What's your favorite wrap recipe?

Guy

I'm looking for a simple healthy recipe for a sandwich wrap. Using torti
La or something

Answer
Kauai Chicken Pineapple Wraps
Yield: Serves 4

Marinade

1 1/2 teaspoons freshly grated ginger
1/2 cup coconut milk
1 teaspoon minced garlic
1/8 teaspoon Asian chili sauce
2 tablespoons sesame oil
2 tablespoons sliced green onions
Salt & pepper to taste
1 pound skinless, boneless chicken breasts

Wraps

4 (10-11 inch) spinach tortillas
1 cup Sable & Rosenfeld Bamboo Peanut Sauce*
1 1/2 cups cucumber, halved, seeded, cut crosswise into strips
1 1/2 cups red bell pepper strips
4 ounces bean sprouts
2 cups firmly packed spinach leaves
1 cup fresh pineapple strips
Salt & pepper to taste

Marinade: In small bowl combine the ginger, coconut milk, garlic. Asian chili sauce, sesame oil, green onions, salt & pepper. Mix well, put chicken breasts in plastic bag, pour marinade over chicken. Close bag & refrigerate 1-4 hours.

Remove chicken from bag, discard marinade. Place chicken on preheated grill & grill for 4-5 minutes per side or until no longer pink in the center. (Or broil chicken 4-5 minutes per side or until done) Set aside to cool. Slice into strips; set aside.

Wraps: Warm tortillas in microwave at HIGH power 10-15 seconds or wrap in foil & heat in 350 degree F oven for 3-5 minutes. When tortilla is warm spread 1/4 cup of the sauce evenly over a tortilla.

Layer 1/4 of each of the following over sauce: chicken strips, cucumber, red pepper, bean sprouts, spinach, & pineapple in the center of the tortilla. Fold the right & left edges of the tortilla over the filling, toward the center.

Fold the bottom edge (edge closest to you) of the tortilla toward the center & gently roll until the tortilla is completely wrapped around the filling. Repeat for the remaining 3 tortillas. Slice each wrap in half.

Serve immediately or cover & refrigerate up to four hours before serving.

â¢Peanut sauce purchased in grocery store may be substituted for Bamboo Peanut Sauce.

=================================

Santa Fe Seafood Wrap
Yields: 4 servings

2 medium avocados OR 2 cups prepared guacamole
1 Tablespoon fresh lime juice
1 Tablespoon minced onion
1 Tablespoon chipotle chili puree*
2 Tablespoons low-fat mayonnaise
4 Alaska fillets (Pollock, 4 to 6 oz. each), fresh, thawed or frozen
1 Tablespoon olive, canola, peanut or grapeseed oil
1 teaspoon mesquite or Mexican seasoning
4 flour tortillas (10- to 12-inch), warmed
4 large iceberg or Romaine lettuce leaves, torn or shredded

Mash avocados. Stir in lime juice, onion, chili puree, & mayonnaise; set aside. Rinse any ice glaze from frozen seafood fillets under cold water; pat dry with paper towel. Heat a heavy nonstick skillet over medium-high heat. Brush both sides of fillets with oil. Place fillets in heated skillet & cook, uncovered, about 3 minutes, until browned. Shake pan occasionally to keep fish from sticking.

Turn fillets over & sprinkle with seasoning. Cover pan tightly & cook an additional 2 to 5 minutes.

Adjust cook time for smaller fillets. Cook just until fish is opaque throughout. Cool slightly & break into large chunks. To serve, layer about 1/2 cup each avocado spread (almost to edge), seafood chunks, & lettuce on one side of each tortilla. Roll up envelope-style & cut in half.

* Canned chipotle chilies in adobo sauce, pureed.

4 ounce of water packed tuna drained
1 cup onion finely chopped
1/2 cup green or red pepper finely chopped
3 tablespoon of light salad dressing
3 whole wheat tortilla wraps
3 cups lettuce
salt & pepper to taste

Drain tuna well then add all of the ingredients except the lettuce. Divide mixture into 3 portions & spoon over 3 tortilla wraps.

Add the lettuce & roll the ingredients inside of the wraps tucking one end under so ingredients stay inside.

