What is a healthy sandwich using fresh chicken?

I have some fresh chicken that was pretty recently cooked. What are some sandwiches that are low calorie and use chicken? The lowst calorie bread i have is dark rye bread (70 calories per slice) (but i only have one slice left), or the next lowest is 100% whole wheat bread at 90 calories per slice. So the only way i could use the dark rye is if i had an open faced, or a half sandwich. What are some good recipes that you would suggest? Please not too much cooking or presperation, and please include the calorie count of the sandwich, Thank you so much! (btw, this isnt the only kind of recipe i want, but i particularly like spicy chicken sandwiches)

CHICKEN SALSA SANDWICH GRILL

4 boneless skinless chicken breast halves
1/2 cup salsa
3 whole garlic cloves
2 tablespoons olive oil
1/3 cup shredded cheddar cheese
4 hamburger buns
4 large lettuce leaves
seasoned salt
pepper
a few drops fresh lemon juice (optional)

In a skillet, saute chicken with garlic cloves for 5-7 minutes on each side until chicken is white and opaque or until done (165°F). Turn garlic cloves until both sides achieve a roasted appearance, then crush them into the oil using a fork. Remove if the cloves begin to brown, as this will make the oil bitter.

Meanwhile, brush hamburger buns lightly with a few drops of olive oil (or melted butter if preferred) and broil or toast until lightly golden on the inside.

Remove skillet from heat. Slice each chicken breast into 3 or 4 pieces and divide evenly onto toasted buns. Sprinkle lightly with seasoned salt and pepper, and a few drops of freshly squeezed lemon juice, if desired.

Top with salsa and shredded cheese; run under broiler just until cheese has melted, about 2 minutes.

Variation: This can be prepared on the outdoor grill. Marinate chicken breasts in olive oil into which the garlic cloves have been pressed for 30 minutes before grilling chicken over hot coals.

Makes 4 Servings.

HOT CHICKEN SANDWICHES

1 cooked chicken, boned and chunked
24 slices white sandwich bread, with crust removed
1 lg. white onion, chopped fine
2 c. grated Cheddar cheese
1 c. milk plus enough clear chicken broth to cover sandwiches

Butter one side of bread slices. Place 12 in baking dish buttered side down. Sprinkle chicken, onions and cheese on bread. Lightly salt and pepper. Place remaining 12 slices buttered side up on the sandwiches. Sprinkle with paprika.

Pour milk and chicken broth just to cover all. Tightly cover with foil. Store in refrigerator overnight. Bake at 350 degrees for one hour. Take foil off and brown top if desired. Heat cream of soup (undiluted) and serve as a sauce to pour over sandwiches.

1 can water chestnuts, chopped

Loaf of sandwich bread

1. Mix and heat all ingredients. Let cool.

2. Trim crust from bread.

3. Spread liberally on bread.

4. Freeze sandwiches separately in sandwich bags.

5. when ready to serve, dip in 4 to 5 eggs, beaten with 3 tablespoons milk and then in crushed potato chips.

6. Bake at 300 degrees for 45 minutes to 1 hour.

7. Put dollop of cream of chicken soup thinned with milk on top. Makes 12 sandwiches.

CAJUN CHICKEN SANDWICH

2 (6 ounce) boneless, skinless chicken breast halves, butterflied or pounded thin
3 tablespoons Cajun seasoning
butter
2 toasted buns, split

Preheat cast iron skillet over high heat on top of stove. Dredge chicken in Cajun seasoning. Place small amount of butter in skillet and place seasoned chicken breasts in skillet.

Cook until seasoning is black, then turn and cook until done.

Serve on toasted bun with your favorite sandwich toppings.

Makes 2 sandwiches.

I make lunch for my sisters when they get home and I need some ideas.
I don't know how to make meat so I would prefer vegetarian dishes
or they could have lunch meat.

