Ideas for healthy snacks?

I am having some friends over to watch a movie and want to provide some snacks. (I am going to the store soon). I love to eat healthy, but they don't necessarily. What is something healthy that doesn't seem overly healthy to them and is tasty? (i.e., carrot sticks are not exactly a great option ;D)
No popcorn please, I am sick of it!

You could make some mini bite size sandwiches... you can put things like turkey breast, cheese, spinach, cucumber slices, hummus, and/or tuna salad. Then put toothpicks in the top!

Or you can try this delicious creamy spinach dip. Here's the recipe:

Ingredients
2 cups shredded part-skim mozzarella cheese, divided
2 cups fat-free plain yogurt
1 14-ounce can artichoke hearts, drained and chopped
1 8-ounce block reduced fat cream cheese, room temperature
2 cups fresh baby spinach leaves, thinly sliced
1/4 cup grated fresh Parmesan cheese, divided
2 garlic cloves, minced
1/4 teaspoon black pepper
1/4 teaspoon mild chili powder
1/4 teaspoon salt
non-stick cooking spray
1 bag whole grain tortilla chips (about 16 cups)

Directions
Coat a 8Ã12 baking dish with cooking spray. Set aside. Preheat the oven to 400° F.

In a large bowl, add half the mozzarella, yogurt, artichokes, cream cheese, spinach, half the Parmesan, garlic, pepper, chili, and salt. Mix with a wooden spoon until the spinach and artichokes are well combined. Transfer to baking dish and sprinkle with remaining mozzarella and Parmesan.

Bake 10-15 minutes uncovered until the cheese begins to brown and the dip is warm. Serve immediately with chips or even cut up veggies

Milk chocolate graveyard cake-
Ingredients
Cake:
2 sticks unsalted butter, softened, plus more for greasing pan
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder (not Dutch-processed)
1 1/2 teaspoons baking soda
1/2 teaspoon sea salt
1 1/4 cup packed light brown sugar
1/2 cup granulated sugar
4 eggs, at room temperature for 30 minutes
1/3 cup semisweet chocolate, melted and cooled
2 teaspoons pure vanilla extract
1 1/2 cups well-shaken buttermilk (or 1 cup milk plus 1 tablespoon lemon juice)
Assembly:
Milk Chocolate Butter cream, recipe follows
1/2 (9-ounce) box chocolate wafer cookies, crushed
1 tube black gel
1 bag chocolate sandwich cookies (recommended: Pepperidge Farm Milano cookies)
Chocolate Tree, recipe follows
Candy pumpkins
Candy Bones, recipe follows
Rock candy
Directions
For the cake: Put a rack in the middle of the oven and preheat the oven to 350 degrees F. Butter 2 (9 by 2-inch) nonstick round cake pans. Line the bottom of each with a round of parchment paper, and then butter the paper.

Sift the flour, cocoa, baking soda and salt together onto parchment paper. With an electric mixer on medium-high speed, cream the butter and sugars until light and fluffy, 4 or 5 minutes. Add your eggs, 1 at a time, mixing until completely incorporated before adding each additional egg. Mix in the chocolate and vanilla, making sure to combine really well. Turn the mixer to low and slowly add the dry ingredients, alternating with the buttermilk, in 3 batches, starting and ending with the flour mixture. Make sure to let it mix thoroughly.

Pour half the batter in each pan and spread evenly with a spatula or butter knife. Bake until a toothpick comes out clean, about 25 minutes. Remove the pans to racks and allow the cakes to cool for 10 minutes or so. Loosen the edges of the cake from the pan with a knife, then turn them onto the racks. Remove the paper and let the cakes completely cool.

To assemble: Put some Milk Chocolate Buttercream on top of 1 cake layer, pushing out to the sides a bit. Sprinkle some ground up chocolate wafers on top. Place the other cake layer on top and flip it over so the flat surface is up. Ice with the rest of the buttercream. Don't try to make it perfectly smooth, the more bumpy it is the better, we're creating a graveyard!

With your black gel, write out RIP on the chocolate sandwich cookies to make them look like gravestones.

Sprinkle more ground wafers on top of the cake to look like dirt. Pat some more around the sides. Take your chocolate tree and put right through the cake in the back. Add some gravestones and some pumpkins. And the chocolate bones, pressing into the sides like an X. Arrange chunks of rock candy around.

Milk Chocolate Buttercream:
5 sticks butter, cut into pieces, at room temperature
1 teaspoon fine sea salt
5 cups confectioners' sugar, divided
2 1/2 cups milk chocolate, melted and cooled
1/2 cup unsweetened chocolate, melted and cooled
2 teaspoons pure vanilla extract
Combine the butter, salt and 2 cups of the confectioners' sugar in a mixer with the whisk attachment. Beat until light and fluffy. Add the melted chocolates, vanilla and the remaining 3 cups sugar. Whisk on medium-high until smooth and fluffy.