I need to some healthy sandwich recipes,..peanut butter and jelly isn't working for me (p.s. -i'm a body builder)

Answer
I like to make vegetarian sandwiches. Ubber healthy.

Take high fiber bread such as Squirrly bread, spread on light or non fat cream cheese to each slice, add thinly sliced tomatoes and cucumbers (whatever appeals to you) and some alphalfa sprouts.
NUM!

Or for higher proteins roast chicken or turkey slices with roasted red peppers on the same type of bread with low fat mayo.

Just an idea anyway.

would mostly like low fat, healthy recipes that kids would also like.

Answer
Healthy Sandwich Bites

Use an assortment of cookie cutters (or just cut the bread into 4's), white and wheat bread, and the two types of sandwich spreads below to make a plate of healthy sandwich bites.

Roasted Chicken Spread:
Ingredients:
2 roasted chicken breasts, skinless and boneless, cut into small pieces
3 tablespoons light mayonnaise
1/4 cup light cream cheese (fat-free cream cheese can be substituted)

Cheddar Cheese Spread:
Ingredients:
8 ounces reduced-fat sharp cheddar cheese, shredded or grated
8 ounces light or nonfat cream cheese
9 slices special recipe white or whole wheat or cracked wheat bread

Prep:
1. Decide which spread you would like to make. Cut the bread slices into interesting shapes using cookie cutters. Press cookie cutter onto 1 slice of bread at a time. If bread doesn't cut all the way, use a plastic knife to cut around the cookie cutter. Make sure you make two of every shape (to make a sandwich).
2. For chicken spread, add the chicken pieces, mayonnaise, and cream cheese to a food processor. Pulse the food processor until ingredients are blended well and are spreadable.
3. For cheese spread, add grated cheese and cream cheese to food processor. Pulse the food processor until ingredients are blended well and are spreadable.
4. Spread some of the chicken or cheddar cheese spread on one of the bread shapes. Cover with the second piece of bread in the same shape. Repeat with other bread shapes.

One spread recipe makes about 12 mini sandwiches.

What are some good easy vegetarian recipes?

healthy chicken sandwich recipes image

Ah, who gi

My mum doesn't ever cook and only heats already-made meals, such as pizza or something unhealthy. Or she just makes chips or a chicken sandwich, so I decided to start cooking. Well, I really don't know how to cook, so I'm hoping you can give me some easy vegetarian/vegan recipes??!

Thanks.

Answer
I use a lot of canned tomatoes and legumes when I cook. A really simple recipe for a vegetarian soup is to cut up an onion, a few cloves of garlic and shred half of a celeriac. Then heat up some oil in a pot and fry them for a little while. Make sure they don't burn. Add lentils, canned tomatoes and vegetable stock. Some water might be needed. Add salt, pepper and maybe some dried herbs.

If you google for easy vegetarian recipes you'll find lots of stuff. Since I don't know what kind of food you like it's a little hard to come up with tips, but vegetarian chili, Indian dal, pancakes (you can make them with half graham flour and eat them with fruit for a healthier meal), pasta primavera and veggie burgers seems to be popular with most people (vegetarian or not).

What do you do when you can't decide what to make for dinner?

I'm the one responsible for cooking for my husband and I and we are trying to eat healthier meals. I'm in a rut!! I enjoy cooking but I get tired of always deciding.

For instance tonight, grilled chicken sandwiches (or something else with chicken), pork tenderloin? Salmon in the freezer? And then what about side dishes? I have carrots, broccoli, salad, cauliflower.

Please help!

Answer
I have a hard time deciding also, which makes cooking frustrating. So I have gone to various food recipe websites such as Rachel Ray's, Martha Stewart's, and allrecipes.com to find new recipes to try out. There are plenty out there, so I just look what main dish I want to eat (such as beef) then look online, and usually find something appetizing. Good luck!

Btw: with the ingredients you have, you could make a chicken pot pie, or a chicken-broccoli baked calzone.

About how many sandwiches will a can of shredded chicken make?

Q. I am making shredded chicken sandwiches for my daughters birthday. I am just using the big can of the boned chicken, half of a box of Ritz crackers, and a big can of cream of chicken. About how many sandwiches do you think that will make? I don't know whether to double it up or not...
Its like the giant can! Im not sure how much but it usually fills a crockpot!

