can u give me a simple,healthy,snacky meal?(recipe)?

3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.serves 4.

I'm 15 and love to entertain friends. We usually order pizza and eat chips and all that stuff, but I've been dieting for a few months and I'm doing well with it. I want to get food to benefit me and things my friends will like. This is what I'm thinking so far.

Snack: Sun Chips - Cheddar harvest
Chips and Salsa

Movie Meal: No idea, I really need suggestions for that. Frozen foods would be best.

I wanna make a cake for a friend whose leaving for a different school and whose moving so if anyone has any healthy cake/brownie recipe I'd love to see it. Or vegan? I think thats healthier.

Chips and salsa, and sun chips are not 'healthy'.
For party snacks vegetables and ranch dip are very popular. You can buy them in a set at your grocery store. Popcorn with no butter flavoring or added butter is good. If it is too plain add some sea salt.
You could try like a make your own california roll kind of thing.
I'm asian and my favorite snack is to make my own little kind of california roll.
You'll need steamed rice, one of your favorite vegetables, a meat (could be chicken if you wanted but usually is crab meat), avocado and egg. Prepare a bunch and slice them up so you can make your mix. You wrap it in dried salted seaweed. Which is what is used for california rolls. Don't worry about how scary and nasty it sounds. You could have make your own sandwich meals. You'll make them and watch your movie. Just a load of wheat bread and toast the amount needed. Get some deli meat like turkey which is very lean. Lowfat mayo and lettuce tomato etc. It's good with avocado too. For the brownie suggestion I have the most suited idea.

Gummi candy recipes anyone?

Anyone have any gummy candy reicipes I won a contest and have 30 pounds of gummi bears I have done chocolate dipped so far so many gummis

Make an adults only gummy bear recipe for parties. Pour a 16 oz. tub of gummy bears into a glass container, then add 1 1/2 cups of vodka. Cover the top of the container with a lid or plastic wrap and place into the refrigerator. Keep the bears in the refrigerator to soak for three to five days, making sure to stir them twice a day so all the bears get evenly soaked. Once the gummy bears have absorbed the majority of the vodka, they will softer and bigger than their normal size. Serve them on dishes at a party as a fun alternative to other cocktails.







Use gummy bears as an ice cream or frozen yogurt topping. Scoop a basic flavored ice cream such as vanilla or chocolate into a bowl and sprinkle a small handful of gummy bears on top. To make the gummy bears better adhere to the ice cream, let the ice cream slightly soften and make a center indentation with a tablespoon. Place the candy into the center well and stir so the gummy bears are evenly distributed throughout the ice cream. Alternatively, you can dip ice cream cones into a tub of gummy bears; however, only give this treat to older children who will chew it properly and not choke.







Add a sweet taste and chewy texture to standard trail mix by including gummy bears. Place one cup each of pretzels and peanuts into a large bowl, then add 1/2 cup each of raisins (or other dried fruit) and gummy bears. Mix all the ingredients together and store in an airtight storage container or individual plastic sandwich bags. For a healthier gummy bear trail mix, mix one cup of granola or high fiber cereal with one cup of almonds. Add in 1/2 cup each of raisins and gummy bears.

Okay, so I am having a PartyLite candle show/party and my theme is cheese and wine.

So...obviously I will be serving white and red whine and four kinds of cheese.

My dilemma is, I need some ideas for snacks, sandwiches, and trays. I figured obviously maybe a veggie tray, some fruit salad, maybe chips or something? (***I am on a diet and I want to serve healthy stuff as well, nothing too gross and fatty) I don't know. I need some good ideas. And the most important thing I need help with is I need a recipe/idea for a type of sandwich to serve (like the mini-sandwich things--like where you cut the sandwich in fours and serve in squares or whatever). My friend did cucumber sandwiches at her party and I don't wanna copy her so I wanna do something different, but something unique besides lunchmeats or whatever.

Any ideas? thanks everyone
Also, does anyone know any good red wine I can serve that is not overly expensive?

I really want to bring health back to the family, and for me, also, so please help me out here.
Our family's favorite dishes are lasagna, shake and bake chicken and enchiladas.
We like all meats but we never eat fish or seafood.

Ugg I spent a lot of time answering this question for you but then my computer and I had a disagreament and I lost my long answer so I'll re-try.

