Know any ideas for a healthy lunch?

I was wondering if anyone had any idea what would be a good lunch for school, work etc. I am sick of eating sandwitches. i like salads and wraps. If you had any recipes or ideas or even websites that would be great!

You may be able to eat more or less carbohydrate. A registered dietitian or certified diabetes educator can help you determine how much carbohydrate is right for you.

I bring my lunch to school every day, and pbj gets boring. What else can i bring for lunch or snacks?

~ Cream cheese on zucchini bread
~ Sliced turkey, roast beef, or chicken from leftovers or the deli, and cheese, whole wheat roll, condiments of your choice. Pack lettuce and/or tomatoes separately if you like them.
~ Tuna salad sandwich in pita bread
~ Take your own salad ingredients, and small container of dressing
~ Yogurt and crunchy granola for topping
~ Fruit salad of grapes, melon chunks, and berries
~ Cold pasta salad
~ Hot soup in wide mouth thermos and whole grain crackers
~ Stew in wide mouth thermos with whole wheat roll
~ Chili with whole grain crackers
~ Leftover lasagna, spaghetti, mac and cheese, or casserole in wide mouth thermos, along with a whole wheat roll
~ Leftover stir-fry with chicken
~ Mini bagel sandwiches. Try them with flavored cream cheese, sliced chicken breast, and sliced tomatoes (pack separately to prevent the sandwiches from getting soggy)

PER SERVING (1 muffin): 181 calories, 3.5g fat, 357mg sodium, 37g carbs, 2g fiber, 20g sugars, 2g protein

Ingredients:

One box devil's food cake mix (about 18 ounces)
One 15-ounce can pure pumpkin

Directions:
Preheat oven to 400 degrees. Mix the two ingredients together. The mixture will be very thick, but don't add anything else! Place batter into a 12-cup muffin pan lined with baking cups or sprayed with nonstick spray.
(I use paper liners for simplicity : )
Place pan in the oven, and bake for 20 minutes.

MAKES 12 SERVINGS

Healthy food recipes?

Do you have any good recipes that are healthy and doesn't have much fat in it or aren't oily.

Something like cottage cheese and egg salad with tomatos and different herbs or chicken fillet with mango and all that kind of stuff.

Breakfast-2 Egg's with a peace of cottage cheese toast and orange juice.

Lunch- Sandwich with;a slice of tomatoe,lettucce,turkey(or a fresh meet of your choice) and a fresh creamy yougurt and apple juice(or somthing soft) no soda. LOL

Snack-Grapes,Mango (and somthing of your option)

Dinner-Salad with vegges and fresh choices, like olives.tomatoes.lettice.and other fresh vegges.(few meats if you'd like) Orange Juice or orange juice or water(somthing soft and fresh)

Dessert- Somthing good like a granola bar(low callories)

cooking for lunch... recipes?

Q. Anyone have any recipes for an easy lunch. I find that I can make dinners but for some reason lunch is a challenge. I don't want to make a two hour lunch and I have 5 children to cook for, when there is no school. I can't even seem to grocery shop well to accommodate lunch!

Sandwiches i.e. ham & cheese, tuna/chicken salad, chicken or turkey breast, lettuce & tomatoes. Have a little side of cold potato or mac salad. Keep lots of fresh fruit around to go with - apples, bananas, oranges, raisins, grapes, yogurt or little pudding cups, fruit salad or a few chips. Kid ideas - mac n cheese, sloppy joes, kabobs (fruit w a yogurt dipping sauce or chicken nuggets). If you make meatloaf or meatballs the night before, make a meatloaf or meatball sanwich. Cold pasta salads are healthy, and you can add in any veggies, cherry tomatoes, and dressing (i.e. Italian etc.). Make the sandwiches interesting - roll em up in a flour tortilla or use a star shaped cookie cutter for the bread. Or little min pizzas on a flour tortilla - lay out the toppings & let the kids have fun making their own. Eggs/frittatas are easy - add in mushrooms, onions, shredded cheese.

What would be the best food to make for a boxer?
I have to make lunch for around a dozen amateur boxers. Do you need to eat regularly or is a lunch break ok? What would be a good cold lunch? I am thinking meat and salad sandwiches and fruit is that ok?

Grandpa Lapp's Porridge

2 cups oats
1/3 cup millet
6 cups water, soy milk or milk.
1/4 cup of raisins or currants.
4 eggs
Pinch of salt

Put all ingredients, except the eggs, in a pan and bring to a boil. Add eggs. Turn down the head to simmer. Stir with a wooden spoon vigorously for about 5 minutes, or until the oats have absorbed the liquid. If you like, add any of the following: honey, apples, bananas, pumpkin or sunflower seeds, maple syrup, or a splash of cold milk or soymilk.