Chocolate Tree:
1 cup semisweet chocolate chips
Put the chips in a heatproof glass bowl over a pot of simmering water. Stir to melt.

Fill a zip top bag with the melted chocolate and pipe it out on a baking sheet lined with foil in the shape of a tree. Let cool.

Candy Bones:
1 cup white chocolate chips
2 tablespoons butter, melted
18 pretzel sticks
36 mini-marshmallows
Put the chips in a heatproof glass bowl over a pot of simmering water. Stir to melt. Add the melted butter to the chips to make the mixture more workable.

Take your pretzel stick and push a marshmallow on each side. Coat in the white chocolate, and let dry on parchment paper.

I bring my lunch to school every day, and pbj gets boring. What else can i bring for lunch or snacks?

LUNCHES

~ Cream cheese on zucchini bread
~ Sliced turkey, roast beef, or chicken from leftovers or the deli, and cheese, whole wheat roll, condiments of your choice. Pack lettuce and/or tomatoes separately if you like them.
~ Tuna salad sandwich in pita bread
~ Take your own salad ingredients, and small container of dressing
~ Yogurt and crunchy granola for topping
~ Fruit salad of grapes, melon chunks, and berries
~ Cold pasta salad
~ Hot soup in wide mouth thermos and whole grain crackers
~ Stew in wide mouth thermos with whole wheat roll
~ Chili with whole grain crackers
~ Leftover lasagna, spaghetti, mac and cheese, or casserole in wide mouth thermos, along with a whole wheat roll
~ Leftover stir-fry with chicken
~ Mini bagel sandwiches. Try them with flavored cream cheese, sliced chicken breast, and sliced tomatoes (pack separately to prevent the sandwiches from getting soggy)

PER SERVING (1 muffin): 181 calories, 3.5g fat, 357mg sodium, 37g carbs, 2g fiber, 20g sugars, 2g protein

Ingredients:

One box devil's food cake mix (about 18 ounces)
One 15-ounce can pure pumpkin

Directions:
Preheat oven to 400 degrees. Mix the two ingredients together. The mixture will be very thick, but don't add anything else! Place batter into a 12-cup muffin pan lined with baking cups or sprayed with nonstick spray.
(I use paper liners for simplicity : )
Place pan in the oven, and bake for 20 minutes.

This is my son's first year of school and his teacher asks that when treats are brought in, they are healthy for the most part. No cupcakes, etc. My son's first day to bring a snack to school is next week and I can't think of anything creative for him to bring. Someone already brought the 'butterfly' treat, where you place a clothespin between a ziploc bag of snacks. Are there any other ideas anyone has used before or knows of that are healthy and cute? Thanks!

Kids are so cute at this age!!! Here are some ideas you might find acceptable:

1. Jello shapes: the original recipe is on their website, but it calls for a couple of boxes of jello and about half of the liquid. This makes an extra stiff batch that holds up well when cut in shapes with cookie cutters. Serve with animal crackers and whipped cream.
2. Rice krispy treats: you can make these using puffed brown rice and granola. Cut into shapes with cookie cutters and add mini chocolate chips or craisins as an extra treat.
3. Ice cold orange sections with a drizzle of raspberry syrup
4. Nutella spread on whole wheat bread and cut with cookie cutters
5. Trail mix baggies, ties with rafia
6. Celophane bags filled with mini box of raisins, M&M's, peanuts, and granola
7. String cheese and bread sticks or pretzel sticks tied with a piece of fruit bark.
8. Mini bagels spread with lowfat cream cheese and sprinkles with cinnamon
9. Baked potato or vege chips with lowfat ranch dressing

How do I keep myself motivated to lose weight?

I would exercise for a while then stop either out of laziness and/or getting tired doing the same workout over and over again. I did lose weight but gained it back. I'm having a hard time to force myself to eat healthier because I don't know what healthy foods to come up with to cook on a daily basis.

Hi lovely woman,

Just to let you know, you're not the only person that goes through this, most of us have been there at one point. Like you mentioned, you want to stay motivated and find reasons to stick to it. So, to lose weight- NUTRITION is key, (and I mean almost 70% of the process is based on it). I don't know what your schedule is like but if you have a busy one, work like the rest of us, then I would recommend the following:

1. Eat OATMEAL for breakfast in the morning. Walmart, Costco, and almost every grocery store sell boxed mini packs of oatmeal, many with flavor variety (maple is my favorite). So take one pack a day either in the office (wherever your work) or make at home by simply pouring hot water; adding flavored granola will make a big difference in regards to flavor and body. (I have these packs at my office and it is my breakfast mostly every morning.) Many times we tend to miss breakfast and fail to understand that it is the most important meal of the day (it gets our bodies going). Once oatmeal goes in our stomach it absorbs fats, and keeping us FULL longer, which is a plus for losing weight.

