalk, diced
2 medium carrots, peeled and thinly sliced
2 medium-large potatoes, peeled and finely diced
1/2 teaspoon ground cumin
2 vegetable bouillon cubes
3 cups cooked fresh or thawed frozen corn kernels
12.3-ounce package silken tofu, well pureed in a food processor or blender
Low-fat milk, rice milk, or soy milk, as needed
Salt and freshly ground pepper to taste
Heat the oil in a soup pot. Add the onion and celery and sauté over medium heat until golden. Add the carrots, potatoes, bouillon cube, and cumin, plus just enough water to cover. Bring to a simmer, then cover and simmer gently until the vegetables are tender, about 25 to 30 minutes.

Stir in the corn kernels and pureed tofu. Add just enough milk to give the soup a medium-thick consistency. Season with salt and pepper and simmer for another 10 minutes over very low heat.

If time allows, let the soup stand off the heat for an hour or so before serving, then heat through as needed. Remove the bay leaves before serving.

Miniature Tofu Chocolate Pudding
Serves: 4

Silken tofu is a great base for puddingâit has just the right consistency, and it spares you from bothering with a flour-thickened milk sauce, which tends to scorch and lump.
16-ounce tub silken tofu
3/4 cup semi-sweet chocolate chips
3 to 4tablespoons maple syrup, or to taste
1 teaspoon pure vanilla extract, optional
Puree the tofu in a food processor or blender until completely smooth. Transfer to a small saucepan and add the chocolate chips. Cook over medium low heat, stirring often, until the chocolate chips have melted. Stir in the maple syrup and optional vanilla.

Allow to cool completely, then serve at room temperature.

When the school cafeteria isn't serving hamburgers, chicken nuggets, or pizza, I have to bring my own lunch. This usually consists of chips and Dr. Pepper that I buy from the bookstore at school with my own money. I would make a sandwich, but every sandwich I've ever tasted makes me gag. Please help!! I would like to discontinue my unhealthy habits.

I am going car camping & RVing a few times this summer with family and friends. We always have plenty of tasty and unhealthy food, but and I would like to bring some healthier options. Fresh and dried fruit is really good for snacks.

For lunch I make a big batch of pasta (with whatever sauce I feel like) and then eat it for lunch during the week. It usually keeps well and tates great. You can also have wraps, salad sandwiches, and other breads with salad fillings. I take cous cous (which can be a bit messy) and leftover dinner.

The easiest that I find is little cans of tuna (but obviously only if you like the taste of tuna.)

You can take vegetables like carrots etc. for snacks as well.

Take a drink bottle as it is easy to mistake thirst for hunger. Just make sure you don't drink too much as you will need to go to the toilet during class.

You can make healthy muffins (with fruit etc in them). Look on google for healthy muffin recipes.

Cheese and crackers are good - just make sure that you get low fat cheese.

If you make grilled homemade pizzas with healthy ingredients, you can then take them to school the next day.

Nuts are also great for quick snacks.

- 1 (8-ounce) package shredded coleslaw mix (about 4 cups)
- 6 green onions sliced with tops
- 1 (15-ounce) can black beans drained and rinsed
- 1 HORMEL® Pepperoni (3.5-ounce) package sliced
- 4 MANNY'S⢠9" Burrito Size Flour Tortillas , warmed

Directions
In small bowl, combine mayonnaise, orange juice, lime juice, and lemon pepper; set aside. Meanwhile, in large skillet, heat oil over medium heat. 1/2 cup garden vegetable-flavored cream cheese
4 flour tortillas (8 to 10 inches in diameter)
1 cup lightly packed spinach leaves
1 large tomato, thinly sliced
3/4 cup shredded carrot
8 slices (1 ounce each) Muenster or Monterey Jack cheese
1 small yellow bell pepper, chopped (1/2 cup)


1. Spread 2 tablespoons cream cheese over each tortilla. Top with spinach and tomato to within 1 inch of edge. Sprinkle with carrot. Top with cheese. Sprinkle with bell pepper.
2. Roll up tortillas tightly. Serve immediately, or wrap securely with plastic wrap and refrigerate no longer than 24 hours.