Mix ingredients together, chill and serve.

Quick Thai Chicken

1 cup basmati rice
1/4 cup sesame oil
1/4 cup soy sauce
1 teaspoon chili oil
1/4 cup balsamic vinegar
3 chicken breasts, chopped into small pieces
2 tablespoons grated ginger
2 cloves chopped garlic
1 bunch cilantro, chopped
1 can water chestnuts
1 cup bean sprouts
1 cup smooth peanut butter

Boil the rice. In another pan, heat the oil, soy sauce, chile oil and vinegar, then add the chicken. Cook for five minutes, or until thoroughly cooked. Add the ginger, garlic, water chestnuts, and sprouts and cook until the water chestnuts and sprouts soften—about 2-3 minutes. Remove the pan from the heat and add the peanut butter and rice. Mix thoroughly, top with the chopped cilantro, and serve.

Peanut Butter Cookies

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 egg yolk
2 teaspoons vanilla extract
18 ounces peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped peanuts

In a large bowl, cream butter, and white and brown sugars until smooth. Add eggs, yolk and vanilla; mix until fluffy. Stir in peanut butter. Roll dough into walnut-sized balls. Place on cookie sheet and slightly flatten with fork. Bake for 12-15 minutes; when done, cookies should look dry on top.

Black Bean Soup

1Tbsp. olive oil
1 yellow onion, diced
4 cans of black beans, rinsed and drained
1/2 tsp each cumin, oregano
1tsp red wine vinegar
1 bottle of favorite beer
water or chicken broth to desired consistency
cayenne pepper, salt & pepper to taste

In a pot, saute onions in olive oil until browned. Add all other ingredients and let them come to a rapid boil. ("I usually jump in the shower then," Deena says.) Pour all the contents into a blender, and purée. Top with freshly chopped cilantro, tomatoes, and/or avocado. Eat with tortillas.

Best Smoothie
Jamie Whitmore, who finished second at the 2002 and 2003 Xterra World Championships, often swigs down a smoothie after a long training ride or run. The banana and orange juice provides a good dose of potassium, which you lose copiously during long exercise sessions and may contribute to muscle cramps. "It also helps to rehydrate," adds Ryan.

What to make for a meal for my 2 year olds bday party?

I would like to make lunch-appetizer deal and need some ideas. There will be lots of young kids there ranging from baby to age 12 but I don't just want to please the kids I want everyone to be happy and full! Should I make some salad sandwiches and soup and then add some kid friendly appetizers? Recipes would be great!!

Yeah, I`d do appetizers for the kids and the meal geared towards the adults. At that age kids will more interested in playing rather than eating. So, little bites is good.

Kids like hotdogs. And, hotdogs cut in half wrapped in crescent rolls is an easy one to do. If you want, you could even make a slice in the top and add a bit of american cheese. But, not all kids like cheese in their dogs.

Macaroni and cheese is another crowd pleaser for kids.

Or, use your own recipe or even stouffers and put some parm in the bottom of a muffin pan and bake to make the *cups*

And, pot stickers (we buy ours at SAMS). Both my kids really like chopped meats (pepporoni, salami, ham, turkey, and baloney, with cheeses all kids of cheese). You can use toothpicks to pick them up which all kids love. Those are easy no recipes required.

Alexia brand has sweet potato fries that are to die for. Just bake in the oven as directed on the package. Serve with motts applesauce spiked with cinnamin. I heat the applesauce to get it to reduce a bit - thicker. The babies can even eat this. And, the moms will be impressed that it is healthy. Just keep some bananas handy, those are easy for the babies to eat as well.

My kids like vegetable pizza, and I am happy to get them to eat veggies :)

I didn`t have the pasta it called for and used fetticune instead and it was to die for. My youngest ate this up, he was 15 months at the time. I did double the dressing recipe and added the extra when serving. The pasta really does eat up the dressing. So creamy!!

I also enjoy broccoli salad. Just take a couple bunches of broccoli and use only the flower part. Chop to nice small bite size pieces. At this time, fry up about 1/2 pound of bacon. I do this on a foil lined baking sheet until crispy. Dice 1/2 of a red onion (less if its strong). Mix broccoli with the bacon (crumbled) and onion. Add 1 to 2 cups of cheese and top with this dressing.

1 cup of MAYO (do not sub with real mayo!!)
1 cup of sugar
some bacon drippings (omit for fat if you want, more compliments if you add)

Kids will like that one as well.

