Looking for Vegetarian recipes?

Do healthy AND cheap recipes exist Vegetarian. If so where should I look.

Allrecipes has a ton of vegetarian recipes, and most look pretty affordable.

***Portobello Penne Casserole***

1 (8 ounce) package uncooked penne pasta
2 tablespoons vegetable oil
1/2 pound portobello mushrooms, thinly sliced
1/2 cup margarine
1/4 cup all-purpose flour
1 large clove garlic, minced
1/2 teaspoon dried basil
2 cups milk
2 cups shredded mozzarella cheese
1 (10 ounce) package frozen chopped spinach, thawed
1/4 cup soy sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
Heat the oil in a saucepan over medium heat. Stir in the mushrooms, cook 1 minute, and set aside. Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mix in milk until thickened. Stir in 1 cup cheese until melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the prepared baking dish, and top with remaining cheese.
Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

***California Grilled Veggie Sandwich***

1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1/8 cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
1/2 cup crumbled feta cheese

DIRECTIONS
In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
Preheat the grill for high heat.
Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

As you know, school just let out, which means that my younger sister's and my lunch choices aren't monitored by adults, or made by adults, simply because were home alone during the day. I'm a 15 year old teenage girl, and my sister recently turned 13, so I'm looking for any easy and quick lunch recipes or ideas that we can make ourselves. Also, lower priced items would be nice, but I can also look for cheaper substitutes so that's not a big issue. Thanks! xx

Have your parents buy lots of fresh fruit and veggies you like to have with lunch and as snacks instead of junk. My kids like carrots and green pepper strips dipped in hummus for snack. Cheese sticks and fruit are also a good snack.

Have a whole wheat sandwich or wrap with lean meat such as ham, turkey, or chicken. Avoid processed meats like salami and bologna. Load the sandwich with lots of veggies like lettuce, spinach, green pepper, onion, tomato, etc. We use the red pepper variety of hummus instead of mayo. Sometimes we will have just hummus and tomato for an open faced (1 slice of bread) sandwich with a salad or fruit. Old fashioned peanut butter and jelly is also rather healthy and inexpensive. Or egg salad sandwiches.