INGREDIENTS
1 (8 ounce) package fat-free cream cheese
1/2 cup reduced-fat mayonnaise
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dill weed
1/4 teaspoon garlic powder
10 (6 inch) flour tortillas, warmed
1 medium onion, chopped
10 (1 ounce) slices cooked deli turkey breast
Shredded lettuce
DIRECTIONS
In a small mixing bowl, combine the first six ingredients; beat until smooth. Spread over the tortillas. Sprinkle with onion; top with turkey and lettuce. Roll up tightly jelly-roll style; serve immediately.
Nutritional Analysis: One serving (1 each) equals 259 calories, 9 g fat (2 g saturated fat), 17 mg cholesterol, 701 mg sodium, 33 g carbohydrate, 2 g fiber, 13 g protein. Diabetic Exchanges: 2 starch, 1 lean meat, 1 fat.

Grilled Sourdough Cheese Sandwich
Sourdough bread
Butter
Chedder Cheese
Havarti Cheese
Tomato Slices
Oragano

Butter each side of the bread, On one slice place a layer of Havarti cheese, then tomato slices, followed by Chedder Cheese slices then the other slice of bread. Brown in a warm skillet sprayed with pam.

Otherwise you could always do a fresh garden salad with veggies.

Or kids always love a veggie tray with carrots, celery, broccoli, cauliflower, cucumber, etc.. and then having a bunch of dipping sauces like ranch, peanut butter, whatever salad dressing they like, honey mustard, cheese...

sandwich recipes?

i need to know low fat sandwich recipes because im trying to lose weight. but the only recipe i know is loaf with lettuce, tomato, cucumber then either tuna flakes, chicken, ham and cheese, or crab sticks. please share other ideas for snacks because i get hungry a lot of times during the day.

Red, White & Blue Cream Cake

1 pkg. low fat white cake mix
1 envelope Dream Whip (whipped topping mix)
1/2 tsp. baking powder
1 cup cold water
1/2 cup egg whites
1 tbsp. olive oil
1 tsp. vanilla
3 ozs. strawberry gelatin powder
1/2 cup boiling water
3 ozs. fat free vanilla pudding
1 1/2 cups skimmed milk
1 1/2 envelopes Dream Whip (prepared 3 cups)
1 1/2 cups fresh strawberries
1 cup fresh blueberries
1/2 cup miniature marshmallows

1. Preheat oven to 350. Prepare two 13" x 9" pans with cooking spray, set aside.
2. In a mixing bowl combine cake mix, 1 envelope of dry Dream Whip mix and baking powder.
3. In another bowl combine water, egg whites, oil and vanilla.
4. Mix dry ingredients with wet ingredients just to moisten.
5. Pour mixture into prepared pans. Bake for 20 minutes or until golden brown.
6. Place aluminum foil on wire racks. Remove both cakes from their pans and cool completely on wire racks.
7. Poke cakes with fork at one-inch intervals. Dissolve gelatin in boiling water and slowly drizzle over both cakes allowing gelatin to seep into holes. Chill for 1 hr.
8. Prepare pudding according to the package directions using 1 1/2 cups of milk. Fold pudding into 1 cup of prepared Dream Whip and 1/2 cup of blueberries.
9. Spread bottom layer with pudding mixture and spread remaining 1/2 cup of prepared Dream Whip on the top layer and the sides of the cake. Arrange strawberries, blueberries and miniature marshmallows on cake to resemble the American Flag. Place some miniature marshmallows around edge of cake.

12 Servings. 335 calories; 7g fat (19% calories from fat); 5g Protein; 61g Carbohydrate; 476mg sodium


Barbecued Sandwiches

4 c turkey light meat, skinless, cooked and cubed
1/2 c white vinegar
1/2 c ketchup
2 tsps Worcestershire sauce
1/2 tsp salt
1/8 tsp black pepper
8 pcs hamburger buns, split and toasted

1. Combine vinegar, ketchup, Worcestershire, salt, and black pepper in a large saucepan. Bring to boil.
2. Reduce heat and simmer uncovered for 30 minutes.
3. Stir in turkey and cook five minutes.
4. Spoon hot barbecue mixture over bottom half of toasted buns.
5. Top with other half of toasted buns.