A. Probably only two if you don't mix the shredded chicken up with chopped lettuce & mayo.... if only mayo on the bread & the shredded chicken, then two.... if you are gonna make a chicken salad with it, then about 3.... =)
A can of tuna says 2.5 servings but really only think of it as two if not mixing with chopped lettuce, sugar, mayo, etc.... I use one can tuna per tuna salad sammy recipe which I put 2 cups chopped lettuce, mayo, etc, in & still only get 3 sammies.... =)
But you did say a big can so it may be bigger than the little tuna cans. In that case just read the serving size & servings per container on the nutrition label. If it says half a serving (2.5 servings) just round down. =)

For the little amount of chicken you get per can, it's cheaper to buy a bag of frozen chicken breasts if money is a factor.... =)

Just like a can of Spag-Os, cannot understand it.... it's high in sodium, you practically have to eat the whole can for one person to be satisfied & it's like baby mush.... buying a jar of spag. sauce & cooking some spag or elbow noodles is soo much cheaper/serving, wayyy healthier, & you get way more than one serving.... go figure... =/

What kind of HEALTHY recipes can I make with whole wheat Pita bread and Tortillas?

Q. I love vegetables and I need some healthy recipes for whole wheat pita bread and whole wheat tortillas... what can i make with them? Thanks.

A. I like to fill pita with hard salami and parsley (you could substitute leaner meat, though). Parsley is a great sandwich green and is friggin' loaded with vitamins and minerals.

Another favorite of mine is to make enchiladas with home-made red sauce. (Use lean meat like chicken breast and use a low-fat cheese. Authentic Mexican food doesn't have as much cheese as Americanized Mexican food anyhow.)

Red sauce:
Heat a few Tbsp. of oil in a 2qt. pot and add an equal amount of flour. Heat and stir until the combo (roux) bubbles for a minute or so.
Add ~1/2 cup of paprika (sounds weird, but bear with me...) and a little cayenne or other spicy ground red pepper to taste and continue to stir. You may need to add a little more oil.
Once this is mixed thoroughly and heated (you want the paprika to toast a bit) add ~ 1 1/2 c. water and stir with heat until the sauce thickens. (If sauce is too thick, add more water. Too thin, add a little corn starch/water slurry. You want it to be kinda like pizza sauce consistency.)
Salt to taste.
Fill tortugas with chicken, cheese, onions, olives, cilantro, whatever the hell you want. Have fun with it!
Put ~a third of the sauce in the pan, layer the enchiladas on top, then spread the rest of the sauce on them. Top with a little more cheese.
Bake @ 375F for about 40 min (until sauce is bubbling and cheese browns a little).

I love this recipe and always make it with whole wheat tortugas (good source of fiber) and this red sauce (TONS of vitamin A and other antioxidants).

I never use a recipe, so your results may vary. But it's cheap and pretty easy, so a few practice batches won't be too hard.
(Everyone tells me that they're WAY better than anything from any Mexican restaurant they've had!)

Is getting a chicken sandwich from these places a bad idea?
Q. My goal is to slim down. Possibly to get a flat stomach or a 6-pack. I'm trying to eat healthy now, so instead of my usual burger & other garbage like that, I eat chicken sandwiches mainly at fast food restaurants like Checker's/McDonald's. Would this still be a bad thing if I was trying to get a flat stomach/6-pack? Same question about Chinese food.

A. If the chicken is grilled and on a whole grain bun and has no mayo or ketchup. The only healthy fast food choices Ive found are grilled tilapia from Captain D's and grilled chicken and green beans from kfc. Even then you should throw out the breadstick that comes with the tilapia from capn d's.

Don't let salads fool you, the dressings crutons and cheeses they come with are loaded with greese in most cases. You're better off learning some healthy recipes and cooking at home, the healthy home cooked stuff can taste better anyway if you just know some recipes. You can make a healthy pizza with a whole grain crust, natural pizza sauce, low fat and fat free cheeses, and turkey pepperoni.

What are some good easy vegetarian recipes?

Thanks.