2. Drink plenty of water - after your breakfast make it a habit to drink water shortly after; apply drinking water with every meal. (With every meal after breakfast, try drinking an 8oz glass of water before you eat, it'll get you gong.) Little by little losing the dependency of sugar/flavor drinks and sodas, which is one of the reasons our bodies are overweight, will become easy. Sugar is a source of energy, but too much of it may transform into fat if we don't burn it by exercising. Make it special when you drink soda, meaning that when you do try to think of it as if you're treating yourself to a delicacy. I usually drink soda twice a week, on Fridays or the weekend. In the long run you won't even want to. Water is good for our bodies, it helps our bodies stay clean, and it provides energy to burn fat; and it helps you feel and stay full longer if you drink enough throughout the day.

3. Eat three snacks a day - one between your breakfast and lunch - one between your lunch and dinner - and the last one, between your dinner and sleep time. We tend to get hungry an our or two after we're done with a meal, so snacking is very important. Bananas, pears, granola bars, or even a slimfast (the drink or bar) are good snack options.

4. For other meals such as Lunch and Dinner, try to be creative. Sandwiches, Soups, some frozen food is good (lean cousine). If you try frozen food, though stick to spaghetti's, chicken w/ rice, pad thai, etc...but don't forget to keep the sodium intake within 1,100 to 2,000 mg. a day. I've heard that electronic recipe books supply you with endless food recipes. You may want to give them a try. Here's one that will give you the best value for your money (5 books altogether).

5. WORKOUT makes the last 30%, I don't know how much you workout but if you cardio 3 times a week combined with 1 thru 4, it will more than likely give you results, I'm very sure it will.

Lastly, I recommend you taking a picture of yourself now, and one every month going forward, that alone will keep you motivated as you'll see with your own eyes how your body is changing with every passing month by comparing (how much weight you've shed) and you'll see that you've develop not just a habit but a healthy way of life, and you'll enjoy it because it'll make you feel good about what you've achieved. And remember, repeating something 21 times is proven to become a habit (try it with anything). So, if you can surpass the first 21 days- the rest will become a routine and you'll be on cruise control after that.

To recap:

1. Oatmeal is key
2. Plenty of water
3. 3 meals
4. 3 snacks
5. ...and exercise

Recommended schedule:

1. Breakfast between 7am and 9am (snack between this and lunch)
2. Lunch between 11am and 1pm (snack between this and dinner)
3. Dinner between 5pm and 7pm (snack between this and bedtime)

So take one pack a day either in the office (wherever your work) or make at home by simply pouring hot water; adding flavored granola will make a big difference in regards to flavor and body. (I have these packs at my office and it is my breakfast mostly every morning.) Many times we tend to miss breakfast and fail to understand that it is the most important meal of the day (it gets our bodies going). Once oatmeal goes in our stomach it absorbs fats, and keeping us FULL longer, which is a plus for losing weight.

2. Drink plenty of water - after your breakfast make it a habit to drink water shortly after; apply drinking water with every meal. (With every meal after breakfast, try drinking an 8oz glass of water before you eat, it'll get you gong.) Little by little losing the dependency of sugar/flavor drinks and sodas, which is one of the reasons our bodies are overweight, will become easy. Sugar is a source of energy, but too much of it may transform into fat if we don't burn it by exercising. Make it special when you drink soda, meaning that when you do try to think of it as if you're treating yourself to a delicacy. I usually drink soda twice a week, on Fridays or the weekend. In the long run you won't even want to. Water is good for our bodies, it helps our bodies stay clean, and it provides energy to burn fat; and it helps you feel and stay full longer if you drink enough throughout the day.

3. Eat three snacks a day - one between your breakfast and lunch - one between your lunch and dinner - and the last one, between your dinner and sleep time. We tend to get hungry an our or two after we're done with a meal, so snacking is very important. Bananas, pears, granola bars, or even a slimfast (the drink or bar) are good snack options.

4. For other meals such as Lunch and Dinner, try to be creative. Sandwiches, Soups, some frozen food is good (lean cousine). If you try frozen food, though stick to spaghetti's, chicken w/ rice, pad thai, etc...but don't forget to keep the sodium intake within 1,100 to 2,000 mg. a day. I've heard that electronic recipe books supply you with endless food recipes. You may want to give them a try. Here's one that will give you the best value for your money (5 books altogether).

5. WORKOUT makes the last 30%, I don't know how much you workout but if you cardio 3 times a week combined with 1 thru 4, it will more than likely give you results, I'm very sure it will.