8 servings. 189 Calories; 3g Fat; 21g Protein; 18g Carbohydrate; 48mg Cholesterol; 485mg Sodium

Green Bean Potato Salad


Serves: 8 person(s)

Preparation Time: 10 mins
Cooking Time: 15 mins


Each serving of this healthy salad equals one and a half veggie servings.


Ingredients:
1 lb green beans, with ends cut

2 lb red potatoes, cut into bite-sized pieces

1 cup diced red bell pepper

1/2 cup chopped red onion

3 cloves garlic, minced

3 Tbsp fresh dill

4 Tbsp balsamic vinegar

3 Tbsp olive oil

1 Tbsp dijon mustard

1 black pepper, to taste



Directions:
SALAD: Steam green beans in a steamer for 5 to 8 minutes. Cook potatoes in boiling water until tender. Cool green beans and potatoes and place in a bowl.

When cooled, add bell pepper and onion to the cooled green beans and potatoes.

DRESSING: As green beans and potatoes are cooling, prepare the dressing by mixing together garlic, dill, vinegar, olive oil, mustard, and black pepper. Top salad with dressing.

Vegetarian Sandwich

Ingredients:

1 small zucchini
1 yellow bell pepper
4 to 5 large fresh mushrooms, sliced
Cooking spray
1/4 teaspoon salt
1/4 teaspoon black pepper
Dried, sweet basil leaves, flavor to taste
2 tablespoons light, garden vegetable cream cheese
4 slices bread, toasted
1 medium tomato, 1/4-inch thick slices
Spinach leaves (optional)

Preparation:

Cut zucchini lengthwise into 4 (1/4-inch thick) slices. Cut pepper in fourths; remove seeds. Coat both sides of zucchini, pepper and mushrooms with cooking spray.

Place zucchini and peppers on grill rack or broiler pan coated with cooking spray; broil for 3 to 4 minutes on each side or until tender. Add mushrooms and broil for 1 to 2 minutes. Remove from grill; sprinkle with salt, pepper and sweet basil leaves.

Spread cream cheese on toast. Layer zucchini, peppers, mushrooms and tomato on two slices of toast; add spinach, if desired. Top with remaining toast slices. Cut each sandwich in half.

Ingredients:

2 tb Mayonnaise; reduced-calorie
4 sl Multigrain bread
1/2 Avocado; peeled
1/2 ts Lemon juice
2 ts Parsley; chopped
2 sl Monterey Jack or Cheddar . cheese
1 Red bell pepper; roasted . other recipe
4 sl Cucumber; peeled & sliced . lengthwise
2 sl Tomato
1/4 c Alfalfa sprouts

Instructions:

Salt & pepper to taste Spread mayonnaise on 1 side of each bread slice. Set the top 2 slices aside. Mash the avocado with the lemon juice. Spread on 2 slices of bread. Sprinkle with parsley. Next top with cheese slices. Lay half of the roasted pepper on the cheese. Cover with cucumber and tomato slices. Season with salt and pepper to taste. Top each with sprouts cover with the top slices of bread. Cut in half; wrap them up. Nutritional Information: per sandwich: 384 calories 21g fat : 25 mg cholesterol

"I came up with this recipe to entertain friends. Since I am a semi-vegetarian and love to BBQ, I am always inventing something new. The first time I made this, my meat-lover friends raved about this dish! I prefer mesquite coals over gas barbeques...however, either works fine."

Original recipe yield: 4 servings.
Prep Time:30 MinutesCook Time:20 MinutesReady In:50 MinutesServings:4

INGREDIENTS:

1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice

1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
1/2 cup crumbled feta cheese

DIRECTIONS:

In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
Preheat the grill for high heat.
Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer the with vegetables. Enjoy as open faced grilled sandwiches.

im on a diet. my goal is to lose weight, but i also don't mind staying the same weight.
the other day i had two yummy sandwich wraps, but from the grocery store. it had the white cheese, i think a little bit of mayo, lettuce, and meat (ham)
is that healthy, or too fattening?


i figured the mayo and cheese would make it unhealthy, so is there anyone who knows how to make a healthy sandwich wrap?

