Cheap Healthy Salads Recipes?

I'm looking for healthy salad recipes that I can make at home on a strict budget of 50 dollars for the whole month to cover 1-2 out of 3 meals a day. The reason is I'm trying to lose weight and my goal is to prepare something healthy for at least two of my daily meals since dinner is usually cooked for the house by someone else. Salads have caught my attention just because I really like salads and my diet currently has few fruits and veggies in it so I'm killing two birds with one stone there. Anyone have some salad recipes that can cover lunch for a week that incorporate chicken (i hate chicken breasts it's so dry) and some kind of pasta for around 300-350 calories a serving? I'm not a picky eater but I'm also not a chef. If the salads voluminous enough I wouldn't mind swapping out snacks for salads and eating a lighter lunch. If it helps I'll lay out the regime the nutritionist gave me.

Breakfast: 300-500 calories
Snack: 100 calories
Lunch: 300-500 calories
Snack: 100 calories
Dinner: 400-500 calories

The recommended amount of calories consumed was less than 2000 calories with regular walking exercises. I'm morbidly obese trying to get healthy so obviously I'm not going to actually consume 2000 calories a day. I've looked uo all the tips there can be found on stretching a meal I don't need more tips I'm asking for salad recipes to try.

I used to make fairly cheap salads for lunchâa wedge of cabbage, some carrot, celery and cucumber sticks, sliced yellow paprika and red cherry radish, a few cherry tomatoes, 3-4 slices of rolled supermarket ham, and 6-8 half-inch cubes of cheese, usually natural, sharp cheddar. For dressing? A pinch of salt and a dash of pepper! VERY occasionally, my wife would put a teensy tub (about one ounce) of miso + mayo + soy or Worcestershire sauce, for dipping the vegetable sticks and sometimes I'd throw a whole, or half a boiled egg into the lunch-box. I could eat this 3-4 days running, but would want a ham & cheese sandwich or a burger at least once per week

I've been eating only fresh fruits for breakfast for the past 18 months, and lost 28lbs (13 kilos) in less than a year without any change in exercise, which shocked my doctor! My previous weight was 93kg/200+lbs (borderline obese at 5'11") and my last 'target' weight was 88kg, but I was a smidgen under 80kg at our next meeting. I was eating 'mostly' salads for lunch, but I could also do a small ham and *real* cheese bagel (180-190kcal) and a cup of cold Vichysoisse/corn/pumpkin soup (70-80kcal) and I could work all evening on that.

Best of luck with the weight loss. Watch out for the 'stealth calories' in salad dressings, please!

Houston's Grilled Chicken Salad
Lime Dressing:
1/2 cup lime juice
4 teaspoons honey mustard
7 1/2 tablespoons honey
4 tablespoons vegetable oil
2 garlic cloves, minced fine
1 teaspoon pepper
1/2 teaspoon salt
Peanut Sauce:
4 tablespoons Peanut butter
4 tablespoons soy sauce
4 tablespoons hot water
2 teaspoons sesame oil
1 tablespoon ground ginger
Mix ingredients for lime dressing, then mix ingredients for peanut sauce.
Salad ingredients for Houston's grilled chicken salad: mixed greens,
carrots, thin tortilla strips, and grilled chicken breasts sliced in thin
slices. Mix the salad ingredients with the lime dressing. Drizzle peanut
sauce on top.