Okay the following are recipes that I have not yet tried but fully intend to. I got these recipes from one of those cook books at the check out aisle at the market. Some are from the Irish ones and the other are some a summer one from last year.


Creamy Corned Beef Sandwiches:

1-8oz pkg cream cheese softened
1/4 cup mayo
2 tbsp dijon mustard
1-2 1/2oz package thinly sliced corned beef cooked and thinly sliced
2 tsp fresh dill or 3/4 tsp dried dill weed
1/4 tsp salt

Mix everyhting together and spread on your fav bread. Or spread just thin layer on seedless (light) rye bread. Trim the egdes to serve as an app or use cookie cutters such as a shamrock to serve at a party.

Color full veggie saute:
2 med red peppers julienned
2 med green peppers julienned
2 med zuccini julienned
4 med carrots julienned
1 tsp olive oil
4 cups thinly sliced cabbage
1/4 tsp salt
4 tsp cider vinegar
1/4 cup water
1 tbsp sesame seeds.

In a large skillet, saute the peppers, zuccini, and carrots in oilive oil, for 5 min. Add the cabbage, salt and pepper, saute 1 min longer.

In smal bowl combine vin and water, pour over veggies. Cook and stir for 2-3 min or until heated thru. Sprinkle with sesame seeds.

Strawberry Tomatos Salsa:
1 pint fresh strawberries-chopped
4 plum tomatoes seeded and chopped
1 small red onion finely chopped
1-2 med jalepenos minced
2 tbsp lime juice
1 tbsp olive oil
2 garlic cloves minced

Mix everything in a bowl and put in fridge. Serve over chicken or as a dip with tortilla chips.

Strawberry Tossed salad:

6 cups torn mixed salad greens
1 pint fresh strawberries slices
4 oz crumbled feta cheese
1/4 cup sunflower seeds
Balsamic vinaigrette

Toss and serve

Warm Green and Potato Salad:
1 lb small red, white or yelloe new potatoes
12 oz fresh green beans trimmed and cut into 1 inch pieces (approx 2 cups)
1/4 cup dried tomatoes in oilive oil drained, and chopped
1/3 cup botteled parmesean or itallian salad dressing
4 cups pre-washed itallian sals greens
4 slices bacon, crisp cooked and crumbled (optional)

1/2 or 1/4 the potatoes, boil with the beans in lightly salted water until tender. Drain.

Return to the pan and add remaining ingrediants


The next recipes are all one I have tried and love and also use all the time.


Also remember that lasagna is actually a nice meal, it includes veggies, meat, dairy, starch etc... If you want to sneak in more veggies the add some shredded carrots, zuccini, and yellow crooked neck squash. If you family already likes chunky sauce then use small chopped zuccini, and yellow crooked neck squash and some sliced mushrooms of your choice. Simmer in the sauce on a low heat for about 10-15 min and then continue as you normally would in your recipe. Also having it with a nice salad and some fresh fruit will really round the meal out nicely.

Stew is good and also includes someof everything. Here is my recipe for beef stew but you could also add prok stew meat.

1 pound stew meat
1 or 2 carrots peeled and cut into big chunks
1 or 2 ribs of celery cut into big chunks
1 onion chopped
1 clove garlic chopped
1 can stewed tomatoes
1 large potato or 2 medium potatoes peeled and chopped
Oil
Flour
Seasonings such as seasoned salt, granulated garlic, pepper, celery salt, onion powder and a few bay leaves

In a large skillet heat the oil.
In a zipper seal bag add flour and all the seasoning to taste-except bay leaves. You want to seasoning it kinda heavily becuase it will basically season your whole stew.
Toss the meat into the bag of flour and coat well. Add the meat to the oil, adding a little extra flour.
Meanwhile add all veggies and bay leaf to a soup or crock pot. Add the meat when it is done frying, add all the flour drippings as well.
Simmer on low heat until the meat and veggies are tender. Adding more water or seasonings as needed. Stir from time to time as well.

I also like to make hamburger soup. It is pretty similar to the stew recipe above but it is still really great.