Lastly, I recommend you taking a picture of yourself now, and one every month going forward, that alone will keep you motivated as you'll see with your own eyes how your body is changing with every passing month by comparing (how much weight you've shed) and you'll see that you've develop not just a habit but a healthy way of life, and you'll enjoy it because it'll make you feel good about what you've achieved. And remember, repeating something 21 times is proven to become a habit (try it with anything). So, if you can surpass the first 21 days- the rest will become a routine and you'll be on cruise control after that.

Recommended schedule:

1. Breakfast between 7am and 9am (snack between this and lunch)

I want to find something they can HELP me fix that is an actual decent, healthy dinner that does not take forever to make and that doesn't cost a lot.

A. Deep Dish Taco Squares

2 cups biscuit mix
½ cup cold water
1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1½ pounds ground beef
¼ cup green and/or red bell pepper – finely chopped**
2 Tbsp. chopped onion**
1 pkg taco seasoning mix (¼ cup)
1 (8-oz) can tomato sauce
½ cup mild salsa
2 cups shredded cheddar cheese

Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.
Combine sour cream and Ranch dressing. Spread over baked crust and set aside.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce, salsa or picante sauce, and taco seasoning mix, spoon over Ranch filling.
Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into 12 squares to serve.

** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce.

1 lb. lean ground beef
¼ cu p chopped onion
½ cup chopped carrots
1½ cups mafalda (mini-lasagna noodles or other pasta)
1½ cups water

2 cups marinara or other tomato-based pasta sauce
8 oz. fresh sliced mushrooms
1/3 cup or more shredded mozzarella cheese

Cook lean ground beef, chopped onion and chopped carrots in a Dutch oven on medium-high about 6 minutes or until beef is no longer pink. Drain. Stir in raw pasta, water, Italian seasoning, pasta sauce mushrooms. Heat to boiling, stirring occasionally. Reduce heat to low; simmer, uncovered, 10 minutes or until pasta is tender. Sprinkle with mozzarella cheese and serve.

1/3 cup crushed saltine crackers
2 tablespoons onion soup mix
8 chicken drumsticks

Dip:
1 med (1 cup) cuke, peeled, chopped
1 cup LAND O LAKES® Light Sour Cream
1½ teaspoon chopped fresh chives
1/2 teaspoon salt
1/2 teaspoon dried dill weed

Heat oven to 350°F. Melt butter in oven in 13x9-inch baking pan (5 to 7 minutes). Stir together crushed crackers and onion soup mix. Dip chicken drumsticks into melted butter, then coat with crumb mixture. Place drumsticks back in same pan; sprinkle with remaining crumb mixture. Bake for 45 to 55 minutes or until no longer pink.

Meanwhile, stir together all dip ingredients in medium bowl. Cover; refrigerate at least 1 hour. Serve chicken hot or cold with dip.
Makes 4 servings (1 1/3 cups dip).

Serves 4.

3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped
4 cups cold cooked rice
¼ tsp. sesame oil
3 Tbsp. rice vinegar
1 cup frozen peas, thawed

In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.

In same skillet, heat remaining Tbsp. oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt and sesame oil, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.

What are good ideas for healthy treats to bring to school?

Q. This is my son's first year of school and his teacher asks that when treats are brought in, they are healthy for the most part. No cupcakes, etc. My son's first day to bring a snack to school is next week and I can't think of anything creative for him to bring. Someone already brought the 'butterfly' treat, where you place a clothespin between a ziploc bag of snacks. Are there any other ideas anyone has used before or knows of that are healthy and cute? Thanks!

A. Kids are so cute at this age!!! Here are some ideas you might find acceptable:

1. Jello shapes: the original recipe is on their website, but it calls for a couple of boxes of jello and about half of the liquid. This makes an extra stiff batch that holds up well when cut in shapes with cookie cutters. Serve with animal crackers and whipped cream.
2. Rice krispy treats: you can make these using puffed brown rice and granola. Cut into shapes with cookie cutters and add mini chocolate chips or craisins as an extra treat.
3. Ice cold orange sections with a drizzle of raspberry syrup
4. Nutella spread on whole wheat bread and cut with cookie cutters
5. Trail mix baggies, ties with rafia
6. Celophane bags filled with mini box of raisins, M&M's, peanuts, and granola
7. String cheese and bread sticks or pretzel sticks tied with a piece of fruit bark.
8. Mini bagels spread with lowfat cream cheese and sprinkles with cinnamon
9. Baked potato or vege chips with lowfat ranch dressing
10. Fresh fruit parfaits: small plastic cups layered with non-fat strawberry yogurt, granola, fresh fruit

In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.

In same skillet, heat remaining Tbsp. oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt and sesame oil, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.