2 tablespoons CRISCO all-vegetable shortening or 2 tablespoons CRISCO Stick
2-3 cloves garlic, minced
1 cup chopped onions
1 tablespoon curry powder
3/4 cup chopped cauliflower
3/4 cup chopped broccoli
1/2 cup shredded carrots
Salt and pepper to taste
1/2 cup chopped tomatoes
2-3 scallions, chopped
6-8 tortillas or chapati
Plain yogurt or sour cream

Melt the Crisco Shortening in a large skillet over medium heat. Add the garlic and onions and cook, stirring often until just tender. Do not allow to brown.

Stir in the curry powder and cook about 1 minute. Add the cauliflower, broccoli, carrots, and salt and pepper. Cover and cook, stirring occasionally, about 5 minutes or until the vegetables are crisp tender. Stir in the tomatoes and scallions. Cook about 1 minute uncovered.

To serve, place the filling in the middle of each tortilla or chapati, top with a little yogurt or sour cream and roll up. Serve immediately




Confetti Turkey Roll-Ups

Deli smoked turkey combines with colorful vegetables for easy-to-make sandwiches or appetizers rolled in flour tortillas.

1 (8-ounce) package cream cheese, softened
1 cup LAND O LAKES® Sour Cream
1 teaspoon prepared mustard
2 tablespoons chopped fresh basil leaves*
8 large (10-inch) flour tortillas, warmed
8 slices (1 ounce each) deli smoked turkery
1 (16-ounce) package broccoli slaw mix

1 tb Light brown sugar
1/4 c Balsamic vinegar
1 tb Olive oil

4 6 in diameter pita bread rounds cut in half
In a large bowl, toss together the onion, tomatoes, turkey, lettuce, and
basil.
Sprinkle with the brown sugar and drizzle with the balsamic vinegar and
olive oil. Toss well and season with salt and pepper.
Cover and let marinate in the refrigerator for at least two hours.
To make the sandwich, open the pita pocket and add as much mixture as you'd
like.






Veggie Pita Pizzas


2 (6 inch) pita bread rounds
1/2 (8 oz.) can (1/2 c.) herbed or plain tomato sauce
1 c. cooked vegetable (such as broccoli, mushrooms, cauliflower, green
pepper, asparagus, or green beans)
1/2 c. (2 oz.) shredded part-skim Mozzarella cheese

Split each pita bread round horizontally so you have 4 rounds. Place rounds
on a baking sheet. Bake in a 450° oven for 2 to 3 minutes or until dry and
crisp. Spread each round with tomato sauce. Arrange vegetables on top of
each round. Sprinkle with Mozzarella cheese. Bake in a 450° oven about 5
minutes or until cheese melts and pizzas are heated through. Makes 4

- Egg whites (better for you than the whole egg) with a little salt and pepper, maybe some cheese to add flavor, on wheat toast.
- Grapefruit (it's sooo healthy for you, it can be a snack too)

- Oatmeal
- All fruit smoothie. Have non frozen fruit and add ice or use frozen fruit and add a little 100% fruit juice. You can make it a *healthy* milk shake by using low fat milk instead of juice and adding a little sugar (sugar isn't unhealthy in small amounts, but fake sugar like sweet and low and equal are bad for you)

Lunch/Dinner:

- Chicken breast with lemon pepper or other seasonings
- A spinach tortilla with chicken cooked in some bbq sauce. Add lots of lettuce and a little bit of light ranch (like a teaspoon, if even that).
- Salad- there are thousands of possible salads you can make but what I love doing is a bunch of lettuce, some spinach if you like that, salt, pepper, garlic (powder and only a small amount) and vegetables like tomatoes, cucumbers, or even carrots and peppers
- Taco Salad: brown some lean beef, drain any fat, add seasonings (McCormick has a taco seasoning packet for 50 cents). Make a bowl full of lettuce, tomatoes if you want, some beef, some cheese if you want, and tortilla chips if you want (less healthy version).
- Chicken in a bag- McCormick's has these awesome chicken bag seasonings where you throw chicken in the bag (they provide) with some carrots, potatoes, whatever you want, add the seasoning and bake for about an hour. One of my husbands favorites!
- Costco sells individual salmon fillets. Take one out of the fridge/freezer, season to your liking, throw on a pan, the grill, or in the oven and cook.
- a sandwich- between whole wheat bread slices, pita style, or wrapped up (spinach wraps are really delicious, or whole wheat wraps which I'm not a huge fan of).
- Make some quinoa or brown rice in a rice cooker or in a pot if you don't have one. Add some black beans, salt and pepper, and some mozzarella if it's still to bland. I like to add some sriracha (chili hot sauce) into the rice as it cooks and some garlic seasoning. It adds some kick and makes it taste really good without adding the sodium from cheese.

Snacks:
- peppers
- celery. If you hate it alone add some organic peanut butter (no preservatives) you can even go to many stores and grind your own peanuts into peanut butter.
- peas, green beans, cucumbers, tomatoes, other vegetables but not potatoes or corn.
- apples, pears, bananas, berries, grapefruit, and other fruits.
- some nuts or a homemade trail mix (raisins, peanuts, almonds, some dark chocolate chips, whatever else you want)


Dessert
- a small amount of dark chocolate is actually really good for you. The higher the cocoa content the better :) But only a small amount.

Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). Iâd try the recipe, if itâs good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).

My dad's doctor just recommended the DASH diet to control his blood pressure. He lives alone most of the time seeing i go to college out of state. I think the extent of his cooking skills are cereal and ham sandwiches which are not on the diet plan. What are some healthy cheap recipes to try to try out?

If your Dad doesn't like to cook much, the best thing you can offer him regarding recipes that will promote lower blood pressure is simplicity. In this vein, let's focus on the basics regarding diet and blood pressure.

Too much sodium is responsible for a great deal of high blood pressure problems. Most Americans get way too much of it in their diets, and most of it isn't due to sprinkling more table salt on food either. Processed food is loaded with it. Why not do grocery shopping for your father, or get somebody else to do it for you? Read the labels, and reject anything with a lot of sodium.

Avoid foods with LDL cholesterol as well. This is the "bad" cholesterol, and can be a big contributor to blood pressure problems. The Mayo Clinic recommends eating oatmeal and oat bran, nuts, especially walnuts and almonds, and fish high in omega 3 oils -- salmon, mackerel, tuna, lake trout, sardines, herring.

Focus on the simple recipes for your father. How much cooking does a bowl of oat bran with skim milk take? If that's too bland for him, sprinkle a few blueberries on top. Skim milk is an ideal food for high blood pressure too, since it contains calcium and vitamin D, and the two have a synergistic effect.

Potassium helps lower blood pressure too. Foods rich in potassium include bananas, baked potatoes and soybeans. As bad a cook as your Dad may be, peeling a banana a few times a day is something I'm sure he can handle. I hope you see what I'm driving at here -- simple ways he can lower his blood pressure. Don't try to turn him into Julia Child here.

Half an ounce of dark chocolate per day has also been shown to lower blood pressure. The higher percentage of cacao in it, the better. For more tips, please read the resources in the source box.

You can actually make sandwiches ahead of time and freeze them if you like cold sandwiches. They don't have to be unhealthy either. You can use a healthy type of margarine like smart balance light instead of a real cream butter to cut major calories. Mayonnaise actually doesn't freeze well, which is why this says to use butter. High cream contents also do not freeze well. You could always put mayo on it after it defrosted.