I think chicken salad is a great party food. I just cook the chicken in some water and root veggies and add some peppercorns and salt.

For the salad, I use 1 c mayo to 1 cup sour cream. Add some halved grapes and wala. You can add as you need to serve your guests. I love serving with fresh crescants. (My mom subs the grapes for mandarin oranges)

You could also make an Italian sub under the broiler. Just use the turkey, ham, salami and pepporoni top with provolone and Italian dressing. Wrap in foil and put in the oven at 425 or so (some will do in the broiler, but I always burn bread!)

What are some 250 calorie or less dinners?

I'm on a calorie-restrictive diet and need some advice for a healthy, tasteful meal option in the range of 250 calories. I'd like to implement some lean protein if possible, and definitely veggies, but nothing too exotic (I want to keep it to what I've already got in the fridge or pantry). Any suggestions?

* 3 oz salmon fillet and small oat bran dinner roll



* 6 large shrimp with 2 Tablespoons cocktail sauce, 2 cups of salad with 2 Tablespoons Italian dressing, and iced tea with 1 sugar cube

* One 6½" whole wheat pita, 4 Tablespoons red pepper hummus, ½ c broccoli sprouts, ½ cup cucumber slices, 2 pieces looseleaf lettuce, and ½ cup cranapple juice

* 1 cup Nile Spice Sweet Corn Chowder, 1 cup fat-free milk, and 1 large apple

* 1 Tablespoon peanut butter and 1 Tablespoon grape jelly on whole wheat bread (2 slices

* 1 cup Boston Market chicken chili, and 1 cup Boston Market broccoli with red peppers

* 3 ounces of tuna and 37 almonds

* Subway Veggie Delight 6" sub, and 1 can diet soda

* Burger King: Four Chicken Tenders and a small order of onion rings.

some bacon drippings (omit for fat if you want, more compliments if you add)

Kids will like that one as well.

I think chicken salad is a great party food. I just cook the chicken in some water and root veggies and add some peppercorns and salt.

For the salad, I use 1 c mayo to 1 cup sour cream. Add some halved grapes and wala. You can add as you need to serve your guests. I love serving with fresh crescants. (My mom subs the grapes for mandarin oranges)

You could also make an Italian sub under the broiler. Just use the turkey, ham, salami and pepporoni top with provolone and Italian dressing. Wrap in foil and put in the oven at 425 or so (some will do in the broiler, but I always burn bread!)

What to make for a meal for my 2 year olds bday party?
Q. I would like to make lunch-appetizer deal and need some ideas. There will be lots of young kids there ranging from baby to age 12 but I don't just want to please the kids I want everyone to be happy and full! Should I make some salad sandwiches and soup and then add some kid friendly appetizers? Recipes would be great!!

A. Yeah, I`d do appetizers for the kids and the meal geared towards the adults. At that age kids will more interested in playing rather than eating. So, little bites is good.

Kids like hotdogs. And, hotdogs cut in half wrapped in crescent rolls is an easy one to do. If you want, you could even make a slice in the top and add a bit of american cheese. But, not all kids like cheese in their dogs.

Macaroni and cheese is another crowd pleaser for kids.

Or, use your own recipe or even stouffers and put some parm in the bottom of a muffin pan and bake to make the *cups*

And, pot stickers (we buy ours at SAMS). Both my kids really like chopped meats (pepporoni, salami, ham, turkey, and baloney, with cheeses all kids of cheese). You can use toothpicks to pick them up which all kids love. Those are easy no recipes required.

Alexia brand has sweet potato fries that are to die for. Just bake in the oven as directed on the package. Serve with motts applesauce spiked with cinnamin. I heat the applesauce to get it to reduce a bit - thicker. The babies can even eat this. And, the moms will be impressed that it is healthy. Just keep some bananas handy, those are easy for the babies to eat as well.

My kids like vegetable pizza, and I am happy to get them to eat veggies :)

I didn`t have the pasta it called for and used fetticune instead and it was to die for. My youngest ate this up, he was 15 months at the time. I did double the dressing recipe and added the extra when serving. The pasta really does eat up the dressing. So creamy!!