1 pound hamburger
1 or 2 carrots peeled and cut into big chunks
1 or 2 ribs of celery cut into big chunks
1 onion chopped
1 clove garlic chopped
1 large white potato peeld and chopped or 4-5 red potatos depending on size halfed or quartered
1 can corn or 1/2 bag frozen corn
1/2 bag frozen peas
Beef broth or beef bullion
Seasonings such as seasoned salt, granulated garlic, pepper, celery salt, onion powder and a few bay leaves


Cook the burger and drain and set aside. In a large soup pot cook all veggies except corn and peas in some butter. Add the bay leaves and then also the liquid of your choice. Simmer until all the veggies are tender, and add seasonings to taste, the beef, and peas and corn. Simmer until corn and peas are heated thru and it is seassone to your liking.
Enjoy!

This chicken recipe can be easily 1/2 or doubled depending onhow many people you are serving.

Crock Pot Chicken Salsa Curry


10 chicken thighs-bone in
1 jar of your fav salsa
1/2 onion chopped
1 tablespoon curry (or about 1/2 if you don't like a srong curry taste)
1/2 cup sour cream

Place the chicken in the crock pot. Mix the onion, curry and salsa. Pour over the chicken and cook on low for about 6-8 hours.

When the chicken is done take it out of the crock pot and put on a serving plate. Add the sour cream and mix well. Spoon the sauce over the chicken.

This would go well with rice or cous cous.

If you don't have crock pot I would think that you could do this in you oven in a well wrapped pan on low (about 200) check it though since it may cook faster. I haven't done it in the oven but as I said I think it should work. I did it in the crock pot and it was awesome. This recipe is easy to do smaller portions of as well.

Rice:
When adding the liquid to rice I never really measure it out with a measuring cup. I learned this from my mom-in-law. Just pour in the rice and then gently place your pointer finger on top of the rice, slowly add cool water to a knuckle and half past the rice. Place on the stove and turn on high un-covered until the rice starts to boil. Reduce the heat to a medium low and cover with a tight fitting lid. The rice should be done in about 20 min. Fluff with a fork add some butter and enjoy.

Creamy chicken enchelada's:

1 pound boneless chicken brests diced
1 8oz package cream cheese cut into cubes
Flour or corn tortillas
1 can diced green chili peppers
ground cumin
1 or 2 can green enchelada sauce
shredded cheese

Cook the chicken in a skillet and when the chicken is done add the cream cheese, it will melt. As the cream cheese melts add the green chili's, and a couple of good dashes of cumin. Continue to heat on low until the cream cheese has melted.

Fill a tortilla with the chicken mix, roll and place in a baking dish, Continue until the chicken mix is gone. Top with the enchelada sauce and sprinkle with cheese. Bake at 350 for about 10-15 min or until the sauce is nice and hot and the cheese is golden and bubbly.

Serve with the mexi-rice recipe below.

Mexi-rice:

Use rice that is still warm.

Heat a skillet or griddle pan to a med-low heat. Add the rice and your favorite salsa, some olives, corn and ground cumin. (A great salsa to use would be the kind in the plastic tubs in the produce section, I think it's labled as "Fresh Salsa" but El Paso or whatever would work as well.)

Instead of pre-made salsa make your own using roma tomatoes chopped small, red onions, chopped cilantro, minced garlic, finely chopped jalepeno pepper, adding some lime juice, and garlic salt. You can also do this in the processor but be very carful not to over process becuase it can end up kind of mushy, and to green from the cilantro. You can also drain the salsa, or remove the seeds from the tomatoes. But using the seeds and then draining it would be great flavor enhancers in your rice. You could even freeze the liquid in ice cube trays (1 cubes equals approx 1 oz) and keep them for future uses. Then toss this fresh salsa in with the rice and cumin, olives, and corn.

Serve hot and I like mine with just a sprinkle of melted cheese.....yumm!!!

Here are some pasta recipes that I love and are easy, go well and I make all the time.

Hot Orzo Pasta Salad:

Boil some orzo while waiting chop some zuccini and yellow crooked neck squash kinda small. Add the veggies the last 3-4 minutes of boiling. Drain and transfer so a serving dish. Add some butter, seasoned salt, and shredded parm cheese. Mix and enjoy.

Cold Orzo Salad:

Boil some orzo pasta, drain and cool. Add some chopped red onion, roma tomatos, corn, feta cheese, and itallian dressing.

I almost forget some pork chop recipes that are great.

The first recipe is for 2 chops. I red bell pepper cut into 1 inch pieces, 1/2 onion chopped into medium to small pieces, and 1 apple sliced. Cook the chops in a tiny bit of oil, brown on one side and turn, add the onions, pepper, and apples. Cook until chops are done and the other ingredients are crisp tender. Serve with rice.