1 pack of sub sandwich rolls
1 package cold cut meat (or you can do multi-meat sandwiches)
1 pack cheese slices
Low fat margarine or butter

Spread a thin layer of the butter on both inside sides of the sub rolls. Place meat and cheese inside. Wrap each sandwich in cling wrap and then place them in individual freezer zip-locks or one big one. Take a sandwich out of the freezer 4-5 hours before you will eat it or the night before and place it in a cooler or fridge. It should be defrosted by the time you want to eat it. If you work or go to school full time, you can take it before work/school and it would be ready to eat by lunch. If you want to have lettuce and tomato on it, put those in a ziplock separately in the cooler when you take the sandwich out in the morning.

If you like tuna, chicken or have hard boiled eggs on hand you can make creamed tuna or chicken or eggs goldenrod.

2 tablespoons butter
2 tablespoons flour
1 cup milk
4-6 slices of toast
1 can tuna or chicken breast or 2 hard boiled eggs
Salt and pepper to taste.

1. Put the butter in a small or medium pot or skillet over medium heat.
2. When the butter it melted, add the flour and stir it to make a roux that looks like a light yellow paste. Turn the heat to medium high
3. Add the milk immediately all at once. Whisk continuously until it is thick and bubbles break the surface. Remove from the heat.
4. Using a fork, flake the tuna or chicken into the sauce. Salt and pepper to taste. If making eggs goldenrod, dice the eggs and put them into the sauce.
5. Cut the toast into little squares. Pour the sauce over the squares and enjoy. I make this all the time, it's super fast, cheap and easy. Canned tuna and chicken breast are high in protein and low in fat. This recipe makes 2 good sized portions or one huge one. The only disadvantage is that I don't believe it keeps in the fridge so you will have to eat it immediately. You could always half the recipe and put the rest of the can of chicken or tuna in a little tupperware in the fridge and use it later.

Quesadillas

2 tortillas
Cheese (any kind, cheddar or mexican blend works best)
Any other fillings you would like - canned chicken breast, jalapeño slices, fresh diced tomato pieces, black beans

Skillet: You can spray a non-stick skillet with non-stick spray, but it isn't necessary. Heat the skillet over medium heat. Place one tortilla on it. Sprinkle the cheese and other ingredients on it. Place the second tortilla on top. When the cheese just starts melting, flip it over. You can also flip it if the tortilla on that side is browning too fast. Eat it whole or slice it into wedges.

Microwave: Assemble the tortilla and place it on a microwave safe plate. Microwave it for about 30-45 seconds. Then eat and enjoy.

Black Bean Tacos

1 can black beans, drained and rinsed
several tortillas
Any toppings desired - shredded cheese, salsa, diced tomatoes, shredded lettuce, sour cream, guacamole

1. Cook the black beans in the microwave in 30 second intervals, stirring until hot.
2. Heat the tortillas for 15-30 seconds until hot.
3. Put the black beans in tortillas like a taco. Top with toppings. Enjoy. For any leftover black beans, put them in a tupperware in the fridge and use them in more tacos or quesadillas later.

Hi! I am seeking lean, economic cuts of beef and pork I can either broil, bake or sautée for dinner and tasty, relatively easy, pocket-book friendly recipes for them. I actually like marinating, I just don't want to spend hours waiting for something to be cooked. My husband is trying to lose some weight, so healthy recipes are required. Thanks in advance.

There are a few cuts of beef that I prefer to buy, even when they aren't on sale (or cheap):

Chuck roast. Brown each side well in a tiny bit of oil in a 5qt pot, then just barely cover with water, add 1/2 onion (you can leave it whole), and a clove of garlic, peeled. Pour in a TBSP of salt, and a little black pepper, cover, and simmer over low heat for about 2 hours, turning once halfway through cooking. (If you like pot roast, during the last half hour of cooking, you can add some cleaned carrots and potatoes and maybe a chopped tomato or fresh green beans to the pot.)Leave covered, and let cool completely. Shred the meat to use in burritos.