Applebee's Oriental Chicken Salad
Salad:
1 egg
1/2 cup milk
1/2 cup flour
1/2 cup corn flake crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 boneless, skinless chicken breast half
oil for frying
3 cups chopped romaine lettuce
1 cup red cabbage
1 cup Napa cabbage
1/2 carrot, julienned or shredded
1 green onion, chopped
1 tablespoon sliced almonds
1/3 cup chow mein noodles
Dressing:
3 tablespoons honey
1 1/2 tablespoons rice wine vinegar
1/4 cup mayonnaise
1 teaspoon Grey Poupon Dijon mustard
1/8 teaspoon sesame oil
Prepare dressing ingredients by mixing in a small bowl. Refrigerate while
preparing salad.
Cut each chicken breast into 5 strips. In one bowl, beat egg with milk.
In another bowl, combine flour with corn flake crumbs, salt and pepper.
Preheat oil over medium heat.
Dip individual chicken pieces in egg mixture and then roll in the flour
mixture. Fry chicken until browned, drain and set aside.
Prepare salad by tossing the chopped romaine with the chopped red
cabbage, Napa cabbage, and carrots. Sprinkle sliced green onion on top of
the lettuce. Sprinkle almonds over the salad, then the chow mein noodles.
Cut the chicken into small chunks. Place the chicken onto the salad
forming a pile in the middle. Serve with salad dressing on the side.

Applebee's Club House Grill Sandwich
2 thick slices of french bread
softened butter
mayonnaise
1/3 cup shredded cheddar cheese
2 slices deli turkey breast
2 slices deli ham
2 slices tomato
2 tsps. bullseye barbecue sauce
Butter one slice of bread and put butter side down into preheated skillet,
on medium heat. Spread the up side of the slice with mayo. Sprinkle on half
of cheese. Heat the turkey and ham slices in the same skillet for about 30
seconds. Lay the turkey on the cheese, then the tomato. Spread bbq sauce
over tomato, then lay on the ham, sprinkle the rest of the cheese over ham.
Butter the second slice of bread on one side and put on top, with butter
side up. The first bread slice should be brown, flip sandwich over and brown
the second side for 2â3 minutes, or till golden brown. Remove from skillet,
cut in half diagonally and serve with additional bbq sauce.

Wendy's Chicken Caesar Fresh Stuffed Pita
Dressing:
1/2 cup water
1/8 teaspoon dry, unflavored gelatin
1/3 cup white vinegar
1/2 cup olive oil
1/2 teaspoon finely minced red bell pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon worcestershire sauce
1/8 teaspoon coarse ground black pepper
dash parsley
dash oregano
dash thyme
dash basil
1 tablespoon grated Romano cheese
1 tablespoon grated Parmesan cheese
2 tablespoons egg substitute
2 boneless, skinless chicken breasts
salt
pepper
6 cups romaine lettuce, chopped
1/4 cup red cabbage, shredded
1/4 cup carrot, shredded
4 pita breads
4 teaspoons shredded, fresh parmesan
Make the dressing by first dissolving the gelatin in the water.
Heat the mixture in the microwave on high for two minutes or
until it begins to rapidly boil. Add the vinegar, then whisk
while adding the oil. Add bell pepper, salt, garlic powder,
worcestershire, black pepper, parsley, oregano, thyme and basil.
Let dressing cool for about 15 minutes before adding cheeses and
egg substitute. Whisk until slightly thicker, then chill.
Overnight refrigeration makes the dressing thicker.
Preheat a barbecue or indoor grill to medium heat. Salt and
pepper the chicken, then grill it for 5 minutes per side, or
until done. Remove chicken from the grill and dice it.
While chicken cooks, prepare the salad by combining the

Leftover Turkey Soup

Makes: 6 servings, 1 cup each

1/2 cup chopped onion
1 medium carrot, sliced
1 stalk celery, sliced
1 Tbsp. oil
2 cans (14-1/2 oz. each) chicken broth
2 cups water
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
2 cups cubed cooked turkey
1/2 cup bite-sized pasta, uncooked

COOK onion, carrot and celery in hot oil in large saucepan 3 to 5 minutes or until crisp-tender, stirring occasionally.
STIR in chicken broth, water and dressing mix. Bring to boil.
ADD turkey and pasta; cover. Reduce heat to medium-low; simmer 10 to 12 minutes or until pasta is tender.