The next recipe is for as many chops as you want to make. Salt and pepper both sides of the chops, place in a baking dish. Top EACH chop with the following
1 tbsp brown sugar
1 tbsp ketchup
1 slice onion
1 slice lemon

Bake at 350 for about 30-45 min depending on how many chops, and how thick they are. This dish creates just a tiny bit of a nice sweet tangy sauce. You can simmer an extra serving or 2 the topping ingrediants on the stove top with a little water if you would like. I serve this dish over rice also. Different sounding but very good!!!

What to make for a meal for my 2 year olds bday party?

I would like to make lunch-appetizer deal and need some ideas. There will be lots of young kids there ranging from baby to age 12 but I don't just want to please the kids I want everyone to be happy and full! Should I make some salad sandwiches and soup and then add some kid friendly appetizers? Recipes would be great!!

Yeah, I`d do appetizers for the kids and the meal geared towards the adults. At that age kids will more interested in playing rather than eating. So, little bites is good.

Kids like hotdogs. And, hotdogs cut in half wrapped in crescent rolls is an easy one to do. If you want, you could even make a slice in the top and add a bit of american cheese. But, not all kids like cheese in their dogs.

Macaroni and cheese is another crowd pleaser for kids.

Or, use your own recipe or even stouffers and put some parm in the bottom of a muffin pan and bake to make the *cups*

And, pot stickers (we buy ours at SAMS). Both my kids really like chopped meats (pepporoni, salami, ham, turkey, and baloney, with cheeses all kids of cheese). You can use toothpicks to pick them up which all kids love. Those are easy no recipes required.

Alexia brand has sweet potato fries that are to die for. Just bake in the oven as directed on the package. Serve with motts applesauce spiked with cinnamin. I heat the applesauce to get it to reduce a bit - thicker. The babies can even eat this. And, the moms will be impressed that it is healthy. Just keep some bananas handy, those are easy for the babies to eat as well.

My kids like vegetable pizza, and I am happy to get them to eat veggies :)

I LOVE this pasta salad!! I swear it is the best ever. I get so many compliments and I have used all kinds of meats/cheese you can really play around with it. I have been craving this since I was pregnant...

I didn`t have the pasta it called for and used fetticune instead and it was to die for. My youngest ate this up, he was 15 months at the time. I did double the dressing recipe and added the extra when serving. The pasta really does eat up the dressing. So creamy!!

I also enjoy broccoli salad. Just take a couple bunches of broccoli and use only the flower part. Chop to nice small bite size pieces. At this time, fry up about 1/2 pound of bacon. I do this on a foil lined baking sheet until crispy. Dice 1/2 of a red onion (less if its strong). Mix broccoli with the bacon (crumbled) and onion. Add 1 to 2 cups of cheese and top with this dressing.

1 cup of MAYO (do not sub with real mayo!!)
1 cup of sugar
some bacon drippings (omit for fat if you want, more compliments if you add)

Kids will like that one as well.

I think chicken salad is a great party food. I just cook the chicken in some water and root veggies and add some peppercorns and salt.

For the salad, I use 1 c mayo to 1 cup sour cream. Add some halved grapes and wala. You can add as you need to serve your guests. I love serving with fresh crescants. (My mom subs the grapes for mandarin oranges)

You could also make an Italian sub under the broiler. Just use the turkey, ham, salami and pepporoni top with provolone and Italian dressing. Wrap in foil and put in the oven at 425 or so (some will do in the broiler, but I always burn bread!)

Make yummy sandwhiche's

CUBAN SANDWICH

Traditional Ingredients:

3 slices (almost shaved) of boiled ham
3 slices of turkey (optional)
3 slices roast pork hot or cold
3 slices of salami
3 slices of Swiss cheese
3 or 4 slices of pickles
1/3 cut Cuban bread hard crust

Optional Ingredients:

3 slices of tomato
4 slices of green bell pepper
3 slices onion
1/3 cut French or Cuban bread
1 leaf Romaine lettuce
mayonnaise, mustard to taste

It is important that the sandwich be prepared on Cuban bread, French or Italian bread - any artisan style bread with a hard crust.

All cold cuts should be sliced very thinly; almost shaved. Slice the bread in an open faced fashion and spread lightly with mustard first, then with mayonnaise. Remember this is not entirely traditional, but still good.