Brisket....brown well on both sides, then put in a large baking pan, pour in hot water or beef stock halfway up the side of the meat, add onion and garlic and salt and pepper, then bake in the oven for 3 hours, covered tightly, turning once after 1.5 hours. Slice and eat. I use the leftover sliced meat for sandwiches with barbecue sauce, au jus, or with typical hoagie condiments. The meat has great flavor, and it'll be eaten up fast...even if you make a lot.

We also buy pork loin (NOT tenderloin) when it goes on sale. You can get a huge 10 pound loin for less than $2 per pound. I cut it into 3# roasts, then freeze them.

The beef brisket is the same way. We just bought 15 pounds of brisket at $1.35 per pound. We cut it into 5# slabs.

Chuck roast is often under $2 per pound, but is usually on sale for about $2.50/lb. Arm roast can be cooked the same way and shredded. The shreds are finer, but tougher.

We love to make ham taquitos, so we also buy whole smoked hams when they go on sale for under $1.50 per pound.

I know you didn't mention lamb, but we also buy entire legs of lamb in the spring when they are discounted, at under $5.50 per pound. I have never seen it cheaper than that. (I make lamb curry and freeze it...it is my favorite dish, and lamb is a luxury at our house....we also grind part of it to make homemade gyro meat.

Of course, buy ground beef whenever it is on sale. We are able to get 93% lean for under $1.50 per pound on a regular basis. You can make meatloaf, burgers, salisbury steaks, spaghetti sauce.

Sandwiches on whole wheat bread wraps with tofu (extra firm) or if you dont like use some vegan hqm or turkey col cuts, or half a mashed avocado they are all good sources of protein also on your sandwich have some hummus(whatever kind you like, my favorite is jalepeno and roasted red pepper) or veganaise and your fav cheese (i use either vegan swiss or laughing cow lite spreadable cheese) and your favorite veggies, i like cucumbers, bean sprouts, spinach, onions, but red peppers, tomato, or lettuce would all be good mix it up andtry all different stuff throughiut the week

Make some vegetable soup, or but some tomato or whatever kind you like from the can (just make sure its not made with chicken or beef broth) keep it warm in a thermos and bring a toasted cheexe sandwich to dip in or eat sepertatly

Bring your favorite cold cereal in a thermos and milk or buy a milk and have cereal as a little treat

On the side make some wholesome cookies with lots of whole grain oats raisins and seeds or trail mix with your favorite dry cereal, nuts, and dryed fruit. Or fresh fruit. Or hummus with veggie sticks.

Ways that helped me to a healthy lifestyle way of eating:

Nutritious foods that are high in nutrients and low in fat and sugar (no sugar, if possible).

Substituting sugar and oil (partially, depends on the recipe) by using applesauce and pureed fruits in baked goods.

Eating veggies as the main dish and lean meats (including beans), fish and chicken (very little red meat) as a side dish.

Eating whole wheat rice, pasta and breads is good as a side dish or as part of the main dish, as long as it is not high in fat, but is high in fiber. Lots of times, breads and pasta will say its wheat when it isn't whole wheat; something to watch out for.

Eating 3 meals plus 2 snacks a day is good.

Staying away from fast foods and tv dinners laden with fat and sugar.

Staying away from mayonnaise, in sandwiches or salads especially, use mustard instead. For dips and salads, use non fat to low fat yogurt. Or used tomato based dressing or dip (like salsa)

Use monosaturated fats like olive oil, not polyunsaturated or saturated fats.

Key is finding what kinds of foods you like; going to the American Heart Association website as a guideline.

Then looking at recipes that appeal to you.

I made a binder, with plastic sheet pocket protector page with index pages (salads, meats, side dishes, desserts, etc.). Iâd try the recipe, if itâs good, it stays, if not, its tossed.