4 cups chopped cooked chicken
1-1/2 cups chopped celery
1/2 cup KRAFT Mayo Real Mayonnaise
1/4 cup GREY POUPON Dijon Mustard

1/8 tsp. ground black pepper
8 lettuce leaves
16 slices rye bread

MIX chicken, celery, mayo, mustard, lemon juice and pepper until well blended.
PLACE 1 lettuce leaf on each of 8 bread slices.
COVER evenly with the chicken salad; top with remaining bread slices.

I like to add cooked chicken to Zatarain's boxed rice. I especially like to add it to the Jambalaya and Red Beans and Rice. It's a one pot meal.

I also shred it and simmer it with salsa and use it for tacos, burritos, or nachos.

My husband shreds it and then sautes some onions until tender, adds bbq sauce and the chicken. He simmers it until everythig is hot and then makes a sandwich with it.

- Egg Salad!- Hard boil the eggs, dice them, and mix them with mayo and seasonings. Put the salad in a container separate from the bread. When you get to lunch, just put it on the bread with a spoon. Have with a fruit, a cup of milk, and a little treat- that way you get a healthy balanced meal.
You can also do this with chicken salad, or tuna salad.

- Grilled Chicken strips and a soft pretzel with honey mustard dip. Have with a fruit and a cup of milk or fruit and a yogurt.

- Grilled chicken sandwich- Bring a packet or little cup of mayo, a container of grilled chicken breast with lettuce and tomato, and a separate bread roll. Spread the mayo on and put the chicken/lettuce/tomato on the bread. Have that with a side salad, or a fruit, or yogurt. You could also have it with cheese and crackers!

- Tacos! Make taco filling- I like some ground beef mixed into refried beans with salsa- pack it in one container. In another container pack some shredded lettuce and cheese. In a third little container have some sour cream. And then pack some taco shells of your choice. Put the tacos together when you get to school.

- Pasta Salad

- Chicken caesar salad wrap

- Tuna Salad Wrap

- Buffalo Chicken Wrap

- Yogurt parfaits with cereal and nuts. Fruit juice. And a snack.

You can also do this with chicken salad, or tuna salad.

- Grilled Chicken strips and a soft pretzel with honey mustard dip. Have with a fruit and a cup of milk or fruit and a yogurt.

- Grilled chicken sandwich- Bring a packet or little cup of mayo, a container of grilled chicken breast with lettuce and tomato, and a separate bread roll. Spread the mayo on and put the chicken/lettuce/tomato on the bread. Have that with a side salad, or a fruit, or yogurt. You could also have it with cheese and crackers!

- Tacos! Make taco filling- I like some ground beef mixed into refried beans with salsa- pack it in one container. In another container pack some shredded lettuce and cheese. How To Can Chicken Breast.The ingredients here are simple: Chicken and Salt.

Begin by cutting your boneless chicken into chunks then pack them raw into the jars, leaving about 3/4th of an inch headspace

Next add 3/4 tsp of salt to each jar

Wipe the rims with a damp clean rag and then place the lids and rings on the jars. Remember if you are using Tattler lids to back them off 1/4 inch. After you get the lids and rings on then place into your canner with the needed water for a long processing time. You do not want it to boil dry during processing. Use the racks in between levels of jars.

Place the lid onto your canner and then bring it to a boil. You want the steam to vent out of the stem for about 10 minutes. Then place your weight on the canner and set to 15lb (or the recomended pressure for your elevation). Once the canner gets to the correct pressure then time for 75 minutes for pints and 90 minutes for qts.

Once the time is up then slide your canner off the burner to a cool spot. Do not try to rapidly reduce the pressure you can have jar breakage and seal failure. After it is cooled sufficiently to have no pressure left remove the lid carefully (the steam can burn you) Then using a jar lifter remove the jars and place them on a clean dry towel. The jars are very hot at this point and may still be boiling inside the jar. If you are using Tattler lids then now is the time to tighten the rings down. Once again use oven mits as the jars are very hot.

