Easy healthy, vegetarian lunches?

i'm going to be a freshman and i always have a sack lunch. last year, i pretty much always had a peanut butter and jelly sandwich. i am really sick of that!
this year, i want something that will just be as easy to make, plus healthy and vegetarian. any ideas? :]



Answer
-tabouli (just chop up some parsley and veggies and add bulgur and olive oil mixed w/ lemon juice)
-eat sandwiches in wraps or pitas! it makes classic fillings fresh
-spring rolls (wrap rice, lettuce, carrots, and whatever else you want in circular rice paper) make a simple dip with soy sauce, peanut butter, rice vinegar, whatever!
-yogurt or cheese, crackers, and veggies (cherry tomatoes are nice)
-leftovers from dinner
-mix leftover pasta with chopped vegetables and or your favorite sauce (try pesto or salad dressing) and top with pine nuts!
-beans and rice with corn and cheese or salsa (really simple, just throw them into a plastic container)
-slice cucumber, and put it onto a slice of bread (try whole wheat) coat the other slice with a thin layer of whipped cream cheese and chives
put the pieces together!

edit- i just thought of my favorite sandwich!
top good sliced bread with a few slices of tomato, put salt and pepper on that, top with a slice of mozzarella cheese, drizzle with balsamic vinegar, and top with another slice of bread! even though you probably shouldn't eat this every day, it is a delicious classic!