Tuna cakes
1 can tuna, drained (I like the one packed in water)
1/4 tsp Dijon mustard
1/4 cup bread crumbs (I use leftover whole wheat bread and grind it up in the food processor)
1 egg (or 1/4 egg substitute)
onion (optional)

Mix together, using pie plate with crumbs in it (2 inchs thick or more), make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.

Place in preheated, oiled pan.

Brown on one side then flip it, to brown on other side.

Homemade Black Bean Veggie Burgers
1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
OR
Frozen pepper stir fry, thawed (red, yellow, green pepper slices and onion slices, available in the freezer section at the grocery).

3 cloves garlic, peeled
1 egg (or egg substitute equivalent to1-1.5 eggs (1/4-3/8 cups))
OR
1 Tbsp. ground flax seed simmered in 3 Tbsp. water Stir together until thick and gelatinous.

1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (maybe in addition, add 1/2 cup cooked brown rice) (possibly use rolled oats instead of bread crumbs)

Note:
How to keep them from falling apart. Rinse the black beans and dry them off before mashing them. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor.

Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs, eggs and spices and then the beans last.

Note: Put a little oil on your hands when shaping the patties to prevent sticking.

Divide mixture into four patties. (Made them smaller, ended up with 6 and served them with a "dipping sauce" salsa.)

For Grilling: Freeze patties and grill them frozen.

Directions
For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.. Place patties on foil, and grill about 8 minutes on each side. If baking,

For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:

2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs

Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.

Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

Applesauce Oatmeal Cookies (Low Fat and Moist)

Total Time: 1 hr
Makes: 3 1/2 dozen

Ingredients:
1 1/2cups all purpose flour
1tsp. baking soda
1 1/2tsp. ground cinnamon
1/2tsp. salt
1/4tsp. ground nutmeg
3/4cup firmly packed brown sugar
1/2cup Splenda
1/4cup margarine, softened
3/4cup applesauce (unsweetened)
1/4cup egg substitute or 1 egg
2Tbsp. fat-free milk
2tsp. vanilla
3cups quick or old fashioned uncooked oatmeal
1cup diced (can use food processor, much easier) dried mixed fruit or raisins

Preparation:
1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

3. Drop dough by rounded tablespoons onto prepared cookies sheets.

4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

Notes:
These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with powdered flaxseed (good source of omega-3 fatty acids).

Can you use wax paper instead of parchment?

There's a few yummy sounding healthy recipes I want to try. They call for wrapping things in parchment paper. I live in Alaska so that is very expensive. Can I use old-fashioned wax paper instead? What's the difference in cooking with parchment instead of wax paper?

You can't use wax paper in the oven, it'll melt.

The main difference between waxed paper and parchment paper is their respective coatings. Parchment paper is coated with silicone to give it a nonstick, heat-resistant surface, whereas waxed paper is coated with a wax such as soybean or paraffin.

Waxed paper is not meant for use in the ovenâthe wax coating on it will melt if the paper is exposed to direct heatâso use it for wrapping up sandwiches or food for cold storage. Parchment paper is the best choice for cooking, as most brands can withstand temperatures up to about 420 degrees Fahrenheit (double-check your package to be safe). Parchment paper is good for lining cookie sheets to eliminate the need to grease them, and is also used to cook âen papillote,â a technique of wrapping food in a packet and baking it.

The other way the papers differ is in how theyâre processed before being coated. Pat Schweitzer, a spokesperson for Reynolds Consumer Products, says that the companyâs parchment paper is pressed into a sheet, then dipped into an acid bath, washed, and âpassed over a series of hot rotating drums that realign the fibers and give the paper its strength,â before the silicone coating is applied. Reynoldsâ waxed paper, on the other hand, undergoes a process called super calendering, which compresses the paper to give it its transparency, before it is coated in wax.