Leave the jars undisturbed until they are fully cooled.

After they have cooled then place a piece of tape on the lid and mark at least the date also the contents if you so desire. Chicken prepared like this is great for many dishes but our favorite is chicken salad for sandwiches.
Chicken Salad

1 jar canned chicken
6 hard boiled eggs
Mayo
Relish
salt/pepper to taste
Chcopped green onions
chopped celery if desired

Place into a bowl the drained chicken broken up, the cut up hard boiled eggs, the chopped onions and celery. Then add relish to taste and Mayo to desired consistency, salt and pepper to taste. Put whatever amount you want on bread or crackers and enjoy. It is beautiful served on a lettuce leaf.

I am making shredded chicken sandwiches for my daughters birthday. I am just using the big can of the boned chicken, half of a box of Ritz crackers, and a big can of cream of chicken. About how many sandwiches do you think that will make? I don't know whether to double it up or not...
Its like the giant can! Im not sure how much but it usually fills a crockpot!

Probably only two if you don't mix the shredded chicken up with chopped lettuce & mayo.... if only mayo on the bread & the shredded chicken, then two.... if you are gonna make a chicken salad with it, then about 3.... =)
A can of tuna says 2.5 servings but really only think of it as two if not mixing with chopped lettuce, sugar, mayo, etc.... I use one can tuna per tuna salad sammy recipe which I put 2 cups chopped lettuce, mayo, etc, in & still only get 3 sammies.... =)
But you did say a big can so it may be bigger than the little tuna cans. In that case just read the serving size & servings per container on the nutrition label. If it says half a serving (2.5 servings) just round down. =)

For the little amount of chicken you get per can, it's cheaper to buy a bag of frozen chicken breasts if money is a factor.... =)

Just like a can of Spag-Os, cannot understand it.... it's high in sodium, you practically have to eat the whole can for one person to be satisfied & it's like baby mush.... buying a jar of spag. sauce & cooking some spag or elbow noodles is soo much cheaper/serving, wayyy healthier, & you get way more than one serving.... go figure... =/

Turkey Club Sandwich
Serve this double-decker sandwich with carrot and celery sticks and red and green grapes. If you don't like Swiss cheese, substitute any other variety, such as cheddar cheese.
4 tablespoons fat free mayonnaise
4 teaspoons fresh basil, chopped
12 slices sourdough bread, toasted
8 ounces turkey breast lunch meat
6 slices bacon, fried crisp
4 romaine lettuce leaves
8 slices tomato
4 slices Swiss cheese
In a small bowl, combine mayonnaise and basil. Spread 1 teaspoon of mixture on each slice of bread.

Place 1 slice of bread on plate. Top with 1 ounce turkey and 1 1/2 pieces of bacon. Add another lsice of bread, 1 ounce turkey, 1 lettuce leaf, 2 slices tomato and 1 piece of cheese. Top with last slice of bread. Place a toothpick in each half of sandwich and cut down the center. Serve immediately

Tuna Salad Sandwiches
For variety, add cucumber or tomato slices to each sandwich.
2 cans albacore tuna, in water, drained
½ cup celery, diced
½ cup apple, diced
1 teaspoon lemon juice
â cup fat free mayonnaise
4 lettuce leaves
8 slices whole wheat bread
In a small bowl, flake tuna with fork. Add celery, apple, lemon juice and mayonnaise. Stir well.

To serve, place 1 leaf of lettuce on a slice of bread. Top with 1/4 of tuna mixture, spread to edges and top with another slice of bread. Serve immediately.

Philly Steak Sandwich
Cheddar cheese is high in fat and calories, so limit the cheese to 2 tablespoons for each sandwich. For variety, use roast beef that has been rubbed with Italian seasonings.
1 bell pepper, thinly sliced
1 onion, thinly sliced
12 ounces lean roast beef, shaved thin
4 whole wheat buns
½ cup Cheddar cheese, shredded
Preheat oven to 350 degrees. Coat a baking pan with cooking spray.

