i want some healthy breakfast recipes that are fun to make because i like to cook :) thx a lot!

Make waffles Sunday morning and freeze the leftovers. You can pop âem in the toaster for a homemade breakfast
Whole-egg or egg white omelets with fresh or frozen veggies (carrots, broccoli, celery, peppers, onions and even black beans make great additions).
Make a shake or a smoothie. Blend fruit and yogurt and then drink it in the car. A side option is a small bag of finger foods, such as a mixture of granola and grapes.
Bake bran muffins early in the week, then grab one or two each morning

My favorite breakfast recipe at the moment is a âOrange Ginger Quinoa Breakfast Cerealâ:
Ingredients:
1 cup water
½ cup quinoa
â cup chopped pitted dates
¼ cup chopped dried apricots
1 teaspoon grated fresh ginger
½ teaspoon cinnamon
¼ cup freshly squeezed orange juice
½ teaspoon grated orange zest
¼ cup toasted sliced almonds
Directions:
Bring the water and quinoa to a boil in a medium saucepan. Reduce to a simmer, cover and cook for 15 minutes. Fluff with a fork. Add the dates, apricots, ginger and cinnamon; stir well to combine. Add the orange juice and zest and mix well. Sprinkle with the almonds and serve. Serves 4.
Another recipe I really like is a âMorrocan Chicken Saladâ:
Ingredients:
1 cup plain non-fat Greek yogurt
½ cup mayonnaise in olive oil
â cup honey
2 teaspoons grainy mustard
1 tablespoon freshly squeezed lime juice
1 teaspoon curry powder
½ teaspoon salt
½ teaspoon freshly grated lime zest
2 tablespoons chopped fresh cilantro
2 cups leftover boiled or roasted chicken, diced
1 small celery stalk, diced
½ cup chopped roasted and salted cashews
½ cup golden raisins
¼ cup diced jicama
3 or 4 scallions, white part only, chopped
12 romaine lettuce leaves
Directions:
1. In a large bowl, combine the yogurt, mayonnaise, honey, mustard, lime juice, curry powder, salt, lime zest, and cilantro. Whisk well to combine. Add the chicken, celery, cashews, raisins, jicama, and scallions, and mix thoroughly.
2. Serve over the romaine lettuce leaves. Or chop the lettuce and mix it into the salad