Add the ham (roast pork), turkey and salami. Next add a layer of tomato, pepper, onion and lettuce. Top the sandwich and press.

Press the sandwich on a hot skillet with a weight on top. A suitable weight would be a heavy (clean) cast iron skillet that has been heated until sizzling.

Or better yet, use a sandwich press or panini grill if one is available.

Cuban Sandwiches and their variations are sold in almost every Deli or Restaurant in Tampa, Florida.

Cuban sandwiches are good cold and for picnics or take-alongs, too.

That's pretty healthy and sounds yummy. For homemade salad dressing or dip, you can mix caesar dressing and plain nonfat yogurt together -- about 2 parts dressing to 1 part yogurt. It makes the caesar flavor less intense, and cuts the fat a lot. You can substitute plain nonfat yogurt for part or all of the sour cream in most dressing/dip recipes, too, with good results. When my mom makes onion dip for parties, she uses 1 c low-fat sour cream, 1 cup plain nonfat yogurt, and a packet of Lipton onion soup mix. It's darn good!

I would like to make lunch-appetizer deal and need some ideas. There will be lots of young kids there ranging from baby to age 12 but I don't just want to please the kids I want everyone to be happy and full! Should I make some salad sandwiches and soup and then add some kid friendly appetizers? Recipes would be great!!

Yeah, I`d do appetizers for the kids and the meal geared towards the adults. At that age kids will more interested in playing rather than eating. So, little bites is good.

Kids like hotdogs. And, hotdogs cut in half wrapped in crescent rolls is an easy one to do. If you want, you could even make a slice in the top and add a bit of american cheese. But, not all kids like cheese in their dogs.

Macaroni and cheese is another crowd pleaser for kids.

Or, use your own recipe or even stouffers and put some parm in the bottom of a muffin pan and bake to make the *cups*

And, pot stickers (we buy ours at SAMS). Both my kids really like chopped meats (pepporoni, salami, ham, turkey, and baloney, with cheeses all kids of cheese). You can use toothpicks to pick them up which all kids love. Those are easy no recipes required.

Alexia brand has sweet potato fries that are to die for. Just bake in the oven as directed on the package. Serve with motts applesauce spiked with cinnamin. I heat the applesauce to get it to reduce a bit - thicker. The babies can even eat this. And, the moms will be impressed that it is healthy. Just keep some bananas handy, those are easy for the babies to eat as well.

My kids like vegetable pizza, and I am happy to get them to eat veggies :)

I LOVE this pasta salad!! I swear it is the best ever. I get so many compliments and I have used all kinds of meats/cheese you can really play around with it. I have been craving this since I was pregnant...

I didn`t have the pasta it called for and used fetticune instead and it was to die for. My youngest ate this up, he was 15 months at the time. I did double the dressing recipe and added the extra when serving. The pasta really does eat up the dressing. So creamy!!

I also enjoy broccoli salad. Just take a couple bunches of broccoli and use only the flower part. Chop to nice small bite size pieces. At this time, fry up about 1/2 pound of bacon. I do this on a foil lined baking sheet until crispy. Dice 1/2 of a red onion (less if its strong). Mix broccoli with the bacon (crumbled) and onion. Add 1 to 2 cups of cheese and top with this dressing.

1 cup of MAYO (do not sub with real mayo!!)
1 cup of sugar
some bacon drippings (omit for fat if you want, more compliments if you add)

Kids will like that one as well.

I think chicken salad is a great party food. I just cook the chicken in some water and root veggies and add some peppercorns and salt.

For the salad, I use 1 c mayo to 1 cup sour cream. Add some halved grapes and wala. You can add as you need to serve your guests. I love serving with fresh crescants. (My mom subs the grapes for mandarin oranges)

You could also make an Italian sub under the broiler. Just use the turkey, ham, salami and pepporoni top with provolone and Italian dressing. Wrap in foil and put in the oven at 425 or so (some will do in the broiler, but I always burn bread!)

Or buy a cake and make mini ice cream cups in clear small cups (bathroom cups will work) topped by Cool Whip. Place in airtight container; freeze until ready to use. Garnish as desired just before serving.