I also enjoy broccoli salad. Just take a couple bunches of broccoli and use only the flower part. Chop to nice small bite size pieces. At this time, fry up about 1/2 pound of bacon. A. Turkey Club Sandwich
Serve this double-decker sandwich with carrot and celery sticks and red and green grapes. If you don't like Swiss cheese, substitute any other variety, such as cheddar cheese.
4 tablespoons fat free mayonnaise
4 teaspoons fresh basil, chopped
12 slices sourdough bread, toasted
8 ounces turkey breast lunch meat
6 slices bacon, fried crisp
4 romaine lettuce leaves
8 slices tomato
4 slices Swiss cheese
In a small bowl, combine mayonnaise and basil. Spread 1 teaspoon of mixture on each slice of bread.

Place 1 slice of bread on plate. Top with 1 ounce turkey and 1 1/2 pieces of bacon. Add another lsice of bread, 1 ounce turkey, 1 lettuce leaf, 2 slices tomato and 1 piece of cheese. Top with last slice of bread. Place a toothpick in each half of sandwich and cut down the center. Serve immediately

Tuna Salad Sandwiches
For variety, add cucumber or tomato slices to each sandwich.
2 cans albacore tuna, in water, drained
½ cup celery, diced
½ cup apple, diced
1 teaspoon lemon juice
⅓ cup fat free mayonnaise
4 lettuce leaves
8 slices whole wheat bread
In a small bowl, flake tuna with fork. Add celery, apple, lemon juice and mayonnaise. Stir well.

To serve, place 1 leaf of lettuce on a slice of bread. Top with 1/4 of tuna mixture, spread to edges and top with another slice of bread. Serve immediately.

Philly Steak Sandwich
Cheddar cheese is high in fat and calories, so limit the cheese to 2 tablespoons for each sandwich. For variety, use roast beef that has been rubbed with Italian seasonings.
1 bell pepper, thinly sliced
1 onion, thinly sliced
12 ounces lean roast beef, shaved thin
4 whole wheat buns
½ cup Cheddar cheese, shredded
Preheat oven to 350 degrees. Coat a baking pan with cooking spray.

Spray frying pan with cooking spray. Over medium heat, saute the peppers and onions until they soften, about 3 - 5 minutes. Add the roast beef and saute for an additional 2 -3 minutes.

Place 1/4 of the roast beef mixture on each bun and place on baking pan. Top each with 2 tablespoons of cheese. Bake until cheese has melted, about 2 - 4 minutes. Serve immediately.

Mexican Roll Ups
A tasty alternative to sandwiches for a lunchbox or picnic. Roast beef, chopped tomatoes, bell pepper and seasonings are rolled in whole wheat tortillas and wrapped in tin foil. Easy to transport and neat to eat.
6 whole wheat tortillas
6 leaves romaine lettuce
1 ¼ pounds sliced roast beef
1 cup chopped tomatoes
1 cup chopped red bell pepper
2 tablespoons olive oil
3 tablespoons red wine vinegar
½ teaspoon ground cumin
For each roll up, tear off about a 15 inch piece of wax paper or aluminum foil. Place the tortilla on the paper or foil. Top with lettuce leaf, about 3 ounces of beef, divide tomatoes pepper, oil, vinegar and cumin evenly over all tortillas.

Begin rolling the paper or foil over the tortilla to encase the filling. Roll until the sandwich is completely rolled.

To eat, peel back the paper or foil

Ham and Egg Salad
1 ½ cups fully cooked ham, cubed
6 egg, hard boiled, chopped
½ cup celery, chopped
½ cup sweet pickle relish
½ cup mayonnaise
2 tablespoons honey mustard
Combine first 4 ingredients. Blend together mayo and mustard, add to ham mixture and toss lightly. Chill well before serving

Chicken Tostadas
Chicken breasts make a fine change of pace for tostada filling, along with tomatoes, lettuce and bell pepper. A garnish of salsa with fat free sour cream and grated cheese keep this dish a healthy one.
1 ½ pounds chicken breasts, cooked
3 cups romaine lettuce, torn into bite size pieces
½ cup bell pepper, chopped
½ cup chopped tomatoes
6 flour tortillas
6 tablespoons fat free sour cream
6 tablespoons salsa
6 tablespoons Cheddar cheese, grated
Heat tortillas by placing them in a large dry skillet over medium high heat, turn one until golden and puffy.

Place tortillas on plates, evenly distribute remaining ingredients over tops of toasted tortillas. Serve immediately.

Chicken Salad
3 - 4 cup cooked chicken, diced
1 cup celery, chopped fine
1 cup apple, peeled, cored and chopped fine
1 teaspoon salt
¼ teaspoon pepper
⅛ teaspoon ground cayenne pepper
1 teaspoon dried parsley
⅛ teaspoon dill weed
½ cup mayonnaise
¼ cup sour cream
Combine all ingredients. Chill overnight before serving.