I'm at work right now, so I don't have the recipe on hand, but if you go check out this month's Better Homes and Gardens they have an awesome recipe for a BLT like wrap.. it only has like 275 calories in the entire thing and its GREAT!

I'm on a low calorie diet and need to eat more celery. But it tastes like fermented pond water! Peanut butter is way too high in fat and calories and I don't know what else tastes good. Preferrably something under 35 calories.

If you have an ED and cannot stop munching, you still should not eat something that tastes like fermented pond water.
You can eat lettuce/greens, mushrooms, asparagus, cucumbers, radishes and numerous other foods (if you can stomach anything from the cabbage family).

I used to not like celery either, omitting it in all my recipes. And I like everything with few exceptions, like cinnamon and honey (childhood traumas), spicy food and poultry white meat or skin. White meat is too dry, the skin is too fatty so dark meat is perfect.

Then I stopped smoking and had to munch all day long for 2 weeks on celery/raw carrots feeling like Bunny Rabbit. My natural tan skin turned fake orange tan. With celery, I would end up with a dry ball of fiber in my mouth (like a chewing gum) that I would not swallow so I would spit it out as too much fiber will constipate you. You can spit out a dry fiber ball in your mouth but once it gets in your intestines, you might get an obstruction and constipation.

It never occurred to me that you would need some dip to eat celery.
That is very American, like eating apples or bananas with peanut butter.
Btw, natural peanut butter is very healthy, in moderation, like 2Tbsp, as you need those calories of good protein and good fats to feed your brain and organs (you sound like your brain needs it).
A PB&J sandwich is healthy…peanut butter and jelly spread between 2 slices of whole-wheat bread. You get your carbs, your protein, your fats, your fiber and your vitamins/minerals.
What more can you ask for?

Pea-nuts are not nuts…they’re legumes from the same family as peas. Try Nutella (from Europe, so it does not have crappy additives that Americans still allow in their processed food) and it has true nuts (hazelnuts) and chocolate, to make it yummy, provide antioxidants and act as a natural antidepressant (makes you feel better if you feel bad and makes you feel good if you don’t feel bad).


Now I like celery if I “peel” it (peel away those outside strings) and cook it with soups (the “fermented pond water” taste goes away if cooked in water). I also like raw (peeled) celery, cut tiny, tiny, in my tuna sandwich to add crunchiness. I would guess the strong taste of tuna overwhelms the taste of the 2Tbsp of celery.

When I was a teenager I did not like garlic, onions, Brussels sprouts or raw seafood.
I bet I would have hated broccoli too, if I would have been exposed to it (I was not).
Now I love all of those and I use garlic a lot, I make onion soup, I love Brussels Sprout Parmentier (with garlic and roasted potatoes), and I like sushi.

If you’re a teenager, you do not have adult taste buds yet. Because if you’re a teenager, you don’t get food cravings for low calorie food as you need a lot of calories to grow. You get cravings for meat and potatoes and anything high carbs like cookies/cakes/candies…and bread with chocolate (or Nutella) and lots of milk, cheese and ice-cream.
You should not get craving from veggies from the cabbage family (cabbage, Brussels sprouts, broccoli, cauliflower, radish, turnips, collard greens, kale…) or celery, asparagus, beets and artichoke.

I went out of my way to make artichokes fun to eat for my kids…fresh artichokes with the prickly ends of the leaves cut off (not artichoke hearts coming from a can that you use for salads), pressure cooked and served with their favorite dip (I used vinaigrette but did not mind if they wanted to use…ketchup). You eat one leaf at a time until you get to the heart and still I miserably failed to make them appreciate artichokes, because they did not have the taste buds for it...yet...as it did not have enough calories for their need (I still love artichokes).