I am looking for some easy, healthy, yummy recipes. Short preparation and cook time preferred. Please keep in mind that I'm a college student that works part time and I cannot spend tons of money either. Also, I do not eat chicken or pork. I prefer to eat seafood most of the time as it is lean and healthy. I eat beef very rarely because I prefer it over iron tablets. Thanks! :)

Stir fry - Put a bunch of vegetables in the wok with a touch of oil, serve over short grain brown rice.

Soup - Boil vegetables, throw in some noodles, drop in a raw egg or some cooked beans, how about a few shrimp.

Tortillas, beans & cheese. Slice in some tomatoe and avocado.

Sandwiches - Get nice crusty bread, good cheeses, fresh tomatoes, grilled vegetables, tuna fish. Also smoked fish on bagels.

Pilaf - Rice with herbs & seasonings, mix in toasted nuts & seeds, stir in some minced broccoli, carrot or cauliflower, cook using broth for more flavor, add fresh melon on top

Get some good Indian, Chinese and South Asian cookbooks!

Stuff a chicken breast with cream cheese/cheddar and rub spices on it, then wrap 1-2 slices of bacon around it and place in oven for about 30 mins. Serve with potato wedges and salad/rice with vegetables.

Have a couple of slices of bacon with slices of avocado on a bagel/ciabatta roll/slice of toast.

Get a stew going if you have a lot of time...you can use sausages/pork/chicken/beef etc...look for recipes online.

Or you can make cream of tomato soup and serve it with a grilled cheese sandwich. Simple but comforting I guess.

If you want a healthy meal, oven bake a salmon fillet (or any type of fish), drizzle some lemon juice and black pepper on it...then serve it with new potatoes (just boil them for 20 mins, drain, rinse, place back into the pan and add a tiny bit of butter/margarine and various herbs or mint) and steamed vegetables.

Other than that: hamburgers (home made or bought), meatballs and pasta in tomato sauce with garlic bread and/or salad, sweet and sour chicken with noodles/rice, onion omelette...depends what you have

I poked around on the internet, but got overwhelmed and put off. Most recipes
1. call for gourmet ingredients only sold at Central Market
2. are unhealthy ("add 1/2c of mayo..."),
3. are complicated ("preheat the oven to 375 while you caramelize the onions...")
or 4. overdo the concept of 'cheap' (pb&j, bologna, etc)

I don't mind some prep work and spending - I just want things to be reasonable, you know? I want something tasty that I can throw together in <30min that won't make me fat, broke, or have a heart condition. Thanks! =)

It's good and inexpensive to experiment with different kinds of mustard, vegetables, breads and meats. I Love alphalpha sprouts on almost anything and ciabatta bread...you can make wraps instead, it's easy to find some good flavored tortillas, and if sandwiches are boring you, switch to experimenting with salads for a week or so. Even fruit salad. You can also do a lot with yogurt...

Find a grocery store that has a great selection of vegetables at decent prices, where I am Fred Meyer has the best selection for the best price so I only buy from there. Wal-Mart always has bananas for 28 cents a pound, so I only buy them there....

I'll give you my Very favorite sandwich recipe that I made up and submitted to AllRecipes (I don't think they took that one though...I think there was a similar recipe they already had). It's not exactly what you are looking for, but it's great and you can make the stuff for it in larger quantities if you like it and just keep it in the fridge. The pesto sauce and artichoke/olive stuff can stay good in the fridge about a week.


Ingredients

* 1 package of Hoagie Style rolls
* 1 small jar black olives, sliced
* 2 cans artichokes, drained
* 1/2 cup crumbled feta cheese
* 3 tbsp olive oil
* sun-dried tomato spread
* 1 package of creamy pesto sauce
*

Directions

1. Prepare creamy pesto sauce according to package directions.
2. In a skillet, heat olive oil over medium heat.
3. Add drained artichokes and black olives to skillet, stirring often for about 15 minutes, while breaking up artichokes.
4. Pre-heat oven to 350.
5. Add the feta cheese to artichoke and olive mixture, heat an additional 5 minutes or until cheese is melted and mixed in.
6. Split and toast the hoagie rolls in the oven, about 5 minutes.
7. Spread the sun-dried tomato spread on the bottom side of the hoagie roll, layer a generous amount of the artichoke mixture on top of that, drizzle with about 2 tbsp of the creamy pesto sauce on top, add the top piece of the roll, and enjoy!