Suggested garnish (any or all):
chocolate syrup (or any of variety available;
strawberry, butterscotch; etc)
cherries and a small swizzle stick straw
chocolate chips, mini
multitude of mini candies
candle on birthday child's ice cream

Garnish will work on cake or cups. Could even put a small piece of pound cake in bottom of larger ice cream cup holder (some of those 8 or 9 ounce low clear plastic cups) before adding ice cream and topping. Would only need to add spoon. No flat plates.

Pigs in a blanket/corn dogs and/or peanut butter and jelly triangles, chips, drink. Use small plates or shallow bowls.

Make yummy sandwhiche's

CUBAN SANDWICH

Traditional Ingredients:

3 slices (almost shaved) of boiled ham
3 slices of turkey (optional)
3 slices roast pork hot or cold
3 slices of salami
3 slices of Swiss cheese
3 or 4 slices of pickles
1/3 cut Cuban bread hard crust

Optional Ingredients:

3 slices of tomato
4 slices of green bell pepper
3 slices onion
1/3 cut French or Cuban bread
1 leaf Romaine lettuce
mayonnaise, mustard to taste

It is important that the sandwich be prepared on Cuban bread, French or Italian bread - any artisan style bread with a hard crust.

All cold cuts should be sliced very thinly; almost shaved. Slice the bread in an open faced fashion and spread lightly with mustard first, then with mayonnaise. Remember this is not entirely traditional, but still good.

Add the ham (roast pork), turkey and salami. Next add a layer of tomato, pepper, onion and lettuce. Top the sandwich and press.

Press the sandwich on a hot skillet with a weight on top. A suitable weight would be a heavy (clean) cast iron skillet that has been heated until sizzling.

Or better yet, use a sandwich press or panini grill if one is available.

Cuban Sandwiches and their variations are sold in almost every Deli or Restaurant in Tampa, Florida.

Cuban sandwiches are good cold and for picnics or take-alongs, too.

I am bored with all my same old recipes. I am looking for some new ideas on a dish or appetizer to bring to a holiday party. Something that can be served cold or can heat and hang out in a crock pot. I won't have access to an oven. Can be healthy, unhealthy, whatever, just want some news ideas or suggestions. Thanks!
I have checked with the hostess, and she said anything goes, all she is providing is hot sandwichs and nobody has confirmed a dish they are bringing as of yet so anything goes. I just really want different ideas other then my same old recipes. Thanks.

You are best to work with the hostess to see if they would like something like the potato salad or a tray of dainty finger sandwiches, a tray of Vol au Vents (the filling can be re heated there.)

What can I do with ripe bananas besides putting them in cereal or a smoothie?

Q. I'm looking for quick and easy recipies mostly, but I'll give almost anything a try. I'm tired of banana breads and smoothies, and my friend recently showed me how to fry some up to make a healthier dessert. What else can be done? I work at a supermarket, and can get bucketloads of ripe or slightly over-ripe bananas for literally pennies.

A. Best thing I know, if they’re ripe but not boozy, is to have some ice-cream to hand already in its dishes.

Then cut the bananas into slices, fry them gently in butter until they’re cooked and soft but the butter hasn’t turned brown. Get the dishes out of the fridge because this needs to go quickly to table: then pour a decent liqueur over the bananas and set light to it (it won’t hurt, I promise, and keep stirring until all the flames have gone) Good liqueurs to use: the classic is rum, you could also use Tia Maria or whatever appeals to your taste (not whisky, and please not gin - painful memory from family party).

You can do the same thing with tinned cherries -drained - quite spectacular, classic dish called Cherries Jubilee.

I made banana chutney when I had a glut and it was delicious, but I've lost the recipe - worth trying to find it.

Also, I love fried bananas served with ham or bacon as part of breakfast.

Kids often love mashed banana sandwiches. I hope someone gives you a recipe for banana bread ... it’s better after a couple of days because it gets a crust on in.

Finally, in my family, the female of the species makes banana custard (easy - slice your bananas in a big dish and pour over custard that’s meant to set) as a not-so-subtle sign to the male of the species that certain things are expected of him once he’s digested his pudding/

A. That's pretty healthy and sounds yummy. For homemade salad dressing or dip, you can mix caesar dressing and plain nonfat yogurt together -- about 2 parts dressing to 1 part yogurt. It makes the caesar flavor less intense, and cuts the fat a lot. You can substitute plain nonfat yogurt for part or all of the sour cream in most dressing/dip recipes, too, with good results. When my mom makes onion dip for parties, she uses 1 c low-fat sour cream, 1 cup plain nonfat yogurt, and a packet of Lipton onion soup mix. It's darn good!