I stay away from hummus for political reason, as some countries fight about some other countries stealing their recipes…trying to find any reason to go to war. They are worse than a daughter-in-law stealing a recipe from her mother-in-law. The Lebanese are like “the Israelis stole our hummus recipe” but then the Israelis recipe tastes better so now the Lebanese are pissed off.
If I want chickpeas, I’ll just make a couscous and if a Berber comes into my kitchen claiming that I stole a couscous recipe, I could mention that my father was Berber so YOU shut up.

I wonder which country made the first bread and could claim “protected status”.



You don’t need some dip to help you swallow some food that tastes crappy to you.
Ditch the celery.
Eat enough to cover your BMR + growth (-21).
Eat enough calories to cover your BMR or your body will adapt to a low caloric intake and lower your metabolism, making it very hard for you to use your body fat. And then, as soon as you would eventually start eating normally again, you would make body fat very easily, because you would have a lower metabolism and therefore regain all the weight you lost and keep going up, unless you exercise A LOT.

You should probably scrape off part of the mayonnaise and mustard you have on the sandwich because less mustard and mayonnaise, the more healthy it gets, but it's still yummy though. You should cut the sandwich in half so you can have half of how much calories there are in the whole sandwich you are eating. This is how I believe it worked for me when I was a 13 year old.

You should cut the sandwich in half so you can have half of how much calories there are in the whole sandwich you are eating. This is how I believe it worked for me when I was a 13 year old.

im on a diet. my goal is to lose weight, but i also don't mind staying the same weight.
the other day i had two yummy sandwich wraps, but from the grocery store. it had the white cheese, i think a little bit of mayo, lettuce, and meat (ham)
is that healthy, or too fattening?


i figured the mayo and cheese would make it unhealthy, so is there anyone who knows how to make a healthy sandwich wrap?

I'm at work right now, so I don't have the recipe on hand, but if you go check out this month's Better Homes and Gardens they have an awesome recipe for a BLT like wrap.. it only has like 275 calories in the entire thing and its GREAT!

Answer
Put a pork rub on Chicken breast marinated in BBQ sauce for 30 min or more. Then place on grill. Cook on medium for 30-45 min (depending on size of breast)

Cut broccolie florets and spray with Pam, sprinkle with salt and garlic. Skewer them and place on grill when chicken is about 2/3 done. Broccolie should be juicy and flavorful (not scorched) when taken off grill.

What are some cheap, easy and healthy recipes?
Q. I'm a terrible chef, but I'm moving into my own place soon and cannot rely on quick dorm food anymore :(

It is one of my favorites. You don't have to add all the ingredients for many recipes like the one below. I leave out the peppers and use any pasta sauce you like. I buy big basil plant at Trader Joe's for a just a couple of bucks. Using fresh ingredients as much as possible really makes a big difference. =)

Mozzarella Chicken Sandwich

Ingredients

* 1/4 cup (about 2 ounces) sun-dried tomato pesto (such as Classico)
* 2 tablespoons fat-free mayonnaise
* 3/4 pound skinless, boneless chicken breasts
* 1/4 teaspoon pepper
* 1/8 teaspoon salt
* 1 teaspoon olive oil
* 1 (8-ounce) loaf ciabatta
* 12 large basil leaves
* 3/4 cup (3 ounces) shredded part-skim mozzarella cheese
* 1/2 cup sliced bottled roasted red bell peppers
* 1 large tomato, thinly sliced

Preparation

Combine pesto and mayonnaise in a small bowl, stirring to blend.

Sprinkle chicken with pepper and salt. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, and cook for 3 minutes on each side or until done. Remove chicken to cutting board, and cool slightly. Cut chicken lengthwise into thin slices.

Preheat broiler.

Cut ciabatta in half horizontally. Place bread, cut sides up, on a baking sheet. Broil 3 minutes or until lightly browned. Remove bread from pan. Spread pesto mixture evenly over cut sides of bread. Arrange the chicken slices evenly over bottom half. Top chicken evenly with basil leaves, and sprinkle cheese over top. Place bottom half on baking sheet, and broil 2 minutes or until cheese melts. Arrange bell pepper and tomato over cheese, and cover with top half of bread. Cut into 4 equal pieces.
