Ideas for a Good-for-You Lunch?
Q. I need ideas for lunches. I bring my lunch to work everyday. It must be healthy and not too complicated. I usually do salads but I want something warm (or at least room temp) now that it is getting cold outside. I have done those Campbells "Soup-at-Hand" and they are good but the sodium in them is insane! Please help - I hate trying to think of lunches!

A. You can heat and use your own soups if you buy a simple, single-serving thermos. My kids take home lunch (dietary concerns & allergies), some of their favorite healthy thermos lunches for this time of year are:

- chicken noodle soup (take the soup in the thermos and add the noodles from a ziplock bag - the soup will still be hot enough to warm the noodles in a few minutes)
- chili - bag your own sides like baked tortilla chips, cheese or nonfat sour cream and make sure you put lots of veggies in the chili
- veggie pho (a vietnamese broth based soup that you add in fresh, raw flavors before eating like lime juice, cilantro & bean sprouts).

Other options they like are kolache type sandwiches which stay hot in foil (bread dough wrapped around sausages for example) for quite a few hours. A good recipe is here: http://www.recipezaar.com/Ham-And-Cheese-Kolache-39168.

For me, during the fall, I generally take a baked potato once a week. Wrapped in foil and fresh out of the oven (I roast overnight and use the rest for twice-baked potatoes at supper time), I put it in an old "drink cozy" and then in a ziplock & paper carrier. Generally the potato is still hot enough to melt my toppings when I cut it open at lunch.

Easy and tasty meals?
Q. Hi, I am looking for some different ideas for meals that my boyfriend and I can make. We almost always have ravioli/tortellini, fish sticks, french fries, pizza and corn dogs. hahaha and although I love all of these, I looking for a bigger variety of meals (possibly some that are healthier that he will also enjoy, he loves junk food) that are as easy to prepare as these. Thanks for any help! :)

A. Poor Mans Casserole

Make Kraft Dinner like normal, add canned ham (SPAM if you want or are Hawaiian), frozen peas and mix it all together in a caserole dish. Crush a bag of Lays potato chips and layer this on top. Bake for 30mins at 350F or so (Or just watch it). Super easy, super cheap, tastes pretty damn good for being made of cheap ingredients.

- Burritos (Numerous recipes for these)
- Vietnamese soup (ichiban soup, add veggies like carrots and broccoli, and dumplings before adding the noodles)
- Standard steak and potatos type meal (steak, potato, salad)
- Beef dips (Make roast beef in oven or slow cooker, slice thin, load up a Kaiser bun, buy some Au Jus for dipping them in)
- Chicken Pot Pie/Sheppard Pie
- Spaghetti is always easy, cook it, heat up some store bought sauce, brown some hamburger and mix in the sauce) As well, you could make Spaghetti Spiders if you don't have any hamburger, just sauce. Cut up hotdogs into slices, push a few uncooked spaghetti (I prefer Vermicelli) through them and then cook (Google Spaghetti Spiders for more info, I thought I invented them, apparently I didn't, but I don't recipes ever, I just cook and it turns out great, so I can't explain stuff too well unless I am making it)
- Lasagna
- Fondue (Just do it...Dipping stuff in cheese, oil or chocolate...its great)
- Pulled pork (You need a slow-cooker for sure if you want in to melt in your mouth. Again, load up a Kaiser bun with it)
- Coleslaw (I don't like veggies too much, Coleslaw is a staple for my with lots of meals for some veggies even though it isn't the best choice)
- Mash sandwich (Mash whatever you think will be good together on a sandwich. I found, waffles with roast beef and cheese and a little bit of Maple Syrup is great. The roast beef and cheese are savory, a bit of Maple syrup to add some sweet, and the waffles are just a nice texture. Don't knock it until you try it, its surprisingly addicting)
- Toast a piece of bread, butter it, put a slice of cheese on it, a thick slice of tomato and a bit of salt, makes a really good snack