Breakfast 1
Oatmeal with fruit (you can add a bit of honey to sweeten)
Breakfast 2
1 egg (prepared as you like), baked beans, 1-2 slices of whole-grain toast, fresh fruit, you can add 2 pieces of turkey bacon if you like
Breakfast 3

2 open-faced veggie sandwiches on whole grain bread or wasa crackers, I add a thin slice of cheese (use a cheese carver it gets them really thin), fruit

Muesli and kefir (it tastes similar to plain yogurt it's excellent for digestion but it does take getting used too my husband loves it but I am not too fond of it personally) alternately you can have a healthy cereal with reduced fat cow's milk or fortified soy or rice milk depending on the cereal I might add fresh fruit I like nectarines with my bran flakes
Breakfast 7 (this tastes like a bit like a really nice chunky applesauce)

"Oatmeal"

Serves 2
2 apples
1 banana
1 tablespoon golden flax seed
2 teaspoons cinnamon
Pure water
Directions

Put the flax seeds in the purified water and let sit overnight.

Peel the apples and cut them in smaller parts (for the blender). Peel the banana and break in parts. Rinse the flax seeds.

Put all ingredients in a blender. Add 1/4 cup water, just enough to let the mixture blend well. Blend all ingredients until smooth. You may want to add a little more water if it's too thick (I don't).
Tip
Can add nuts and/or raisins

Salad (2-3 oz grilled chicken, cabbage shredded, apples (diced and peeled), yellow bell peppers julienned, diced red onion (small amount), caramelized cashews, avocado, cottage cheese (instead of dressing I detest cottage cheese but on this salad superb)
Lunch 2
Hummus and raw veg stuffed in a whole wheat pita, fruit salad
Lunch 3
tuna (just canned or pouched in water), bulghur (cooked in a vegetable broth), cucumber, tomato, avocado, bell peppers, mixed together you can add a small drizzle of olive oil

Chilli with rice (I add veggie crumbles for B-vitamins and so it's ultra low fat but you can use lean ground beef or turkey crumbles try to avoid full fat ground beef)

Apple Pork Wraps

Fresh sage
Handful of pork
Olive oil
A few leaves of romaine lettuce
Whole-wheat wrap
About 2" of cucumber, sliced thinly
1/2 an apple, sliced thinly
Salt and pepper

Chop the sage finely. Mix the pork and fresh sage with 1/2 - 1 teaspoon of olive oil. Lay one or two leaves of romaine lettuce on the whole-wheat wrap. Spread the pork evenly over the lettuce. Cover this with thinly sliced cucumber and apple. Add salt and pepper to taste. Wrap and eat.

Don't forget healthy snacks: plain nuts and seeds, oatmeal, yoghurt, raw veg (with hummus), fresh fruit, fruit and veggies smoothies great for breakfast but I know you only drink water so maybe you won't like, slice of healthy bread w/nut butter

Not necessarily in this order I just put them down as they occurred you can also swap dinners and lunches. I tried to make dinner lighter b/c it's ideal

Hey, Here are some meal suggestions:

Breakfasts:
Porridge with soy milk, dried fruit and seeds
Peanut butter on toast, a banana
Wholegrain cereal with fruit
Fruit salad, soy yogurt and crushed nuts

Lunch:
Vegetable soup, wholemeal roll
Kidney beans,salad and salsa in a wholemeal wrap
Hummus and salad in pita bread
PB & J sandwich

Dinner:
Vegan chili and brown rice
Pasta with veggies and beans
Chickpea and veg curry