What to make for a meal for my 2 year olds bday party?
Q. I would like to make lunch-appetizer deal and need some ideas. There will be lots of young kids there ranging from baby to age 12 but I don't just want to please the kids I want everyone to be happy and full! Should I make some salad sandwiches and soup and then add some kid friendly appetizers? Recipes would be great!!

A. Yeah, I`d do appetizers for the kids and the meal geared towards the adults. At that age kids will more interested in playing rather than eating. So, little bites is good.

Kids like hotdogs. And, hotdogs cut in half wrapped in crescent rolls is an easy one to do. If you want, you could even make a slice in the top and add a bit of american cheese. But, not all kids like cheese in their dogs.

Macaroni and cheese is another crowd pleaser for kids.

Or, use your own recipe or even stouffers and put some parm in the bottom of a muffin pan and bake to make the *cups*

And, pot stickers (we buy ours at SAMS). Both my kids really like chopped meats (pepporoni, salami, ham, turkey, and baloney, with cheeses all kids of cheese). You can use toothpicks to pick them up which all kids love. Those are easy no recipes required.

Alexia brand has sweet potato fries that are to die for. Just bake in the oven as directed on the package. Serve with motts applesauce spiked with cinnamin. I heat the applesauce to get it to reduce a bit - thicker. The babies can even eat this. And, the moms will be impressed that it is healthy. Just keep some bananas handy, those are easy for the babies to eat as well.

My kids like vegetable pizza, and I am happy to get them to eat veggies :)

I didn`t have the pasta it called for and used fetticune instead and it was to die for. My youngest ate this up, he was 15 months at the time. I did double the dressing recipe and added the extra when serving. The pasta really does eat up the dressing. So creamy!!

I also enjoy broccoli salad. Just take a couple bunches of broccoli and use only the flower part. Chop to nice small bite size pieces. At this time, fry up about 1/2 pound of bacon. I do this on a foil lined baking sheet until crispy. Dice 1/2 of a red onion (less if its strong). Mix broccoli with the bacon (crumbled) and onion. Add 1 to 2 cups of cheese and top with this dressing.

1 cup of MAYO (do not sub with real mayo!!)
1 cup of sugar
some bacon drippings (omit for fat if you want, more compliments if you add)

Kids will like that one as well.

I think chicken salad is a great party food. I just cook the chicken in some water and root veggies and add some peppercorns and salt.

For the salad, I use 1 c mayo to 1 cup sour cream. Add some halved grapes and wala. You can add as you need to serve your guests. I love serving with fresh crescants. (My mom subs the grapes for mandarin oranges)

You could also make an Italian sub under the broiler. Just use the turkey, ham, salami and pepporoni top with provolone and Italian dressing. Wrap in foil and put in the oven at 425 or so (some will do in the broiler, but I always burn bread!)

A. Make yummy sandwhiche's

CUBAN SANDWICH

Traditional Ingredients:

3 slices (almost shaved) of boiled ham
3 slices of turkey (optional)
3 slices roast pork hot or cold
3 slices of salami
3 slices of Swiss cheese
3 or 4 slices of pickles
1/3 cut Cuban bread hard crust

Optional Ingredients:

3 slices of tomato
4 slices of green bell pepper
3 slices onion
1/3 cut French or Cuban bread
1 leaf Romaine lettuce
mayonnaise, mustard to taste

It is important that the sandwich be prepared on Cuban bread, French or Italian bread - any artisan style bread with a hard crust.

All cold cuts should be sliced very thinly; almost shaved. Slice the bread in an open faced fashion and spread lightly with mustard first, then with mayonnaise. Remember this is not entirely traditional, but still good.

Add the ham (roast pork), turkey and salami. Next add a layer of tomato, pepper, onion and lettuce. Top the sandwich and press.

Press the sandwich on a hot skillet with a weight on top. A suitable weight would be a heavy (clean) cast iron skillet that has been heated until sizzling.

Or better yet, use a sandwich press or panini grill if one is available.

Cuban Sandwiches and their variations are sold in almost every Deli or Restaurant in Tampa, Florida.

Cuban sandwiches are good cold and for picnics or take-alongs, too.