Spray frying pan with cooking spray. Over medium heat, saute the peppers and onions until they soften, about 3 - 5 minutes. Add the roast beef and saute for an additional 2 -3 minutes.

Place 1/4 of the roast beef mixture on each bun and place on baking pan. Top each with 2 tablespoons of cheese. Bake until cheese has melted, about 2 - 4 minutes. Serve immediately.

Mexican Roll Ups
A tasty alternative to sandwiches for a lunchbox or picnic. Roast beef, chopped tomatoes, bell pepper and seasonings are rolled in whole wheat tortillas and wrapped in tin foil. Easy to transport and neat to eat.
6 whole wheat tortillas
6 leaves romaine lettuce
1 ¼ pounds sliced roast beef
1 cup chopped tomatoes
1 cup chopped red bell pepper
2 tablespoons olive oil
3 tablespoons red wine vinegar
½ teaspoon ground cumin
For each roll up, tear off about a 15 inch piece of wax paper or aluminum foil. Place the tortilla on the paper or foil. Top with lettuce leaf, about 3 ounces of beef, divide tomatoes pepper, oil, vinegar and cumin evenly over all tortillas.

Begin rolling the paper or foil over the tortilla to encase the filling. Roll until the sandwich is completely rolled.

To eat, peel back the paper or foil

Ham and Egg Salad
1 ½ cups fully cooked ham, cubed
6 egg, hard boiled, chopped
½ cup celery, chopped
½ cup sweet pickle relish
½ cup mayonnaise
2 tablespoons honey mustard
Combine first 4 ingredients. Blend together mayo and mustard, add to ham mixture and toss lightly. Chill well before serving

Chicken Tostadas
Chicken breasts make a fine change of pace for tostada filling, along with tomatoes, lettuce and bell pepper. A garnish of salsa with fat free sour cream and grated cheese keep this dish a healthy one.
1 ½ pounds chicken breasts, cooked
3 cups romaine lettuce, torn into bite size pieces
½ cup bell pepper, chopped
½ cup chopped tomatoes
6 flour tortillas
6 tablespoons fat free sour cream
6 tablespoons salsa
6 tablespoons Cheddar cheese, grated
Heat tortillas by placing them in a large dry skillet over medium high heat, turn one until golden and puffy.

Place tortillas on plates, evenly distribute remaining ingredients over tops of toasted tortillas. Serve immediately.

Chicken Salad
3 - 4 cup cooked chicken, diced
1 cup celery, chopped fine
1 cup apple, peeled, cored and chopped fine
1 teaspoon salt
¼ teaspoon pepper
â teaspoon ground cayenne pepper
1 teaspoon dried parsley
â teaspoon dill weed
½ cup mayonnaise
¼ cup sour cream
Combine all ingredients. Chill overnight before serving.

My goal is to slim down. Possibly to get a flat stomach or a 6-pack. I'm trying to eat healthy now, so instead of my usual burger & other garbage like that, I eat chicken sandwiches mainly at fast food restaurants like Checker's/McDonald's. Would this still be a bad thing if I was trying to get a flat stomach/6-pack? Same question about Chinese food.

If the chicken is grilled and on a whole grain bun and has no mayo or ketchup. The only healthy fast food choices Ive found are grilled tilapia from Captain D's and grilled chicken and green beans from kfc. Even then you should throw out the breadstick that comes with the tilapia from capn d's.

Don't let salads fool you, the dressings crutons and cheeses they come with are loaded with greese in most cases. You're better off learning some healthy recipes and cooking at home, the healthy home cooked stuff can taste better anyway if you just know some recipes. You can make a healthy pizza with a whole grain crust, natural pizza sauce, low fat and fat free cheeses, and turkey pepperoni.
